Optimization of Iced Cookie with Arrowroot Powder Using Response Surface Methology (갈근분말 첨가 냉동쿠키의 제조조건 최적화)

  • The aim of this study was to use arrowroot powder to develop a recipe for a nutritional cookie having the optimal composition of ingredients and texture to elict a strong preference response in all age groups. Wheat flour was partially substituted with arrowroot powder to reduce the wheat flour content of the cookie. Measurements were made and analyzed according to the Response Surface Methodology technique, which showed 16 experimental points including 2 replicates for arrowroot powder, yellow sugar and butter. The compositional and functional properties of the test were measured, and the values obtained were applied to a mathematical model. A canonical form and perturbation plot showed the influence of each ingredient on the final mixture product. The result of sensory evaluation showed very significant values for color (p<0.01), appearance (p<0.001), texture (p<0.05), overall quality (p<0.05), and flavor (p<0.05). Instrumental analysis showed significant values for lightness (p<0.001), redness (p<0.01), yellowness (p<0.01) and spread ratio (p<0.001). The optimal sensory ratios were determined to be 15g for the arrowroot powder, 70 g for sugar and 80 g for butter.

  • Rheological properties of gamma-irradiated arrowroot starch was examined to utilize as fundamental research data far processing. Irradiated arrowroot starch solutions (3, 4, 5, 6%) were gelatinized at $95^{\circ}C$ for 40 min, and its flow properties measured using rheometer at $30^{\circ}C$ and 10 to 200 rpm rotation rate. Rheological parameters of irradiated arrowroot starch gelatinized solution were calculated using Herschel-Bulkley equation. Gelatinized arrowroot starch solutions irradiated at $0^{\circ}C$ and 5kGy showed pseudoplastic fluid behavior, while those irradiated at 10, 20, and 30kGy were the dilatant with ${\tau}_y=0$ (yield stress).

Anti-obesity Effects of Capsule-filled Cheonggukjang Added with Arrowroot (Pueraria thunbergiana) Extracts in ob/ob Mice (칡(Pueraria thunbergiana)추출물 청국장 캡슐의 ob/ob Mice에 대한 항비만 효과)

  • This study was designed to evaluate the anti-metabolic syndrome effects of capsule-filled cheonggukjang (CGJ) added with arrowroot (Pueraria thunbergiana) extracts on body weight, adiposity and lipid metabolism in ob/ob mice. Experimental groups were normal control group (NC: basal diet), positive control group (PC: 2% CGJ), CGJ added with arrowroot extracts group (AR: 2% arrowroot in CGJ), and capsule-filled CGJ added with arrowroot extracts group (ARC: 2% arrowroot CGJ capsule). Each group was fed experimental diet for 10 weeks. Final body weight gain and atherogenic index were significantly lower in the ARC than NC group. Serum levels of total cholesterol, LDL-cholesterol, and triglycerides, blood glucose and atherogenic index were significantly lower in the ARC than NC group. Furthermore, fatty liver and regional lipid accumultion in ob/ob mice were inhibited in the ARC group. The hepatic activities of superoxide dismutase, catalase and glutathione S-transferase were significantly higher in the ARC than NC group. Therefore, the anti-matabolic syndrome effects of the ARC group were higher than the AR group. In conclusion, these results indicated that CGJ added with arrowroot mediates its anti-obesity effects in ob/ob mice by improving lipid metabolism and antioxidant enzyme.

The Sensory Properties and Flavor Components of the White Bread Added with Arrowroot juice (칡즙 첨가 식빵의 관능적 특성과 향기성분)

  • The sensory properties and flavor components of the white bread added with arrowroot juice. The lightness of bread crumb decreased significantly as arrowroot juice was added. While the yellowness increased slightly, redness increased remarkably. The hardness, chewiness and adhesiveness of the white bread added with arrowroot juice increased more than those of the control bread, but they had no statistical significance. While the gumminess increased significantly and springiness decreased significantly, the cohesiveness did not indicate significant differences among the comparison groups. In sensory evaluation, the texture, flavor and sweetness did not indicate significant difference among the comparison groups, while the color and overall acceptability indicated significant difference. The optimum concentration of arrowroot juice in the white bread was 25% based on the sensory evaluation scores. The main flavors components of the white bread added with 25% arrowroot juice were compounds translated by arrowroot juice and the compounds formed by amino-carbonyl reaction. The translated flavors were methoxy phenol, ${\beta}-damascenone$, benzylcyanide, and menthofuran. The compounds formed by amino-carbonyl reaction were alkyl pyrazines, pyrroles and furans.

  • In this study, instead of arrowroot starch sesame mook(Gomadoufu) used in the manufacture of expensive sesame mook the quality of the material characteristics and commercialized for to find out the possibility of replacement of other starch, propose. Potato starch RVA analysis was quick pasting temperature $70.3^{\circ}C$, peak viscosity 740 RVU, break down 579.9 final viscosity 433.8, set back 275.7 arrowroot starch than 4.5 times, sweet potato starch than 6.9 fold the highest value showed Japanese sesame results starch (Atarigoma) concentration increased, the measured starch, different kinds of manufacturing quality characteristics of sesame mook tended to increase the moisture content, texture measurements on the hardness and springiness, gumminess and chewiness was gradually decreased. Sesame mook in sensory evaluation, color and aroma, taste, texture and overall-acceptability, sweet potato starch, arrowroot starch 60% addition, 50% added, potato starch 40% group containing most symbols highest was, and the experimental results used in the manufacture of arrowroot starch instead of expensive replacement of other starch is deemed.

  • The discrimination of the agricultural origin, especially locally produced or imported from the products such as Ganoderma lucidum, sesame and arrowroot were investigated by using the electronic nose. Volatile components from these products were discriminated by twelve of conducting polymer sensors without any pretreatment. Pattern recognition was carried out. Multiple discriminant analysis showed the difference between imported agricultural product and locally produced ones such as Ganoderma lucidum, sesame and arrowroot. Unknown habitat of sesame and arrowroot could be identified by multiple discriminant analysis whether the imported or the locally produced one.

Enzymatic Properties of $\beta$-amylase Isolated from Arrowroot (칡 뿌리에서 분리한 B-amylase의 효소학적 특성)

  • B-amylase(EC 3.2.1.2) was isolated from the root of arrowroot(Peuria thunbergiana Bentham) with distilled water and then fractionated with ammonium sulfate. Crude extract was partially purified by ion exchange chromatography and gel filtration. The enzymatic properties of partially purified $\beta$-amylase were as follows, the enzyme was fractionated with ammonium sulfate between 0.2 and 0.4 saturation, and showed the typical reaction properties of B-amylase producing only maltose from starch. Optinum pH and temperature were pH 6.5, $50^{\circ}C$ respectively. The activity of the enzyme had proportional relations with enzyme protein concentration below 4mg, and had Michaelis constant of 66.7mg% for soluble starch. The enzyme was inhibited by some metal louts such as silver, cadmium, mercury, aluminum, iron and copper.

A Study on the Estrogenicity of Korean Arrowroot (Pueraria thunbergiana) (한국산 칡의 Estrogen 활성에 관한 연구)

  • To assess the estrogenicities of Korean arrowroot (Pueraria thunbergiana) the contents of nine phytochemicals which are known to present were analyzed by HPLC. Also the estrogenecities of these phytochemicals were assayed using estrogen receptor dependent transcriptional expression assay. Daidzein and puerarin are major compounds in arrowroot, which were contained in the order of: root>stem>leaf>flower>seed. Among the assayed phytochemicals daidzein, genistein, biochanin A, formononetin, puerarin and genistin were highly estrogenic. The total estrogenicities in different parts of arrowroot and those by regions in Korea were also assessed. Roots had the highest estrogenic effects. The estrogenicities also were shown in stem and leaf. The differences in the estrogenicities of arrowroots by regions in Korea were shown. These results demonstrated that the estrogenic phytochemicals content was the highest in Korean arrowroot and also present in stem and leaf.

Effect of Edible Flower Extracts on Antioxidative and Biological Activities (식용꽃 추출물이 항산화 및 세포의 생리활성에 미치는 영향 - 유채꽃, 칡꽃, 장미꽃을 중심으로 -)

  • In order to promote the value of the flowers as new agricultural products, we investigated the biological activities of rape, arrowroot, and rose extracts. Biological activities investigated included antioxidant activity and the effects on 3T3-L1 fibroblast cells. When each flower was extracted with methanol, the antioxidant index and electron donating activity of roses was the highest $(IC_{50}$ of rose extract was $17.6 \mu{g}/m\ell$). When 3T3-L1 fibroblast cells were treated with extracts made with hexane, ethyl acetate, and ether, the rape extracts had a cytotoxic effect on the cells. 12.2% of cells survived when treated with a 3mg/$m\ell$ ether extract while those treated with the same concentration of hexane and ethyl acetate had survival rates of 76.2% and 78.6% respectively. In contrast to rape, the ether extract of arrowroot and rose stimulated the growth of 3T3-L1 cells. The effect of rose extracts was much bigger than those of other extracts. Although every rose extract stimulated the growth of the 3T3-L 1 cells, the ether extract stimulated growth up to 168.6% compared to the control at the concentration of $0.3mg/m\ell$, and 148.3% at the concentration of $1mg/m\ell$. The toxicity on cells treated with $H_2 O_2$ of $450\mu{M}l$was decreased with the addition of rose extract. The survival rate after treatment with rose extract at the concentration of $100\mu{g}/m\ell$ was increased to 71% compared to the 32% survival rate of control. From these results, it can be concluded that the extracts of arrowroot and rose seem to stimulate cells, whereas the extract of rape has a cytotoxic effect. Biological activities of ether extract were the strongest compared to those of other extracts at the tested concentrations.
