  • This study examined the characteristics of eggs obtained from layer chickens reared with feed that included Tenebrio molitor larvae, which were in turn bred using feed that included dried food waste powder. The eggs showed a tendency to be slightly thinner in the treated groups, but the Haugh unit indicating freshness was higher in the treated groups than the control group, and the 5% larval-treated group showed the highest value. The color of the yolk tended toward higher redness, lower brightness, and lower yellowness in the 5%-treated group, which also showed similar crude fat and protein values to the control group; the 10%- and 15% larval-treated groups had lower crude fat and protein values, although the carbohydrate content was higher. Structural amino acids in the treated groups showed a higher ratio of non-essential amino acids to essential amino acids than the control. The polyphenol content, which is an index of antioxidants, was highest in the 5%-treated group, and it is thought that this may affect the storage and antioxidant properties of the eggs. Thus, when employed with a feed source to maintain high protein and high fat, T. molitor larvae may cause critical changes in the nutrient content of eggs and improve their freshness.

  • The purpose of this study was to develop a commercially viable method for synthesis of conjugated linoleic acid (CLA) using the linoleic acid fraction obtained from six pork by-products (liver, lung, heart, stomach, small intestine, and large intestine). The workflow of CLA synthesis from each by-product was as follows: washing${\rightarrow}$crude fat extraction${\rightarrow}$fractionation into saturated and unsaturated fatty acids${\rightarrow}$repeat unsaturated fatty acid fractionation${\rightarrow}$CLA synthesis. Cis-9, trans-11, and trans-10, cis-12 CLA was synthesized from pork by-products. The yield of CLA synthesis of pork by-products ranged from 1.55 to 11.18 g per 100 g of by-products. The amount of synthesized CLA was the highest in the small intestine and large intestine by-products. Fractionation of pork by-products nearly doubled the yield of CLA. We suggest that commercial fractionation methods could increase the yield of CLA at low cost, reduce waste, and improve the efficiency of by-product utilization.

  • Two experiments were carried out to evaluate the effects of brewery waste (BW) replacement of concentrate (C) in growing duck diets. In Exp. 1, which was carried out on-station, 300 ducklings were allocated in a $2{\times}5$ factorial experiment: Two breeds (local Muscovy and crosses of French and local Muscovy)${\times}5$ levels of C and with BW offered ad libitum. Concentrate only ad libitum as the control diet (C100), and levels of 75% (C75), 50% (C50), 25% (C25) and 0% (C0) of the amount of the control diet consumed, and with BW ad libitum. In Exp. 2, 200 ducklings were allocated in a $2{\times}2$ factorial experiment on five smallholdings: two breeds (local and crossbred Muscovy ducks)${\times}2$ diets (the C100 and C50 diets from Exp.1). In Exp.1 total dry matter (DM), BW, crude fiber (CF) and crude protein (CP) intakes were highest on the C0 diet and ME and lysine intakes lowest (p<0.001). Daily live weight gains were higher for the crossbred ducks than for the local Muscovies (p<0.05) and were highest for treatments C100 and C50, and lowest for treatment C0 (p<0.05). Weights of breast muscle, liver and abdominal fat were significantly higher for the crossbred ducks. Breast and thigh muscle and abdominal fat weights were significantly higher for the C100, C75 and C50 diets, while gizzard weights were highest for the C25 and C0 treatments. Net profits were higher for the crosses, and for treatments C50 and C25. In Exp. 2 total DM, CF and CP intakes were significantly higher for the C50 diet, and ME intakes lower (p<0.001). Daily gains of the crosses were significantly higher than those of the local Muscovy ducks, and were similar for the C100 and C50 diets. The highest net profits were from the crosses and ducks fed the C50 diet. It was concluded that BW can replace 50% of the concentrate in growing Muscovy duck diets without reducing daily live weight gains and with improved economic benefits.

  • Near-infrared reflectance spectroscopic (NIRS) calibrations were developed for accurate and fast prediction of whole broiler chicken carcass composition. The Feed and Forage Foss systems Model 5000 Reflectance Transport Model 5000 with near-infrared reflectance spectroscopy (NIRS)-WinISI II windows software was used for this purpose. One equation was developed for the prediction of each carcass component. One hundred and fifty freeze dried broiler whole carcass samples were ground in a Cyclotech 1,093 sample mill and analyzed for dry matter, protein, fat, calcium and phosphate. Samples were divided into two sets: a calibration set from which equations were derived and a prediction set used to validate these equations. The chemical analysis values (mean${\pm}$SD) were calculated based on dry matter basis as follows: dry matter: 33.41${\pm}$2.78 (range: 26.41-43.47), protein: 54.04${\pm}$6.63 (range: 36.20-76.09), fat 35.44${\pm}$8.34 (range: 7.50-55.03), calcium 2.55${\pm}$0.65 (range: 0.99-4.41), phosphorus 1.38${\pm}$0.26 (range: 0.60-2.28). One hundred and three samples were used to calibrate the equations and prediction values. The software used was modified to obtain partial least square regression statistics, as it is the most suitable for natural products analysis. The coefficients of determination ($R^2$) and the standard errors of prediction were 0.82 and 1.83 for the dry matter, 0.96 and 1.98 for protein, 0.99 and 1.07 for fat, 0.90 and 0.30 for calcium and 0.91 and 0.11 for phosphorus, respectively. The present study indicated that NIRS can be calibrated to predict the whole broiler carcass chemical composition, including minerals in a rapid, accurate, and cost effective manner. It neither requires skilled operators nor generates hazardous waste. These findings may have practical importance to improve instrumental procedures for quick evaluation of broiler carcass composition.

  • The purpose of this study was to analyze and evaluate the menu served in business & industry contract foodservice by assessing nutritional value and by using menu-engineering technique from managers' view point. CAN-Pro program and Kasavana k Smith's Menu Engineering technique were used to evaluate the nutritional value and menu analysis, respectively. The data were analyzed using the SAS package program for descriptive analysis, t-test, ANOVA, and Pearson Correlation Analysis. As the result of nutritional value of lunch menu, all nutrient contents per meal were higher than a third of Korean recommended dietary allowances(RDA), But there was no problem when 20∼30% of plate waste was considered. Carbohydrate : Protein fat ratio was 62.7 : 16.4 : 20.8. Because animal : vegetable source ratios of protein, fat, calcium, iron were 44 : 56, 42 : 58, 22 : 78, 24 : 76, respectively, animal sources of calcium and iron needed to be supplemented. Plural set menus of A site were classified as STAR, PUZZLE, PLOWHORSE, DOG by Menu engineering technique. Set menus and soups & pot-stews among cafeteria menus in C site were operated properly without DOG and PUZZLE item. Side dishes of fishes, meats 8t eggs among cafeteria menus in C site were, for the most part, classified as STAR item, and side dishes of vegetables & salads and noodles among cafeteria menus in C site were STAR, PUZZLE, and DOG items. • Panax ginseng marc is produced from fresh ginseng roots during processing and is generally treated as industrial waste. The primary aim of this study was to improve its utilization in the dairy industry as a potential high-value resource. Yogurt was prepared from 11% skim milk powder, 0.1% pectin, 10% sucrose, and ginseng marc ethanol extract (GME, 0.5% and 1.0%) in milk, and was inoculated with a 0.02% yogurt culture (Lactobacillus acidophilus, Bifido-bacterium longum, and Streptococcus thermophilus). After fermentation at $40^{\circ}C$ for 6-8 h, the physicochemical properties of samples were analyzed by the AOAC, Kjeldahl, and Soxhlet methods. Sensory evaluation was performed based on consumer acceptability scores with a 7-point scale, and antimicrobial effects were measured by the agar plate method. The moisture, crude protein, crude fat, and ash contents of yogurt supplemented with 1% GME were $85.06{\pm}0.06%$, $4.41{\pm}0.01%$, $4.30{\pm}0.05%$, and $0.81{\pm}0.03%$, respectively, with no significant changes noted from those of yogurt without GME (control), except for an increase in the crude fat content. The sensory scores of color, flavor, texture, overall taste, and overall acceptance of yogurt supplemented with below 1% GME did not differ significantly (p<0.05) to those of the control yogurt. In addition, the growths of Staphylococcus aureus, Bacillus cereus, Listeria monocytogenes, Escherichia coli, and Enterobacter sakazakii were inhibited during fermentation and storage. These results suggest that GME could be used in dairy products as a supplement and in the food industry as an antimicrobial material.

  • This study was conducted to evaluate the effects of duck-meat consumption on adult disease risk factors, including body compositions, hematological variables, and serum metabolic and lipid profiles in adult human males. To obtain results, 20 adult males aged 20 to 25 were subjected to a diet of 600 g/day of duck-meat for 4 wk, after which body composition, hematological variables, and serum metabolic and lipid profiles were investigated to determine if there was a relationship between duck-meat consumption and adult disease risk factors. The results revealed that high amounts of duck-meat intake did not negatively alter body indices such as body weight, fat mass, body mass index (BMI), % body fat or waste-to-hip ratio (WHR). Furthermore, there were statistically insignificant changes in the number of blood cells, although this number did increase significantly following intake of duck-meat. Moreover, general decreases in serum metabolic parameters were observed, but none of these changes were significant with the exception of the concentration of blood urea nitrogen (BUN). The serum concentrations of LDL-cholesterol also showed a statistically significant decrease by 5.86%. Therefore, this study suggests that the ingestion of duck-meat not only significantly increased the RBC count but also decreased BUN and LDL-cholesterol concentrations in adult males.

  • Background: Liquid feeding system has been introduced to domestic swine farms, but negative cognition about liquid feeding system has been remained for feed waste decay related with poor management and microbial contamination. For these reasons, this study was conducted to evaluate the effects of feeding method in lactating sows. Methods: A total of 30 mixed-parity (average 4.13) lactating sows (Yorkshire ${\times}$ Landrace) with an initial BW of $218.8{\pm}19.5kg$ was used in a 3 week trial. Sows were allotted to 1 of 2 treatments in a completely randomized design by their body weight, backfat thickness, parity and alive litter weight. One of treatments was dry feeding and the other was liquid feeding (water to feed ratio, 1:1). Experimental diets contained 3265 kcal ME/kg, 12.6 % CP, 5.76 % EE, 1.09 % total lysine, 0.25 % total methionine, as fed basis. Results: Dry feeding treatment had high body weight loss rather than liquid feeding treatment (P = 0.04). Dry feeding treatment had tendency to increase litter weight at 21d of lactation (P = 0.06) and litter weight gain (P = 0.04) during lactation period (0-3 week). Sows fed dry feeding method made milk containing high content of casein and total solid rather than sows fed liquid feeding method (P = 0.04). In addition, dry feeding treatment had tendency to higher content of milk fat, protein and solid not fat on 21d of lactation (P = 0.07). Sows fed dry feeding type also showed higher milk energy content in milk of 21d lactation (P = 0.05). Furthermore, liquid feeding treatment showed high occurrence in feed waste during lactation period (P <0.01). Conclusion: Dry feeding method was more suitable feeding method to lactating sows under high temperature environment like lactating barn.

  • The compositions of saturated and unsaturated fatty acids in biodiesel feedstocks are important factors for biodiesel properties including low-temperature fluidity and oxidative stability. This study was conducted to improve low-temperature fluidity of biodiesel by reducing total saturated FAME (fatty acid methyl ester) in animal fat biodiesel fuels via urea-based fractionation and by mixing plant biodiesel fuels (rapeseed-FAME, waste cooking oil-FAME, soybean-FAME, and camellia-FAME) with enriched-polyunsaturated FAME derived from animal fat biodiesel. Our results showed that the reduction of total saturated FAME in animal fat biodiesel lowered CFPP (Cold Filter Plugging Point) to $-15^{\circ}C$. Mixing plant biodiesel fuels with the enriched-polyunsaturated FAME derived from animal fat biodiesel lowered CFPP of blended biodiesel fuels to $-10{\sim}-18^{\circ}C$.

  • In this study, generation characteristics and distribution situation of the animal fat residue were investigated to identify it's management problems and to propose alternatives for the recycling and final disposal. Generation sources were the meat distribution net-work including about 170 slaughterhouses, 280 meat-packing plants, thousands of meat shops and restaurants etc. The daily total amount of the animal fat residue is about 700 ton/day. More than 60% of the generation sources were concentrated in Seoul metropolitan area. The residue was collected by about 300 men using old-fashioned devices like handcarts, bike and auto bike, transported to the recycling plants by about 60 collection agencies. The residue was processed to produce by-products such as grease, tallow, animal feed ingredient in the recycling plants. At present, however, a great number of unlicensed, and mostly small rendering processors without having pollution control facilities do the unlawful business. These small, old fashioned and unorganized businesses are creating environmental problems by disposing the waste in improper ways such as open burning and dump. Improvement of the distribution network, the large-scale plants, and the estabilishing proper infrastructures were suggested to overcome the problems for the sound fat residues reprocessing industry.
