석회물질 시용이 Burley종 연초의 수량과 화학성분에 미치는 영향 (Response of Burley Tobacco (Nicotiana tabacum L.) to Application of Lime Materials)

  • Burley 종 연초재배에 있어서 석회시용의 타당성을 구명하고자 Burley 21을 공시품종으로 석회무시용구, 황산칼슘(Ca : 35kg/10a), 탄산칼슘(Ca : 35kg/10a) 농용석회(pH 6.5 조정량) 시용구를 두고 수량, 엽중 무기 및 유기성분을 분석한 결과는 다음과 같다. 1. 석회무시용구에 비해 황산칼슘 시용구는 토양 및 엽중 무기성분 함량에서 대차를 보이지 않았으나, 탄산칼슘과 농용석회시용구는 Ca, mg 함량이 높아지고 Al, Mn, Fe 함량은 감소하였다. 2. 담배 수량은 석회무시용 < 황산칼슘 < 탄산칼슘, 농용석회순으로 나타났으나, kg 당 가격은 차이가 없었다. 종자 생산량은 무시용 < 농용석회 < 황산칼슘, 탄산칼슘순으로 증가하였다. 3. 무시용구에 비해 황산칼슘시용구는 건조엽의 암모니아 태질소, 비수용성알칼리 계수가 높았으며, 탄산칼슘시용구는 수용성 및 비수용성알칼리 계수, 향기성분 함량이 높았으나, 단백태질소, 석유에텔추출물 함량은 낮았다. 농용석회시용구는 질산태질소, 수용성 및 비수용성알칼리계수, 향기성분 함량은 높았으나, 단백태질소 암모니아태질소 니코틴 석유에텔추출물 함량은 낮았다. 석회시용에 의한 엽중 화학성분의 변화는 장, 단점이 상쇄되어 품질에 큰 영향을 미치지 않을 것으로 생각된다. 따라서 토양 pH를 미산성 (pH 6.5내외)으로 유지시킬 수 있는 석회 시용이 필요할 것이다.

Interactions between Chicken Salt-soluble Meat Proteins and Makgeolli Lees Fiber in Heat-induced Gels

  • The technological effects of Makgeolli lees fiber (0, 0.5, 1.0, 2.0, and 4.0%) on chicken salt-soluble breast meat proteins in a model system on proximate composition, physicochemical properties, and textural properties were investigated. Makgeolli lees fiber was obtained from Makgeolli brew processing, and the by-products showed good dietary fiber. The moisture and ash contents, water holding capacity, redness, yellowness, hardness, and apparent viscosity of chicken salt-soluble meat protein heat-induced gel systems with Makgeolli lees fiber were all higher than the control without Makgeolli lees fiber. However, protein solubility and electrophoretic patterns did not differ among the control and treatments with Makgeolli lees fiber samples. The chicken salt-soluble protein heat-induced gel systems incorporating Makgeolli lees fiber had improved water holding capacity, textural properties, and viscosity due to Makgeolli lees fiber addition. These results suggest that the addition of 4.0% Makgeolli lees fiber to gel is helpful to improve the physical properties of heat-induced gels.

콩을 이용한 치-즈제조에 관한 연구 (Studies on Preparation of a Cheese-like product from Soybean Milk)

  • 1. 5섯가지 젖산균을 대두유에 접종배양 하여 산 생성도를 비교 하였드니 Str. thermophilus 와 Str. diacetilactis가 Str. lactis, Str. cremoris 및 L. bulgaricus보다 높았다. 2. 대두유와 탈지 분유를 7 : 3의 비로 혼합하여 젖산균 발효를 하였을 때에 침전물의 수획량이 가장 많고 또한 그의 단백질 함량이 가장 많으며 수분의 량이 적고 견고한 curd를 만들수 있음을 알았다. 3. 대두유와 탈지분유를 7 : 3의 비로 혼합한 것에 젖산균 starter로 Str. thermophilus를 첨가하고 Pen. caseicolum을 접종하여 제조한 치-즈를 3주간 숙성$(15^{\circ}C,\;RH:\;85{\sim}90%)$ 하였드니 숙성 7일째부터 Pen. caseicolum의 생육이 왕성하게 되며 pH가 상승함과 동시에 proteolytic activity는 14일째에 최고치에 도달하였다, 또 total water soluble nitrogen, water soluble protein nitrogen 및 amino-N도 숙성 7일째부터 증가하기 시작하여 숙성 21일째는 이들의 값이 각각 total nitrogen의 52%, 32% 및 14%에 이르렀다. 그리고 이차원 paper chromatography에 의하여 3주간 숙성한 치-즈에서 17종의 아미노산을 검출 하였다. 또 3주간 숙성한 후 제품의 일반성분 조성은 수분 63.2%, 조단백질 17.5%, 조지방 13.2%, 조회분 2.8% 및 식염 2.5%였다.

쑥, 솔잎 및 두릅 추출물을 첨가한 돈육 Patty의 품질 특성 (Quality Characteristics of Pork Patties Prepared with Mugwort, Pine Needle and Fatsia Leaf Extracts)

  • In order to investigate the possibility of functional property improvement of meat products, four kinds of pork patties were prepared with water 10% as control, mugwort extract 10%, pine needle extract 10% and fatsia leaf extract 10%, respectively. In case of control moisture content was higher, but crude fat was lower, compared to patties treated with plant extracts. Crude ash content of pine needle extract treatment showed higher level than that of other patties. pH range of patties revealed to 5.92∼5.978. In raw patties Hunter's L-and a-value of control were higher than those of plant extract treatment, and a-value of raw patties showed higher level than that of cooked. Yield, water holding capacity, salt soluble protein extractability and gel strength among patties did not show significant differences. In control patty, fat retention was lower compared to other plant extract treatments, but water soluble protein extractability was higher compared to pine needle. Values such as hardness, springiness, cohesiveness, gumminess and chewiness were not significantly different among the patties. In sensory scores such as aroma, juiciness and palatability, significant differences were not observed among cooked patties, but texture score was higher in the order pine needle, mugwort, fatsia leaf and control.

Techno-functional and rheological properties of Tenebrio molitor larvae protein by different extraction methods

  • Alkaline- or salt-assisted extractions have been widely used to extract edible insect proteins, however, there is a need for extraction techniques that balance cost-efficient production as well as preserving the protein properties. Mealworm proteins (Tenebrio molitor larvae) were extracted using three different extraction methods-alkali (AMP), salt (SMP), and water (WMP)-and then physicochemical and techno-functional properties were examined. AMP had high yield, protein, and amino acid contents, whereas WMP had high moisture, ash, and fat contents. SDS-PAGE showed a wide range of molecular weights in WMP whereas mostly low molecular weights were observed in AMP and SMP. AMP had poor protein solubilities compared to SMP and WMP across all pHs. AMP had enhanced water-holding capacity and emulsion stability, whereas WMP had improved oil-holding capacity and foaming properties. WMP formed a gel with and without the transglutaminase. The physicochemical and techno-functional properties demonstrated that water-soluble mealworm protein was superior to alkali-and salt-soluble mealworm proteins. Considering the cost efficiency and minimal impact on the environment as well, a cold press juicer could be utilized for mass production of mealworm protein compared to the conventional methods of protein extraction using alkali and salt.

황색종 잎담배의 숙도에 따른 화학성분의 변화연구 (Studies on the Change of Chemical Components of Flue-cured Tobacco with Maturity)

  • This experiment was carried out to determine the relationships between maturity and content of the chemical components in flue-cured tobacco. The results were as follows : 1) Among the chemical components, the contents of total nitrogen, ammonia nitrogen, total alkaloids, nicotine, total volatile base, petroleum-ether extract, crude fiber, crude ash, water soluble ash, and chlorine decreased significantly, and those of total sugar, reducing sugar, and starch increased as leaf maturity progressed until the stage of ripeness, but, afterwards, a reverse tendency appeared. 2) There was a significant relationship between maturity and the contents of chemical components, such as total nitrogen, protein nitrogen, ammonia nitrogen, total volatile base, and the correlation coefficients of them were -0.743, -0.789, -0.797, and -0.642, respectively.

Pharmacognostic Evaluation of the Roots of Berberis chitria Lindl.

  • Berberis chitria (family Berberidaceae) has a close affinity with B. aristata, used in traditional systems of medicine as a drug 'Daruharidra' for skin disease, jaundice, affection of eyes, and rheumatism. Keeping this in view, in the present study attempts have been made to identify marker characters of B. chitria in order to differentiate the two species. Some of the diagnostic features of the root are patches of pericyclic fibre, pitted sclerieds and berberine containing cells and heterocyclic medullary rays. Besides, the physicochemical characters such as total ash; acid insoluble ash; alcohol and water soluble extractive; tannins; sugar and starch percentages has shown variations. The percentage of berberine as berberine hydrochloride was also calculated through HPTLC densitometric method and it was found little higher than B. aristata and B. asiatica i.e. 3.16%. Thus, this species can be utilized as a possible substitute to Daruharidra.

  • Berberis tinctoria (Berberidaceae), commonly known as Nilgiri Barberry is a common allied species to B. aristata, used in India Traditional Systems of Medicine by the name of 'Daruharidra' for skin disease, jaundice, affection of eyes, and rheumatism. Keeping this in view, in the present study attempts have been made to identify marker characters of B. tinctoria. Some of the diagnostic features of the root are patches of pericyclic fibre, pitted sclerieds, crystals, berberine containing cells and heterocyclic medullary rays. Besides, the physicochemical characters such as total ash; acid insoluble ash; alcohol and water soluble extractive; tannins; sugar and starch percentages has also shown some variations. The percentage of berberine as berberine hydrochloride was also calculated through HPTLC densitometric method and it was found almost similar to B. aristata, B. asiatica and B. chitria i.e. 3.36%. Thus it can be explored as a possible source of substitute to B.aristata.

동백유박을 이용한 고식이섬유빵 제조 (Preparation of High-Fiber Bread with Camellia (Camellia Japonica L.) Seed Flour)

  • This study was carried out to examine the effect on the contents of dietary fiber, mechanical properties, and sensory quality of bread contained with 10% of high-fiber Camellia (Camellia japonica L.) seed flour. Bread added by dietary fiber was the contents of moisture, protein and ash higher than control bread, while the contents of lipid lower than that of control bread. The high-fiber with Camellia seed flour contained 8.6% soluble dietary fiber, 43.7% insoluble dietary fiber, and 52.3% total dietary fiber. The ratio of insoluble dietary fiber/soluble dietary fiber in the high-fiber with Camelia seed flour was 5 times. Bread with the addition of dietary fiber contained 6.9% total dietary fiber. With the addition of dietary fiber, water absorption , mixing time loaf weight, and hardness increased, but the loaf volume decreased . The sensory quality on bread added by dietary fiber was somewhat low in color, appearance, crumb texture, mouthfeel, flavor and overall preference was higher than that of control bread.

Quality Monitoring of Distributed Schizandra chinensis (Turcz.) Baill in Korea

  • Object : This study investigated the quality inspection of Schizandra chinensis (Turcz.) Bail distributed in Korea. Methods: To evaluate the quality of these herbal medicines, we carried out TLC pattern analysis, purity, loss on drying, ash, acid-insoluble ash, essential oil contents, dilute ethanol-soluble, water-soluble, ether-soluble extracts and HPLC analysis. Results : As a result, TCL pattern analysis of schizandrin and gomisin A showed Rf=0.64 and 0.74, respectively. To measured content of schizandrin and gomisin A, we quantitatively analyzed using HPLC. The average contents of schizandrin and gomisin A were detected to be 0.60 (${\pm}$0.02)% and 0.12 (${\pm}$0.004)%, respectively. Discussion : As a result of this study, we suggest that the minimum content of schizandrin and gomisin A should be 0.5% and 0.1%, respectively. We could suggest that the minimum of essential oil content should be 0.6 ml.
