We previously reported on lactophoricin (LPcin), a cationic ${\alpha}-helical$ antimicrobial peptide derived from bovine milk, which has antimicrobial effects on Candida albicans as well as Gram-positive and Gram-negative bacteria. In this study, we designed the LPcin-YK3 peptide, a shorter analog of LPcin, and investigated its antimicrobial activity. This peptide, consisting of 15 amino acids with + 3 net charges, was an effective antimicrobial agent against the on the Gram-positive strain, Staphylococcus aureus (MIC: $0.62{\mu}g/ml$). In addition, the hemolytic activity assay revealed that the peptide was not toxic to mouse and human erythrocytes up to $40{\mu}g/ml$. We also used circular dichroism spectroscopy to confirm that peptide in the presence of lipid has ${\alpha}-helical$ structures and later provide an overview of the relationship between each structure and antimicrobial activity. This peptide is a member of a new class of antimicrobial agents that could potentially overcome the problem of bacterial resistance caused by overuse of conventional antibiotics. Therefore, it could be used as a therapeutic or natural additive, particularly in the cosmetics industry.

In this study, antimicrobial resistance of E. coli isolated from domestic beef on sale in Busan and Gyeongnam province was investigated from March to October 2008. A total of 400 beef samples were collected for the monitoring of antimicrobial resistance, and 39 (9.8%) strains of E. coli were isolated. Antimicrobial resistance test was carried out by agar disc diffusion method with 17 antimicrobials. In general, E. coli isolates showed the highest antimicrobial resistance to tetracycline (85.3%), followed by doxycycline (76.5%), streptomycin (61.8%) and sulfamethoxazole/trimethoprim (61.8%). Then they showed higher resistance to several antimicrobials like kanamycin and neomycin (55.9%). However, They had low antimicrobial resistance to amikacin (8.8%), amoxicillin/clavulanic acid (2.9%). Of 39 isolates, 31 (79.5%) were resistant to more than 2 antimicrobials. Among 17 antimicrobials examined, tetracyclines were the most resistant, followed by aminoglycosides, sulfonamides. The resistance was seemed to be correlated to amounts of antimicrobial use. In the result of this study, we suggest that there be need to regulate the abuse of antimicrobial on food-producing animals in Korea because the concern on antimicrobial resistant is gradually increased worldwide.

Chitosan oligosaccharide, chitosan polysaccharide and monolaurin were used to impart the antimicrobial properties onto paper for food products . Staphylococcus aureus (ATCC 25923) was used as test microorganism and shake flask test was carried out in order to examine the antimicrobial activity of each sample. Chitosan oligosaccaride showed the greatest antimicrobial effect among them and gave the promising result even at the concentration of 0.005%. Its antimicrobial power was enhanced when it is used with nomolaurin together. Chitosan oligosaccharide improved the tensile strength of antimicrobial paper.

The functions of food packaging are not only prevention from physical damage and loss during carrying and transportation, but also extension of shelf-life by adding antimicrobial substrate in packaging materials. Consumption of active packaging is gradually increasing. With different dosage of potassium sorbate(P.S.), the food preservative agent, antimicrobial papers were made by internal and external application of starch. The antimicrobial action of the paper was analyzed by the halo test and the shake flask method. The mechanical properties and strength were also measured. Antimicrobial papers adding P.S. showed higher values in tensile index than adding starch. The antimicrobial paper using starch showed similar microbe decreasing rate as that using P.S. Though microbe decreasing rate was 21.9%, it showed possibility to make antimicrobial paper using food preservative.
A wide variety of materials including aldehydes, cationic agents, alcohols, peroxygens, phenols and chlorinated phenols, metal ions are being employed as biocides. Among three levels for biocidal functions (sanitization, disinfection and sterilization), disinfection is an enough level for antimicrobial textiles. In terms of antimicrobial agents for textile applications, quaternary ammonium salts (QAS), chitosan, metal and metal salts, N-halamine based materials are developed with numerous research and the positive ions of those materials may result in disinfection of microorganisms. Photocatalysts, especially titanium dioxide (titania) produces the hydroxyl radical (${\cdot}\;OH$) which causes inactivation of microorganisms after UV radiation, have been used for antimicrobial applications.

To identify antimicrobial activities of soybean paste, studies have been carried out with laboratory manufactured soybean paste, traditional and improved type soybean paste purchased on the market. The soybean paste fermented with Aspergillus oryzae and Rhizopus tamari and commercial soybean paste were shown antimicrobial activities for Bacillus cereus, Escherichia coli, Listeria monocytogenes, Staphy lococcus aureus, Streptococcus faecalis, Escherichia coli O157:H7, Bacillus subtilis and Salmonella typhimurium. Non fermented soybean paste did not show antimicrobial activities against Bacillus cereus, Escherichia coli, Listeria monocytogenes, Staphylococcus aureus and Streptococcus faecalis. The extract of soybean paste extracted by 80% methanol showed the highest antimicrobial activities of in ethyl acetate fraction and followed butanol fraction, respectively. Antimicrobial activities of traditional and improved type soybean paste were shown against all tested microorganisms and clear zone length of traditional soybean paste was slightly larger than that of improved type. Components of antimicrobial fractions of soybean paste were guessed peptides, 4 hydroxy benzoic acid, benzoic acid by GC MS.

Antimicrobial activities against Streptococcus mutans, Candida albicans, Escherichia coli, Staphylococcus epidermidis, Staphylococcus aureus were assayed through the hot water extracts and the ethanol extracts from Chungyulsodokeum and its composition oriental medicines. The stains were incubated on culture medium and activated. We observed the size of inhibition zone on the strains that is incubated in strilized filter paper disc with various concentration extracts of Chungyulsodokeum and its composition 1. The extracts of Chungyulsodokeum, Coptidis Rhizoma, Paeoniae Radix, Glycyrrhizae Radix, Gardeniae Fructus showed antimicrobial activities against Staphylococcus aureus. 2. The extracts of Chungyulsodokeum, Coptidis Rhizoma, Paeoniae Radix, Forsythiae Fructus Ghycyrrhizae Radix, showed antimiaobial activities against Staphylococcus epidermidis. 3. The extracts of Chungyulsodokeum, Coptidis Rhizoma, Paeoniae Radix, Glycyrrhizae Radix, showed antimicrobial activities against Streptococcus mutans. 4. The extract of Coptidis Rhizoma showed antimicrobial activities against Candida albicans. 5. None of the extracts showed antimicrobial activities against Escherichia coli. We observed antimicrobial activities of Chungyulsodokeum and its composition against Streptococcus mutans, Staphylococcus epidermidis, Staphylococcus aureus.
We examined the antimicrobial effects of the cotton fabrics which were laundered at different conditions and treated with a colloidal silver solution using Staphylococcus aureus. Colloidal silver solution was made from commercial colloidal silver generator by electrolysis. The fabric which was innoculated and washed with water before drying had no more Staphylococcus aureus, but which was innoculated and dried before washing with detergent solution had lower reduction rate. The fabric washed with oxygen bleach did not have an antimicrobial effect, but rinsed with 0.07% fabric softener showed antimicrobial properties. The fabric rinsed with 0.7ppm colloidal silver solution had better antimicrobial effects. As the treating concentration of silver solution increased, the antimicrobial property of the fabric was increased. The fabric treated with 5% silver solution sustained reflectance and whiteness of untreated fabric. The colloidal silver treated fabric lost antimicrobial property after washing because nano-sized silver particles were located on uneven fiber surface without chemical bonding forces.

Antimicrobial fibers were prepared by an electro-spinning method. Polystyrene hydantoin(PSH) was employed as an antimicrobial precursor to produce an electro-spun antimicrobial acrylic fiber. Increasing the surface area of hydrophobic antimicrobial-fibers provides enhanced antimicrobial efficacy. The biocidal activity of electro-spun acrylic fibers could be rendered through chlorine bleach treatment, and the antimicrobial effectiveness against gram-Positive and gram-negative bacteria was investigated. In addition, scanning electron microscopy(SEM) demonstrated the feature of the electro-spun fibers.
The identification of antimicrobial use patterns is essential for determining key targets for antimicrobial stewardship interventions and evaluating the effectiveness thereof. Accurately identifying antimicrobial use patterns requires quantitative evaluation, which focuses on measuring the quantity and frequency of antimicrobial use, and qualitative evaluation, which assesses the appropriateness, effectiveness, and potential side effects of antimicrobial prescriptions. This paper summarizes the quantitative and qualitative methods used to evaluate antimicrobials, drawing insights from overseas and domestic cases.
