This study was conducted to assess the nutrient intake and diet quality of college students in Seoul. Dietary survery data were obtained by 24-hour recall method from 774 students, 553 males and 191 females. Mean daily intake of energy was 2,480kcal with 56.4% of energy intake from carbohydrate, 14.6% from protein, and 25.5% from fat. Percentage of fat was higher than mean values of National Nutrition Survey(NNS), adults in rural area or younger students in previous studies. Mean daily intakes of calcium and vitamin A did not meet RDA levels in both sexes and intake of iron in females was insufficient to meet RDA level. The percentage of animal food to total food intake was 25% and consumption of meat, beverage and milk group was higher than those of National Nutrition Survey(NNS). When the consumption of 5 major food groups(grain, meat, milk, fruit, vegetable) were evaluated, 22% of students consumed all 5 groups and 47% consumed 4 groups, which show more balanced food group intake than adults in rural area. Food groups which were omitted frequently were milk and fruit. These results show that college students in Seoul consume better diet than subjects of National Nutrition Survey(NNS) or adults in rural area. However, high fat intake, low calcium and vitamin A intake and low iron level in women were observed. Majority(78%) of students had at least one food group omitted in their diet. Appropriate nutrition education may help to improve the quality of diet in these students.
Recent studies have evaluated the association between specific beverage intake and metabolic risks in adults. However, more evidence is needed to examine the association between the Healthy Beverage Index (HBI) and metabolic factors. Therefore, this study investigated the relationship between HBI and metabolic factors in adults. In this cross-sectional study, 338 overweight and obese individuals living in Tabriz, Iran were selected. Data on beverage consumption, demographics, physical activity, and anthropometric characteristics were evaluated using validated standard protocols. The predefined HBI was calculated based on previous studies. The mean value of HBI index among all of the participants was 59.76 ± 6.51. Those at the higher HBI scores had significantly lower waist circumference, waist-to-hip ratio, fat mass, and weight (p < 0.05). HBI and triglyceride scores also had a significant relationship. It has been shown that at higher HBI scores compared to lower scores, high-density lipoprotein cholesterol levels increase while homeostatic model assessment for insulin resistance, low-density lipoprotein cholesterol, total cholesterol, and blood pressure decrease. HBI scores higher among Iranian adults were associated with a better chance of losing weight and weight loss and a better lipid profile, and lower blood pressure. Therefore, HBI can be a useful and helpful tool for assessing the overall quality of beverages adults consume. However, further studies are warranted to confirm the possible health effects of healthy beverage index.
Purpose: The purpose of this study was to verify the correlation analysis between fluid intake on skin hydration and pH of college students. Methods: The subjects were 129 female nursing students in D city. Data were collected by a self-administered questionnaire, using a skin moisture checker and skin pH meter on faces, hands, and feet. The collected data were analyzed by descriptive statistics, t-test, ANOVA, and Pearson correlation analysis, using SPSS WIN, 20. Results: The daily fluid intake was composed of 57% pure water, 21% caffeinated beverages, 22% non-caffeinated beverages. There were significant differences in average skin hydration on the three body parts according to pure water, caffeinated beverages, and non-caffeinated beverages; however, there was no significant difference measured by fluid intake. There was a significant positive correlation between fluid intake and skin hydration: between pure water and skin hydration. There was significant negative correlation between caffeinated beverages and skin hydration: between non-caffeinated beverages and skin hydration. Conclusion: The results suggest that fluid intake, pure water, caffeinated beverages, and non-caffeinated beverages have an effect on skin hydration and pH. Therefore, it is good to increase the amount of fluid intake but, it is recommended to increase the amount of intake of pure water rather than beverages to improve skin status.
Objectives: The study was performed to investigate the relationship between snack intake and oral health behavior in middle school students in Gyeonggi-do area. Methods: The survey questionnaire was recorded by middle school students from July 6 to August 24, 2011. The questionnaire included items on general characteristics, snack intake status, and oral health behavior. Among collected survey questionnaire, a total of 620 questionnaires (320 males and 300 females) were analyzed using SPSS 15.0 program. Results: Frequencies of snack and beverage intakes were significantly higher in males than in females (p < 0.001). Oral health behavior was significantly higher in students with lower snack intake compared to those with higher or average snack intake (p < 0.05). Oral health behavior for tooth brushing and toothbrush care were significantly higher in females than in males (p < 0.05). Conclusions: Oral health behavior score that reflected better oral health of the subjects were higher as the snack intake was lower. Oral health behavior score was higher in females than in males. We conclude that the contents for oral health and nutrition education focused on snack intake need to be developed to induce changes in oral health behavior in middle school students.
The purpose of this study is to investigate the current situation of children's milk intake at home and school in order to identify the better way to help children's milk intake. For this, 895 elementary students participated in this study through the questionnaire developed by researchers. Conclusions drawn from the results of this study are as follows : 1. Various kinds of milk should be provided for children both at home and school so that they can choose an appropriate milk for themselves. 2. Teachers at school should help children's milk intake not through forcing them but through appropriate educational approach. 3. Milk distribution system and ways of refrigeration of milk in school should be improved. 4. Nutrition education should be implemented for children so that they themselves choose milk as favorite beverage.

In order to investigate the adolescent's beverage drinking pattern and its related ecological factors, a questionnaire survey was conducted with the subjects of 920 middle and high-school students,450 boys and 470 girls, residing in 4 cities of the Chungnam area. Of the subjects 65% liked, or liked very much, beverages and only 3.7% did not like beverages. They drank beverages 4.3 $\pm$ 4.0 times a week on average, but 10.4% of them drank beverages more than twice a day. Male students drank more frequently than the females. The intake frequency of carbonated drinks was 1.7 $\pm$ 2.3 a week which was about 40% of the total beverages. However, more students drank mainly ion beverages (33.6%) than carbonated drinks (28.7%). As the students took more balanced food and ate more regularly, their beverage drinking frequency decreased and those taking carbonated drinks also tended to decrease. The more frequent the students took fast food, the more frequent they drank carbonated beverages. The drinking frequencies for beverages or carbonated beverages were also less in students eating cooked rice with sidedishes as breakfast than in students eating others. The drinking frequency for carbonated drinks showed significant correlations with the students' activities such as the time spent using computers and watching TV got longer, the drinking frequency for soft drinks was also higher. When nutritional knowledge was higher, drinking frequency for carbonated drinks got lower. In conclusion, to make the adolescents improve their attitudes toward drinking beverages and to prevent excessive drinking of carbonated drinks, they should be educated not only on the nutritional knowledge and the proper intake of beverages, but also on good dietary habits including balance, regularity, and types of meals. Proper snacking and fast food consumption also should be taught. Since ion beverages were taken more frequently than carbonated drinks among adolescents, further study is recommended on the impact of excessive intake of ion beverages.
Levels of ethyl carbamate, by-product produced naturally during fermentation, in Korean alcoholic beverages were determined by Gas Chromatography/mass spectrometry/selected ion mode (GC/MS/SIM), and their daily intake by Korean adult group was estimated. In GC/MS/SIM analysis 0.8-10.1, 0.5-0.8, 0.4-0.9, 3.5-689.9, 8.4-30.3, 13.9-30.0, and 1.7-11.7 ppb of ethyl carbamate were detected in soju, beer, takju, fruit wine, cheongju, whiskey, and grape wine, respectively. Maximum daily exposure of ethyl carbamate through alcoholic beverage consumption was 7.41 ng/kg body weight/day for average Korean male, with one soju brand and two fruit wine brands showing high ethyl carbamate level.
Objectives: This study aims to evaluate carbonated drinks induced dental caries with qualitative analysis and to compare with oral organic acids including lactate, acetate, propionate, formate, butyrate, pyruvate and valerate which cause caries when taking either 10% sucrose drinks or carbonated drinks. Methods: Saliva was collected from six study subjects before and after (start, 5, 10, 30 minutes) taking water intake upon (A) 10% sucrose intake, (B) 10% sucrose intake, and (C) carbonated drink intake, then they were centrifuged at 1,200 rpm followed by removing bacteria and enzymes with syringe filtering, performing a qualitative analysis with HPLC conductivity detection (GP50 gradient pump, ED 50 detector) after saliva pre-treatment under isocratic 100 mM NaOH mobile phase. Results: Higher risk of dental caries was evaluated in order of C>B>A, with the results of total oral organic acids' concentration, lactates of organic acids and organic acids produced after 5 minutes from the 3 types of drinks intake. Conclusions: Carbonated beverages were estimated to develop higher dental caries induction than beverages containing 10% sucrose because of the high organic acid concentration in the mouth after its intake.

BACKGROUND/OBJECTIVES: Setting healthful beverage expectations, making calcium-rich foods and beverages (CRF/B) available, and role modeling are parenting practices promoting calcium intake among early adolescents. This study aimed to evaluate emotion-based messages designed to motivate parents of early adolescents to perform these practices. SUBJECTS/METHODS: Emotion-based messages were developed for each parenting practice and tested in 35 parents from 5 states. Findings were used to modify messages and develop a survey administered via Amazon MechanicalTurk to a convenience sample of Asian (n = 166) and Hispanic (n = 184) parents of children 10-13 years. Main outcome measures were message comprehension, motivation, relevance, acceptability, and novelty. Engagement in the parenting practices was also assessed. RESULTS: Message comprehension was acceptable for the majority of parents. Most also agreed that messages were motivational (setting healthful beverage expectations (69.0%), making CRF/B available (67.4%), and role modeling (80.0%)), relevant and acceptable. About 30-50% indicated they had not seen the information before. Many parents indicated they were already engaging in the practices (> 70%). No racial/ethnic differences were observed for responses to messages or engaging in parenting practices. CONCLUSIONS: Results indicate that emotion-based messages designed to motivate parents to engage in parenting practices that promote calcium intake among early adolescents were motivating, relevant, and acceptable.
This study was designed to investigate the relationship between the dietary intake according to calorie intake from a coffee containing beverage and the bone health status of 189 female collegians. The study was conducted through questionnaires, anthropometric checkup, 3-days food records and ultrasound measurement of calcaneus bone mineral density. Subjects were divided into three groups: students not drinking coffee(non-coffee group, N=56), students consuming <100 kcal daily from coffee(low-calorie coffee group, N=84), and students consuming $\geq100$ kcal of their total daily calories from coffee(high- calorie coffee group, N=49). There were no significant differences in weight, height, body mass index, body fat and calcaneus bone mineral density among the three groups. The low-calorie coffee group usually drank black coffee or instant coffee mix, and the high-calorie coffee group habitually drank coffee with milk or sugar syrup. There were no significant differences in the mean daily energy and food intake among the three groups. However, vitamin $B_2$(p<0.05) and calcium (p<0.01) intake in the high-calorie coffee group were higher than in the non-coffee group. Also, mean intake of sugars, fish and shellfishes, milks and beverages in the high-calorie coffee group were also significantly higher than in non coffee group(p<0.05). There was no significant difference in the Korean Dietary Diversity Score(KDDS) among the three groups. The main calcium source was milk in all three groups, and milk intake(total and included with coffee) was highest in the high-calorie coffee group. Although no significant difference was apparent between the high-calorie and non-coffee groups concerning anthropometric factors and calcaneus bone mineral density, consumption of coffee may have influenced food and nutrient intake. The results suggest that consumption of milk-supplemented coffee may be of nutritional benefit.
