A Comparative Study on Dietary Life and Associated Factors of School Children and Adolescents between Urban and Rural Area (학동기 아동과 청소년의 도시와 농촌 지역 간 식생활 및 관련 요인 비교 분석)

  • This Study was carried out to find out regional differences about dietary life and factors associated with meal of school children and adolescents between urban and rural area. Forty students from each of the nationwide 51 schools of three different levels(elementary, middle and high school) were surveyed by self-developed questionnaires. Total of 1,886 questionnaires (1,243 from urban and 681 from rural) were collected and distribution of subjects was 544 from elementary school, 661 from middle school, and 681 from high school. The results were summarized as follows. BMI and degree of satisfaction on body weight of elementary and middle school subjects were not significantly different between urban and rural area. But there were significant regional differences in $BMI(urban\;21.2{\pm}3.0,\;rural\;20.5{\pm}2.8,\;p<0.05)$ and degree of satisfaction on body weight of high school subjects(p<0.001). Elementary(p<0.01) and middle school(p<0.05) subjects in urban area had exercised more frequently than those in rural area. Regularity of having breakfast was not significantly different between urban and rural area at each of three different levels of school. Most subjects(urban 92.2%, rural 92.1%) had lunch regularly by virtue of school lunch service. Regularity of having dinner of elementary(p<0.01) and high school subjects (p<0.01) was significantly different between urban and rural area. Reason for skipping dinner of high school subjects was significantly different between urban and rural area (p<0.05). The most delicious meal was dinner for 51.8% of the urban high school subjects and lunch for 51.7% of the rural subjects. Only one third had intention of participating in school breakfast program regardless of region and levels of school. The findings suggested that nutrition education programs for school children and adolescents include different strategy according to region and levels of schools.

  • A majority of menopausal women experience serious depressive symptom because they are disturbed by their menstruation stop and by multiple physiological symptoms. The purpose of this study is to analyze the related factors of depressive symptom of menopausal women in Korea. A multiple regression model was used to study in association with depressive symptom, controlling for socio-economic characteristics, health status and behavior characteristics, women's health, and family support characteristics. For the data, Menopausal women were 4,680 peoples were selected for this study. PASW 18.0 was used to study in association with affecting factors of depressive symptom in the menopausal women The study shows that Education level, Marital status, Income, Employment status, Activity limitations, Perceived health status, Perceived body Image recognition, Current smoking, AUDIT, Frequency of induced abortion, Frequency of eating out, Breakfast with family, Lunch with family were associated with depressive symptom of menopausal women in Korea.

A Survey on the Seasonal Menu and Consumer Acceptance Test of Free Meals for the Elderly Facility in Sungnam Region (성남 고령자 무료급식소의 계절별 식단 및 기호도 조사)

  • The purpose of this study was to nut a survey on the seasonal menu and consumer's acceptance test of free meals for the elderly facility in Sungnam Region. The elderly meals of the free lunch meal service were mainly composed of staple food, hot soup, and three kinds of side dishes. Questionare for accentance test was developed based on the seasonal menu including 13 kinds of cooked rices, 43 kinds of soups and 94 kinds of side dishes. The test was run for 104 elderly living and receving the service in the area. Average age of the subjects was 75.9 and 43% was male 57% was female. The 81% and 88% of the subject answered 'yes' on the intake of breakfast and dinner respectively representing high percentages of regular meal habits of the elderly. The cooked rice with black beans had significantly the highest acceptance score among the rice group and soups prepared with chunggukjang and cabbage had higher accentance scores(P<0.05). In the side dish groups, broiled eed, croakers, and various kinds of namuls had relatively higher scores than the others with significant difference at P<0.05.

A Study for Eating-Out Behavior of the University Students (대학생의 외식실태에 관한 연구)

  • The purpose of this study was to investigate eating-out behavior patterns of university students. A questionnaire survey was conducted on 610 university students(male : 41.5%, female: 58.5%). The main results are as follows: The motivation of eating out for the university students was the highest to take care of a meal, the second motivation was the social reason for the male student, but accomodate diversion for the female student. The time of eating-out was the highest from 31 minutes to 60 minutes. The eating-out cost of one time was highest from 5,000 won to 10,000 won. The eating-out cost of one month was the highest from 50,000 won to 100,000 won. The both male and female students were favorite of the korean foods. The left-over foods were higher female students compared with male students. The style of left-over foods was highest the korean foods. The payment style was high the most student by turns. The frequency of eating-out was high male students compared with female students as below (lunch>dinner>breakfast). The criteria for the selecting eating-out level was appeared as below (Taste>Cleanliness and hygiene>Kindness and good service>Price>Atmosphere>Variety of menu>Promptness of service>Convenient location>Quantity of food>Reputation). Both students liked hot tastes.

The Relationships between Health Status and Health Practices among Industrial Workers (산업장 근로자의 건강상태와 건강습관의 관련요인분석)

  • This study attempted to analyze the health habits affecting health status of industrial workers. Data was collected from 57 industries of 900 workers at Inchon. The research has been carried out through self-administered questionnaire and from the analysis of the health examination records and the results were as follows: 1. Among 861 respondents, men were 81.2%, women were 18.8%, 42, 6% were of the 30-40 age group, the married were 65.7%, the single were 32.5%, the high school graduates were 62.4% and 37.3% were of people who worked between 1 and 5 years. 2. As far as the seven health habits, current smokers were 54.9%, people who regularly exercise was 31.7%, 7-8 hour of sleep, on the average were 74.0%, people eating breakfast nearly every day were 8.0%, and people eating between meals almost every day were 54.2%. Heavy drinkers who drink 3-4 times or more per week were 13.2%, 1-2 times per week were 26.8% and the obese were 4.6%, 3. Health status of A and B, estimated by doctors in the health examination were 81.7% and C, D1, D2, the unhealthy were 18.3%. Men were reported more than women in unhealthy groups and the results regarding health status reflect gender, educational level and age, That is to say that, lower educational level group and over 30 years of age group perceive their health to be worse than the higher educational level and under 30 age group, And these differences were statistically significant. 4. The relationship between health habits and health status, expressed in terms of the odds ratio. Current smokers had a consistently worse health status than a nonsmokers with a 1.36 odds ratio. The workers who reported eating breakfast rarely or never were more associated with the unhealthy group than the regular breakfast eating group with a 2.48 odds ratio. One or more drink per week had a worse health status than a never or a little drinker with a 1.42 odds ratio. 5, The Health habits score and duration of work were selected as significant factors influencing health status based on logistic analysis. According to the results of this model, the odds ratio of good health status was 2.06 for good health habit score, 1.55 for population who worked seven years or more duration of work. As we have seen, good practices were found to be associated with better health and the effect of the health habits was cummulative;those who followed 6-7 health habits were in better health, even though they were older than those who failed to do so. Therefore, in order to provide the health promotion of workers it is necessary to establish a health management plan for an effective health education and health service. If we use this type of study as a prospective study design, we can get a precise basic data for health promotion and a management plan for industrial workers.

An Epidemiological Study for Desirable Health Habits Affecting Workers' Health Status

  • This study identified the health habits affecting health status of industrial workers. Data was collected from 965 workers in 58 companies at Buchon. The research conducted a self-administered questionnaire survey and obtained the workers' health examination records. The results were as follows: 1. Among 965 respondents, men were 82.4%, women were 17.6%, 44.5% were of the 30${\sim}$40 age group, the married were 67.4%, the single were 30.8%, high school graduates were 81.1% and 38.8% were of people who worked between 1 and 5 years 2. As far as the seven health habits, current smokers were 52.8%, people who regularly exercise was 28.5%, 7${\sim}$8 hour of sleep, on the average were 71.4%, people eating breakfast nearly every day were 8.8%, and people eating between meals almost every day were 46.5%. Heavy drinkers who drink 3${\sim}$4 times or more per week were 14.2%, 1${\sim}$2 times per week were 32.6% and the obese were 9.3%. 3, Health status of A and B, estimated by doctors in the health examination were 80.8% and C, D1, D2, the unhealthy were 19.2%. For men, those who reported more than women in unhealthy groups and the results regarding health status reflects those for gender, educational level and age. That is to say that, lower educational level group and over 30 years of age group perceive their health to be worse than the higher educational level and under 30 age group. And these differences were statistically significant. 4. The relationship between health habits and health status were examined based on the odds ratio. Current smokers had a consistently worse health status than a non smokers with a 1.98 odds ratio. The workers who reported eating breakfast rarely or never were more associated with the unhealthy group than the regular breakfast eating group with a 2.96 odds ratio. One or more drink per week had a worse health status than a never or a little drinker with a 1.56 odds ratio. 5. General health habit score and duration of work were selected as significant factors influencing health status from the result of logistic regression analysis. According to the results of this model, the odds ratio of good health status was 2.08 for good health habit score, 1.63 for workers who worked five years or more duration at work. In summary, good health habits were associated with good health status. In particular, the workers who had 5 or more desirable health habits had a significantly better health status than the workers who had 4 or less than 4 good health habits. Therefore, in order to provide the health promotion programs to workers it is necessary to organize clear health management plans based on effective health education and health service perspective. If further research examines health habits and health status using a prospective study design, More precise findings for health promotion program development in the worksite and worksite health management planning.

Depression, Health-Related Habits, Eating Habits, and Nutrient Intake of Male Youth Before and After the Outbreak of the COVID-19 Pandemic -Analysis of the 2018 and 2020 Korea National Health and Nutrition Examination Survey- (코로나19 전후 남자청년의 우울, 건강 관련 습관, 식습관 및 영양소 섭취량의 변화 -2018년, 2020년 국민건강영양조사 자료 분석-)

  • This study analyzed the differences in the general characteristics, mental and health-related factors, eating habits, and nutrient intake of Korean male youths before and after the outbreak of the coronavirus disease 2019 (COVID-19). The data of a total of 1,231 subjects, from among the participants in the 2018 and 2020 Korea National Health and Nutrition Examination Survey (KNHANES), were analyzed. The 2020 group had fewer married members than the 2018 group. The subjects in the 2020 group weighed more (P<0.05), had a higher waist circumference (P<0.01), and showed greater weight gain (P<0.05) than the 2018 group subjects. The aerobic physical activity of the 2020 group was lower (P<0.01) compared to the 2018 group. The members of the 2020 group had higher depression scores (P<0.01), suicidal tendencies (P<0.01), and need for counseling for mental problems (P<0.05) than those of the 2018 group. The prevalence of high fasting blood sugar levels and diabetes was higher in the 2020 group compared to the 2018 group. The frequency of breakfast (P<0.01) and dining out (P<0.001) and the proportion of breakfast (P<0.01) and dinner (P<0.05) taken with the family or non-family members was lower in the 2020 group than in the 2018 group. The rate of dietary supplement intake of the 2020 group was higher than that of the 2018 group (P<0.01). There were significant differences in the protein (P<0.05), riboflavin (P<0.01), and carbohydrate (P<0.01) intakes between the two groups. These results suggest that male youths had a higher waist circumference and high levels of depression, and showed a decrease in frequency of breakfast intake and dining out after the out break COVID-19 pandemic. Therefore, nutrition and health promotion programs are urgently needed to improve mental health, other health-related factors and nutritional status of male adults that are associated with the COVID-19 pandemic.

A Case Study on Quality Improvement of the Food Services for Patients - Focused on Satisfaction Offered Menu and Differentiated Service - (환자 급식서비스의 질 향상 사례 연구 - 메뉴 만족도와 차별화 중심으로 -)

  • The objective of this study is to investigate how patients satisfaction are affected by satisfaction with the patient menu and differentiated service resulting from QI activities and to evaluate the efficiency of QI activities. In order to improve satisfaction with menus through QI activities, this study strengthened meal round, examined the quantity of food waste produced by patients, diversified one-dish menus and used seasonal food as much as possible to reflect patients ′tastes to the maximum. With regard to cooking, additionally, it strengthened sampling and standardized recipes to maintain the constancy of taste and cooking/seasoning. From July 2003, dining time was changed from 08 : 00 to 07 : 30 for breakfast and from 17 : 30 to 18 : 00 for dinner. Statistical data analyses were completed using the SPSS 11.0 program. The results can be summarized as follows: The goal of QI was to improve food service by raising the score of "Satisfaction with Offered Menus" from 3.49 before QI to 3.55 after QI and differentiating nutrition service at the VIP ward. The score of "Satisfaction with offered menus" after QI was 3.56, and services related to the VIP ward were 7 dishes per meal, meal round once per day and the use of a napkin for a spoon in setting the table. In addition a variety of dishes were used in order to heighten the visual effect. Among the 10 items included on the patient satisfaction questionnaire, 8 items showed higher scores before QI. "Taste of meals" (p < 0.05), "Satisfaction with offered menus" (p < 0.05), "Kindness of meal serving assistants" (p < 0.05) and "Cleanliness of clothes & features" (p <0.05) of VIP ward were significantly higher than those of a general ward.

The Dietary Habits and Preference of Foods on Skin Types of Woman College Students (여대생의 피부유형에 따른 식생활습관 및 식품기호도)

  • This study seeks to classify the skin types and determined the relation between the dietary habit and preference of foods targeting college women in Daegu and Gyeong-Buk Province. Skin types of the subjects were 31% of combination skin, 25% of dry skin and 22% of normal, oily skin. College women mostly had two meals a day, and those who had less frequent meals developed more combination skin. Many of them did not exercise, and women with normal skin who did not exercise showed the lowest at 13.9%, supporting the significance (p<.05). It was exposed that don't have breakfast and have irregular meal and don't have easy meal in all skin types. Instant foods was exposed that ingested the most in dry skin and the least in oily skin, supporting the significance(p<.05) and fruit or vegetable ingested much in dry skin. It was exposed that considered atmosphere at meal and meal helps in health in all skin types, normal skin type considered balanced diets the most and supporting the significance(p<.01) Food preference in all skin types showed the strongest in drinks and showed strong in greenish yellow vegetables, fruits, confectioneries, drinks, milk and dairy goods. On the other hand, it showed low in nuts and salted fishes. In sum, regular and balanced meals give the skin a healthy status, and intake of protein, vitamins and minerals has impact on the skin status. Thus, sufficient quality nutrition is crucial in staying a healthy skin.

Content analysis of daily tooth cleaning service records by caregivers in a long-term care facility (노인요양시설에서 요양보호사가 제공하는 일상적 구강청결관리 기록지의 내용분석)

  • Objectives: The purpose of the study was to investigate the content analysis of daily tooth cleaning service records by caregivers in a long-term care facility. Methods: The data were analyzed by qualitative research based on content analysis of the daily records of the processes and results of daily tooth cleaning service. Twenty caregivers provided tooth, gum and denture cleaning service after breakfast, lunch, and dinner to 48 elderly residents. The study lasted about two weeks(from August 4 to August 20, 2014). The researcher reconstructed the language by repeatedly reviewing the caregivers statements in the records. The content categories were derived from the records through a reiterative manual comparative analysis. Using constant comparison method, reconstructed meanings were incorporated into various meanings and reanalyzed by final categories called as analytic coding. In order to validate the reliability, 6 times of discussion made the common meanings through a master's degree student and a dental hygiene professor. Results: The caregivers identified lack of understanding and ability to recognize the functional physical and mental changes in the elderly. The elderly had difficulty in recognizing silent communication and daily tooth cleaning. The caregivers were so strenuous in taking care of the daily tooth cleaning service for the elderly. At last, they gave up the daily tooth cleaning service and took on it to the guardians. They found that there was no social supporting network for oral health of the elderly residents. Conclusions: Caregivers had insufficient understanding of the functional physical and mental changes in the elderly residents, and they had difficulty providing daily tooth cleaning service to the elderly due to poor skill and abilities.
