African Americans in the United States suffer from many health disparities such as obesity, diabetes or hypertension. Lifestyle factors including diet and physical activity play an important role in prevention of these health conditions. The purpose of this research project was to assess beliefs, barriers and self-efficacy of eating a healthy diet and self efficacy of shopping for foods such as whole grains or foods designated as low fat or low sodium. Additionally, the objective was to assess beliefs about healthfulness, appropriate consumption, and protective aspect of specific foods including fruits, vegetables, and whole grains. The assessment was done using a survey instrument developed for this study. Data collection took place at two church locations. Data were obtained from 57 African Americans, mean age 50 years old (SD 12.70) completed the survey. The majority of respondents (58.1%) were females and most (75%) had at least some college education. Generally, benefits of eating healthy foods received considerably higher scores compared to barriers of eating healthy. A belief that healthy foods would help to take care of one's body received the highest mean score while a belief that healthy foods are too expensive had the highest score from all barriers. The results showed high self-efficacy of eating and purchasing healthy foods, high awareness of knowledge regarding foods associated with disease prevention but low awareness of recommendations for fruits and vegetables. The high scores for benefits, self-efficacy and knowledge regarding eating healthy foods did not translate into the perception of intake of such foods. Most participants believed that they do not eat enough of healthy foods. Interventions design to help African Americans make dietary changes should be culturally relevant and should involved working on a community level utilizing messages that are familiar and relevant to African Americans.

Objectives: Republic of Korea has entered an aged society, recently. As chronic diseases increase, elderly inpatients has been increasing and they have used caregivers for convenience. Accordingly, this study aims to investigate the oral health knowledge and attitude of caregivers on oral health management of elderly inpatients, which would affect the general health and quality of life. Methods: A survey questionnaire was distributed to the caregiver(n=165), at a neurosurgery or orthopedic hospital inpatient ward in Seoul, Gyeonggi-do from April 1 to 14, 2017. We analyzed the data with descriptive statistics analysis, chi-squared analysis and logistic regression analysis by using SPSS 23.0. Results: The response rate to the questionnaire was 92%. Oral health management provided by caregivers to inpatients in the elderly was prevention of oral diseases(92.8%), tooth brushing (89.5%), use of oral care products(68.4%), denture cleaning(90.8%) and oral cleaning(90.8%). Frequency analysis of oral health management in accordance with the educational needs of caregivers was all confirmed statistically significant(p<0.05). In the logistics regression model, oral health knowledge was significantly associated with low oral cleaning(OR=1.58) and oral health attitude was significantly associated with high denture cleaning(OR=1.29) and oral cleaning(OR=1.28) after adjustment for other covariates including gender, age, certification, education level, ward, working years. Conclusions: It is necessary to expand the scope and improve the quality of education that can change the attitudes and behaviors of the caregivers on the oral health management of the elderly on the basis of the current oral health education.
The purpose of this study is to analyze the educational effects and the improvements of the 'Science Field Trips' Program which developed with the aim of fostering the prospective elementary school teachers' ability to manage science field trips. The participants were 13 senior students from a national university of education. The results of the study are as follows: First, with regard to the effectiveness in the science instruction aspect of the prospective teachers' geological field trip as an experiential activity, the responses of the participants were children's 'scientific knowledge'(69.2%), 'science related attitudes'(46.2%), and 'science inquiry'(30.8%). Second, regarding the effectiveness of the geological field trip in their management of science field trips aspects in the future, the responses of the participants were 'teaching strategies'(92.3%), 'plan implementation'(76.9%), 'teacher's science knowledge'(61.5%), 'self-confidence'(38.5%), 'enhancement of awareness of field trips'(23.1%), and 'career guidance'(7.7%). Third, with regard to the effectiveness in the science instruction aspect of their activities of planning a science field trip in their future working districts, the responses of the participants were children's 'science knowledge'(38.5%), 'science-related attitudes'(38.5%), and 'science inquiry'(23.1%). Fourth, regarding the effectiveness in their management of science field trips aspects of the activities of planning a science field trip, the responses of the participants were 'plan implementation'(92.3%), 'the identification of science field trip sites'(84.6%), 'teaching strategies'(76.9%), 'administrative affairs'(69.2%), 'teacher's science knowledge'(30.8%), 'enhancement of awareness of field trips'(23.1%), 'career guidance'(15.4%), and 'self-confidence' (15.4%). The improvements plans of the program and the suggestions for future research is also described in this study.
This study investigated the relationship between knowledge of COVID-19, the risk of exposure to subjective infectious diseases, and the degree of infection control practices for dental personnel. For dental personnel currently working in dentistry, a survey consisting of 10 questions about COVID-19 knowledge and 63 questions about infection control practices was conducted. This study analyzed 126 survey data collected by distributing questionnaires form May 30 to June 20, 2020. Data was analyzed using t-test, ANOVA, and Pearson correlation. The average level of knowledge of COVID-19 was 5.44 out of 10, the average risk of exposure to infectious diseases was 3.86 out of 5, and the average level of infection control practices was 4.05 out of 5. The risk of exposure to infectious diseases was positively correlated with dental waste (r=.184). It was found that there was a significant positive correlation between infection control practices and sub-factors of infection control practices (p<0.001). To prevent the spread of COVID-19 and infectious diseases and to reduce the risk of exposure to infectious diseases for dental personnel, the practice of infection control should be improved. It is necessary to cultivate infection control experts and have mandatory infection control education and social regulations.
Objectives: This study was conducted to investigate dental hygienists' knowledge of smoking, attitudes toward tobacco cessation, and tobacco cessation education activities, which will serve as fundamental data for developing an effective tobacco cessation education program for dental hygienists. Methods: From 2020-08-17 to 2020-09-05, 184 dental hygienists working at dental clinics and hospitals in Gwangju and Jeollanam-do were surveyed. We performed t-tests, ANOVA, Pearson's correlation analysis, and multiple regression analyses. Results: Dental hygienists' smoking-related knowledge, expert attitudes toward tobacco cessation, and tobacco cessation education activities were all high in tobacco cessation education (p<0.05). According to the analysis of the dental hygienists' knowledge of smoking, attitude toward smoking, and correlation of tobacco cessation education activities, there was a significant amount of correlation (p<0.01). According to the analysis of factors affecting dental hygienists' tobacco cessation education activities, expert attitudes towards tobacco cessation (𝛽=0.434, p<0.001), tobacco cessation materials (𝛽=0.160, p=0.009), experience in tobacco cessation education while attending school (𝛽=0.152, p=0.010), and attitudes toward tobacco cessation (p<0.05) were statistically significant. Conclusions: The results of this study are utilized as fundamental data to develop an effective tobacco cessation education program, factoring in dental hygienists' attitudes toward tobacco cessation.
Internal dosimetry is a discipline which brings together a set of knowledge, tools and procedures for calculating the dose received after incorporation of radionuclides into the body. Several steps are necessary to calculate the committed effective dose (CED) for workers or members of the public. Each step uses the best available knowledge in the field of radionuclide biokinetics, energy deposition in organs and tissues, the efficiency of radiation to cause a stochastic effect, or in the contributions of individual organs and tissues to overall detriment from radiation. In all these fields, knowledge is abundant and supported by many works initiated several decades ago. That makes the CED a very robust quantity, representing exposure for reference persons in reference situation of exposure and to be used for optimization and assessment of compliance with dose limits. However, the CED suffers from certain limitations, accepted by the International Commission on Radiological Protection (ICRP) for reasons of simplification. Some of its limitations deserve to be overcome and the ICRP is continuously working on this. Beyond the efforts to make the CED an even more reliable and precise tool, there is an increasing demand for personalized dosimetry, particularly in the medical field. To respond to this demand, currently available tools in dosimetry can be adjusted. However, this would require coupling these efforts with a better assessment of the individual risk, which would then have to consider the physiology of the persons concerned but also their lifestyle and medical history. Dosimetry and risk assessment are closely linked and can only be developed in parallel. This paper presents the state of the art of internal dosimetry knowledge and the limitations to be overcome both to make the CED more precise and to develop other dosimetric quantities, which would make it possible to better approximate the individual dose.
Purpose: This study aimed to investigate the effect of a video-based enteral nutrition education program using QR codes on the perception, knowledge, and performance of enteral nutrition for intensive care unit (ICU) nurses. Methods: This was a quasi-experimental study with a nonequivalent control group pre- and post-test design. The participants were nurses working at six ICUs within a single university hospital, with 55 nurses in the experimental group and 55 nurses in the control group. The video-based enteral nutrition education program using QR codes was repeated three times to the experimental group. Results: There was a statistically significant pre-post difference in perceptions between the two groups (Z = -4.04, p < .001) with 2.00 points (± 5.57) for the control group and 7.89 points (± 7.95) for the experimental group, in knowledge (Z = -7.48, p < .001) with 0.02 points (± 1.91) for the control and 4.18 points (± 2.33) for the experimental, and in performance (Z = -2.20, p = .028) with 0.06 points (± 3.96) for the control and 2.00 points (± 5.14) for the experimental. Conclusion: The video-based enteral nutrition education program using QR codes was effective in improving the perceptions, knowledge, and performance of enteral nutrition among ICU nurses. This enteral nutrition education program using QR codes in clinical education can contribute to evidence-based nursing practice by improving perceptions and knowledge of enteral nutrition.

The purpose of this study is to understand the effects on patient safety knowledge, patient safety performance confidence, and attitude toward patient safety after operating a interprofessional education program for 3 rd and 4 th grade healthcare students with clinical practice experience. We operated a interprofessional education program for 6 days, and the program consisted of job understanding, patient safety risk prediction training, and scenario-based patient safety experience. Patient safety knowledge(t=-5.01, p<.001), patient safety performance confidence(t=-6.75, p<.001), and patient safety attitude(t=-2.59, p=.013) increased statistically significantly after applying the six-day the interprofessional education program. Based on the results of this study, it is necessary to develop programs and evaluate their effectiveness by diversifying educational topics for interprofessional education program. In addition, it is necessary to expand and operate not only for university students but also for new employees working in medical facilities
It is thought that the sanitary perception and hygienic food treatment of food suppliers as the first handlers of foodstuffs are extremely significant for the safe and sanitary management of food in group meal services. So in this study, a survey of 103 food suppliers who provide raw materials for 80 meal services in business places around Busan area was conducted on general matters, participation in sanitation education, sanitary perception, sanitary treatment of foodstuffs, knowledge of sanitation, etc. The results of the survey are as follows: 1. 42.7% of the subjects have worked for the food supply companies for one to five years and the main job of 36.9% of them is delivery service. Food suppliers who handle over two foodstuffs are 6839%. 2. Concerning the participation in sanitation education, 43.7% of the subjects have not experienced any such education, The reason of 23.3% of them for not having the education is that there have been no opportunity for them at all. And 83.5% of them regard the education on hygiene as necessary. 3. In the sanitary perception, 93.1% of the subjects considered the temperature control of the food delivery vehicles as important and 82.5% of them replied on of the leading causes of food poisoning as foodstuffs. 64.0% thought of their knowledge of food sanitation as not very good, but moderate. 4. Concerning sanitary treatment of foodstuffs, 50.5% of delivery vehicles were wearing sanitary uniforms and 24.3% of them washed their hands while supplying food. 5. In the score of hygienic knowledge, the average score of all food suppliers was 60.6 point. In the score of hygienic knowledge on general matters, managing supervisors got 6.31$\pm$1.70. In the score of hygienic knowledge based on the perception of food sanitation, the food suppliers with the experience of sanitation education scored 6.42$\pm$1.93 point and the point was significant(p<0.01), compared with that of the food suppliers without the experience of sanitation education. The food suppliers who answered their knowledge was very good scored the highest point, 8.00$\pm$1.41. The food suppliers who replied that sanitation education was truly necessary recorded the hygienic knowledge score of 6.75$\pm$1.77, significantly(p<0.01) high. In the score of hygienic knowledge on the basis of the practical degree of sanitary handling of food materials, the food suppliers who answered they cleaned their delivery vehicles everyday scored 6.48$\pm$1.93, the food suppliers who answered they sterilized their delivery vehicles everyday scored 6.29$\pm$1.89, the food suppliers who answered they controlled the temperature of their delivery vehicles irregularly scored 6.58$\pm$1.79 and the food suppliers who answered they washed their hands every time when they were working scored 6.86$\pm$2.24, significantly(p<0.05) high in comparison with every item in other factors. And the food suppliers who answered they were wearing sanitary uniforms irregularly while supplying foodstuffs scored the highest point, 6.66$\pm$2.92.

As the population over the age of 65 increases, the demand for nurses who care for this group also continues to grow. Well-prepared nurses who are knowledgeable and skilled for the elderly can be prepared through systematic gerontological nursing curricula. This study was carried out to identify the needs for gerontological nursing curricular contents. The subjects for this study were two participant groups the educators who teach gerontological nursing in three-year and four-year baccalaureate nursing programs, and the nurses who are working with the elderly in hospitals, community health centers, social welfare agencies, and community health practioner's posts. The major findings of the study are as follows : 1. The differences between actual contents and essential contents of the educators : Concerning the actual contents that is actually taught, the educators showed the highest scores on the demographics of older adults and the lowest scores on the cultural variations affecting health care. Regarding the essential contents, the educators showed the highest scores on the demographics and the lowest scores on the economics of aging. Aside from the demographics, all of the items were found to have significant differences between essential and actual contents. This implies that all the content areas except demographics should be emphasized. 2. The differences between actual knowledge and essential knowledge of the nurses : Concerning the nurses' actual knowledge, the nurses showed the highest scores on the common health problems and their treatment and the lowest scores on the politics of aging. Regarding the essential knowledge, nurses showed the highest scores on the chronic illness and common health problems and the lowest scores on their roles and functions. However, they thought all the items to be essential. All of the items were found to have significant differences between actual and essential knowledge. The nurses who studied gerontological nursing in their school years and after graduating had more knowledge. However, they felt more knowledge was needed. This implies that the nurses need more education in all content areas of gerontological nursing. 3. The differences between educators and nurses : Concerning the essential contents, the educators showed higher scores on the demographics and growth and development than the nurses. Whereas, the nurses showed higher scores on the cultural variations, long-term care, economics of aging, politics of aging, legal and ethical issues, and common health problems than the educators. 4. Activities of nursing care for the elderly : Most common activities were related to direct nursing care such as giving physical care, counseling/teaching clients, and assessing and planning care for the clients. Nurses thought that all the items were critical, but they showed relatively low scores on the following :'serve on multidisciplinary committee', 'preparing reports', 'evaluation of outcomes of care', 'determine policy for nursing service', 'set patient care standards', and 'participate in nursing research' The constraints in providing better nursing service were time constraints, administrative restraints, social restraints, and inadequate knowledge.
