밀가루의 이화학적(理化學的)인 성질(性質) 및 냉동(冷凍)반죽의 안정성(安定性) (Studies on Rheological Properties of Dough and Stability of Frozen Dough)

  • 냉동발효(醱酵)빵 제조에 사용되는 경질(硬質) 밀가루의 이화학적(理化學的) 성질과 straight no-time method로 조제한 반죽의 동결안정성(凍結安定性)을 검토(檢討)하였다. 밀가루는 수분이 14.0%, 회분(灰分)이 0.48% 정도였고 단백질이 13.15%, 건조 gluten이 13.43%였다. Farinograph성적은 반죽의 development time이 5.5분, 흡수율(吸水率) 62%였고, amylograph성적상의 최고점도(最高粘度)는 500BU정도였다. Extensigraph의 특성중(特性中) 신장저항성(伸張抵抗性)은 시간이 경과할수록 증가하였고, 신장성(伸張性)은 감소(減少)하였다. 이상(以上)의 이화학(理化學)이 성질(性質)로 미루어 공시(供試)밀가루는 제(製)빵에 아주 적합하였다. 동결저장기간과 발효시간이 발효력(醱酵力)에 미치는 영향을 고려할 때, 반죽온도를 $20^{\circ}C$로 조정하는 것이 반죽의 냉동장해(冷凍障害)를 억제하고 냉동안정성(冷凍安定性)을 유지하는데 효과적(效果的)이었다.

Biofunctional Properties of Enzymatic Squid Meat Hydrolysate

  • Squid is one of the most important commercial fishes in the world and is mainly utilized or consumed as sliced raw fish or as processed products. The biofunctional activities of enzymatic squid meat hydrolysate were determined to develop value-added products. Enzymatic squid hydrolysate manufactured by Alcalase effectively quenched 1,1-diphenyl-2-picrylhydrazyl radical, hydroxyl radical, and hydrogen peroxide radical with $IC_{50}$ values of 311, 3,410, and $111.5{\mu}g/mL$, respectively. Angiotensin I-converting enzyme inhibitory activity of squid hydrolysate was strong with an $IC_{50}$ value of $145.1{\mu}g/mL$, while tyrosinase inhibitory activity with an $IC_{50}$ value of 4.72 mg/mL was moderately low. Overall, squid meat hydrolysate can be used in food or cosmetic industries as a bioactive ingredient and possibly be used in the manufacture of seasoning, bread, noodle, or cosmetics.

일반 메밀과 쓴 메밀 가루를 첨가한 찜 케이크의 품질 특성 (A Study on Quality Properties of Steamed Cake Added with Common and Tartary Buckwheat Flour)

  • This study was conducted to compare the quality of steamed cakes supplemented with common buckwheat(F. esculentum Miench.) and tartary buckwheat(F. tartaricum Gaetn). A proximate analysis, and rutin content, color value, texture characteristics and sensory evaluations were performed, In the proximate analysis, the steamed buckwheat as opposed to raw buckwheat, appeared to afford higher values for most of the evaluated items. The rutin content of the tartary buckwheat was over 14 times higher than that of common buckwheat and remained about 58% higher after steaming. The lightness of the steamed cakes was in the following order: control(wheat flour only), with the addition of common buckwheat, and with the addition of tartary buckwheat. The redness and yellowness increased in the following order: tartary buckwheat, common buckwheat, control steamed cake. There were no significant differences in the springiness of steamed cake between the various samples including the control: therefore, resulted in good quality during bread-making. In the sensory evaluation, on increasing the amount of tartary buckwheat addition the score for entire taste increased compared with common buckwheat and the control and also had positive results for all other items, including flavor, color, softness and moistness. This study has suggested the ability to make steamed cakes containing tartary buckwheat flour.

쌀 및 밀 복합분의 물리적 성질 및 제빵시험 (Rheological and Baking Studies of Rice-Wheat Flour Blends)

  • 밀가루에 멥쌀(밀양 23호) 또는 통일찹쌀 가루를 10, 20 및 30% 대체한 복합분의 물리적 성질 및 제빵 적성을 검토하였다. 밀-밀양 복합분은 밀-찹쌀 복합분 보다 높은 점도를 보였다. 복합분의 파리노그라프 안정성은 밀가루 보다 짧았으나 최적 반죽발전 시간은 비슷하였다. 제빵 적성은 밀-밀양 복합분이 다소 좋은 결과를 보였고 대체로 밀가루(멥쌀 또는 찹쌀)를 20%수준까지는 대체할 수 있을 것으로 보인다. 10%수준으로는 밀가루 빵에 크게 손색이 없는 제품이 가능하였다.

A Study on Spirunia as a Protein Alternative for Aging Society

  • Spirulina is known to be more useful abroad than in Korea because it contains more protein than Chlorella, the same microalgae. In the past, sources of animal protein were diverse, but since it takes a long time to receive protein along with environmental pollution, we thought that spirulina could attract attention as a new protein source. In this study, application cases were analyzed in foods in the fields of acorn cake, tofu, dumpling skin, fish cake, white bread, pound cake, salad dressing, and yogurt and so on. As a result of centrally analyzing antioxidant and sensory evaluation, it was confirmed that the results were effective enough to develop products in tofu, dumpling skin, fish cake, and pound cake. It is thought that development of food in other fields will be possible if an additive amount that can match the consumer's preference is found by supplementing the mixing ratio. If it is used as a main raw material for existing food rather than as a raw material for health functional food, consumer preference can increase and quality can be further improved, and it can be suggested as a good alternative for an aging society.

백련차 분말을 대체한 우리밀 혼합분과 반죽의 특성 (Rheological Properties of Korean Wheat Composite Flour and Dough with Nelumbo nucifera G. Tea Powder)

  • In this study, korean wheat composite flour and dough were prepared with 1.5, 3.0, 4.5, and 6% Nelumbo nucifera G. tea powder(NNTP). The samples and a control were then compared qualitatively in terms of moisture, protein, ash, and wet gluten content. The farinogram, amylogram, and extensogram characteristics of the dough were also examined, in order to determine the optimal ratio of NNTP for the formulation. According to our results, the moisture content of the flour decreased with increasing NSPP content, whereas its protein and ash content, resistance, and R/E ratio at 135 min of extensogram increased. The NNTP samples had a significantly higher water absorption and weakness of farinogram and maximum resistance at 45, 90, and 135 min. Additionally, samples had an R/E ratio at 45 min of extensogram, 90 min less than the control group. However, stability of the farinogram, temperature of maximum and maximum viscosity of the amylogram, and extensibility of the extensogram showed the reverse effect. The control and NNTP samples showed significant differences in gelatinization beginning temperature of the amylogram, while development time of the farinogram was not significantly different. With regard to the extensogram characteristics of the dough, the area of the control and 1.5% NNTP increased with increasing testing time, whereas at 3.0, 4.5 and 6.0% NNTP, extensibility, and resistance, maximum resistance, and R/E ratio of control and NNTP samples decreased. An area of 3.0, 4.5 and 6.0% NNTP and extensibility of 1.5% NNTP were not significantly different among the testing times. In conclusion, these results show that 1.5% NNTP may prove very useful as a substitute for korean wheat flour where the production of korean wheat white bread is concerned. It may also provide good nutritional and functional properties.

  • Rice(Oryza stiva L.) is a major cereal food providing nourishment to over half of the world's populations and was considered only as a source of energy. However, The recent many researches have been made to suggest that rice may relate to prevention chronic disease and health-promoting properties such as postprandial glucose response, hypocholesterolemic effect and blood pressure-lowering effect. There has been numerous observation supporting that rice has hypocholesterolemic effect. Rice, rice bran, rice bran oil and unsaponifiable matter of rice bran oil reduced plasma cholesterol in rat, hamster as well as human. Components of rice showing hypocholesterolemic effect include dietary fiber(hemicellulose, phytic acid). protein, ${\gamma}$-oryzanol, $\beta$-sitosterol, and tocotrienols. Crapo et al has been studied that the effect of various of starchy foods on the postprandial blood glucose and insulin responses in healthy and diabetic humans. The results showed that rice had lower blood glucose and insulin responses compared to potato, bread and dextrose. The different physical forms in the same starch also produce the different postprandial glucose and insulin responses. In recent years, several studies have shown that some components of rice have potent antioxidant activity against Fe$^{2+}$ -ascorbate induced lipid peroxidation in rat liver microsomal membranes. Cell culture and animal studies have shown that some components of rice have inhibitory effect on the growth and proliferation of several types of human cancer cell. It was also reported that the methanol extract of brown rice has antimutagenic activity against various mutagens. In addition, the pepsine hydrolysate from rice protein is reported to inhibit angiotensin converting enzyme activity. GABA (${\gamma}$ - aminobutyric acid) and GABA enriched rice germ is also effective for lowering blood pressure and triglyceride levels.s.

Agrobacterium spp. R259 KCTC 10197BP로부터 생산된 ${\beta}-glucan$ 고함유 식빵 반죽의 특성 (Baking Qualities of Bread Dough Substituted with High Amount of ${\beta}-Glucan$ from Agrobacterium spp. R259 KCTC 10197Bp)

  • 기능성 식품소재인 ${\beta}-glucan$을 식빵재료의 10, 20 및 30% 첨가하여 제조한 반죽의 이화학적 특성을 분석하였다. ${\beta}-Glucan$ 첨가량이 많을수록 반죽형성시간이 증가한 반면 발효에 걸리는 시간은 단축되었다. 반죽의 발효팽창력은 ${\beta}-glucan$ 20% 첨가까지 ${\beta}-glucan$ 첨가량이 증가할수록 증가하였고 ${\beta}-glucan$ 30% 첨가시에는 유의적으로 감소하였다. 반죽의 pH는 대조군의 경우 발효과정을 거치면서 낮아지는 경향을 나타내었으나 ${\beta}-glucan$ 첨가군은 다소 증가하였다. 반죽의 물성 중 탄력성은 ${\beta}-glucan$의 첨가량이 증가함에 따라 증가하고 경도는 감소하였다. 검성은 ${\beta}-glucan$ 10 및 20% 첨가군의 경우 대조군과 차이가 없었고 ${\beta}-glucan$ 30% 첨가군은 유의적으로 낮았다. 발효과정이 진행됨에 따라 반죽은 탄력성, 검성, 경도 및 응집성이 모두 감소하는 경향을 보였으나, ${\beta}-glucan$ 첨가에 따른 유의적인 변화는 없었다. Amylogram에서 호화개시온도와 최고점도에 달하는 온도가 모두 높아져 ${\beta}-glucan$이 호화를 지연시켰으며, setback과 consistency는 감소하여 ${\beta}-glucan$이 식빵노화를 지연시켜 줄 수 있음을 암시하였다. 반죽의 초미세구조를 관찰한 결과 ${\beta}-glucan$ 30% 첨가시 ${\beta}-glucan$ 입자가 반죽에 흡수되지 못하였음을 알 수 있었다. 따라서 제빵적성에 적합한 ${\beta}-glucan$ 첨가율은 20% 이하가 바람직한 것으로 보인다.

벼에서 밀 고분자 글루테닌 단백질(TaGlu-Ax1) 발현을 통하여 쌀가루 가공적성 증진을 위한 마커프리(marker-free) 형질전환 벼의 개발 (Development of Marker-free TaGlu-Ax1 Transgenic Rice Harboring a Wheat High-molecular-weight Glutenin Subunit (HMW-GS) Protein)

  • 밀의 고분자 글루테닌 서브유닛[high molecular-weight glutenin subunit (HMW-GS)]은 밀가루의 성질을 결정하는데 가장 중요한 요소이며 가공적성을 나타내는데 중요한 역할을 수행한다. 우리는 Agrobacterium 동시 형질전환법을 이용하여 한국 밀 품종인 ‘조경’으로부터 밀 HMW-GS을 암호화하는 TaGlu-Ax1 유전자를 가지는 marker-free 형질전환 벼를 생산하였다. TaGlu-Ax1 유전자의 종자 특이적 발현을 위하여 밀에서 존재하는 TaGlu-Bx7 유전자의 자체 프로모터를 벡터 내에 삽입하였다. 동시 접종을 위해서 오직 TaGlu-Ax1 유전자와 hygromycin phosphotransferase II (HPTII) 저항성 유전자만으로 구성된 두 종류의 발현 카세트를 독립적으로 Agrobacterium EHA105에 도입하였고, TaGlu-Ax1와 HPTII가 도입된 각각의 EHA105 Agrobacterium을 3:1 비율로 혼합하여 벼 캘러스에 접종하였다. 210개의 HPTII 저항성 형질전환체 중에서 벼 게놈에 TaGlu-Ax1과 HPTII가 모두 삽입된 20개의 형질전환 라인을 획득하였다. TaGlu-Ax1와 HPTII가 벼 게놈에 도입된 것을 Southern blot을 통해서 다시 확인하였다. 형질전환 벼 T1 세대의 종자에서 밀 TaGlu-Ax1 유전자가 전사와 번역되어 오직 TaGlu-Ax1만을 가지는 marker-free 식물체를 T1세대에서 성공적으로 선발할 수 있었다. TaGlu-Ax1 유전자가 발현되는 marker-free 형질전환 식물체는 야생형(wild type)과의 표현형 차이는 없었다. 형질전환 벼의 쌀가루의 제빵적성을 비교하였을 때 TaGlu-Ax1 유전자만이 발현되어서는 제빵적성이 더 나아지지 않았다. 그러므로 더 많은 밀 고분자 및 저분자 글루테닌, 글리아딘의 유전자의 집적과 조합이 쌀가루 가공적성을 증진시키는데 필요하다. 결론적으로 TaGlu-Ax1 marker-free 형질전환 벼는 쌀가루 가공적성을 증진시키는데 좋은 재료로 사용될 것이다.

단팥의 저장 중 물성변화에 관한 연구 (A Study on Rheological Changes of Redbean Jam druing Storage)

  • 단팥 및 단팥빵의 저장 기간에 따른 물성의 변화를 기초로 하여, 수분 함량을 4., 45, 50%로 조절하고, 그 각각에 한천 0, 0.1, 0.2%를 첨가하여 단팥을 제조하여, 5일 동안 저장하면서 매일 단팥의 보수력, 단팥 빵에서 수분 이동의 변화, 단팥빵의 기호도 등을 비교 분석한 결과는 다음과 같았다. 1. 단팥의 보수력은 고형분과 한천의 함량이 많아짐에 따라 강해졌다. 2. 빵에서 단팥의 수분이동은 고형분과 한천함량이 많을수록 감소하였다. 3. 관능검사에 있어서 색상, 향, 기호도, 맛은 저장 1일째 까지는 증가하였으나 2일째부터는 감소하였다.(P<0.01) 4. 쓴맛의 차이는 느끼지 못하였고 수분함량은 45%를, 한천의 농도는 0.1%를 가장 선호하였고 저장기간에 따라서는 1일째가 가장 좋았다.
