This study was conducted to determine the usefulness of bamboo leaf powder as a functional ingredient for buckwheat cold noodles. The anti oxidative and fibrinolytic activities of bamboo leaf powder were very high, and were further maintained or improved after strong heat treatment. We prepared buckwheat cold noodles using 0%, 3% or 5% of bamboo leaf powder. Only the cohesiveness of the noodle having 5% bamboo leaf powder was lower than that of the noodles contained 0% and 3% bamboo leaf powder. The L-, a- and b-values were significantly different between noodles which contained bamboo leaf powder and those which did not. Nevertheless, the amount of bamboo leaf powder didn't affect the color parameters of buckwheat cold noodles. According to sensory evaluation, the addition of bamboo leaf powder improved the score of color and texture of buckwheat cold noodles, but overall acceptance was not significantly affected. Cooked volume, cooking loss and turbidity of buckwheat cold noodle containing 5% bamboo leaf powder were lower than the others, indicating that adding 5% bamboo leaf powder prevented the softening of the noodles with moist heat. We concluded that the application of bamboo leaf for the production of buckwheat cold noodle will be a good way to intake the biologically active ingredients for good health.

Prevention of postprandial hyperglycemia is important, as it is implicated in the development of macro- and microvascular complications associated with diabetes. An inhibitor of ${\alpha}$-amylase which acts in the first step of carbohydrate digestion, is expected to be a suppressor of postprandial hyperglycemia. This study investigated the porcine pancreatic ${\alpha}$-amylase inhibitory activity of the extracts from buckwheat (Fagopyrum esculentum) flower, leaf, stem and grain. Flower, leaf, stem and grain of buckwheat were extracted by water and ethanol (40%, 70%, 100%), respectively. Flower and leaf extracts were more effective ${\alpha}$-amylase inhibitors than stem and grain extracts in all tested solutions. Ethanol extracts were more effective than water extracts or powders on the ${\alpha}$-amylase inhibitory activities. At concentrations of $0.5%{\sim}10%$ (w/w, starch basis), the flower extracts of 40%, 70% and 100% ethanol lowered the enzyme activity by about 90% and the results were similar to the values of acarbose. At the same concentrations, the leaf extracts of 100% ethanol lowered the enzyme activity by about 90%. These results suggest that buckwheat flower and leaf ethanol extracts may delay carbohydrate digestion and lower postprandial hyperglycemia.
Flavonoid contents of common buckwheat (cv. Kitawase) and tartary buckwheat (cv. Hokkai T 8, Hokkai T 9 and Hokkai T 10) were determined by high-performance liquid chromatography (HPLC). Moreover, they were measured at different plant developments such as 10, 18, 20, 22 and 30 days after sowing (DAS) and with plant parts including leaf, stem and flower harvested at 30 DAS. Total flavonoids including chlorogenic acid, four kinds of C-glycosylflavones (orientin, isoorientin, vitexin, isovitexin) and rutin of tartary buckwheats (range of 44.2-54.7, mean 44.2) were found 35% higher than those of common buckwheat (28.9 mg/g dry wt.). Among them, rutin was measured above 80% of total flavonoid contents. The other flavonoids (chlorogenic acid and four kinds of C-glycosylflavones) presented the highest level at 10 DAS and decreased according to plant developments. On the other hand, rutin content of Kitawase presented the highest level (33.6 mg/g dry wt.) at 22 DAS and decreased up to 30 DAS. Rutin content in tartary buckwheat temporarily decreased from 10 to 18 DAS and then reversely increased up to 30 DAS presented the highest level as 'U' curve. In Hokkai T 10, rutin content was found the highest level (53.8 mg/g dry wt.) at 30 DAS. In different plant parts harvested at 30 DAS, rutin content of leaf (range of 42.8-68.0, mean 57.0) was 5.3-fold higher than that of stem (range of 8.0-15.9, 10.8 mg/g dry wt.), regardless of cultivar. Significantly, rutin content (78.7) in the flower of Kitawase was 1.8 times higher than in the leaf and 9.8 times in the stem. Especially, chlorogenic acid content (14.6 mg/g dry wt.) in the flower of Kitawase was 63-fold higher than in the leaf, and 20-fold in the stem.

This experiment was conducted to investigate the effects of soil conditioners, such as lime, borax, poultry waste sawdust manure (P.W.S.M) and mixed oil cakes (M.O.C), on the rutin biosynthesis and the yield of buckwheat. The content of phosphorus ($P_2O_5$) in buckwheat plants before flowering was higher at before flowering than that of flowering time at all plots. The content of nitrogen (N), potassium ($K_2O$), calcium (CaO) and magnesium (MgO) was lower at before flowering than those of flowering time at all plots. The contents of rutin in buckwheat plant at flowering time was higher than that at before flowering content of rutin in leaf was higher than that in stem. The contents of rutin in buckwheat plant was the highest at the plot treated with borax (B) compared to other plots. Correlation between rutin and amino acid was positive in buckwheat leaf, while it was negative in buckwheat stem. The yield of buckwheat was 21 percent higher at the plot treated with borax than the plot applied with the other three ingredients.

Effects of green tea, buckwheat, and grape leaf extracts on factors related to blood circulation were studied using rats fed high-cholesterol diet for 4 weeks. Rats were randomly divided into five groups, and plant extracts were orally administered. Green tea extract increased bleeding time in rat tails, suggesting it could prevent platelet aggregation. Administration of green tea, buckwheat, and grape leaf extracts decreased total cholesterol level in liver. Grape leaf extracts decreased thiobarbituric acid-reactive substances in plasma, whereas buckwheat and grape leaf extracts decreased the substances in liver. These results showed extracts of green tea, buckwheat, and grape leaf were effective for improving lipid composition in blood and liver and inhibiting lipid peroxidation in animal tissue, suggesting they may have potential to prevent cardiovascular diseases.
This paper describes the potential use of deep sea water to stimulate seed germination in both common and Tartary buckwheat. Treatment of 10% deep sea water at $25^{\circ}C$ would slightly enhance germination of buckwheat seeds compared to non-DSW treatment and other temperature. In this study, the significant effects of photoperiod and temperature on seedling growth were also found in the HL treatment for the number of leaf, plant height, and plant fresh weight and LL treatment for root length and leaf size. Common buckwheat (Suwon No.1) showed higher rate (93%) of flowering plants in the HS and LL (93% of flowering rates) than those revealed in the HS and LS treatment, while the low percentage(67%) of plant flowering plants was shown in the LS treatment. All plants (100%) of a Korean landrace, Ahndong-jaerae showed flowers in the HS and LS treatment. HL and LL treatment status did not occur in the plant's flowering. Any Tartary buckwheat (KW45) plant did not yet flowered when it was 21 days-old.

This study carried out to compared a rutin content in seed and plant of tartary buckwheat(Fagopyrum tataricum) to collect in the world. Rutin content in seed and plant parts of tartary buckwheat is higher than F. esculentum and F. cymosum. Rutin contents in plant parts of 3 species was higher with order of flower> leaf> seed> stem> root and that of tartary buckwheat was higher about 3.2 times in flower and about 3.1 times in stem and about 65 times in seed of F. esculentum. Compared to rutin contents for seed color and shape of tartary buckwheat 50 lines, seed color was higher with order of dark gray>black>brown and seed shape was higher with order of Slender> Notched> Round. Rutin content in plant parts of cultivated lines was higher than wild lines. Compared to rutin contents in plant parts of tartary buckwheat collected at the different region, Bhutan line had much higher than other lines. Rutin contents were lower than in the leaf and stem of Pakistan line and in the seed of India line.

This study was carried out to investigate the effects of temperature and photoperiod on the growth of Fagopyrum tataricum. It showed a tendency to promote the germination rate and plant height of tatary buckwheat under high temperature. Plant height and number of leaves were promoted in the order of 25>20>15>30℃ under the different temperature after 30 days of the planting. In the 10, 12, 14hr photoperiods at 20℃, plant height, number of leaves and dry weight were increased as much as photoperiod became long except by 16hr. Rutin contents was not regular both common and tatary buckwheat under the photoperiods. The rutin content in leaves was higher than stem. Compared to yield of tatary and common buckwheat, plant height, number of leaves, number of branch and stem diameter of tatary buckwheat increased more than common buckwheat. Especially, number of leaves was increased about 2.5 times more than common buckwheat. And there was a difference in about 2.1 times in grain weight and about 5.4 times in number of grains. Rutin content of plant parts was higher in the order of leaf>stem>grain in common buckwheat at the harvest. But it was higher with order of leaf>grain>stem in tatary buckwheat. Rutin content was 1469.8mg/100g in grain of tatary buckwheat. It was about 60 times higher than 22mg/100g in grain of common buckwheat.
Korean cultivars of buckwheat(Fagopyrum esculentum Moench.) was crossed with Canadian cultivars in order to improve seed yield as well as leaf production of buckwheat for using as food and medicine. The agronomic characteristics and rutin contents of F$_2$ hybrids are investigated for further selection of superior lines. Dry weight per plant was the highest in a line 1110(6.71g) and leaf weight per plant was the highest in a line 1110(1.91g). Hybrid seeds were 0.55 - 0.70cm long and 0.37 - 0.47cm wide on average. 100 seeds weight ranged from 2.57g to 3.58g. Line 1076 produced the longest seeds(0.70cm) and line 1186 was the longest in seed width. Line 1196 showed the highest 100 seeds weight(3.58g). The highest frequency of the LWR(length/width rate) was 0.66~0.70, indicating that seed shape of the hybrids was mostly oval. Line 1087 showed the highest contents of rutin(77.26ppm). Lines 1090 and 1181 contained respectively rutin of 54.76ppm and 54.35ppm in the seeds. From the yield and rutin point of view, the most superior lines was line 1087 among the lines used for this study.
This study was conducted to classify photosynthesis rate and changes of rutin content of Korean buckwheat (cv. Chunchon-jaerae and Yangjeul-memil) treated with salinity, UV-C and low temperature. In case of cv. Chunchon-jaerae and Yangjeul-memil, according to the salt stress, transpiration rate, stomatal conductance and photosynthesis rate were decreased. Both cultivars also showed decrease of transpiration rate and photosynthesis rate under the UV-C. Rutin contents within leaf and stem of cv. Yangjeul-memil were decreased when NaCl concentration was high. Rutin contents within leaf and stem of cv. Yangjeul-memil were generally decreased when the time laps under the UV-C stress. Rutin contents within leaf and stem of cv. Chunchon-jaerae was also generally decreased when the time laps under the low temperature stress.
