Objective: The aim of this study was to investigate the effects of aged garlic powder (AGP) on physicochemical characteristics, texture profiles, and oxidative stability of ready-to-eat (RTE) pork patties. Methods: There were five treatment groups: a control; 1% fresh garlic powder (T1); 0.5%, 1%, and 2% AGP (T2, T3, and T4). Pork patties with vacuum packaging were roasted at $71^{\circ}C$ for core temperature, stored at $4^{\circ}C$ for 14 d, and then reheated for 1 min using a microwave. Results: The AGP groups showed a lower the level of lipid oxidation and higher thiol contents than the control and T1. The pH value of the control increased whereas that of aged garlic groups decreased after re-heating process. In addition, the redness significantly increased with increasing level of AGP whereas the redness of the control and T1 decreased after reheating process. T4 added patties improved textural and sensory properties compared to the control. Conclusion: The results of this study suggest that AGP addition to RTE pork patties can improve their sensory characteristics and oxidative stability.
Purpose : This study aimed to present normative data for older Korean adults completing the Yonsei dual task cognitive screening test (Y-DuCog) and identify changes in cognitive function on the Montreal Cognitive Assessment - Korean (MoCA-K) with age. Methods : From May 2019 to August 2019, 195 healthy adults aged ≥60 years participated in this study. All participants completed the Y-DuCog to assess their dual-task performance and the MoCA-K to assess their cognitive function. Participants were divided into three groups based on their age: 60~69 years, 70~79 years, and ≥80 years. Results : The results of the Y-DuCog showed that dual-task performance time, effect, and correct response rate decreased significantly with age (p<.001). Scores from the three groups showed differences on all items (p<.001). Cognitive function on the MoCA-K also decreased significantly with age (mean score ± standard deviation [SD]; 27.33 ± 2.61 in subjects aged 60~69 years; 24.82 ± 3.20 in subjects aged 70~79 years; and 22.10 ± 4.91 in subjects aged ≥80 years; p<.001). Conclusions : Occupational therapists should be aware of the decline in cognitive function and dual-task performance time, effect, and correct response rate in older adults and consider interventions to treat this decline. Further studies are needed with larger groups of participants to examine factors, such as sex and education, that may impact dual-task performance and cognitive function.
The middle-aged body differs from the youthful body and has its own body type due to the considerable difference in body structure by age. However, most ready-made clothes for middle-aged women are designed according to the youthful body types. They are looking for the better fitness of the ready-made clothes. Thus clothing fitness is strongly required for a middle-aged women. The purpose of this study is to analyze the basic characteristics of middle-aged women's body types and to compare the real somatotype and cognitive somatotype. The subjects are 238 middle-aged women between 35 and 49 years old living in Daegu. Data are collected through anthropometric measurement and questionnaire on somatotype from September to October 2004. The results are as follows: 1. Using factor analysis, cluster analysis is carried out and the subjects of this research are classified into 4 groups. 2. Middle-aged women usually are not satisfied with their body. Particularly, they show the lowest satisfaction measurement about their abdominal girth, weight, and overall body-shape in total 16 categories. 3. As a result of body cathexis for each part, women are usually not satisfied with their body parts for themselves, regardless of real somatotype. 4. As I divide middle-aged women's somatotype by Rohrer index into the groups of three body-types, then examine real somatotype and cognitive somatotype, I get the following result : The slimmer their bodies are, the more satisfied middle-aged women we. Besides, 40.3% of middle-aged women have an incorrect and distorted understanding of their somatotype. 5. As a result of this research for ideal state of body-size, the women shows their Ideal sizes as follow: 160.55cm for ideal height, 88.73cm for ideal bust girth, 71.14cm for ideal waist girth, 90.03cm for ideal hip girth, and 53kg for ideal weight.
The purpose of this study were to identify the income allocation structure of private education and child care and to analyze contributing factors income allocation structure of private education and child care for two children among Korean married couples. For these purposes total sample of 760 married couples those having two children of both pre-school aged and elementary school aged wee selected and total sample was divided into two groups by first child's school aged; those were pre-school aged(375) and elementary school aged (385) Statistics were frequencies means percentile and Tobit and OLS analysis. The results were as follows. First 268 households among the households those having the first child of pre-school aged spent 11% of income for private education while 29 households spent 7% of income for child care. 348 households among the households having the first child of elementary school aged spent 11% of income for private education. Second pre=-school aged' contri uting factors to income allocation struture of private education and child care were household family type family size home ownership and financial asset amount and elementary school-aged factors were satisfaction of family relationship and financial asset.
The purpose of this study was to analyze the needs and demands of middle-aged women concerning the educational contents of tea-culture, the managing methods of educational programs, and a plan to invigorate tea culture education as a whole. Here is the summary of the main results. 1) The need for tea-culture education scored an average of 4.14 / 5(maximum score). The actual needs for tea-culture education had varied according to the women's place of living, educational motives, and the desire to become lecturers in the future. That is, the actual needs for tea-culture education scored high among the groups who displayed strong personal motives to cultivate their inner minds and learn tea-culture seriously, groups who lived in Seoul${\cdot}$Taegu${\cdot}$Cheonju, and groups who wanted to become future lecturers. 2) The need for a systematic management of tea-culture educational programs scored an average of 4.10 / 5(maximum score). The need for a management of tea-culture educational programs varied according to the women's educational level and their desire to become future lecturers. That is, the need for a systematic management of tea-culture educational programs scored high among groups whose educational level was high, and groups who wanted to become future lecturers. 3) The need for a plan to invigorate tea-culture education scored an average of 4.05 / 5(maximum score). This study was performed to investigate the effect of n-3 fatty acids and dietary protein levels on renal function. Fifteen-month old male Sprague-Dawley rats were divided into 4 diet groups. Two-month old rats were used as a control group. The experimental diets contained either a% or 25% casein and lipid levels of the diets were 20% by weight. For the control group, the lipid was composed of beef tallow and corn oil on a 1:1 basis, and fish oil was comprised 75% of the fat mixture for the fish oil group. Rats were fed the diets ad libitum for 8 weeks. GFR and urinary protein excretion were higher in high protein groups, while fish oil exhibited no effects. Renal medulla TXB$_2$and PGE$_2$ concentrations tended to be higher in high protein groups and lower in fish oil groups. Light microscopic examinations showed that glomerulosclerosis, tubular atrophy, tubular cast, interstitial inflammation and interstitial fibrosis fended to be higher in aged rats and in high protein groups and lower in fish oil groups. Serum levels of total lipid, triglyceride and total cholesterol were higher in aged rats and lower in fish oil groups while serum HDL-cholesterol level was higher in young rats and in fish oil groups. However, dietary protein level had no effect on serum lipid levels. Serum TBARS concentration was higher in aged rats and in fish oil groups. In conclusion, fish oil caused changes in serum lipid concentrations and eicosanoids metabolism. The effect of fish oil on renal function was less obvious than dietary protein. However, fish oil seemed to be effective in lessening deterioration of renal function due to aging and/or high protein diets through changes in lipid and eicosanoids metabolism.
Objective : The incidence of aneurysmal subarachnoid hemorrhage has been increasing. At the same time, surgical results for elderly patients are unsatisfactory and no guidelines of treatment are available. We carried out a study comparing variable factors and surgical results between young and old age groups to find ways to improve prognosis. Methods : A retrospective study was carried out on 754 patients who were operated on between 1990 and 2004 by the same surgeon in our hospital. The patients were divided into seven groups according to age : 93 patients below 40 years of age [Group I], 419 patients aged $40{\sim}59$ [Group II], 115 patients aged $60{\sim}64$ [Group III], 82 patients aged $65{\sim}69$ [Group IV], 28 patients aged $70{\sim}74$ [Group V], 12 patients aged $75{\sim}79$ [Group VI] and 5 patients over the age of 80 [Group VII]. We then checked their medical history, Fisher's grade, Hunt-Hess grade, postoperative complications, and Glasgow Outcome Scale. Results : Age was not a statistically significant factor among patients below 70 years of age [P $value{\ge}0.05$]. But for those aged 70 and older, the age factor had a statistical value [P $value{\le}0.001$]. In addition, there was a close correlation between Hunt-Hess grade IV and V patients, and those with vasospasm, and hydrocephalus after surgery, with poor prognosis in elderly patients as well as young patients [P $value{\le}0.001$]. Conclusion : Advanced age [under the age of 70] dose not precluded adequate surgical treatment in patient with AN SAH, and we should be also alert to preventable causes of delayed neurological deterioration for improving the outcome in all elderly groups.

BACKGROUND/OBJECTIVES: An increasing life expectancy in society has burdened healthcare systems substantially because of the rising prevalence of age-related metabolic diseases. This study compared the effects of animal protein hydrolysate (APH) and casein on metabolic diseases using aged mice. MATERIALS/METHODS: Eight-week-old and 50-week-old C57BL/6J mice were used as the non-aged (YC group) and aged controls (NC group), respectively. The aged mice were divided randomly into 3 groups (NC, low-APH [LP], and high-APH [HP] and fed each experimental diet for 12 weeks. In the LP and HP groups, casein in the AIN-93G diet was substituted with 16 kcal% and 24 kcal% APH, respectively. The mice were sacrificed when they were 63-week-old, and plasma and hepatic lipid, white adipose tissue weight, hepatic glucose, lipid, and antioxidant enzyme activities, immunohistochemistry staining, and mRNA expression related to the glucose metabolism on liver and muscle were analyzed. RESULTS: Supplementation of APH in aging mice resulted in a significant decrease in visceral fat (epididymal, perirenal, retroperitoneal, and mesenteric fat) compared to the negative control (NC) group. The intraperitoneal glucose tolerance test and area under the curve analysis revealed insulin resistance in the NC group, which was alleviated by APH supplementation. APH supplementation reduced hepatic gluconeogenesis and increased glucose utilization in the liver and muscle. Furthermore, APH supplementation improved hepatic steatosis by reducing the hepatic fatty acid and phosphatidate phosphatase activity while increasing the hepatic carnitine palmitoyltransferase activity. Furthermore, in the APH supplementation groups, the red blood cell (RBC) thiobarbituric acid reactive substances and hepatic H2O2 levels decreased, and the RBC glutathione, hepatic catalase, and glutathione peroxidase activities increased. CONCLUSIONS: APH supplementation reduced visceral fat accumulation and alleviated obesity-related metabolic diseases, including insulin resistance and hepatic steatosis, in aged mice. Therefore, high-quality animal protein APH that reduces the molecular weight and enhances the protein digestibility-corrected amino acid score has potential as a dietary supplement for healthy aging.
The purpose of this study was to compare weight control behaviour, eating habits and health-related life habits according to the obesity degree by body fat percentage (%Fat) among middle-aged women. The subjects were 170 middle-aged women who lived Gunsan City, and they were assigned to one of the following groups based on their %Fat; normal weight group (18% - < 28%), overweight group (28% - < 33%) and obesity group (over 33%). The height, body weight, %Fat, the circumference of waist and hip of them were measured. Eating habits and health-related life habits were evaluated based on questionnaires. The results were as follows. Their weight, %Fat, body mass index (BMI), relative body weight (RBW), waist, hip, and waist-hip ratio (WHR) were significantly higher in the obesity subjects when compared to the normal and overweight subjects. Self-perception for weight (p < 0.001), desire for weight control (p < 0.01), and reasons of weight control (p < 0.05) were different among three groups. The main skipped meal was breakfast (67.9%), reasons of skipping meals were different among three groups (p < 0.05), and main reasons were "lose one's appetite" and "have not enough time". Food habits score for each food was not significantly different among three groups, but eating the meal on thinking with food combination in normal group was higher than overweight and obesity group (p < 0.01). Correlation coefficients of food habits score and anthropometric measurements were that salty of food was negative and food habits scores were positive correlation for anthropometric measurements and obesity index (p < 0.05 - p < 0.001). Frequency of exercise and fitting exercise for body were different among three groups (p < 0.05). Obesity group was lower frequency of exercise than the other groups. Regular diet was positive correlation with food combination (p < 0.01), taking fish (p < 0.05), taking vegetables (p < 0.01), taking bean products (p < 0.01) and food habits score (p < 0.01), frequency of eating out and snacks were negative correlation with taking fruits and fishes. Therefore, proper nutritional education for middle-aged women in obesity group is recommended regular diet, good food habits and exercise. The middle-aged women must decrease the frequency of eating out, snack and the salty foods, and increase the fruits and vegetables. They must have healthy life styles for exercise, smoking, and drinking.
Purpose: This study aims to compare health status and health behavior among the hypertension group, the DM group, and the hypertension-DM group for aged clients of customized home visiting health care services. Methods: This study was conducted as cross-sectional research. The subjects of this study were 2,235 aged people over 65 living in J City. Data were collected using structured questionnaires and measurements. The collected data were analyzed using the SPSS/WIN 12.0 program, and descriptive statistics, $x^2$ test, t-test and ANOVA were used for the analyses. Results: BP and glucose control showed a significant difference among the groups. BMI and waist circumference were significantly higher in the hypertension-DM group than in the other groups. Stroke, arthritis, and perceived health status were significantly different among the three groups. Depression was high, but not significantly different among the groups. Smoking and drinking were not significantly different among the groups. Physical activity was very low, especially in the hypertension group. Medication was high, especially in the hypertension-DM group. Conclusion: It is necessary to consider care plans for the hypertension-DM group, and educate the group for care management. Also, depression and physical activity programs are needed for the age.
