광주.전남지역의 주요 특산식품에 대한 연구 (A Study on Major Local Foods in Gwangju.Jeonam Area)

  • 광주광역시와 전라남도 음식문화 주요 식품 재료의 종류를 확인하기 위하여 각 시군의 특산물을 농산물, 수산물, 축산물, 기타로 구분하여 조사한 결과는 다음과 같다. 현재 광주광역시와 전라남도의 특산물 중 농산물 51종, 수산물 50종, 축산물 6종, 기타 특산물 17종으로 총 124종 선정되어 있었다. 이 지역의 특산물 중에서 쌀, 오이, 배, 멸치, 굴, 김, 느타리버섯, 표고버섯 등은 여러 지역에서 특산물로 선정되어 있었다. 무등산수박, 무화과, 연어, 숭어, 메기 등의 특산물은 이들의 생산에 적합한 지리적 조건을 가진 지역에서만 생산되고 있었다. 농산물 중 밤호박, 파프리카, 키위, 벨론 등은 최근에 이 지역에서 재배하기 시작하였다. 수산물, 버섯류, 산채류는 자연산은 감소하는 반면 양식이나 인공재배가 증가하고 있었으며, 농산물과 축산물의 브랜드화도 급속히 이루어지고 있었다. 이상의 결과에서 이 지역의 음식문화와 관련된 식재료의 수급과 선택 가능성에 영향을 주는 특산물의 종류와 생산량이 환경오염과 국토개발 등 자연환경의 변화, 소비자의 기호변화, 건강에 대한 관심의 증가, 재배기술의 발달, 수산양식의 발달, 새로운 품종의 도입 등 여러가지 요인에 의하여 변화되고 있었다. 즉, 이 지역에서 식재료로 이용될 수 있는 다양한 농수산물이 생산되고 있으며, 음식문화가 계속 변화되어 가고 있음을 간접적으로 확인할 수 있었다.

  • Song-Gang® bio-stone (SGS) is a microporous crystalline hydrated aluminosilicate which has found various applications because of their very unique physiochemical characteristics such as ion exchange and absorptive-desorptive properties. Significant progress has been made in recent years on applications of these inorganic adsorbents in different industries including agriculture, aquaculture, water and wastewater treatment. This review article intends to summarize the published reports on the applications of SGS in aquaculture industry. SGS application as a feed additive to enhance fish growth and promote their health and nutritional parameters is the most important discussed areas. According to the technical data that are discussed in this review, SGS should be considered as a material with tremendous potential for application in the aquaculture industry. Considerable amounts of research works are under way to explore other opportunities for application of SGS to benefit aquaculture industry.

수산물 음식과 수산물 가공식품에 대한 인식 조사: 부산·경상도 지역 대학생을 중심으로 (A Study on the Difference of Perceptions of Seafood and Processed Seafood Products: The Case of University Students in Busan and Gyeongsang Area)

  • The purpose of this study is to understand the perception of fishery products and processed food of marine products in college students through empirical analysis. 446 questionnaires were used in the analysis. As a result of the empirical analysis, the frequency of consumption of aquatic food was 2~3 times a week, the place of intake was good for taste of home and aquatic foods, respectively. Purchase motifs of processed fish products are easy, the frequency of ingestion is 3 to 4 times a week, the criteria for selection were always consumed, and the taste was considered to be high when purchased. The perception of nutrition and necessity of consumption of aquatic foods was high and radioactivity was low. 133 male students (57.8%) and 98 female students (45.4%) were aware of the aquatic traceability system. The college students generally has a high preference for the taste of marine products and high frequency of consumption, and they recognized that nutritional excellence and necessity were positive. The marketing strategy should be developed by developing proper product considering the age level and sex of consumers. The limitation is that they are college students in Busan and Gyeongsang provinces and coastal areas.

국내 시판 고령친화식품의 품질특성 (Quality Characteristics of Domestic Commercial Senior-friendly Foods)

  • As the aging population of the world grows, senior-friendly foods are becoming increasingly popular. In this study, the quality characteristics of domestic commercial senior-friendly foods were investigated and compared to the standard specifications of the Food Code and KS H4897. Herein, 18 samples of domestic commercial senior-friendly foods were utilized to analyze their appearance, physical properties (hardness and viscosity), nutritional value (protein, vitamin, mineral and dietary fiber), digestion rate, and hygiene indicator bacteria. When compared to the hardness standards of the Food Code all 18 samples were found to be satisfactory; however, when compared to the nutritional standard (at least three types of nutrients must be above the minimum), only five products, HG-7, DW-1, PS-1, OH-1 and OH-2, were found to be satisfactory. In addition, when the 18 samples were compared to the Korean Industrial Standard (2020), all 18 products were found to be satisfactory for physical properties and hygiene standards; furthermore, all samples, excluding HB-2, were suitable for nutritional standards (at least one type of nutrient must be above the standard).
