Effects of Soft Steam Treatments on Quality Characteristics of Potatoes (감자의 품질특성에 대한 저온스팀 열처리 방식의 효과)

  • This paper examines the effects of various methods of soft steaming(i.e., forced convection-boiler, forced convection-fan, and natural convection) on the quality of potatoes. In particular, the paper investigates the effects of cooking conditions (the steaming method, the treatment time, and the temperature) on the color(L, a, b), moisture content, texture profile, and ascorbic acid of potatoes. The results indicate that not only the cooking method, the treatment time, and the temperature but also the heat transfer mechanism had considerable influence on potato quality. In addition, natural convection steaming was superior to other treatment methods in terms of nutrient retention and texture maintenance. The results of this study should be useful for establishing commercial standards for processing potatoes and improving the quality of thermally processed foods.

Effect of Ripening Methods and Harvest Time on Vitamin Content of Tomatoes (성숙방법과 수확시기가 토마토의 비타민 함량에 미치는 영향)

  • Effect of ripening methods and harvesting time on vitamin content of 5 tomato varieties was investigated in 1978 and 1979. Ascorbic acid content in the breaker ripened tomatoes was significantly higher than that in the vine ripened tomatoes, and the result was consistent for two consecutive years. Ascorbic acid content in the vine ripened tomatoes markedly increased as the season progressed, early harvested tomatoes containing significantly less ascorbic acid. Carotene content was not significantly affected by the ripening method. Higher carotene content, however, was observed for tomatoes harvested in the late season. This result could indicate the effect of temperature for carotenogenesis around the harvest time. Thiamin and riboflavin contents in the vine ripened tomatoes were significantly higher than those in the breaker ripened tomatoes in the 1978 season, but these differences were not observed in the 1979 season. Thiamin and riboflavin contents in the vine ripened tomatoes decreased considerably as the season progressed. Thiamin and riboflavin contents in tomatoes harvested in the early season were significantly higher than those in the mid and late seasons.

Antioxidative Effect of Salicornia herbacea L. Grown in Closed Sea Beach (폐염전에서 채취한 함초(Salicornia herbacea L.)의 항산화 효과)

  • This study was designed to investigate the antioxidative effect of glasswort (Salicornia herbacea L.) grown in closed sea beach. To compare antioxidant effects of glasswort plant parts, dried ground leaves, stems, and roots of glasswort were exploited for investigation of antioxidant activity Antioxidant activity for the samples was investigated by Rancimat and TBA method. The oxidative stability determined by the Rancimat technique showed a variation in antioxidative index (AL) between the different plant parts, ranging from 1.0 to 3.6. Oxidative stability from ground stem sample of glasswort harvested in the closed sea beach was the highest, and followed by leaf and root. Stem had higher oxidative stability than ascorbic acid. Antioxidatiue effects of glasswort were increased in dose-dependent manners, and antioxidant activity by addition of glasswort with same amount to 4% oil was similar to the activity of ascorbic acid. Specially, 8~10% glasswort addition to oil showed similar antioxidative effect to 1% $\alpha$-tocopherol.

The Antioxidant Activities of the Some Commercial Teas (국내 시판되는 일부 다류 제품의 항산화 효과)

  • The antioxidant activities and their antioxidant compounds of a group of teas obtained in local markets were investigated. A total of 18 teas were tested for their antioxidant activities based on their ability to scavenge ABTS (2,2'-Azino-bis-3-ethylbenzothiazoline-6-sulfonic acid) cation radical and DPPH (1,1-diphenyl-2-picrylhydrazyl) free radical. The former was expressed as mg of ascorbic acid equivalents per 1 tea bag (L-ascorbic acid equivalent antioxidant capacity, AEAC) and the latter was expressed as percentage of electron donating activity (EDA%). A good correlation of AEAC and EDA was observed between the two methods. The concentrations of total polyphenolics and flavonoids in tea extracts were measured by spectrophotometric methods. Total ascorbic acid was determined via the 2,6-dicholoroindophenol titrimetric method. According to the AEAC value and EDA, black tea, brown rice green tea, green tea, herb tea and malva tea showed relatively high antioxidant activities. Polyphenolic compounds were the major naturally occurring antioxidant compounds found in teas and the high concentrations of polyphenolic compounds were observed in black tea, green tea and herb tea. Overall, six teas out of 18 teas tested in the study showed better antioxidant activities and higher amounts of total polyphenolic compounds.

Evaluation of Antioxidant and Antimicrobial Activities of Solvent Extracts from Coriolus versicolor (구름버섯(Coriolus versicolor)의 용매 추출물에 대한 항균 및 항산화 활성 조사)

  • Antioxidant activities of various solvent extracts from Coriolus versicolor were investigated for their total polyphenol content, total flavonoid content, 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, and 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) cation radical scavenging activity. C. versicolor extracts were produced by organic solvents such as ethanol, ethyl acetate, and methanol. Total polyphenol and flavonoid contents in the ethanol and ethyl acetate extracts were higher than those in the methanol extract. DPPH radical scavenging activity of methanol extract showed the highest value of 80.3%, which was similar to that of ascorbic acid (85.5%). All extracts showed good (>90.0%) ABTS cation radical scavenging activity. The antimicrobial activities of these extracts from C. versicolor were evaluated against six strains of bacteria using the disc diffusion method. All extracts showed antimicrobial activities against all tested bacteria except Staphylococcus aureus. These results indicate that various extracts from C. versicolor could be useful as natural antioxidant and antimicrobial agents.

Nutrient Analyses of Sustainable Ready-to-Use-Supplemental Food (RUSF) developed with East African Ethnic Plant Resources (동아프리카 자원식물을 활용하여 개발된 지속가능한 영양보충식품의 영양성분 분석)

  • The objectives of the study were to analyze the various nutrient contents of ready-to-use-supplemental-food (RUSF) developed with Eastern African ethnic plants and compare them with commercially available supplemental food (CASF) for infants. RUSF was made with three African plants, including Ficus sur, Amaranthus caudatus, and Prosopis juliflorafa and locally available food ingredients in DR Congo and Ethiopia and was cooked at $180^{\circ}C$ for 20 min in a conventional oven. Macronutrients were analyzed by the AOAC method. Contents of 17 amino acids were analysed with amino acid analyzer, and vitamin $B_1%$ niacin, vitamin $B_6$, and vitamin C were analyzed with HPLC. Isomers of vitamin E were analyzed by GC-FID. The price of RUSF was 0.133 USD per 100g. Contents of macronutrients were not significantly different between developed RUSF and CASF. Results of amino acid analysis showed that most amino acid contents were similar or higher in RUSF compared with CASF. However, glutamic acid and lysine contents were less in RUSF than in CASF. Vitamin E and vitamin $B_1$ contents were more than five times higher in RUSF (22.40, 6.26 mg/100 g, respectively) than in CASF (4.00, 0.80 mg/100 g, respectively). Niacin was about three times higher while vitamin $B_6$ was almost 20 times higher in RUSF than in CASF. However, ascorbic acid was significantly lower in RUSF (3.43 mg/100 g) than in CASF (42.08 mg/100 g). Our study found that the developed localized RUSF showed higher nutrient contents in most micronutrients analyzed except for ascorbic acid. Out of 17 amino acids, glutamic acid and lysine contents in RUSF were less than in CASF. Therefore, further study is needed in order to improve these nutrients contents.

  • Dowex 1-X8 resin ion exchanged with calcon carboxylic acid (CCA-Dowex 1-X8) and 2-methyl-8-hydroxyquinoline(MHQ) impregnated-Amberlite XAD-4 resin (MHQ-XAD-4) were examined for the separation and preconcentration of ferric ion from the various matrices. The stabilities of these resins were investigated, and their capacities on ferric ion were also measured. The effect of pH on the adsorption of ferric ion and matrix ions, such as Al(Ⅲ) and Ca(Ⅱ), was investigated to determine the optimun pH ranges. Separation and preconcentration of iron in aluminium foil and mineral water samples were studied by elution method with these resin columns. The recovered ions by 10ml of 2F nitric acid was determined by flame atomic spectrophotometry. SP-Sephadex C-25 column was used to separate ferrous and ferric ion in mineral water by stepwise elution with ferrozine and 1 % ascorbic acid-ferrozine solution. The concentrated and separated each ion could be determined spectrophotometrically at the analytical wavelenth of Fe(Ⅱ)-ferrozine complex (562nm).

Clarification of Korean Tangerine Juice Using Microfiltration Membrane Process (미세여과 공정을 이용한 제주산 감귤 주스의 청징화)

  • Citrus fruits are consumed worldwide due to their unique flavor and nutrition value. It is necessary to remove the haze material as well as to minimize the loss of major compounds such as organic acids, sugars, and ascorbic acid in membrane processes for clarification of juice. The objective of our research was to select the best membrane among one surface filter (Whatman No.4) and five microfiltration filters (GF/A, GF/D, GF/F, Gelman, and SM). Tangerine fresh blended with three times of water was partially clarified with 170 mesh followed by prefiltration in a Samduck filtration system. The best membrane was selected by measuring the amounts of major compounds in the permeates as well as the flux which were statistically analyzed with SAS program. The foulants on the membrane surface were observed by SEM. The flux of GF/A and GF/F decreased with time at probability 0.10. Gelman, SM, and GF/D maintained the stable flux. Gelman showed the highest total scores including nutritive value (the amounts of citrate, malate, and ascorbic acid) and purchasing need (brix and color). Therefore, the microfiltration membrane process was a very effective method in tangerine juice clarification and Gelman type A/E was proved to be the best membrane among the five microfiltration membranes.

Antioxidant Activities and Whitening Effects of Extracts from Hippophae rhamnoides L. (비타민 나무(Hippophae rhamnoides L.) 열매 추출물의 항산화 활성 및 미백 효과)

  • This study was performed to investigate the antioxidant activities and the melanin inhibitory effects of Hippophae rhamnoides L. fruit extracts. Two in vitro methods were used; the 1,1-diphenyl-2-picrylhydrazyl (DPPH) method to determine antioxidant activity and measurements of the inhibitory effects of tyrosinase activity to determine melanogenesis in B16/F10 melanoma cells. The radical scavenging activity of the extract was 56.0% at $700{\mu}g/mL$, similar to ascorbic acid (56.9%), in the DPPH assay. The tyrosinase inhibitory activity of the extract was 52.1% and 73.4% at 100 and $500{\mu}g/mL$, which is also similar to ascorbic acid. In B16/F10 mouse melanoma cells, the extract inhibited melanin synthesis by 56% at $500{\mu}g/mL$, a more prominent inhibition of melanin synthesis compared to extracts from arbutin. These results suggest that extracts from H. rhamnoides L. have antioxidant activity and skin-whitening effects; allowing their application in cosmetics as a natural product.

Analysis of arsenic in contaminated soil SRM by two extraction methods: Ultrasonic extraction method and Microwave extraction method

  • Two extraction techniques, Ultrasonic and Microwave extraction method, were tested for the determination of arsenic in contaminated soil SRM (Montana Soil). The extraction mixture was prepared by mixing 1 M ortho-phosphoric acid and 0.1 M ascorbic acid. This extractant was known to preserve arsenic species. The appropriate extraction time was 10 min to 20 min and the recovery rate was about 80%. A coupled system, SPE-HG-ICP-AES, was used for the determination of inorganic arsenic species. The detection limit was around 2 $\mu\textrm{g}$/1 and the linearity of calibration curve was better than $R^2$=0.99.
