  • The purpose of this study is to investigate the dyeability of crabyon fiber contained cotton towels after dyeing with gallut. In this study, the colorants of gallnut were extracted with boiling water at 60℃ and 60min. Crabyon, composite fiber of Chitin/Chitosan and cellulose, is manufactured by uniformly blending Chitin/Chitosan and cellulose viscose and extruding the blended viscose into spin-bath. Cotton towels with crabyon fiber dyed with extracted solution from gallnut according to concentration, temperature and time. Crabyon fiber contained cotton towels dyed using gallnut were pre of post-mordanted using Al, Cu, and Fe. The dyeability(K/S) and color characteristics(L*, a*, b*, C, and h(color angle)) of dyed crabyon fiber contained cotton towels were measured by computer color matching machine and photographs. The crabyon fiber composition of cotton towels was conformed by amide peak(-CONH-) of chitin or chitosan of FT-IR spectroscopy. The results obtained were as follows; The amide peak of crabyon fiber contained cotton towels appeared at about 1652 cm−1. The dyeability of crabyon fiber contained cotton towel was increased gradually with increasing concentration of gallnut dyeing solution and saturated at about 150%(o.w.f). The optimum dyeing temperature and dyeing time were 90~100℃ and 80minutes expectively. The crabyon fiber contained cotton towels were dyed reddish yellow by non, Al, and Cu mordanting, reddish blue by Fe mordanting, respectively. The fastness to washing according to concentration of gallnut in and mordanting method indicated good grade result as more than 3~4 degree in all conditions.

  • The study aims to examine consumer awareness of green fashion products and demographic characteristics by subdividing environmentally conscious consumers of such products in the current domestic fashion market. It then compares the result with the characteristics of environmentally conscious consumers studied by 1999 in order to understand the trend of the consumer group in the fashion market and to promote the use of green fashion products. Marketing strategies for green fashion products suggested by the study are as follows: First, fashion firms are required to develop and publicize shops selling recycled or second-hand clothing that environmentally conscious consumers show constant interest. For instance, clothing patterns may be developed to enable consumers to make their kids' clothing easily at home, and various garments made from recycled materials may stimulate environmentally conscious consumers' desire to buy. Particularly, advanced technologies should be developed and publicized to manufacture garments that can excel existing ones made of normal materials in their features in order to satisfy consumers' interest in clothing made from recycled PET bottles. In addition, various natural dyes should be developed to decrease water pollution. Second, it seems imperative to develop clothing made of recycled knitted apparel that attracts consumers' interest more than ever, fashionable multi-purpose clothing, and environmentally friendly materials. As the use of natural fur or leather can cause the endangerment of wild animals and the destruction of the ecosystem, synthetic fur or leather may be used to develop sophisticated products with the same texture as real ones to attract environmentally conscious consumers' interest.

  • The purposes of the study was to identify customers' satisfaction factors regarding foods and services in food courts in big department stores and discount stores in Seoul and Cheonan. A survey of 235 customers was conducted regarding customer satisfaction levels and factors of food and services. Customers' perceived level of attributes were identified into eight underlying dimensions by factor analysis as follows: factor 1 was "cleanliness": factor 2 "service quality": factor 3 "accuracy": factor 4 "atomosphere": factor 5 "food quality": factor 6 "menu information": factor 7 "price" and the eighth factor was "food result". Regression analysis indicated that "cleanliness" was found to be the most important factor contributing to customers' overall satisfaction. There were significant differences in customers' perceived satisfaction level of "food quality"(p<0.01), "accuracy", and "price" factors(p<0.05) between department stores and discount store. The customers' perceived satisfaction levels of "accuracy", "food quality" and "price" factor at a large store food court are higher than those of department store food court. Comparing location of food court, there were significant differences in customers' perceived satisfaction level of "accuracy" and "price" factors between in Seoul and Cheonan(p<0.001). The customers' perceived satisfaction levels of "accuracy" and "price" at the discount store in Seoul are lower than those of food court at Cheonan. It is suggested that the management should pay attention to the sanitation of their dinning halls, kitchens, hygienic dishes, hygienic water fountain, employee hygiene, and a proper place to put used dishes to increase the customers' satisfaction.

  • In proton therapy, the Bragg peak is spread out by modulating or degrading the energy of the particles to cover a well-defined target volume at a given depth. Proton transfer plays a key role in a variety of biological, the origin of the elements, tests of the standard model along with applications in medicine, industry and chemical phenomena such as water autoionization, fast proton diffusion, acid-base neutralization. We have studied the radiolysis of various natural resources and have evaluated the antioxidant activity of radiolysis products by proton beam. The most of antioxidant activities of natural resources were decreased with increasing proton fluence. Proton beam induced antioxidant activities both in 1,1-diphenyl-2-picrylhydrazyl radical (DPPH) assay and 2,2'-azinobis(3-ethylbenzot hialozinesulfonic acid) cation radical $(ABTS^{.+})$ assay by a dose dependent fashion.

  • The objectives of this study, which filled gaps in previous studies, were: (1) to find the optimal mixing condition of nanoemulsions containing oleoresin capsicum (OC), Tween 80, propylene glycol (PG), and sucrose monostearate (SES) by microfluidization; (2) to investigate their properties and stability depending on such factors as pH, temperature, and heating time; (3) to measure the effect of adding ascorbic acid. In order to test these objectives, the following three experiments were conducted: Firstly, in order to find the optimal mixing ratio, nanoemulsions containing OC - the mean diameter of which is smaller than 100 nm - were prepared through the process of microfluidization; and their mean particle size, zeta potential, and capsaicinoids were measured. The test results indicated that the mixing ratio at OC : Tween 80 : PG + water(1:2) = 1 : 0.2 : 5 was optimal. Secondly, the properties and stability of nanoemulsions were investigated with varying parameters. The test results illustrated that single-layer nanoemulsions and double-layer nanoemulsions coated with alginate were stable, irrespective of all the parameters other than/except for pH 3. Thirdly, the properties of nanoemulsions were then analyzed according to the addition of ascorbic acid. The results demonstrated that the properties of single-layer nanoemulsions were not affected by addition of ascorbic acid. In case of alginate double-layer nanoemulsions, the particle size was reduced, and zeta potential increased with the addition of ascorbic acid. In conclusion, the demonstrated stability of various nanoemulsions under the different conditions in the present study suggests that these findings may constitute a basis in manufacturing various food-grade products which use nanoemulsions-and indicate that food nanoemulsions, if adopted in the food industry, have the potential to satisfy both the functionality and acceptability requirements necessary to produce commercially marketable food-grade products.

  • This study was conducted with the purpose of investigating the rheological characteristics of noodle flour dough supplementary konjac powder comprising 0%, 0.5%, 1.0%, 1.5% or 2.0% of the total mixture. In farinograph analysis, water absorption increased with the increased content of konjac powder. Both the arrival times and the development times of the dough with added konjac powder were longer than original wheat flour dough. Dough stability was found to be increased as compared to the control, but decreased as konjac powder content was increased. As konjac powder content increased, the resistance of the dough as shown by farinograph data was highest in the original wheat flour dough as 130 BU. Starting temperature, maximum viscosity temperature and maximum viscosity were decreased as shown in amylograph analysis. In extensograph analysis, the dough's extensibility and resistance to extension of the dough decreased as the amount of konjac powder was increased. The ratio of resistance to extensibility (R/E) decreased with the an increase in the amount of konjac powder included in the dough. The dough's tensile strength after cooking was increased in proportion to the additional amount of konjac powder used.

  • Potential mechanisms by which vitamin E improves oxidative stability of myoglobin are documented. The basis by which this lipid-soluble antioxidant, ${\alpha}$-tocopherol, protects water-soluble oxymyoglobin is beginning to be understood. Recent evidence suggests that ${\alpha}$-tocopherol delays the release of prooxidative products of lipid oxidation from biomembranes, which in turn delays oxymyoglobin oxidation and the concomitant loss of desirable beef color. ${\alpha}$, ${\beta}$-Unsaturated aldehydes are one class of lipid oxidation products that enhance oxymyoglobin oxidation in vitro and appear to act by covalently binding to the protein. If ${\alpha}$-tocopherol delays the formation of these reactive aldehydes, then this could inhibit the prooxidative effect of these oxidation products toward oxymyoglobin. Additionally, ${\alpha}$-tocopherol may exert part of its color-stabilizing effect in beef by enhancing the metmyoglobin reduction.

  • This study was designed to determine the usability of lemon fiber (LF-2%, 4%, 6%) and carrot fiber (CF-2%, 4%, 6%) to produce lowfat beef hamburgers. To that end, a certain amount of fat was replaced with each fiber. The proximate composition, pH value, cholesterol content, cooking characteristics, color, texture profile, and sensory properties of low-fat beef hamburgers were investigated. LF increased moisture content and cooking yield due to its better water binding properties, while CF caused higher fat and cholesterol contents owing to its higher fat absorption capacity (p<0.05). LF resulted in a lighter, redder, and more yellow color (p<0.05). Hardness, gumminess, springiness, and chewiness parameters decreased when the usage level of both fibers increased (p<0.05). However, more tender, gummy, springy, and smoother hamburgers were produced by the addition of CF in comparison with LF (p<0.05). Moreover, hamburgers including CF were rated with higher sensory scores (p<0.05). In conclusion, LF demonstrated better technological results in terms of cooking yield, shrinkage, moisture retention, and fat retention. However it is suggested that CF produces better low-fat hamburgers since up to 2% CF presented sensory and textural properties similar to those of regular hamburgers.

  • As a basic study for the development of pilot-scale distillation process of waste photoresist strippers from semiconductor industry, lab-scale experiments for the recovery of NMP (N-methy1-pyrrolidione) and BDG (Butyldiglycol) from waste photoresist strippers have been made using a spinning band vacuum distillation column. Purities of NMP and BDG obtained from the present experiments were higher than 99.5%. Furthermore, water content was less than 1000 ppm, color grade(APHA) less than 50, most metal contents except sodium less than 1 ppb. Those results indicate that NMP and BDG reclamed by distillation satisfy the their specifications required for the formulation of new photoresist strippers. Recovery rate of NMP and BDG was 96 and 53%, respectively, for type A, and 93 and 57%, respectively, for type B waste PR stripper solution.
