Comparison of Microwave and Conventional Cooking Methods on the Nutritional Composition of Potatoes -(1) Changes of Proximate Composition, Minerals and Water-soluble Vitamins- (감자의 몇가지 영양성분(營養成分)에 대한 마이크로파(波)와 재래적(在來的) 조리방법(調理方法)의 비교(比較) -1. 일반성분(一般成分), 무기질(無機質) 및 수용성(水溶性) 비타민의 변화에 대하여-)

  • The effects of cooking methods by boiling, electric oven and microwave on the proximate composition, minerals and water-soluble vitamins of two major Korean potato varieties (Soomi and Namjac) were studied. The dry matter content was increased after the cooking by the methods of electric oven and microwave, however, the crude fiber content was highly decreased by both methods. The crude ash content was not affected by the cooking methods used. The potassium content was increased by electric oven and microwave methods, and iron content was increased by electric oven baking, however, the copper content was significantly decreased by the electric oven and microwave cooking methods. The macrominerals (phosphorus, magnesium, calcium) and microminerals (zinc, manganese, nickel, lead, cadmium) content present initially in potatoes have not been changed by the cooking methods employed in this study. Relative retention value of ascorbic acid was the lowest and the value of thiamin was the highest in the potatoes cooked by microwave. The retention values of riboflavin and folic acid obtained. after boiling were similar to those after microwave cooking, and both of these treatments were superior to the electric oven baking. The retention values of niacin and vitamin $B_6$ varied between 93 and 100% depending on the cooking methods used. Overall, with a few exceptions, the retention values of water-soluble vitamins in boiled and microwave cooked potatoes were superior to those of the electric oven baked.

Chemical Composition of Maize Germs Separated in the Manufacture of Cornstarch (옥수수전분 제조공정의 부산물인 maize germ의 지질 및 아미노산 조성)

  • This study was conducted to research the industrial utilizaion of the maize germs separated in the manufacture of the cornstarch. The maize germs contained crude protein (25.3%) and crude fat (19.2%), with the 512 Kcal/100g of determined food energy values. It was found to have the valuable amounts of essential minerals, such as the content of calcium and phosphorus were low (53.0, 12.3mg%), while those of potassium (495.4mg%), magnesium (95.0mg%), zinc (48.3ppm) and manganese (45.2ppm) were plentiful. It was noted that the iodine value was 44.0, saponification value 292.3, acid value 1.5 and peroxide value about 3.3. The lipid fractions obtained by silicic acid column chromatography were mainly composed of neutral lipid, whereas, the contents of glycolipid and phospholipid were scarcely. The major fatty acids in total lipids were linoleic $(60{\sim}62.5%)$, oleic $(20{\sim}22.5%)$ and palmitic $(10{\sim}13.5%)$ acids. The content of the unsaturated fatty acids was more predominant than that of the saturated fatty acids. The content of the insoluble proteinous nitrogen (32.5%) was the most abundant. whereas, the contents of soluble proteinous nitrogen (12.7%) and peptide proteinous nitrogen (3.3%) were low. The major amino acids of the maized germs were glutamic, glycine, alanine and aspartic. It has been identified by the SDS-disc electrophoresis that the protein of maized germs had $5{\sim}6$ bands. Compared with standard substances, the molecular weight of the main protein was estimated to be $14,500{\sim}24,500$.

Optimal fertilizer application for Panax notoginseng and effect of soil water on root rot disease and saponin contents

  • Background: Blind and excessive application of fertilizers was found during the cultivation of Panax notoginseng in fields, as well as increase in root rot disease incidence. Methods: Both "3414" application and orthogonal test designs were performed at Shilin county, Yunnan province, China, for NPK (nitrogen, phosphorus, and potassium) and mineral fertilizers, respectively. The data were used to construct the one-, two-, and three-factor quadratic regression models. The effect of fertilizer deficiency on root yield loss was also analyzed to confirm the result predicted by these models. A pot culture experiment was performed to observe the incidence rate of root rot disease and to obtain the best range in which the highest yield of root and saponins could be realized. Results: The best application strategy for NPK fertilizer was $0kg/667m^2$, $17.01kg/667m^2$, and $56.87kg/667m^2$, respectively, which can produce the highest root yield of 1,861.90 g (dried root of 100 plants). For mineral fertilizers, calcium and magnesium fertilizers had a significant and positive effect on root yield and the content of four active saponins, respectively. The severity of root rot disease increased with the increase in soil moisture. The best range of soil moisture varied from 0.56 FC (field capacity of water) to 0.59 FC, when the highest yield of root and saponins could be realized as well as the lower incidence rate of root disease. Conclusion: These results indicate that the amount of nitrogen fertilizer used in these fields is excessive and that of potassium fertilizer is deficient. Higher soil moisture is an important factor that increases the severity of the root rot disease.

Eating Behaviors, Perception of Body Image, Hematological Indices and Nutrient Intake of Adolescent Female Athletes in Incheon (인천지역 청소년 여자 운동선수의 식행동, 체형에 관한 인식 및 영양상태평가)

  • The purpose of this study was to investigate the eating behaviors, the self-perception of body images, the hematological indices and the nutrient intake of adolescent female athletes in Incheon. The subjects were 112 female athletes(track and fleld: n=32, target shooting: n=27, fencing n=29, swimming: n=14, badminton: n=10) from middle and high schools in Incheon. This cross-sectional study was conducted by means of a sol(-administered questionnaire. Fasting blood samples were obtained and analyzed for hemoglobin (Hb), hematocrit (Hct), ferritin, serum iron, mean corpuscular volume (MCV), mean corpuscular hemoglobin (MCH), mean corpuscular hemoglobin concentration(MCHC), unsaturated iron binding capacity (UIBC), total iron binding capacity (TIBC) and transferrin saturation (TS). Nutrient intakes obtained by means of the 3 day-recall method were analyzed using the Computer Aided Nutritional Analysis Program. Statistical analysis was conducted using the SPSS 10.0 program. Most of the female athletes had dietary problems such as eating unbalanced meals, skipping meals, and preferences for processed foods. More than 60% of the female athletes skipped breakfast. As for perception of their body images, track and field athletes in particular, controlled their weights significantly better than the other athletes (p<0.05). With regard to their physical exertion during exercise, 56.3% of the swimmers and 31.3% of the track and field athletes answered “very hard”, which was a significant difference (p< 0.001). More than 80% of the female athletes experienced vertigo during exercise (p< 0.01). Also more than 50% of the female athletes, with the exception of the badminton players, had experienced irregular menstruation (p<0.05). The average serum iron levels (p<0.05), the serum ferritin levels (p<0.05) and TS (p<0.05) of the track and field athletes was significantly lower as compared to that of the other athletes. The nutrient intakes of the female athletes, with the exception of Vitamin B$_{6}$, niacin and phosphorus were lower than the Korean Recommended Daily Allowances (RDA). In particular, the calcium and iron intakes of the female athletes were under 50% of the Korean RDA. Therefore, proper nutritional education and supplementation are required for female athletes to encourage desirable eating habits, as well as to improve their nutritional status and exercise performances.s.

  • Familial hypophosphatemia is the most common hereditary rickets which occur hypophosphatemia as the calcium concentration in the blood serum is normal but the phosphate concentration in the blood serum decreases by dysfunction of renaltubular phosphorus reabsorption. In spite of the low concentration of phosphate in the blood serum discharge of phosphate by urine and alkaline phosphatase increases remarkably. It is a sex-linked and normally male show severe clinical symptoms than female. This kind of familial hypophosphatemia patients show frontal bossing, square head, short of status for general finding, and for dental finding, thinning of limina dura and dental follicle, thin and hypoplastic enamel, enlarged pulp chamber and canal, high occurance rate of periapical and periodontal abscess and unknown cause of rarefying osteitis. This case is to report about the clinical finging and dental treatment of a child patient, who came to the hospital for treatment of deciduous teeth caries but was refered to pediatrics because the child showed clinically short of status, bow-leg and radiographically enlarged pulp chamber and canal, there as diagnosed as familial hypophosphatemia.

Development of Seasoned Semi-Dried Oyster (조미 반건조 굴 가공품의 개발)

  • This study was carried out to examine the optimum processing conditions of seasoned semi-dried oyster, and to investigate its food component characteristics. Three types of semi-dried oyster were prepared: semi-dried oyster prepared without seasoning and coating (C), seasoned semi-dried oyster without coating (S) and seasoned semi-dried oyster coated with alginate (SA). SA was high in moisture (48.6%), while low in lipid (2.8%), and crude protein (25.9%) compared to those of C and S. Hardness and sensory scores of SA were $209.8g/cm^2$ and $3.9\sim4.5$ points, respectively. Total amino acid content (24,299 mg/100 g) of SA was lower than that (27,181 mg/100 g) of C, and the major amino acids were aspartic acid, glutamic acid, leucine and Lysine. The major fatty acids of SA were 16:0 (25.5%) as saturates and EPA (23.5%) and DHA (9.3%) as polyenes. Calcium and phosphorus contents of SA were 42.6 mg/100 g and 245.5 mg/100 g, respectively.

Constituents of the DRIED TOMATO FRUITS(Lycopersicon esculentum, Mi Soo) (건조 토마토의 성분조성에 관하여)

  • For surveying of constituents concerning the flavor of the dried tomato fruits, nonvolatile components such as minerals, sugars, free amino acids, nucleotides and lipids were analyzed and determined. Potassium, calcium and phosphorus were the major conatituents of ashes, but trace amounts of cadmium and lead were determined. Glucose and fructose were the major constituents in sugars, and the latter slightly showed higher value than the former. The content of total free amino acids was 8322.5mg%, and that of the major components such as asparagine, aspartic acid, urea. glutamic acid, ${\beta}-alanine$ and ${\gamma}-aminobuthyric$acid showed 58.01% to the total amount. The nucleotides were composed of CMP, UMP, GMP and IMP, and CMP among them showed the highest value as about 58.07% to the total amount. On the other hand, IMP showed the lowest one. The major components of the total fatty acids from the saponifiable fraction in the lipids were $C_{18:2}$, $C_{18:1}$ and $C_{16:0}$ and those of the total sterols from unsaponifiable one were stigmasterol and ${\beta}-sitosterol$.

The effect of acid and alkali treatment on extracting nutrients from beef bone (소의 사골(四骨) 중(中)의 영양성분 용출에 대한 산, 알카리 처리효과)

  • An experiment was made to investigate the effect of acid and alkali treatments obfserving the amount of nutrients especially calcium(Ca), phosphorus(P), ${\alpha}$-amino nitrogen(${\alpha}$-amino N), and total nitrogen(total-N)which were extracted from beef bone. 0~0.8% acetic acid and 0~0.5% sodium bicarbonate were used for treatment on different levels. The results are as follows; In case of acid treatment, Ca and P contents in bone stock wer observed to increase significantly according to acid concentration. Ca and P contents in bone stock highly incrased especially when the acid concentration was above 0.3%. Ca and P ratio varied from one to two when the acid concentration was below 0.01%. However contents of ${\alpha}$-amino N and total-N increased significantly when acid concentration was above 0.5%. In case of alkali treatment, contents of Ca and P did not increased significantly on all levels of sodium bicarbonate. The content of ${\alpha}$-amino N, however, increased significantly when the alkali concentration was in 0.05% but total-N did not show any variation in amount. These results suggest that acid treatment can give rise to an increase of the amount of nutrients which are extracted from beef bone but alkali treatment does not.

Relationship among Nutrient Intake, Indices of Anemia and Serum Lipids in Korean College Women (일부 여대생의 영양소 섭취상태, 빈혈 지표 및 혈청 지질간의 상관성에 관한 연구)

  • This study was conducted to evaluate nutrient intake, indices of anemia, serum lipids, and their correlations in 40 Korean female college students aged 21 to 25 years. Fasting blood samples were collected in October. 1997 Nutrient intake was investigated by 24-hour recall method for three days. Anthropometric measurements, blood pressure, iron status and serum lipids of the subjects were determined. The mean values for age. height, weight, BMI and blood pressure of the subjects were 22.1 years, 160.6cm, 54.4kg and 109.1/66.9mmHg, respectively. According to the body composition analysis, total body water, % body fat, lean body mass and WHR were 26.7L. 29.5%, 36.5kg and 0.8, respectively. Average daily intake of energy was 1,858.4kcal. Protein, phosphorus, vitamin B$_1$, vitamin B$_2$, niacin and vitamin C intakes were higher than the Korean recommended dietary allowence(RDA), whereas calcium, iron, vitamin A intakes were tower than that. Hemoglobin(Hb), hematocrit(Hct), serum iron(SI) and total iron binding capacity(TIBC) were measured and transferrin saturation (TS%) was calculated from serum. The mean values for Hb, Hct, SI, TIBC and TS were 13.6$\mu\textrm{g}$/㎗, 41.6%,97.8$\mu\textrm{g}$/㎗, 319.6$\mu\textrm{g}$/㎗ and 31.9%, respectively. The Prevalence rates of iron deficiency assessed by Hb and Hct were found to be 10% and 2.5%, respectively. However, when assessed with TIBC, the prevalence rate of iron deficiency was increased to 32.5%. The mean values for serum triglyceride(TG), total cholesterol(TC), HDL-Chol, LDL-Chol concentrations and atherogenic index(AI) were 154.7mg/㎗, 80.0mg/㎗, 47.4mg/㎗, 91.3mg/㎗ and 2.6, respectively. Correlations among indices of anemia. there were positive correlations between Hb and Hct, between SI and TS : negative correlations between TIBC and TS or SI. Correlations among serum lipids, there were positive correlations between TC and TG or LDL-cholesterol. Energy intakes were correlated positively with TIBC(p<0.05), and vitamin C intakes negatively correlated with Hb(P<0.05). And vitamin A intakes were negatively correlated with TG(p<0.01). TC(p<0.05) and LDL-Chol(p<0.01). Hb negatively correlated with TG(P<0.05). Body weights(p<0.05), lean body mass(p<0.05) and total body water(p<0.01) werenegatively correlated with Hb. BMI and WHR correlated with TG and TC(p<0.01). These results indicated that subjects with higher energy intake and overweight had a tendency to have iron deficiency. Increases in BMI and WHR were related to increases in serum lipids levels and decreases in TIBC. The results also showed that serum lipids were decreased when vitamin A and iron intakes were sufficient.

Comparison of Litter Production and Nutrient returned to Forest Floor according to Forest Fire Type and Recovery (산불유형과 회복정도에 따른 낙엽생산량과 임상으로 이입되는 영양염류 함량)

  • This study has compared the different types of forest fire sites and the unburned site at Samcheuk-si Gangwon-do by assessing the amount of litter production, nutrient concentration returned to forest floor from July 2007 through October 2010. The research showed that the average amounts of litterfall produced in the unburned site, the crown fire site(C-1), the crown fire site(C-3) and the ground fire site(G-2) were $7.74{\pm}2.56$, $1.17{\pm}0.67$, $2.97{\pm}0.44$ and $2.92{\pm}0.42ton{\cdot}ha^{-1}{\cdot}yr^{-1}$, respectively. In the unburned site, the average amounts of total nitogen(T-N), total phosphorus(T-P), potassium(K), calcium(Ca) and magnesium(Mg) returned to the forest floor were $22.20{\pm}12.43$, $1.16{\pm}0.46$, $2.68{\pm}1.44$, $16.22{\pm}4.69$ and $1.36{\pm}0.32 kg{\cdot}ha^{-1}{\cdot}yr^{-1}$, respectively whereas those in the crown fire site(C-1) were $3.73{\pm}2.31$, $0.10{\pm}0.09$, $0.27{\pm}0.20$, $2.75{\pm}2.58$ and $0.24{\pm}0.27 kg{\cdot}ha^{-1}{\cdot}yr^{-1}$, respectively. This study showed that the nutrient content returned to forest floor was higher in the following order: unburned site(Un) > crown fire site(C-3) > ground fire site(G-2) > crown fire site(C-1).
