Health-related Factors and Nutritional Status in Shift-workers at Coffee Shops - Focused on Single Women in Twenties in Seoul - (커피전문점 교대근로자의 건강관련요인과 영양상태 조사 - 서울지역 20대 미혼여성을 중심으로 -)

  • This study examined the health-related factors and nutritional status of 89 single women workers in their 20's who work night and day shift at the take-out coffee shops and the 89 single women office workers. The results of the study are summarized as follows: The shift-workers showed lower rate of office tenure (p < 0.001), income (p < 0.001), job satisfaction (p < 0.05), weight (p < 0.05), and higher rate of weight change (p < 0.001) than the non shift-workers. The shift-workers showed lower rate of of exercise (p < 0.001), sleeping hours (p < 0.01), and good health condition (p < 0.01), and higher rates of smoking (p < 0.001), presence of disease (p < 0.001), gastric and intestinal illnesses (p < 0.001) than the non shift-workers. More than 88.8% of the shift workers answered that they ate alone (p < 0.001). The shift workers showed lower rate of regularity of meal (p < 0.001), balanced diet (p < 0.001), and mealtime (p < 0.001), and higher rate of skipping breakfast (p < 0.001), consumption of salty and spicy food (p < 0.001), and overeating (p < 0.01) than the non shift-workers. The shift workers consumed (p < 0.001) less frequently rice, soup and side dishes, and more frequently noodles and snack, bread than the non-shift-workers. The shift workers showed lower rate of consumption of beer (p < 0.01), and higher rate of consumption of coffee (p < 0.001), tea (p < 0.01) and soju (p < 0.001) in once a week or more intakes than the non-shift-workers. The shift workers showed higher rate of consumption of carbohydrates (p < 0.05), and calcium (p < 0.05) and lower rate of consumption of protein (p < 0.05), fiber (p < 0.05), vitamin C (p < 0.05), and folate (p < 0.05) intakes than the non-shift-workers.

Relationship Between Dietary Consciousness of Housewives and Their Attitude of Households - in Puchon City - (부천 지역 주부의 식문화 의식과 가사행동과의 관계)

  • The purpose of this study was to investigate the understanding of dietary consciousness and define the relationship of housewife attitude of middle class residence in Puchon city. Questionnaires were collected 282 housewives in Puchon city. Data were analysed with SAS software package for F-test and Duncan's multiple range test. The main findings of the research were as follows: The food related perchasing place was supermarket(91%), ordinary market(77%), department store(68%), special store(58%), common purchase(37%), convenience store(22%) and communication marketing(13%). The clothing perchasing place showed in the order of department store(71%), special store(65%), ordinary market(52%), common purchase(23%), supermarket(18%), convenience store(15%) and communication marketing(10%). Dietary cosciousness of housewife on foods, clothing, and housing related items was significantly different, specially 20's housewife was concerned about foods and 30's housewife was housing(p<0.05). The behavior consciousness of housewife was significantly different between age, education level, family type and income(p<0.05). Highly educated housewife showed a tendency to spend money and times for food related fields, and to buy clothes in a department store for breaking stress(p<0.05). However, low education level and extended family type housewife got more conservative consciousness on traditional fermented food making(p<0.05). Most of young housewife answered that the making of bread, cookies, soybean paste soup, children clothes and handicraft led to positive consciousness(p<0.05). Especially high life satisfaction housewife preferred to make a dosirak(lunch box), dinner, children clothes and handicraft(p<0.05).

Health Risks in relation to Dietary Changes in Korean Americans (재미 한인의 식생활 변화와 관련된 건강 상태 연구)

  • Differences in dietary intake of Korean Americans (KA) by the length of residence in the U.S. were studied in relation to health and disease patterns in Michigan. Of 1860 questionnaires mailed, 637 (34.3%) responded with demographics, anthropometrics, self-reported disease patterns, lifestyle, and dietary patterns (93-item FFQ developed for KA). Complete responses were available for 498 people (263 men,253 women, aged 30-87 yr), who were then divided into three groups based on the number of years lived in the U.S.: 15y, 16-25y, 26y. Age-adjusted weight, height, BMI, and waist to hip ratio were within the normal ranges and did not differ among the three groups. Chronic diseases frequently reported in men and women (age-adjusted) included hypertension (14.4%, 14.1%), digestive diseases (5.4%, 8.5%), diabetes (3.6%,4.9%), and arthritis(3.3%, 12.5%), respectively. The length of residence in the U.S. was inversely associated with the age-adjusted prevalence of digestive diseases (12.4%, 6.5%, 0.4% in men, 13.0%, 11.7%, 0% in women). The length of residence was positively associated with health consciousness, receiving regular health care, taking supplements regularly, and exercising, while inversely related to smoking. The majority favored American foods for breakfast and Korean foods for dinner. Foods frequently consumed included cooked rice (w/other grains). kimchi, coffee (w/cream and sugar),bread (white and dark), citrus juice, milk (low fat and skim), lettuce and cucumber, apple, seaweed, and soda. Intake frequency of the Korean starch food group was inversely associated with the length of residence for both men and women (p<0.001), but not with the American starch food group. Fat intake did not differ by the length of residence in the U.S. The dietary changes were associated with the length of residence and chronic disease patterns for the first generation of KA, which should be further examined 'for the subsequent generation of KA.

Bread Baking Characteristics of Korean Wheat Varieties seen from their Amino Acid Composition (아미노산 조성(組成)으로 본 국산소맥(國産小麥)의 제(製)빵특성(特性))

  • Protein content and amino acid composition of three prospective Korean wheat varieties (Youngkwang, Wonkwang and Chokwang) were studied from the viewpoint of baking performance. 1. Protein contents of Korean varieties were Less than 10% which were relatively lower than the U. S. baking standard. These levels were considered insuffcient for best baking performance. 2. Compared to U. S. baking standard, Korean wheat varieties showed slightly lower level of glutamic acid, which is considered to play an important role in baking performance of flour. Approximately 25% decrease in glutamic acid content was observed in Korean varieties when the absolute amount of glutamic acid per unit sample size was compared. 3. Korean wheat varieties showed similar levels of proline and cystine, slightly higher levels of lysine, ammonia and aspartic acid; and slightly lower level of essential amino acids compared to the U. S. baking standard. 4. Protein content and amino acid composition of Korean wheat varieties were considered to be intermediate of U. S. baking and cookie standards. From this viewpoint, Youngkwang showed the greatest potential for best baking performance among Korean varieties.

Effects of Ascorbic Acid and L-Cysteine on Rheological Properties of Wheat Flour and on No-time Dough Process (아스코르브산과 시스테인이 밀가루의 리올로지 성질과 노-타임 반죽법에 미치는 영향)

  • No-time dough process utilizing ascorbic acid as an oxidant was investigated. The farinograph absorption was increased as the amount of L-cysteine increased, while stability and peak time decreased up to 40 and 30 ppm of L-cysteine, respectively. Extensibility of the dough was increased with the increment of L-cysteine, but the ratio of resistance to extensibility was significantly decreased. At the same level of L-cysteine, the addition of ascrobic acid by 1.5 times decreased the farinograph absorption. However, the stability and peak time remained relatively unchanged upon addition of ascrobic acid. Extensibility and resistance of dough were respectively decreased and increased in the presence of both L-cysteine and ascorbic acid. In the range of 30-50 ppm of cysteine, the mixing time decreased and the baking absorption was increased by 1% as the cysteine was increased by 10 ppm. The ascorbic acid had no effects on absorption and mixing time. Bread produced by no·time dough process had no break and shred. The optimum concentrations of L-cysteine and ascorbic acid for no-time dough process were 40 and 100ppm, respectively.

Comparison of Food and Nutrient Consumption Status between Displaced North Korean Children in South Korea and South Korean Children (한국 거주 북한이탈 어린이와 남한 어린이의 식품 및 영양소 섭취 현황 비교)

  • Many displaced North Koreans (NK) are living in South Korea (SK); however nutrition research with the displaced NK is limited. This study examined food and nutrient consumption status of displaced NK children (6-18 year-old) currently living in SK. A total of 154 children were recruited, and a pre-tested dietary behavior questionnaire, food frequency questionnaire, 24-hr recall method were used. Sex- and age-matched SK children (n = 462) randomly selected from 2009-2010 Korea National Health and Nutrition Examination Survey were used as the comparison group. This study found that more NK children skipped breakfast (37%) and dinner (11%), and ate breakfast (38.8%) and dinner (18.2%) without family members than SK children. Many NK children reported that they rarely ate bread, rice cake, hamburger, pizza, fried food, candy. NK children consumed significantly less energy and nutrients (except calcium) and obtained more energy from fat and protein than SK children. Overall index of nutrient quality in NK children, however, was generally good. Length of stay in SK and breakfast skipping rates were significantly associated with lower diet quality. Therefore, nutrition education with displaced NK children should target those who recently came to SK. How to incorporate "new" foods, generally high in energy, sugar, or fat, in healthy ways and importance of breakfast should be emphasized. The growth patterns of the displaced NK children who were born and raised in food-deprived environments and will grow in food-affluent environments of SK should be monitored for health promotion of the NK children and for nutrition policy of the future united Korea.

Relationship between Sweet Preferences and Motivation Factors of 2nd Grade Schoolchildren (초등학교 2학년 일부 아동의 단맛 선호와 동기 요인과의 관련성)

  • This study was implemented to understand the motivation factors for $2^{nd}$ grade schoolchildren that effect on their preference for the sweet taste. The subjects included were 118 children (59 boys and 59 girls) and 118 children's guardians, from one elementary school. Children participated in sweet preference test and questionnaire survey with researcher's guidance provided in the school. Children's guardians were asked to fill out the questionnaire via home-letters. The results were as follows: 59% of the children preferred the cocoa beverage with the highest concentration of sugar among five cocoa beverages (0%, 2.5%, 5%, 7.5%, and 10% of sucrose/milk volume). The variables consisted of affective attitude, cognitive attitude, self-efficacy, parenting style, and sweets frequency. According to the analysis, sweet preferences were correlated with children's affective attitude (r=-0.207, p<0.01), self-efficacy (r=-0.288, p<0.01), frequency of drinking carbonated beverage (r=0.272, p<0.01), preference for yogurt (r=0.184, p<0.05), and preference for sweet bread (r=0.226, p<0.05). These results indicated that children can be more affected by affective attitude than cognitive attitude, and self-efficacy can be an important motivation factor to control the eating behavior related to sweets. Therefore, nutrition educators need to focus on developing various methods related to increasing self-efficacy for encouraging and motivating healthy eating behavior in children.

The Effect of a Community-Based Nutrition Intervention Program on Dietary Behavior and Nutritional Status of Low-Income Elderly Women in Gwangju City (광주지역 일부 저소득층 여자노인에서 지역사회 영양중재 프로그램 적용에 따른 식행동 변화 및 영양상태 개선 효과)

  • This study was conducted to measure the effect of a community-based nutritional intervention program on dietary behaviors and nutrient intakes of low-income elderly women in Korea. The subject of the study was a group of 88 elderly women using the free meal service in Dong-gu, Gwangju city in Korea. The study was carried out from April to July 2009, and the pretest, application of nutrition education, and post-test were applied in each stage. This community-based nutrition intervention program consisted of snack supplement and nutrition education provided three times a week and 36 times in total. The nutrition education was led by the nutritionists and professionals using various educational media. Snack supplement included were milk, soymilk, carrot juice, bread, yogurt, and bananas. The result of pretest showed that the nutrient intakes of the subjects were much below the Recommended Nutrient Intake (RNI) level of Dietary Reference Intake for Koreans. Comparison of the dietary behavior score and nutrient intakes before and after the nutritional intervention program indicated that the food behavior score increased from 3.1 to 5.6 (P<0.001) and intake of energy, protein, carbohydrate, thiamin, niacin, vitamin C, iron, and potassium of the subjects all increased significantly (P<0.05). Mean Adequacy Ratio (MAR) of their nutrient intakes was also improved from 0.53 to 0.64 (P<0.01). These results indicated that the nutrition intervention program conducted in this study was effective in improving dietary behavior and nutrient intakes of elderly women in local community.

A Study of Residents Consciousness of Local Food Menus Excavation and Development in Gyeongju Areas (경주지역 향토음식 발굴 및 개발에 대한 주민의식 연구)

  • This study was performed by questionnaire to investigate viewpoints regarding menu excavation and development of native local foods of adults in the Gyeongju area, classified by gender and age. The subject population consisted of 253 citizens(108 males and 145 females) living in Gyeongju. The findings are summarized as follows: The residents highly desired the 'enrichment of service and clean hygiene of local food restaurants', 'active marketing', 'necessity of excavation and development at the present time', and 'development with regional unique characteristics' with regard to the development of the local food choices in Gyeongju, whereas they did not particularly desire 'excavation development of cooking that often is served at family event(birth, marriage, death etc..)', nor 'guidance and enlightenment for many citizens'. The most influential obstacle hindering the development of Gyeongju local food was 'administration support deficiency of connection group agency', followed by 'interest deficiency about local food of restaurant business managers and citizens, different taste of each restaurant', and 'tradition cooking itself is insufficient in Gyeongju'. The most reasonable development menu for native local foods of the Gyeongju area was 'mushroom & beef hot pot(beoseothanu-jeongol)', 'glutinous barley bread(chalborippang)', 'mushroom & bulgogi hot pot(beoseot-bulgogi-jeongol)', 'grilled beef(hanu-sutbul-gui)', and 'grilled minced beef ribs(hanu-tteok-galbi)' in that order. On the other hand, the excavation and development validity scores for 'black goat soup(heukyeomso-tang)', 'gulfweed soup(mojaban-guk)', and 'parboiled octopus(muneo-sukhoe)' were very low.

Study on the Activity of Oral Health Instruction of First Grade in an Elementary School (초등학교 1학년 학동들의 구강보건지도활동 지침기준을 위한 조사연구)

  • This research reached conclusions to prepare indications for activity of Oral health Instruction of the first grade in an elementary school by several items of Oral examination and investigation. 1. The frequency of brushing their teeth of the children that were examined was generally two times a day(64.42%) : it showed that it was the highest after breakfast (30.08%), and hardly any brushed their teeth after lunch(6.36%). 2. Most of the toothbrushes used were for children(97.46%), and the proper time to change their toothbrushes was less than two months(65.25%), but 31.37% of them used their toothbrushes for more than three mouths. 3. They usually used toothpaste. Those using toothpaste were 64.41%. By the way, for adults was the percentage 31.36%, and for those including fluorine it was 74.58%. 4. They mainly ate cookies, beverages, (coke, cider, etc.), fruit, bread, milk and so on for their dessert. 5. Most students had dental plaque (95.76%) : 14.4% of then had calculus and 23.73% had gingivitis. 6. The results of disclosing showed that twelve anterior teeth were colored. The Mandible was comparatively more severe than the Maxillary in the colored -degree. the low -right - laterial incisor was the most severe and the right central incisor was the most severe of the Maxillary. 7. The pressure of tooth - brushing showed that half of the students brushed their teeth severely. The width of the brushing movemtnts was more than 8mm for 51.70%, 5-8mm for 33.05% and less than 5mm for 15.25% Therefore 66.5% of them were shown to move their brushes insufficiently or oppositely. 8. When they brushed, the children who opened their mouth while brushing were more than those who kept their mouth closed.
