Development of Upland Cultivation for Production of Marketable Rhizomes in Wasabia japonica Matsum. (고추냉이 밭재배에서 근경의 상품성 향상을 위한 재배체계)

  • Wasabis (Wasabia japonica Matsum.) have been used as a spice with its petioles and rhizomes, but the production of its rhizomes in upland cultivation was very difficult for the severe damage of rotting disease during summer season. This experiment was carried out to increase the yield of marketable rhizome in wasabi when cultured in upland. Seedlings were raised in sub-alpine area for 7 and 12 months and then transplanted to experimental area on Sept. 20 and the yield was investigated on May 12 of the next year. The marketable rhizome(above 40g/plant) was produced in seedlings raised for 7 months. Production rate of marketable rhizome was 13.3% and total yield was 72.9 kg/10a. The content of allylisothiocyanate in rhizome of upland wasabi was 0.777 mg/g and its content was equal to wasabi cultured in water condition for 18 months. These results suggested that the upland cultivation of wasabi seedlings raised in sub-alpine area for 7 months was possible to product marketable rhizome.

Anti-obesity effects of hot water extract from Wasabi (Wasabia japonica Matsum.) leaves in mice fed high-fat diets

  • The anti-obesity effects of a hot water extract from wasabi (Wasabia japonica Matsum.) leaves (WLE), without its specific pungent constituents, such as allyl-isothiocyanate, were investigated in high fat-diet induced mice. C57J/BL mice were fed a high-fat diet (control group) or a high-fat diet supplemented with 5% WLE (WLE group). Physical parameters and blood profiles were determined. Gene expression associated with lipid metabolism in liver and white adipose tissue were analyzed. After 120 days of feeding, significantly lower body weight gain, liver weight and epididymal white adipose tissue weight was observed in the WLE group compared to the control group. In liver gene expression within the WLE group, PPAR${\alpha}$ was significantly enhanced and SREBP-1c was significantly suppressed. Subsequent downstream genes controlled by these regulators were significantly suppressed. In epididymal white adipose tissue of the WLE group, expression of leptin, PPAR${\gamma}$, and C/EBP${\alpha}$ were significantly suppressed and adiponectin was significantly enhanced. Acox, related to fatty acid oxidization in adipocytes, was also enhanced. Our results demonstrate that the WLE dietary supplement induces mild suppression of obesity in a high-fat diet induced mice, possibly due to suppression of lipid accumulation in liver and white adipose tissue.

Effects of Wasabi (Wasabia japonica Matsum) on the Microbiological and Sensory Characteristics of Dongchimi (고추냉이 첨가가 동치미의 미생물학적 및 관능적 특성에 미치는 영향)

  • The Dongchimi added with Wasabi (Wasabia japonica Matsum) for the improvement of quality was scientifically explored by reviewing the optimum level and its effect on the microbiological and sensory characteristics of product fermentation. The final weight percentage of Wasabi in Dongchimi was adjusted to 0, 3, 5, 7 and 9%, per radish, respectively. Microbiological and sensory characteristics were determined during fermentation at $10^{\circ}C$ for 55 days. The viable cell counts of total and lactic acid bacteria had increased to their maximum values during fermentation until they began to drop at the later stage. Here, the 7% treatment showed a distinctive low and high numbers of total cells and lactic acid bacteria, respectively, during the later stage of fermentation. As for the sensory evaluation results of the fermented Donchimi with Wasabi, the 7% treatment was most favored for the color, the smell, the sour taste, the hot taste, the carbonated taste, the texture, and the overall acceptability of the products. The optimum levels of Wasabi in Dongchimi were estimated between 5 and 7% per added radish weight, and the 7% level was more preferred when the fermentation-retarding effect of the product was considered.

  • P. wasabiae was isolated from discolored seeds of wasabi(Wasabia japonical Mtsum.) and inoculated to fresh seeds, then the effect of fungicides on suppression of diseases were determined. Emergence rate of wasabi seeds where suppressed to 52.5% by the inoculation and it reached up to 92.7% by dipping treatment of inoculated seeds ito benomyl solution. The incidence rate of black leg disease and damping off were 32.0 and 22.0%, respectively, in control treatment that sown in the soil inoculated with P. wasabiae. But dipping treatment of inoculated seeds into benomyl solution resulted in 12.0% and 10.7% in incidence rate of those two diseases, respectively.

  • Occurrence of soft rots was observed on wasabi (Wasabia japonica Matsum) grown in Chuncheon and Pyengchang Kangwon province, Korea. The symptoms appeared on the wasabi root, which became mushy and black. This eventually resulted in wilting and death of the aboveground parts of the wasabi. The causal organism was isolated from the infected lesions and was identified as Erwinia carotovora subsp. carotovora based on the morphological, physiological and biochemical characteristics, and on the results of the Biolog program (Biolog Inc., U. S. A.). E. carotovora subsp. carotovora is the first described bacterium which causes bacterial soft rot on wasabi in Korea.

Effect of Wasabi (Wasabia japonica Matsum) Stalk on the Fermentation of Baechukimchi

  • The effects of wasabi stalk on the taste and storage characteristics of baechukimchi were assessed in the final product. Wasabi stalk was added in different ratios: 0, 1, 3, 5, or 7%(w/v) of Chinese cabbage. As the fermentation progressed, the pH of the product dropped. Total acidity increased in all treatments during fermentation. The total vitamin C content increased during the first 8 to 13 days of fermentation. Reducing sugar decreased in all treatment as fermentation continued. The numbers of total cells and lactic acid bacteria increased until they peaked, and then began decreasing as fermentation continued. With regard to acceptability characteristics, the 3% treatment was most favored. With simple regard to the quantitative level of wasabi stalk addition, the 3% treatment was most appropriate under all testing conditions. In conclusion, stalk seems to be an economical and natural additive which has effects on extension of the shelf life of baechukimchi.

Effect of Soil Water Potential on Stomatal Conductance and Photosynthesis of Wasabia japonica Matsum (토양수분(土壤水分)포텐셜이 고추냉이의 기공전도도(氣孔傳導度)와 광합성(光合成)에 미치는 영향(影響))

  • This study was investigated to obtain basic information for the development of irrigation plans in upland cultivation of Wasabi. Changes of stomatal conductivity and photosynthetic rate of Wasabi, and of the soil water potential during withholding watering were analysed. The stomatal conductivity of Wasabi at $1000{\mu}Em^{-2}s^{-1}$ light intensity was $70mmolem^{-2}s^{-1}$, which was about 49% lower than that of Chinese cabbage, $138mmolem^{-2}s^{-1}$. The temporal changes of light intensity during the daytime did not influence the stomatal conductivity. The soil water potential that decreased stomatal conductivity in Wasabi was about - 50kPa at 10 AM, and about - 30kPa at 3 PM. The photosynthetic rate of Wasabi at$1000{\mu}Em^{-2}s^{-1}$ light intensity was $7.6mgdm^{-2}hr^{-1}$, which was about 50% lower than that of Chinese cabbage, $15.3mgdm^{-2}hr^{-1}$. The duration required for a stable photosynthetic rate was longer in Wasabi than in Chinese cabbage. The soil water potential that decreased photosynthetic rate in Wasabi was about - 50kPa at 10 AM, and about - 30kPa at 3 PM. The stomatal conductivity and photosynthetic rate showed significant positive correlation at various soil water potential. The results indicated that irrigation in wasabi could be done during the daytime when the soil water potential is above - 30kPa, which does not decrease stomatal conductivity and photosynthesis in Wasabi.

Effects of Wasabi (Wasabia japonica Matsum) on the Physicochemical Characteristics of Baechu Kimchi during Fermentation (고추냉이가 배추김치의 발효 중 이화학적 특성에 미치는 영향)

  • In this study, we explored the application of Wasabi addition to baechu kimchi with regard to quality improvement, by reviewing the optimum Wasabi level and its effects on the product physicochemical characteristics during fermentation. The final weight percentages of Wasabi in the baechu kimchi were adjusted to 0, 2, 3, 4, and 5% per weight of baechu, respectively, and the samples were fermented for 35 days at $10^{\circ}C$. Following fermentation, the treatments over 3% Wasabi contained the highest pH and lowest total acidity values. Total vitamin C and reducing sugar content increased initially, up to certain fermentation times depending on the level of Wasabi contents within the treatments over 3% Wasabi, and decreased afterwards. The water soluble pectin content increased as the fermentation period increased; however, it decreased with increasing levels of Wasabi. In conclusion, the optimum levels of added Wasabi in the baechu kimchi were 3% and 5% per weight of baechu, to have a fermentation-retarding effect on the product.

Changes of Allylisothiocyanate Content and Hardness of Rhizome by Months after Planting in Wasabia japonica Matsum. (생육기간 경과에 따른 고추냉이 근경의 Allylisothiocyanate 함량과 경도 변화)

  • This experiment was conducted to evaluate the contents of allylisothiocyanate and the change of hardness of the rhizome part of Wasabia japonica Matsum. by months after planting in water cultivation. No difference was found in plant height and leaf length at 10th and 15th months after planting, respectively. The rhizome part of wasabi was cut half and the dry weight was weighed. Dry weight was obtained as 17.3% and 21.6% from fresh lower and upper part of rhizome at 10th month after planting. At 15th month after planting, dry weight was obtained as 21.2% and 22.3% from fresh lower and upper part of rhizome. The contents of allylisothiocyanate were 0.047 mg/g and 0.633 mg/g at 10th and 15th month, respectively.
