General Components and Sensory Evaluation of Hot Water Extract from Liriopis Tuber (맥문동 열수 추출물의 일반성분과 관능평가)

  • This study was conducted to analyze the general components and to investigate sensory evaluation of hot water extract prepared by boiling at 10$0^{\circ}C$ for 3 hr with 4-fold water. The contents of total soluble soild, non-reducing sugar, total saponin, ash and total protein were 15.95%, 6.54%, 1.735, 0.33% and 0.40%, respectively. The contents of succinic, malic and acetic acid in the extracts were 111.48 mg%, 23.67mg% and 18.36mg%, respectively. The major free amino acids and minerlas of the extract were hydroxyproline 1,290.0 $\mu\textrm{g}$%, glutamic acid 456.2$\mu\textrm{g}$% and potassium 151.35 mg%, respectively. Bitter taste in the extract was not observed, whereas sweet, sour and astringent taste were observed.

  • A bioassay-guided fractionation of the whole extract of Viscum album (a parasitic plant : Loranthaceae) led to the isolation of two triterpenoidal components, oleanolic acid (1), ${\beta}$-amyrin acetate (2), homoflavoyadorinin B (3) as well as large quantity of free fatty acid mixtures as active ingredients of the extract responsible for the antitumoral property. The EtOAc soluble part and BuOH soluble part of the extract demonstrated a significant inhibition on the proliferation of cultured human tumor cells such as A549 (non small cell lung), SK-OV-3 (ovary), SK-MEL-2 (melanoma), XF498 (central nerve system) and HCT-15 (colon) in vitro, whereas the remaining water soluble part exhibited a poor inhibition. A Study on the Size Distribution and Chemical Component of Suspended Particulate during the Period of Sandy Dust Phenomena (黃砂現象時 粉塵의 粒度分布와 化學組成에 關한 硏究)

  • Sandy dust phenomena was observed from April 19 to 23, 1988 in Seoul and suspended particulate was collected by Andersen air sampler during this period. The samples were analyzed for 16 components $(SO_n^{2-}, NO_3^-, Cl^-, PO_4^{3-}, NH_4^+, F^-, Al, Fe, K, Cu, Mn, Na, Pb, Mg, Ca, Cd)$. The conclusions are as follwes: 1. Total suspended particulate concentation during the period of sandy dust phenomena was 489 $\mug/m^3$ (ordinary times: 140-125 $mug/m^3$) 2. The water - soluble ion component concentration of suspended particulate during the period of sandy dust phenomena was few and the metal concentration of that was more than that of ordinary times. 3. The cumulative frequency distribution of suspended particulates in logarithmic diagram did not show similar to normal log distribution during the period of sandy dust phenomena. 4. $SO_4^{2-}, NO_3^-, Cl^-, and PO_4^{3-}$ was onsided to coarse particle, and $NH_4^+$ and F to fine particle in the size distribution of water - soluble ion components during the period of sandy dust phenomena. 5. Metal concentration was high and Al, Fe, Cu, Mn, Na, Mg, and Ca was onsided to coarse particle, and K, Pb, and Cd to fine particle in the size distribution of metal components. 6. During the period of sandy dust phenomena the quantity of respirable particle (< 1 $\mum$) was about 3 times and that of metal components were about 2 - 11 times than that of ordinary times. 7. The concentrations of $NO_3^-, Cl^-, NH_4^+$ at ordinary times were 1.1 - 4 time than that of the period of sandy dust phenomena.

Relationship of pH, Glycogen, Soluble Protein, and Turbidity between Freshness of Raw Oyster Crassostrea gigas (굴(Crassostrea gigas)의 선도에 따른 pH, 글리코겐, 가용성단백질, 탁도와의 상관관계)

  • We examined chemical changes in oysters Crassostrea gigas and packing water that were sold after storage at 5, 10, and $20^{\circ}C$. The pH of oysters stored at $5^{\circ}C$ dropped to 5.81 after 10 days of storage, while that of oysters at $10^{\circ}C$ and $20^{\circ}C$ dropped to 5.37 after 8 days and to 5.04 after 4 days, respectively. The glycogen content of oysters stored at $5^{\circ}C$ decreased from 718.89 to 421.85 mg/100g during storage, while that of oysters at $10^{\circ}C$ decreased to 351.49 mg/100 g after 4 days. The turbidity and soluble protein in packing water increased slightly. The viable cell count of oysters did not exceed 6 log CFU/g after 10 days of storage at $5^{\circ}C$, but that of oysters at $10^{\circ}C$ did so after 8 days. Additionally, the viable cell count of packing water was lower than that of oysters. We performed a principal component analysis, where the first principal component (55.03%-57.24%) and second principal component (42.76%-44.97%) described most variation. The first principal component included the pH of oysters and packing water, and the glycogen content of oysters. A Pearson correlation between the first two principal components had a higher R value than that between other components. Freshness was evaluated using the pH of oysters and packing water, and glycogen. We found that soluble protein content was significantly associated with a lower pH and glycogen content.

  • As an initial step for evaluating hepatoprotective components against alcohol-induced toxicity, the effect of various fractions from Aloe vera on alcohol metabolism in rats were examined and the results were as follows: Water soluble fraction, after a single oral administration to rats, was found to cause a significant decrease in the serum ethanol concentration as well as enhancement of liver cytosolic ADH activity. On the other hand, the fractions soluble in organic solvent was found to cause an increase in the blood ethanol concentration and inhibit ADH activity. Further fractionation of the water soluble fraction by ultrafiltration system gave four subfractions corresponding to molecular weight and treatment of them in rats demonstrated that subfraction of M.W. > 30,000 exhibited the most potent enhancing activity of ethanol methabolism.

  • A number of epidemiological studies has indicated lifestyles including dietary habits are closely related to the development of certain forms of cancer. These findings have led several investigators to identify the ways in which these factors mdulate the risk of cancer. Seaweeds are rich sources of non-digestible polysaccharides which possibly posses physiological functions. In vitro studies showed several components in seaweeds inhibit tumor cell growth and mutagenicity of known food mutagens. On the other hand non-digestible polysaccharides of different food sources negatively affect mineral nutrition by decreasing mineral absorption. The objectives of this study was to investigate the effect of major seaweed intake on azoxymethane(AOM) - induced DNA damage a known cancer initiation step and on apparent absorption of calcium and iron. To accomplish these objectives twenty five ICR mice were divided into five groups and fed one of the following diets for 10 days : control diet d, diet containing 10% water-soluble fraction of seamustard or seatangle diet containing 10% water-insoluble fraction of seamustard or seatangle. AOM was injected 6 hours before sacrifice and N7-methylated guanines from the colonic DNA were quantified using a gas chromatography -mass spectroscopy. Fecal samples were collected on days 4 and 8. Caclium and iron contents of the diets and feces were analyzed using an atomic absorption spectrophotometry to determine the apparent absorption of these minerals. Results are as follows. AOM-induced guanine methylation of colon was decreased in animals fed diets containing water-soluble fractions of seamustard or seatangle compared to those in animals fed control diet although only the seatnagle fed group showed statistically significant effect. Apparent calcium absorption was significantly reduced in animals fed diets containing water-insoluble fractions of seaweeds. Iron absorption was significantly decreased and negatively balanced in animals fed diets containing water-insoluble fractions of both seaweeds, and water-soluble fraction of seatangle. In conclusion, seamustard and seatangle intakes may effectively prevent colon tumorigenesis by reducing a carcinogen-induced DNA damages, and more mechanistic studies on possible role of seaweeds on carcinogenesis are required. Also, adverse effects of seaweed diets cintaming a large amount of polysaccharides on mineral nutrition should be carefully monitored.

Monthly Variations in the Nutritional Composition of Antarctic Krill Euphausia superba

  • The proximate composition and various specific components of Antarctic krill Euphausia superba, in the catch season between March and August were investigated. Frozen krill were freeze-dried and milled. The proximate composition comprised water, proteins, fats, ash, fatty acids, and amino acids, while the specific components were vitamins, minerals, nucleotides, betaine, and astaxanthin. The moisture content of the krill ranged from 77 to 80%, with the highest value in June, and the ash content was between 12 and 13%. The protein content was lowest in May, and the fat content was 18-19%, with the highest value in March. The amino acid content varied according to the season: taurine and glycine were highest in August; ${\beta}$-alanine was higher in April and May; and arginine, ornithine, and lysine were highest in March. The unsaturated fat content was ~50% and omega-3 fatty acids were highest in June. Oil-soluble vitamins A and E were highest in March, and the water-soluble vitamin content was less than that of oil-soluble vitamins. The mineral content was highest in June, and the most abundant mineral was sodium at 235.60 mg/100 g krill. The content of other minerals was lowest (2.94 mg/100 g) in April, except for lead. The nucleotide content was highest in July, while the betaine content was highest in April and lowest in June. The astaxanthin content was highest in May and ranged from 6 to 10 ppm in other months.

Changes in Antioxidant Activity with Temperature and Time in Chrysanthemum indicum L. (Gamguk) Teas During Elution Processes in Hot Water

  • Determining the elution of water-soluble substances from herbal teas is an important factor in their efficient use in terms of taste, perfume, and content of health-related components. The antioxidant activity and content of catechins in commercial Chrysanthemum indicum (gamguk) teas were determined for optimum elution conditions. The water extract of gamguk teas did not differ significantly in yield compared to methanol extracts and showed stronger antioxidant activity. Catechin contents in gamguk teas were 8-18% of the extracts when individual peaks in high-performance liquid chromatography analysis were compared to standard catechin peaks. Gamguk teas exhibited faster release of antioxidants, and the antioxidant activity was positively correlated with the thermal treatments. Gukhwacha (GC) was the best tea for rapid release (30 sec) of antioxidants with the $50^{\circ}C$ treatment, whereas antioxidants in other teas were relatively slower released.

  • The possibility of utilizing Porphyra yezoensis, Undaria pinnatifida and Laminaria religionsa into algae-tea having biological functionality was investigated by analysis of functional component, experimentation for low viscosity and various pretreatments. In water soluble fraction of powdered algae extracted for 3 minutes with 30 times of hot wate, major functinal components were composed of 1.53% porphyran and 170.04mg% taurine in P. yezoensis, 1.09% fucoidan and 1.18% sodium sodium alginate in U. pinnatifida, and 1.28% fucoidan, 1.99% soidum laginate and 371.25mg% iodine in L.religiosa, on dry basis. For lowering viscosity and masking off-flavor in each water soluble fraction, it was desirable that P. yezoensis was washed for 12 hours in sea water and 30 mimutes in fresh water, dried at 3 to 5$^{\circ}C$, powdered to size of 30 mesh nd then roasted for 3 minutes at 12$0^{\circ}C$, and that both U. pinnatifida and L. religiosa were washed, semidried to 40~50% moisture content, heated for 40 minutes at 12$0^{\circ}C$ by autoclave, dried, powdered to size of 30 mesh and then roasted for 5 minutes at 11$0^{\circ}C$.

Mass Concentration and Ion Composition of Size-segregated Particulate Matter during the Non-Asian Dust Storm of Spring 2007 in Iksan (익산지역에서 봄철 비황사기간 중 입경별 대기먼지농도와 이온조성)

  • In order to further determine the mass concentration and ion composition of size-segregated particulate matter (PM) during the non-Asian dust storm of spring, $PM_{2.5}$ (fine particle), $PM_{10-2.5}$ (coarse particle), and $PM_{over-10}$ (PM with an aerodynamic diameter larger than $10{\mu}m$) were collected using a MCI (multi-nozzle cascade impactor) sampler of a three-stage filter pack in the spring season of 2007 in the Iksan area. During the sampling period from 5 April to 21 April, a total of 34 samples for size-segregated PM were collected, and then measured for PM mass concentrations by gravimetric measurements and for water-soluble inorganic ion species by using ion chromatography. Average mass concentrations of $PM_{2.5}$, $PM_{10-2.5}$, $PM_{over-10}$ were $35.4{\pm}11.5{\mu}g/m^3$, $13.3{\pm}5.5{\mu}g/m^3$ and $9.5{\pm}4.7{\mu}g/m^3$, respectively. On average, $PM_{2.5}$ accounted for 74% of $PM_{10}$. Compared with the literature from other areas in Korea, the measured concentration of $PM_{2.5}$ were relatively high. Water-soluble inorganic ion fractions in $PM_{2.5}$, $PM_{10-2.5}$, and $PM_{over-10}$ were found to be 47.8%, 28.5%, and 14.7%, respectively. Among the water-soluble inorganic ion species, $SO_4^{2-}$, $NO_3^-$ and $NH_4^+$ were the main components in $PM_{2.5}$, while $NO_3^-$ dominantly existed in both $PM_{10-2.5}$ and $PM_{over-10}$. Non-seasalt $SO_4^{2-}$ (nss-$SO_4^{2-}$ and $NO_3^-$ were found to mainly exist as the neutralized chemical components of $(NH_4)_2SO_4$ and $NH_4NO_3$ in fine particles.
