발효·소멸 기술을 이용한 음식물 쓰레기 무배출 시스템에 대한 공동주택 거주자의 태도에 관한 분석 (Exploring Residents' Attitudes in Multifamily Housing Toward Food Waste Zero-Emission System with Fermentation and Extinction Technology)

  • 주택 내에서 발생하는 음식물 쓰레기의 실태를 조사하고, 음식물 쓰레기의 자원화와 바이오처리를 이용한 음식물 쓰레기 무배출 시스템에 대한 거주자의 태도를 조사하는 본 연구에서는 전국 소재의 공동주택 단지 총 400세대를 대상으로 설문조사를 실시하였다. 가설검정을 위하여 SPSS window version 18.0 통계분석 프로그램을 사용하여 빈도 및 백분율, t-검정, ANOVA, 요인분석, 로지스틱 회귀분석을 실시하였다. 분석 결과, 주택에서 배출되는 음식물 쓰레기는 국 또는 찌개류, 나물반찬, 과일류 등 수분이 다량 함유되고 쉽게 부패되는 종류였고, 음식준비과정에서 많이 배출되고 있었으며, 쓰레기 배출시 악취와 벌레 등의 불쾌감과 쓰레기 배출시의 불편함이 지적되었다. 이로 인해 음식물 쓰레기의 에너지화와 부엌 싱크대에 음식물 쓰레기 무배출 시스템의 설치에 적극적이었으며, 그 시스템을 주택건설단계부터 구조적으로 설치되길 선호하였다. 회귀분석 결과, 주부 학력, 요리스타일과 식재료 구입계획의 식재료 구매단계 특성이 음식물 쓰레기의 자원화 경향에 통계적으로 유의한 요인들이었다. 즉, 주부 학력이 높을수록, 식재료 구매단계특성 중 식재료 구입계획이 허술할수록 음식물 쓰레기를 자원화하려는 경향이 높았다. 반면, 음식물 쓰레기 무배출 시스템 설치 희망에 미치는 요인은 통계적으로 유의하지 않았으나, 주부연령이 낮고 학력이 높을수록 가족생활주기가 자녀초등 청소년기일수록 음식물 쓰레기 무배출 시스템 설치를 적극적으로 희망하는 편이었다. 따라서, 쾌적한 주거환경 조성과 지속가능한 생활환경 창출을 위해 음식물 쓰레기의 자원화 및 무배출 시스템의 설치는 필요하며, 활발한 보급을 위해서는 사용자 친화적인 설계와 제도적 지원이 수반되어야 할 것이다.

멍게껍질로부터 정제된 섬유소 첨가 빵반죽의 물리적 및 제빵의 품질특성 (Rheological Properties of Wheat Flour Dough and Qualities of Bread Prepared with Dietary Fiber Purified from Ascidian(Halocynthia roretzi) Tunic)

  • 멍게껍질로부터 정제된 섬유소 슬러리를 첨가한 빵반죽의 물리적 및 제빵의 품질특성을 조사하였다. Farinograph는 멍게껍질섬유소 첨가량이 증가함에 따라 흡수량의 증가를 보였다. 반죽도달시간 및 반죽형성시간은 섬유소 첨가량이 증가함에 따라 짧아졌고, 안정도에서는 변화를 보이지 않았다. 약화도는 멍게껍질섬유소 첨가량이 증가할수록 약화도가 커졌다. Extensograph에서는 섬유소 첨가량이 증가할수록 흡수율은 증가하였고, 신장도 및 신장저항도는 감소하였다. R/E값은 섬유소 첨가비율이 높을수록 감소하였다. Amylograph에서는 멍게껍질 섬유소 첨가량이 증가할수록 최고점도는 감소하였다. 멍게껍질 섬유소 첨가량이 증가할수록 식빵의 loaf volume 및 용적비가 감소되는 결과를 보였고, 멍게껍질 섬유소 슬러리 20% 첨가까지는 빵의 관능적 품질에 유의적인 차이를 보이지 않았다. 섬유소 첨가 식빵은 보습성을 높혀 빵의 경화를 지연시킴과 함께 저장성 향상 효과를 보였다.

Dehydration Kinetics of Rehmannia (Rehmannia glutinosa Liboschitz)

  • Sliced and whole root of rehmannia were dehydrated in a laboratory dryer at 40, 60, 80, and $100^{\circ}C$ to evaluate the kinetic parameters for dehydration of rehmannia. The drying curves of both samples were characterized by a falling-rate drying period only. Sliced rehmannia dried 1.1 to 3.1 times faster than whole root of rehmannia depending on drying temperature. Equilibrium moisture content (EMC) of rehmannia samples at the drying temperature tested were 0.069-0.078 g water/g dry solid, which was coincided with the monolayer moisture content (0.06 and 0.07 g water/g dry solid) evaluated from desorption isotherms using GAB (Guggenheim-Anderson-de Boer) model. A logarithmic model for thin layer drying was applied to evaluate the drying time to reach EMC ($t_{EMC}$) and drying constant (k). The effect of temperature on $1/t_{EMC}$ and k was described by the Arrhenius model with activation energy values of 32.56 and 47.14 kJ/mol determined using the former parameter, and 34.27 and 38.26 kJ/mol determined using the latter parameter for sliced and whole root of rehmannia, respectively.

고지방식이로 유발된 비만 백서에서 가미감비제습탕이 비만 유발에 미치는 영향 및 기전 연구 (Anti-obesity Effects and Mechanism of Original and Modified Gambejaeseup-tang in Female Rats with Diet-induced Obesity)

  • Gambejaeseup-tang (GBJST) have recently been used as an anti-obesity herbal medicine but their effect and mechanism of action have not been studied. We modified ingredients of GBJST based on the previous experiments about exploring herbs to suppress triglyceride accumulation in 3T3-L1 adipocytes. We investigated the effects of modified GBJST on energy, glucose and lipid homeostasis using female rats with diet-induced obesity and their action mechanism was also determined. Rats fed a high-fat diet (HFD) were divided into 3 groups: rats in each group received 0.2 or 2 g water extracts of modified GBJST (L-GBJST or H-GBJST) or 2 g cellulose per kg body weight (a negative control) on a daily basis. A further group was fed a low-fat diet (LFD) as a positive control. We found that modified GBJST dose-dependently decreased body weight and mesenteric and retroperitoneal fat more than the control. This decrease was due to the reduction in energy intake and the increase of energy expenditure. HFD increased fat oxidation more than LFD and modified GBJST further increased fat oxidation as a major energy source more than the control in a dose-dependent manner. In addition, H-GBJST improved glucose tolerance without changing serum insulin levels during an oral glucose tolerance test. H-GBJST also suppressed the increase of serum total and LDL cholesterol and triglyceride levels by HFD. In conclusion, modified GBJST have a good anti-obesity effect by decreasing energy intake and increasing energy expenditure mainly as fat in female rats with diet-induced obesity. It also improves glucose tolerance and lipid metabolism.

봄철 영농형 태양광 시설 하부 휴경논 토양의 온도와 수분 변화 (Changes of Soil Temperature and Moisture under the Agrivoltaic Systems in Fallow Paddy Field during Spring Season)

  • 영농형 태양광 시스템은 노지 작물 경작과 동일한 토지 상부에 설치된 태양광 패널을 통한 발전을 동시에 하는 시스템이다. 지금까지 영농형 태양광은 에너지와 식량의 양자구도로만 집중되어있다. 영농환경 중 하나인 토양수분은 강우 또는 관개수로 증발 및 유출⋅침투로 손실된 수분을 공급받아 노지 작물 생산에 기여한다. 본 연구는 식량, 에너지와 함께 물의 개념을 포함하여 영농형 태양광 시설을 보고자 하였으며, 미기상 관측을 통해 봄 기간 동안 휴경논에서 영농형 태양광 시설 하부의 토양수분과 지온의 변화를 분석하였다. 영농형 태양광 하부는 패널로 인한 부분차광 조건으로 지면에 입사되는 광 에너지량이 감소하여 지온이 낮아질 뿐만 아니라 토양수분 손실이 적어 대조구인 노지에 비해 습윤한 조건을 보인다. 또한, 태양광 하부는 에너지 제한 환경이며, 상대적으로 지온이 높은 노지는 수분 제한 환경으로 설명된다. 노지와 태양광 하부의 상이한 토양수분 환경은 필연적으로 작물에 영향을 미칠 것이며, 농업 환경과 농촌 경제를 고려한 지속가능한 대처가 필요하겠다.

A Numerical Modelling for the Prediction of Phase Transition Time(Ice-Water) in Frozen Gelatin Matrix by Ohmic Thawing Process

  • Ohmic heating occurs when an electric current is passes through food, resulting in a temperature rise in the product due to the conversion of the electric energy into heat. The time spent in the thawing is critical for product sterility and quality. The objective of this study is to conduct numerical modelling between the effect of ohmic thawing intensity on PTT(phase transition time) at constant concentration and the effect of matrix concentrations on PTT at constant voltage condition. the stronger ohmic thawing intensity resulted in decreasing the PTT. High ohmic intensity causes short PTT. And the higher gelatin concentration, the faster increment of PTT. A numerical modeling was executed to predict the PTT influenced by the power intensity using exponential regression and the PTT influenced by gelatin concentration using logarithmic regression. Therefore, from this numerical model of gelatin matrix, it is possible to estimate exact values extensively.

Validation of Dietary Reference Intakes for predicting energy requirements in elementary school-age children

  • BACKGROUND/OBJECTIVES: Dietary Reference Intakes (DRI) for energy are derived from total energy expenditure (TEE) measured using the doubly labelled water (DLW) method. The objective of this study was to assess the validity of DRI for predicting the energy requirements of elementary school-age children. SUBJECTS/METHODS: The present study involved 25 elementary school-age children aged between 9 and 11 years. TEE was assessed by the DLW method, and the results were compared with the TEE predicted by the DRI equations in order to evaluate accuracy. RESULTS: The subjects' TEE measured by the DLW method was $1,925.2{\pm}380.9kcal/day$ in boys and $1,930.0{\pm}279.4kcal/day$ in girls, whereas resting energy expenditure was $1,220.2{\pm}176.9kcal/day$ in boys and $1,245.9{\pm}171.3kcal/day$ for girls. The physical activity level was $1.58{\pm}0.20$ in boys and $1.55{\pm}0.13$ in girls. The mean bias between the predicted and measured TEE was 12.6% in boys and -1.6% in girls, and the percentage of accurate predictions was 28.6% and 63.6%, respectively. In boys, the equation resulted in underprediction of TEE among the subjects having low TEE values, whereas there was overprediction among subjects having high TEE values as shown by the Bland-Altman plot. On the contrary, this proportional bias was not observed in girls. CONCLUSIONS: The findings of this study suggest that the DRI equation for energy could result in the overestimation of energy requirements in elementary school-age boys. In the case of girls, the equations could be accurate at the group level. However, the DRI appears to be invalid for individual girls, as more than one third of girls had their TEE inaccurately predicted. We recommend more studies for confirmation of these results.

건자두 제품의 보충이 식이섬유 섭취량 및 변비증상에 미치는 영향 (Effect of Prune Supplementation on Dietary Fiber Intake and Constipation Relief)

  • The purpose of this study was to examine bowel habits, dietary habits, and nutrient intake of constipated adults, and the effects of prune products on relieving constipation symptoms. Fifty one adults with self-reported constipation (mean age 23 years, range 19-41 years, 10 males and 41 females) participated in this study. After a baseline survey on bowel habits and dietuy habits, participants were asked to consume at least 50 g of prune and 200 ml of prune juice per day during a 4-week period in addition to usual diet. Nutrient intake was estimated by a 24 hour recall at the baseline and once every week by diet records during the intervention. Data were analyzed after classifying the subjects into mild constipation group and severe constipation group by the severity of the symptoms. During the intervention, the subjects with mild constipation consumed 56 g of prunes (about 5.6 fruits) and 200 ml of prune juice, and the subjects with severe constipation consumed 59 g of prunes (about 5.9 fruits) and 207 ml of prune juice. Average intakes of energy, dietary fiber and water of the subjects in the mild constipation and severe constipation group increased during the intervention compared to the baseline. Average dietary fiber intake of the mild constipation and severe constipation groups significantly increased from 12.5 g and 11.6 g at the baseline to 18.5 g and 16.8 g after consuming prune products, respectively. These changes were accompanied by an increase in the number of bowel movements, a decrease of defecation time, a change to a softer stool consistency, and a decrease of abdominal pain during defecation. Seventy two subjects answered that prune products were effective to improve their overall constipation symptoms. Our data show that supplementation of prune products is effective to provide energy, dietary fiber and water, and to relieve constipation symptoms for constipated adults.

Pear pomace water extract inhibits adipogenesis and induces apoptosis in 3T3-L1 adipocytes

  • Obesity occurs when a person's calorie intake exceeds the amount of energy burns, which may lead to pathologic growth of adipocytes and the accumulation of fat in the tissues. In this study, the effect and mechanism of pear pomace extracts on 3T3-L1 adipocyte differentiation and apoptosis of mature adipocytes were investigated. The effects of pear pomace extract on cell viability and the anti-adipogenic and proapoptotic effects were investigated via MTT assay, Oil red O staining, western blot analysis and apoptosis assay. 3T3-L1 preadipocytes were stimulated with DMEM containing 10% FBS, 0.5 mM 3-isobutyl-1-methylxanthine (IBMX), $5{\mu}g/ml$ insulin and $1{\mu}M$ dexamethasone for differentiation to adipocytes. 3T3-L1 cells were cultured with PBS or water extract of pear pomace. Water extract of pear pomace effectively inhibited lipid accumulations and expressions of PPAR-${\gamma}$ and $C/EBP{\alpha}$ in 3T3-L1 cells. It also increased expression of p-AMPK and decreased the expression of SREBP-1c and FAS in 3T3-L1 cells. The induction of apoptosis was observed in 3T3-L1 cells treated with pear pomace. These results indicate that pear pomace water extract inhibits adipogenesis and induces apoptosis of adipocytes and thus can be used as a potential therapeutic substance as part of prevention or treatment strategy for obesity.

  • Microalgae are unicellular microorganisms inhabiting various ecosystems of the world, including marine and freshwater systems and extreme environments. Only a few species have been actively used as food. Microalgae are attracting attention as a means of biological CO2 reduction because they play an important role in absorbing atmospheric CO2 through their rapid growth by photosynthesis in water. Besides, microalgae are considered to be an eco-friendly energy source because they can rapidly produce biomass containing a large quantum of lipids that can be converted into biodiesel. Several microalgae, such as Chlorella spp., Spirulina spp. and Haematococcus spp. have already been commercialized as functional health supplements because they contain diverse nutrients including proteins, vitamins, minerals, and functional substances such as docosahexaenoic acid (DHA), β-glucan, phycocyanin, astaxanthin, etc. Moreover, they have the potential to be used as food materials that can address the protein-energy malnutrition (PEM) which may occur in the future due to population growth. They can be added to various foods in the form of powder or liquid extract for enhancing the quality characteristics of the foods. In this review, we analyzed several microalgae which can be used as food additives and summarized their characteristics and functions that suggest the possibility of a role for microalgae as future food.
