Distribution on the sorbic acid in cooked meat produced from meat processing plants of Gyeongbuk province

  • Sorbic acid and potassium sorbate are widely used food additives with high efficiancy and they are approved and recommended by FAO and WHO. Sorbic acid is one of preservatives that is mostly used in general food. Sorbic acid and potassium sorbate are used to prevent food, such as cheese, bread, beverage, and so on, from staling and molding. The world market for sorbic acid and potassium sorbate is growing and the market in Asian region is also expected to grow rapidly. This study was carried out to measure the amount of the sorbic acid in cooked meat produced from meat processing plants in Gyeongbuk province during 2000∼2003. One thousand one hundred and thirty-five samples of cooked meat(430 spices added meats, 486 grinding cooked meats, 3 bacons, 23 jerked meats, 68 sausages, 125 hams) were collected from meat processing plants and analyzed for the concentration of preservative sorbic acid by using of high performance liquid chromatography(HPLC). Sorbic acid was not detected in spices added meats, grinding cooked meats and bacons, except on jerked meats, ham and sausage. But the concentration range of sorbic acid in jerked meat was 0.00∼1.5g/kg, average 0.37g/kg, and in sausage was 0.00∼1.31g/kg, average 0.53g/kg, and in ham was 0.00∼ 1.22g/kg, average 0.56g/kg. There was no sample that sorbate concentration exceeded the legal permitted level 2.0g/kg in cooked meat.

  • The amount of generated Circulating Fluidized Bed Combustion ash (CFBC ash) is annually increasing, but most CFBC ash has been landfilled and discarded due to the limited utilization. The major chemical compositions of CFBC ash are $SiO_2$, CaO and $CaSO_4$, which could form hydration products by reacting with water as self-cementing property such as cement. The purpose of the this study is to derive the optimal mix proportions to improve polymer-modified mortar with the use of CFBC ash which has the self-cementing property. In order to develop polymer-modified mortar, three mix proportions were determined, and fundamental properties for the mixtures were obtained. As a result, the optimal mixture containing 10 percent of silica fume, 1.0 percent of polymer and 3.5 percent of expansive additives were proposed in this study.

Effect of pH, Chemical Composition and Additives on Stability of Soymilk Suspension (pH, 화학적 조성 및 첨가제가 두유(豆乳)의 현탁안정성에 미치는 영향)

  • The effects of pH, protein and fat content, addition of emulsifiers, stabilizer, sugar, salt and calcium salt on the stability of soymilk suspension were investigated by analyzing the cream separated and precipitates of soymilk which is prepared by various conditions. In the alkaline region of pH, soymilk showed a good stability of the suspension and particularly, above pH 10, precipitates were not formed. When 1.5% of palm oil with 0.4% of glycerine monostearate was added to soymilk in the hydrophile-lipophile balance (HLB) value of 4 to 7, resulted maximal emulsion stability occured below H LB 6. The stability was decreased with increasing the fat concentration and soy oil showed better emulsion stability than that of palm oil. Among the commercial stabilizers, 0.03% of carrageenan was most effective. The stability was not decreased by addition of sugar up to 3% while it was decreased by addition of sodium salt and calcium salt at low level.

  • Synthetic rubber based pressure-sensitive adhesives (PSAs) usually containing SIS or SBS block copolymer, tackifier, plasticizer, and other additives are now widely used on various applications. As these PSAs are physically crosslinked and can be applied without the use of solvent, they are thermally processable and environmentally friendly. However these PSAs cannot be used in high temperature applications and in applications where solvent and chemical resistance properties are required. We developed the PSA adding UV curable system, such as thiol-ene system, to increase adhesion properties at elevated temperature. The adhesion properties such as probe tack, peel strength, shear adhesion failure temperature (SAFT) were evaluated. The probe tack test was conducted with varying probe materials and coating thickness of PSAs. Using the contact angle, the surface property of the cured PSAs was also observed.

Preparation of Higher Reinforced PVDF Hollow Fiber Microfiltration Membrane (고강도 PVDF 중공사 정밀여과막 제조 특성)

  • This paper was carried out to study the preparation condition and the permeation flux of reinforced poly(vinylidene fluoride) (PVDF) hollow fiber microfiltration (MF) membrane with the solvent, additive, second miscible polymer, and preparation condition used poly(vinylidene fluoride) (PVDF) such as a material with the excellent chemical stability and the milder preparation condition. The performance of the reinforced MF membrane prepared obtained the average $0.3{\mu}m$ pore size, $42kg_f/cm^2$ tensile strength, and the high water flux of 600 LMH. The change of membrane performance with various additives was considerably affected on the water flux and rejection. For hydrophilic modification of hydrophobic PVDF MF membrane, the MF membrane might be prepared with a prefer water flux and rejection by addition of hydrophilic poly(methyl methacrylate) (PMMA).

Mechanical Properties of Reclaimed Plastic Concrete (재생수지콘크리트의 역학적 성질에 관한 연구)

  • The objective of the study was to obtain the compressive the tensile and the fleniril strengthes, thermal resistance, chemical resistance and fire resistance of the reclaimed plastic corcrete in order to investigate the feasibility as a new construction material This reclaimed plastic concrete is a compositive material which is composed of sand and blend of 50% of LDPE(Low density polyethylene) and 50% of HDPE (High density polyethylene) which are inexpensive and easy to reclaim. The results obtained in the study are summarized as follows: 1. As the binder content ranging from 20 to 40 % increase, the compresie, the splitting tensile and the flexural strengthes were increased. The compressive strenzth of the specimen tested was the highest and flexural strength the next and tensile strength the lowest 2. The compressive, the tensile and flexural strengthes of specimens made of fine sand were higher than those of coarse sand. The compressive, the tensile and the flexural strengthes of specimens made of high pressure molding were higher than those of low pressure molding. 3.In comparison with different additives, the specimens with carbon black was excellent and B. H. T. good and ferric oxide poor for thermal resistance. 4. In relationship between the flexural strength with varying temperature from -23$^{\circ}C$ to 80$^{\circ}C$. The flexural strengthes were decreared as temperature increased at 25 %, 30 % and 35 % of binder contents, respectively. Especially at 60$^{\circ}C$, the flexural strength was significantly decreased. 5. The decrement of flexural strengthes and the weight losses after 7 days immersion in acid or alkali solutions were not significant. 6. Fire resistance of the reclaimed plastic concrete was not significantly influenced by the contents of sand. However, the fire resistance of the reclaimed plastic concrete was depend upon melting and ignition properties of the binder itself. Therefore. a proper selection of the binder and the fire retardant are recommended in arder to improve fire resistance of the reclaimed plastic concrete.

Cloning, High-Level Expression, Purification, and Properties of a Novel Endo-${\beta}$-1,4-Mannanase from Bacillus subtilis G1 in Pichia pastoris

  • A novel gene coding for an endo-${\beta}$-1,4-mannanase (manA) from Bacillus subtilis strain G1 was cloned and overexpressed in P. pastoris GS115, and the enzyme was purified and characterized. The manA gene consisted of an open reading frame of 1,092 nucleotides, encoding a 364-aa protein, with a predicted molecular mass of 41 kDa. The ${\beta}$-mannanase showed an identity of 90.2-92.9% ${\leq}95%$) with the corresponding amino acid sequences from B. subtilis strains deposited in GenBank. The purified ${\beta}$-mannanase was a monomeric protein on SDS-PAGE with a specific activity of 2,718 U/mg and identified by MALDI-TOF mass spectrometry. The recombinant ${\beta}$-mannanase had an optimum temperature of $45^{\circ}C$ and optimum pH of 6.5. The enzyme was stable at temperatures up to $50^{\circ}C$ (for 8 h) and in the pH range of 5-9. EDTA and most tested metal ions showed a slightly to an obviously inhibitory effect on enzyme activity, whereas metal ions ($Hg^{2+}$, $Pb^{2+}$, and $Co^{2+}$) substantially inhibited the recombinant ${\beta}$-mannanase. The chemical additives including detergents (Triton X-100, Tween 20, and SDS) and organic solvents (methanol, ethanol, n-butanol, and acetone) decreased the enzyme activity, and especially no enzyme activity was observed by addition of SDS at the concentrations of 0.25-1.0% (w/v) or n-butanol at the concentrations of 20-30% (v/v). These results suggested that the ${\beta}$-mannanase expressed in P. pastoris could potentially be used as an additive in the feed for monogastric animals.

  • Ultra-high strength concrete becomes one of the main research areas because recently concrete structure is larger. The quality of aggregate (ultra-high strength and uniformity) as well as chemical admixture and mineral additives is a key factor for ultra-high strength concrete development. However, natural aggregate including crushed aggregate is inappropriate for ultra-high strength concrete because ultra-high strength quality cannot be maintained uniformly over whole natural aggregate lot. In this study ceramic aggregate was applied for ultra-high strength concrete in order to assure uniform quality of ultra-high strength aggregate. Ultra-high strength concrete was achieved by applying coated ultra-high strength ceramic aggregate to enhance the bonding strength between aggregate and cement paste. Also for actual application light weight ceramic aggregate(density 2.2 $g/cm^3$) with zero water absorption was tested.

  • Tin has been widely used to solder, tin plated steel, bronze alloy, sputtering target for transparent electrode and chemical additives. It has been widely reported to the recycling technologies for tin scraps because of the scarcity and economic efficiency of the reserve. This study was analyzed by using open/registered patents KR, US, CN, JP and EP related to recycling technologies for processing scrap, sludges, waste fluid for plating process and spent alloy containing tin in between 1970 and 2013. Patents were collected using key-words searching and filtered by filtering criteria. The trends of the patents were analyzed by year, country, appliant and technology.

  • Effects of conjugated linoleic acid (CLA) on physico-chemical properties of cooked ground pork patty were investigated for 11 days at $4^{\circ}C$. Pork patties containing 0, 1, 2, and 3% CLA were cooked at $90^{\circ}C$ for 30 min. The contents of crude protein and fat did not change whereas the content of ash and water decreased as the level of CLA enhanced. Lipid oxidation as measured by thiobarbituric reactive substances of patty was inhibited by addition of CLA. CLA treatment also reduced nitrite and cholesterol content and changed fatty acid composition. Consequently, given these positive effects of CLA, it may be assumed that CLA could be used as a fat additive for value-added pork patty.
