This study was peformed to provide basic ideas as understanding and application for oriental medicinal cuisine (Yak-Sun). We investigated background, history of Yak-Sun in China. Also we conducted to investigated how to apply the theories of oriental medicine appropriately, which direction should be taken, and how it should be developed. To develop medicinal cuisine, it is necessary to grasp the theoretical system. And to develop medicinal cuisine for health enhancement, it is also required not only to consider constitutions but also to suggest the need of knowledge for moderation in terms of regimen along with the theory of oriental medicine. Also to develop medicinal cuisine according to the perspective of oriental medicinal theory, what should be taken into account is not only the understanding of the characteristics of food materials, but also the properties of them that the theory of oriental medicine. Lastly the scientific effect of the medicinal cuisine which is developed according to the oriental medicinal theory. And it is believed to be essential for the government to make effects to set a standard and laws to validate the medicinal effects and the process of assessment so that the systematic development can be encouraged, and to prepare guidance to food development for national health improvement.

This research evaluated how the composition of Yak-sun(oriental diet therapy), taken as a nutritional supplement with daily meals, can effect the medical condition of those suffering from modern diseases like obesity and hyperlipideia. We produced Yak-sun tea, determined its nutrient composition and physical characteristics and evaluated how this tea effects affects the active oxygen concentration inside the body by clinical practices. The study results indicated that this tea significantly decrease active oxygen concentration. We think that scientific and objective evaluation was done on the components of Yak-sun tea prescription. We concluded that we could apply the components not only in the form of tea, but also in other food forms. The information we received from this conclusion will provide basic information for the application of oriental medicinal resources into other foods and will also be a steppingstone in the field of functional food research for the development of medicinal herbs which is already an important research field world-wide.

This research was planned and executed to evaluate how the composition of Yak-sun(oriental diet therapy) can effect health conditions of people who are suffering from diet-related diseases like obesity and hyperlipidemia by taking Yak-sun in a form of nutritional supplement with our daily meals. We produced Jangswucha with Koekac, Sansa, Heshouwu, Wulong and evaluated how this tea effects on serum lipids and oxidative stress by clinical practices. Also we examined physical characteristics of Jangswucha. Brix, pH and titratable acidity of Jangswucha were 1.4, 5.50 and 0.05%. With this observation, we found out that this tea has significant effect on increase of HDL-cholesterol, decrease of LDL-cholesterol concentration in serum. Also this tea significant effect on decrease oxidative stress and homocystein content. We think that scientific and objective evaluation was done on the components of Yak-sun tea prescription. We concluded that we could apply the components not only in a form of tea, but also in other forms of various food. The information we received from this conclusion will be a basic information on how we can apply oriental medicinal resources into other food and will also be a steppingstone for medicinal herbs to step foot in the field of functional food research, which already draws sizable attention world-wide.
Various types of tea are consumed as a popular beverage worldwide particularly in Asian countries such as Korea, China, and Japan. The purpose of this study was to investigate the mineral contents, antioxidant properties and anticancer activity of Yak-Sun tea that is prepared by six oriental medicinal herbs. The results of the mineral contents were as follows; Ca, Mg, and Na contents were higher than those of green tea, whereas Fe, P, and K contents were lower than those of green tea. The total phenolics and flavonoid content of the Yak-Sun tea were higher than those of green and black teas. The $IC_{50}$ values of DPPH radical, hydroxyl radical, hydrogen peroxide radical scavenging of Yak-Sun tea were 0.78, 1.58, and 2.04 $mg/m{\ell}$, respectively, whereas the radical scavenging values of ${\alpha}$-tocopherol was 0.06, 0.05, and 0.09 $mg/m{\ell}$, respectively. When cancer cells were treated with Yak-Sun tea, the anticancer activity increased in a dose dependent manner. HCT116 colon cancer cell lines were dramatically increased, as compared to other cancer cell lines, such as MCF-7, H460, and MKN45 cell lines. The results of this study demonstrated that Yak-Sun tea could function as a tea to enhance health conditions for antioxidant and anticancer activity.

This study investigated the perception, evaluation, and the possibility for globalizing Korean foods and Yak-sun among different nationalities of foreigners living in Korea. A survey was conducted with 171 foreigners (eastern Asian, southeastern and central Asian, European, and American). The questionnaire was composed of three parts, including perception, evaluation, and the possibility for globalizing Korean foods and Yak-sun. The reason for choosing Korean foods cited by southeastern and central Asians and Americans was "taste", whereas eastern Asians and Europeans chose "culture" and "curiosity", respectively. Americans and Europeans considered "spiciness" as a reason not to choose Korean foods (P<0.001). Regarding the possibility of globalizing Korean foods, eastern Asians and Americans/Europeans/southeast Asians and central Asians responded "Korean dining culture" and "incomprehensive menus", respectively (P<0.05). An "explanation of the menu to foreigners" was regarded as the main suggestion for globalizing Korean food. Most of the respondents understood that Yak-sun is an oriental medicinal food that provides improved health and disease prevention. A number of Europeans and Americans expressed high interest in the conceptualization of Yak-sun (P<0.001). With regard to the priority for developing Yak-sun, eastern Asians, southeastern and central Asians, and Europeans picked out "health status improvement", whereas "improved nutritional status" was manifested in the majority of the American's responses (P<0.001). Therefore, it is crucial that "localization" be applied to Korean foods and Yak-sun to meet the international standard. Furthermore, it is necessary to provide simplified and correct Korean food content information to foreigners.

This study was penonned to provide basic data that predict the usefulness of Gastrodiae rhizoma as food materials for oriental medicinal cuisine(YakSun). We measured the changes of regional cerebral blood flow(rCBF) and blood pressure(BP) in rats, following the intravenous injection of Gastrodiae rhizoma water extract The measurement was continually monitored by laser-doppler flowmeter and pressure transducer in anesthetized adult Sprague-Dawley rats for about two to two and half hours through the data acquisition system composed of MacLab and Macintosh computer. The results of this experiment were as follows. Gastrodiae rhizoma increased the changes of rCBF in rats significantly. The rCBF of Gastrodiae rhizoma did not change by pretreated propranolol, atropin, methylene blue and indomethacin. But the rCBF of Gastrodiae rhizoma was increased by pretreated L-NNA. Gastrodiae rhizaoma decreased the changes of BP significantly. The BP of Gastrodiae rhizoma did not change by pretreated propranolol, atropin, methylene blue and indomethacin. But the BP of Gastrodiae rhizoma was decreased by pretreated L-NNA. These results indicated that Gastrodiae rhizoma might increase the rCBF and the BP which related to nitric oxide synthesis. Also these results indicate that Gastrodiae rhizoma can be used as a safe and clinically applicable to diet therapy of cerebral cardiovascular disease.

Five oriental medicininal herbs, Coix lachryma-jobi L, Atractylodes lancea DC., Ligusticum wallichii F., Angelica sinensis D., Zingiber officinale R. were collected and made into mixing extracts(OMCE). And we examined the effects of OMCE on body weight serum glucose, insulin and lipid profile improvement in rats fed high fat diets. Sprague-Dawley rae(230-250 g) were randomly divided into five groups : basal diet(normal diet control group, NCG), only high fat diet(High fat control group, HCG), high fat diet and supplemented with 25mg/100g body weight 50mg/100g body weight 75mg/100g body weight by OMCE(HLG, HMG, HHG). These experimental diets were fed for 6 weeks. The OME fed groups decreased more significantly in weight serum glucose insulin and lipids than the high fat control group did. These results imply that the OMCE can be used as a safe and clinically applicable ingredients for diet called Yaksun of excess syndrome obesity in human.
