뽕잎강정의 일반성분, 무기질 함량 및 Texture 특성에 관한 연구

  • This study was undertaken to analyze chemical composition, minerals and texture characteristics of Pongnipgangjung in various volumes of adding Pongnip powder. With increasing Pongnip powder level, moisture, total nitrogen, crude protein, crude fat and crude ash contents were significantly increased. Ca, P, K and Mg contents of Pongnip powder 1%, 3%, 4% was higher than Pongnip flour free group. According to rheometer evaluatuion, Pongnipgangjung added Pongnip powder 1% showed higher level of hardness than Pongnip powder 3%, 4% and free group. In sensory evaluation, the results of preference are in the following order Pongnipgangjung added Pongnip powder 1%, 3%, 4% and free group.

한방재료를 첨가한 타조 추출액의 영양학적 특성에 관한 연구 (A Study on the Nutritional Characteristics of Ostrich Extracts Added with Medicinal Herbs)

  • This study was undertaken to analyze chemical composition, macro- and micro-mineral contents of ostrich bone with flesh meat (BF), ostrich bone with flesh meat with herb medicine (BFll) and ostrich bone with internal organs (BI). Crude fat of the BFH was lower, but crude protein and crude ash of the BFH were significantly higher than those of the BF and the BI. Among the minerals, Ca, p, Mg, Fe, Cu, Zn content of the BFH were significantly higher than the content in the BF and the BI. The minerals, Pb, Cd and As were not detected in ostrich and herb medicine extracts. From the sensory test of ostrich and herb medicine, the preferences were in the fellowing order; ostrich bone with flesh meat with herb medicine (BFH), ostrich bone with flesh meat (BF), and ostrich bone with internal organs (BI) in extracts.

  • The article presents the results of the content of the chemical and biochemical composition of the pupa of the wild silkworm Saturnia pyri belonging to the family Saturniidae, species of Lepidoptera. The nutritional value of silkworm Saturnia pyri pupae was evaluated, which contained 51% dry matter, 52.50% crude protein, 27.89% fat, 10.50% chitin fibers, 2.5% ash and 27 macro- and microelements and 25 mg alpha tocopherols in 100 g oil. The X-ray fluorescence method was used to determine the content of mineral elements in the pupa of the silkworm Saturnia pyri. It was revealed that the pupa of this type of silkworm contains 25 elements, of which the relative amount of K, Mg, Na, Ca, Al is much higher than other elements.

귀뚜라미 첨가 사료가 계육과 계란의 성분에 미치는 영향 (Effects of Cricket Supplements of the Chicken Meats and Its Eggs)

  • Chemical characteristics of the cricket, Gryllus bimaculatus, were investigated in total composition, amino acid composition, fatty acid composition and mineral components. After the treatment of 0.4% of G. bimaculatus in the chicken feed, the changes of fatty acid composition in the chicken meat and egg were also estimated. As the result, saturated fatty acid, especially palmitic acid, decreased 4% and unsaturated fatty acids, linoleic aced and arachidonic acid, increased 12 and 23%, respectively, compared with those of control. In addition, there was a small increase in Eicosapentaenoic acid(EPA). The sensory test of the chicken meat resulted in increased flavor, brightness and yellow color. The sensory scores of G. bimaculatus egg in the point of taste resulted in somewhat better estimate than control. These results are appear to be stemmed from fatty acids of cricket.

홍화(Carthamus tinctorius L.)의 부위별 이화학적 특성 (Properties of the Chemical Composition of Safflower (Carthamus tinctorius L.))

  • In order to develop new materials for the functional feed, the components of safflower (Carthamus tinctorius L.) was studied. Chemical composition, minerals, amino acids, and fatty acids of the seed and the flower of safflower were analyzed. The chemical composition of safflower seed was 3.48% (w/w) moisture, 17.10% crude protein, 30.10% crude fat, 6.11% crude ash and these of safflower flower was 7.47% moisture, 26.30% crude protein, 11.50% crude fat, 5.73% crude ash. Mineral contents of the seed were K 170.70ppm, P 14.82ppm, Ca 13.17ppm, Mg 7.83 ppm whereas these of the flower were K 64.99 ppm, P 49.90 ppm, Ca 10.43ppm. Other mineral contents were less than 7.00ppm in all parts. The composition of the amino acid were approximately as follow, the major amino acid in all parts were aspartic acid, leucine, glycine, and arginine, the contents of these were 12.17mg/g, 11.52mg/g, 8.27mg/g, 6.99mg/g, 4.86mg/g in the seed, 19.35mg/g, 31.67mg/g, 10.30mg/g, 9.06mg/g, 12.51mg/g in the flower, respectively. The mahor fatty acids in the all parts were linoleic acid (C아래첨자). The linoleic acid and the palmitic acid (C아래첨자) in the seed and the flower parts were 77.75% (w/w), 19.32% and 8.37%, 25.62% respectively. On the basis of chemical analysis, the safflower showed to have relatively high contents of crude protein and crude fat, minerals, polyunsaturated fatty acid as linoleic acid. These results suggested that safflower was found to be a useful material of natural health food for the functional food development.

홍화(Carthamus tinctorius L.) 순의 이화학적 특성 (Properties of the Chemical Composition of Safflower (Carthamus tinctorius L.) sprout)

  • In order to develop new materials for the functional food, the components of safflower(Carthamus tinctorius L.) sprout was studied. Chemical composition, minerals, amino acids, and fatty acids of the leaf and the stem parts of 2 weeks grown safflower sprout were analyzed. The chemical composition of safflower spout was 12.7% (w/w) moisture, 28.5% crude protein, 10.1% crude fat, and 5.3% crude ash. Mineral contents of the leaf part were P 49%, K 22%, Mg 15%, Ca 10% whereas these of the stem part were K 51%, P 27%, S 10%, Ca 7%, Mg 4%. Other mineral contents were less than 2% in both parts. Especially, Pt was 0.18 ppb and 0.17 ppb in the leaf and the stem parts, respectively. The composition of the amino acid were approximately as follow, the major amino acid in the leaf and the stem were aspartic acid and glutamic acid, the contents of these were 10.7mg/g, 10mg/g in the leaf, 11.3 mg/g, 8.4 mg/g in the stem, respectively. The major fatty acids in the leaf and the stem parts were linoleic acid and $\alpha$-linolenic acid. The linoleic acid (C18:2) in the leaf and the stem parts were 67% (w/w) and 47% whereas the $\alpha$-linolenic acid. The linoleic acid (C18:2) in those parts were 14% (w/w) and 11%, respectively. On the basis of chemical analysis, the safflower sprout showed to have relatively high contents of crude protein and crude fat, minerals including small amount of Pt, polyunsaturated fatty acid as linoleic acid and $\alpha$ -linolenic acid. These results suggested that safflower sprout was found to be a useful material of natural health food for the functional food development.

한반도 지각암류의 지구화학적 특성 (Geochemical Composition of the Continental Crust in Korean Peninsula)

  • 대륙지각의 화학조성은 지각의 형성과 진화에 대한 이해 및 대륙지각내에서 발생된 여러 과정을 정량화하는데 있어서 중요한 역할을 한다. 이 논문에서는 1990년대 이후 보고된 한반도내 화성암류와 퇴적암류의 지구화학적 자료를 토대로 한반도를 구성하고 있는 대륙지각의 화학조성을 지질시대별로 살펴보았다. 평균상부지각조성을 기준으로 한반도에서의 생성시기별 상부지각의 지구화학적 특성을 비교해보았을 때, 트라이아스기의 화강암이 다른 시대와 비교해서 일부 원소에서 현저하게 부화되었거나 결핍된 특성을 보여주었다. 또한 선캠브리아기와 쥬라기 이후의 화강암은 매우 유사한 주성분, 미량성분, 희토류원소의 지구화학적 특성을 보여준다. 하부지각의 지구화학적 특성을 지시해주는 선캠브리아기 고변성도 편마암의 희토류원소 및 미량원소의 지구화학적 특징은 쥬라기 이후 상부지각을 형성한 화강암의 희토류원소 및 미량원소의 지구화학적 특징과 유사한 특징을 보여주는데, 이는 이들 변성암류가 중생대 쥬라기 이후 화강암질 마그마의 기원물질이 되었을 가능성을 지시해준다. 반면에 한반도내 중생대 트라이아스기의 상부지각의 기원물질은 선캠브리아기나 쥬라기 이후의 상부지각을 형성한 기원물질과는 다른 것으로 나타났다.

풍납토성 성벽 토양의 성분 특성 연구 (Compositional Characterization Analysis of Wall Soils Excavated in Poongnatoseong Earthen Castle, Seoul)

  • 본 연구에서는 풍납토성 동성벽 내부토양을 대상으로 색도색차계, XRD, 입도분석기 등을 이용하여 색도, 입도, 주요화학조성, 광물결정구조 등을 분석하였다. 성벽토양은 황갈색, 회황색의 모래 또는 실트질 모래(SW~SC)로 분류되고, 입도와 화학 광물학적 특성이 유사하며, 도로나 활주로 등의 성토재료로 적합한 특성임이 확인되었다. 색도, 입도, 화학조성, 강열감량의 4인자를 기준으로 비교분석한 결과, 풍납토성이 위치한 지역의 대조군 토양(PNS)은 성벽축조에 사용되지 않았던 것으로 판단한다. 모든 토양은 풍납토성이 위치한 지역과 지질학적으로 유사한 곳에서 채굴되었던 것으로 추정되지만, 성벽 축조 이전에 분포했던 구지표면의 토양과는 다른 특성을 나타내기 때문에, 유적 주변에 대량채굴이 가능했던 토양분포지가 존재할 것으로 추정된다. 향후 성벽 축조재료의 여러 특성들을 비교 분석하면, 성벽 내부토양의 산지, 축조방법, 보수방법 및 시기 등을 보다 종합적으로 이해할 수 있는 계기가 마련될 것으로 기대한다.

자수정 내포물의 형상과 화학조성에 관한 연구 (The chemical composition and shape of inclusion of amethyst)

  • 본 연구는 자수정의 산지에 따른 내포물의 성상 변화를 조사함으로써 자수정의 산지 감별을 위한 기초자료를 얻을 목적으로 수행되었다. 자수정에 포획되어 있는 내포물의 삼차원적 형상을 입체현미경으로 관찰하여 그 특징을 조사하였고, 각 내포물 중 고체내포물 단면의 형상 및 화학조성을 SEM/EDS로 조사하였으며, SEM/EDS 관찰을 위한 감압코팅과정에서 액상포유물의 파괴와 증발에 의해 생성되는 수지상 무늬의 형상과 화학조성을 분석함으로써 액상포유물의 조성도 조사하였다. 아울러 각 자수정 시료를 플루오르화수소산으로 처리하여 완전 용해시킨 다음 ICP-AES를 이용하여 각종 자수정에 함유되어 있는 미량 성분의 농도를 정밀하게 분석하여 고찰하였다.
