Effects of Developed Grape Bag on the Physiological Disorders, Pathogenic Decay and Fruit Quality in 'Campbell Early' Grapevines (개발된 포도 봉지 괘대가 '캠벨얼리' 과실의 생리장해와 병 발생 및 품질에 미치는 영향)

  • The effects of developed grape bags on the micro-climate changes of bag, physiological disorder, pathogenic decay, quality and harvest time evaluation in 'Campbell Early' grapevines were studied. The temperature and light transmittance of developed grape bags showed no differences compared with the onces of conventional bag and non-bagging, but relative humidity and the amount of water evaporation were changed in all treatments. The occurrence of unfertilized fruit, poorly colored fruit, russet and gray mold rot showed no significant difference in all treatment at harvest time. Developed grape bags decreased effectively the occurrence of cracking fruit and bitter rot in 'Campbell Early' fruit. There was no difference in growth of cluster and berry, soluble solids and total acidity in fruits, degree of skin color and bloom appearance at harvest time. The skin color and fruit boom and harvest time evaluation in developed grape bags were resulted excellent compared with the once of conventional bag and non bagging.

Quality Characteristics of Sikhye made with Berries (베리류로 제조한 식혜의 품질 특성에 관한 연구)

  • This study compared the physicochemical characteristics, proximate composition, taste compound, and antioxidant properties of Sikhye prepared with berries. Proximate composition and color were significantly different depending on the type of berry, whereas crude fat content and pH were not. The highest brix degree was $18.92^{\circ}Bx$ in strawberry Sikhye. Total free sugar, glucose, and fructose contents were highest in blueberry Sikhye. Titratable acidity, total acidity, and organic acid contents were highest in raspberry Sikhye. Analysis of relative antioxidative properties indicated that bokbunja Sikhye had the highest total polyphenol, flavonoid, and anthocyanin contents, highest DPPH radical scavenging ability, and highest reducing power and ferric reducing abilities in plasma. Principal component analysis suggests that bokbunja Sikhye has strong antioxidant and sweetness properties.

Study on the Nutritional Composition and Antioxidative Capacity of Mulberry Fruit(Ficus-4x) (4배성 휘커스(Ficus-4x)오디품종의 영양성분 및 항산화능 검색)

  • Nutritional composition and antioxidative capacity of mulberry fruit (Ficus-4x) were investigated for evaluation as new red-colored fruit. Contents of moisture, crude fat, crude protein, and vitamin C were similar, whereas that of crude ash was higher, to those of other berry fruits. Contents of minerals (Ca, 14.33 mg/100 g; P, 39.98 mg/100 g; Fe, 6.01 mg/100 g; Zn, 4.04 mg/100 g; Mn, 2.26 mg/100 g), particularly Fe, were higher than those of other berry fruits. Hardness, springness, cohesiveness, gumminess, and chewiness of mulberry fruit were higher, and color values (L, 36.03; a, 1.80; b, 1.54) were lower than those of strawberry. Relative scavenging activities of mulberry fruit methanol extract and its cyanidine 3-glucoside on 1, 1-diphenyl-2-picrylhydrazy radical (DPPH) were 35.7 and 78.2%, respectively, using butylated hydroxyanisole (BHA) as standard. Antioxidant activities in corn oil (peroxide values and conjugated dienoic acid) were tertiary butylhydroquinone (TBHQ) > mulberry fruit ethanol extract > mulberry fruit water extract > butylated hydroxytoluene (BHT) > tocopherol. Results show mulberry fruit can be very useful red-colored fruit for development of functional foods with beneficial effects on radical scavenging and antioxidative capacities.

Effects of Plant Growth Regulators Sprayed at Unfolded Leaf Stage on Fruit Quality in 'Campbell Early' Grape (포도 '캠벨얼리' 품종의 전엽기 생장조절제 처리가 품질에 미치는 영향)

  • This study was conducted to increase grape quality by treating plant growth regulator (PGR) in 'Campbell Early' grape. Foliar application of gibberellic acid ($GA_3$) at $5mg{\cdot}L^{-1}$ on flower cluster of 'Campbell Early' grape at 3-5 unfolded leaf stage effectively increased columella length, berry weight, soluble solid contents and promoted skin color development. Foliar application of $20mg{\cdot}L^{-1}$ abscisic acid (ABA) mixed with $5mg{\cdot}L^{-1}$ of $GA_3$ on flower cluster of 'Campbell Early' grape at 3-4 unfolded leaf stage effectively increased skin anthocyanin contents without any detrimental effects on berry enlargement and columella growth. Foliar application of $2.5mg{\cdot}L^{-1}$ thidiazuron mixed with $5mg{\cdot}L^{-1}$ of $GA_3$ on flower cluster of 'Campbell Early' grape at 3-4 unfolded leaf stage effectively increased fruit quality indices such as higher soluble solid contents and less titratable acidity.

Effects of Functional Ingredients Addition on Quality Characteristics of Kochujang (기능성 소재의 첨가가 고추장의 품질특성에 미치는 영향)

  • To produce bio-active Kochujang, 1.2% of pomegranate powder, 1.0% of hawthorn berry extract powder, 0.01% of ginko biloba extract, 1.2% of red yeast rice powder, 1.2% of silk powder, 0.2% of garlic oil, 0.2% of chitosan, 1.2% of wax gourd extract powder, and 1.0% of pine mushroom were added individually with raw materials that are needed for Kochujang process. These Kochujangs were fermented for 45 days at $30^{\circ}C$, and examined for changes in their physicochemical properties. There were no significant differences in pH, acidity, formol-N content, color and total cell count by plate count agar between Kochujangs fortified individually with functional ingredients and the control Kochujang. When 0.2% of garlic oil was added, antioxidant activity of its Kochujang product increased twice as much as that of the control Kochujang. Improved ACE inhibiting activities were observed in 1.2% of red yeast rice powder. When 1.2% of silk powder or 0.01% of ginko biloba extract were added, antithrombotic abilities were remarkably enhanced up to two times of the control Kochujang.

'Skinny Green', a Novel Hairless Green-fleshed Baby Kiwifruit (새로운 털 없는 녹색 미니 참다래 '스키니그린')

  • 'Skinny Green' is the third hairless-variety release by National Institute of Horticultural & Herbal Science (NIHHS) of Rural Development Administration (RDA) in Korea. It was bred by field crossing using the KN8903 as the mother plant, which had been selected from the crossbreeding of a Korean wild germplasm of tara vine with a male $Actinidia$ $deliciosa$ cv. Tomuri, and tara vine as the father plant collected from Korean mountains. The principal features of the final release are firstly, the fruit size not bigger than a mouthful bite with the average fruit weight not more than 19.3 g, and secondly, the thin and hairless edible fruit skin. It has green flesh color maintaining soluble solids and acid contents about $16.7^{\circ}Brix$ and 0.91% respectively. Its harvest season is usually in mid October. As it is not self-fertile it needs artificial pollination. Its tendency to produce maximum numbers of fruit requires thinning out of the fruits in a proper way.

Consumer's Sensory Evaluation in Relation to the Coffee Grade among College Students (대학생을 대상으로 한 커피 등급에 따른 관능평가)

  • This study aims to understand college students customer's preference and the difference of coffee grade by comparing the result of Q-grader, who was trained professionally and received certification for a sensory evaluation of coffee grade. The results of the chemical analysis of raw coffee and coffee berry show that those of specialty grade had slightly higher, but not significant, water content. Further, the pH of specialty grade coffee was high in coffee beans and after roasting, the commercial grade became high. There was no significant difference between the specialty degree and commercial degree in color before and after roasting. In this study, the panels for the sensory evaluation included 24 university students. The preference of evaluation items of sensory evaluation consist of aroma, acidity, bitterness, astringency, aftertaste, and overall satisfaction. Items for the strength evaluation consist of aroma, acidity and bitterness. The sensory evaluation was expressed by applying a 5 point Likert scale (1: extremely low~5: extremely high). In the sensory evaluation, it was evaluated that specialty grade coffee had strong acidity and commercial grade coffee was strongly bitter. The result of the sensory evaluation shows that female students are sensitive to coffee taste. In the analysis of frequent visit to coffee shop, the not-frequently-use-group rated that specialty grade coffee with higher overall satisfaction than commercial grade coffee in factors such as aroma and acidity. The group which did not prefer Americano coffee rated that specialty grade was higher than commercial grade in all factors except aroma, of which the result is similar to the cupping test.

  • This study was conducted to investigate plant growth characteristics and anatomical studies of Korean mistel (Viscum album var. coloratum (Kom.) Ohwi). Parasite position was upper part that has a plenty of sunshine area 5 to 10m apart from the ground, regardless host tree. Stem developed two branch stems from the each basal stem, leaf was grown from the end stems as opposite. Fruit has a light yellow color and berry size was 7 to 8 mm long diameter and it contains seed. Floral bud differentiation initiated with forming rounded dome and arch-shaped floral apex at the beginning stage, and produced heart-shaped sepal following the differentiation of leaf primordia. Floral bud formation processed centeral part first and following bilateral sides were developed in order. Leaf was thick and stoma and guard cell were observed from the two or three inner layers from the epidermis. Mistletoe penetrated cork cambium of host plant and was growing by rooting on xylem. Korean mistel connected to host plant through parasitic organ, haustorium structurally and physiologically.

Growth and Flowering Characteristics of 85 Ornamental Hosta Cultivars (관상용 Hosta 85 품종의 생장과 개화 특성)

  • This study was conducted to investigate the leaf growth and flowering characteristics of 85 Hosta cultivars. The 85 cultivars were grown in a pot in Useful Plant Resources Center in Yangpyeong, Korea. H. 'Abiqua Blue Crinkles', H. 'Abiqua Drinking Gourd', H. 'Dancing in the Rain', H. 'Elegance', H. 'Inniswood', and H. 'Venus' were classified as a large size group (> 50 cm), while 27 cultivars including H. 'Abby', H. 'Birchwood Parky's Gold', H. 'Blue Cadet', and H. 'Blue Edge' were classified as a small size group (< 20 cm). The others were classified as a medium size groups. 79% of Hosta cultivars had leaf variegation. Leaf variegation type was divided into 5 types (standard, marginata, mediovarigata, albomaculata, striata). Among them 31 cultivars including H. 'Abby', H. 'Abiqua Moonbeam', and H. 'Atlantis' has a variegation type of marginata in the leaf. 36 cultivars including H. 'Abby', H. 'Abiqua Drinking Gourd', and H.'Abiqua Moonbeam' bloomed in late May and 9 cultivars including H. 'Black Hills', H. 'Boeun', and H. 'Fragrant Bouquet' started to flower on late August. Most flowers were below 3.0 cm in length, while H. 'Avocado' was longest on 10.0 cm. Most flowers have a lavender color group (63.5%), and 14 cultivars of Hosta showed white color group (16.5%). 12 cultivars including H. 'Blue Mouse Ears', H. 'Captain Kirk', and H. 'Fragrant Bouquet' had the fragrance in their flowers. H. 'Cherry Berry' and H. 'Revolution' had a colorful stalk, red and yellow, respectively.

Skin Coloration and Endogenous Hormonal Changes of 'Kyoho' Grape by High Temperature at Veraison (변색기 고온에 의한 포도 '거봉'의 과피 착색 및 내생 호르몬 변화)

  • We analyzed the anthocyanin accumulation, abscisic acid (ABA), gibberellic acid (GA) contents and metabolic genes expression in berry skins under high temperature (High T) at veraison, in order to investigate the cause of bad coloration of 'Kyoho' grape due to High T in summer season. The coloration of 'Kyoho' grapes was stopped by High T for 10 days from veraison, and the fruit quality was not affected except skin color. Total anthocyanin of skins was decreased by High T treatment and malvidin and peonidin were decreased compared to control. In berry skins, ABA content did not decrease by High T treatment, but it was rather higher than that of control. GA content was increased about two times compared to the control after 10 days of High T treatment, which caused decreased ratio of ABA/GA. Analysis of expression of anthocyanin biosynthetic genes showed that the early biosynthetic genes were not affected by High T and the expression of UFGT was decreased by temperature treatment. ABA biosynthetic gene expressions were not affected by High T and the expression of GA20ox1 and GA2ox1/2, which are known to regulate the biosynthesis and inactivation of GA, were increased and decreased by High T, respectively. Therefore, the bad coloration of 'Kyoho' grapes under the High T at veraison was due to inhibition of anthocyanin biosynthesis of skin, and it was suggested that the anthocyanin biosynthesis was controlled by the ratio of ABA and GA rather than ABA content.
