The model foods were prepared by simulating mositure, protein and starch, and they were heated for 30 mins, at $80^{\circ}C$ and then cooled at $25^{\circ}C$ in water bath. Their rheological properties were investigated by the use of Brookfield wide-gap rotational viscometer at $30{\sim}60^{\circ}C$, and the rotation speed ranged from 0.6 to 6 rpm and solid content ranged from 8% to 11%, the results obtained were as follows. 1. All the model foods ($P_1S_3$, $P_2S_2$, $P_1S_1$, $P_2S_1$, $P_3S_1$, $P_4S_0$) exhibited pseudoplastic behaviors with yeild stress and were thixotropic foods which showed time - dependent structural decays, but the starch food of 8 ~ 11 % solid content did not show the flow behavior. 2. The correlation between the rheological parameters and the protein content of model foods in various moisture content did not appeared a constant relationship. 3. The change of shear stress against shear rate in high starch foods was larger than that in high protein foods and the structure at initial shear time was decayed with a quatic equation according to the Tiu's Model and structural decay was in parallel with the increase of shear rate. 4. The temperature dependency of the apparent viscosity of $P_1S_2$, and $P_2S_1$ was fully expressed by Arrhenius equation and activation energies of their food were 2.35 and $1.34Kcal/g{\cdot}mol$, respectively.
The radical scavenging activities of 9 medicinal plants on peroxynitrite ($ONOO^-$) and hydroxyl (${\cdot}OH$) radical were investigated using in vitro system. The water extracts of 9 medicinal plants showed the protective effect against $ONOO^-$ and ${\cdot}OH$ radical. In particular, Akebia quinata, Aster scaber, Cudrania tricuspidata, Diospyros kaki, Eriobotrya japonica, Lycium chinense, Parthenocissus tricuspidata and Polygonum aviculare exhibited $ONOO^-$-scavenging activity by about 50% at the concentration of $10{\mu}g/ml$. Although those $ONOO^-$-scavenging activities were lower than that of penicillamine (94.08${\pm}$3.04%) as a positive control, Eriobotrya japonica (89.87${\pm}$4.57%) was the most potent scavenger of $ONOO^-$ at the concentration of $10{\mu}g/ml$. Also, Diospyros kaki and Urtica angustifolia showed the strong${\cdot}$OH-scavenging activity than thiourea, positive control, at the concentration of lmg/ml. Our results indicate that 9medicinal plants may act as free radical scavengers and reduce damages caused by oxidative stress associated with $ONOO^-$ and${\cdot}$OH radical.

The polyamines are essential components of all eukaryotic cells and absolutely necessary for cell growth. In the present study, the cytoprotective role of polyamine was characterized. When $Ac_2F$ rat liver cells were treated with 1M 2,2'-azobis (2-amidinopropane) dehydrochloride (AAPH), a water soluble free radical initiator, viability of the cells was noticeably decreased due to the increase of reactive oxygen species (ROS). The cytotoxic effect of AAPH as well as ROS generation were significantly inhibited by the treatment of polyamines. Among polyamines, especially spermine at $20{\mu}M$ concentration exerted over $45\%$ inhibition of AAPH-induced ROS generation. Western blotting was performed to determine whether superoxide dismutase(SOD) or catalase (CAT) expression was involved in oxidative stress. The AAPH treatment blocked both SOD and CAT protein expressions. Spermine could recover those protein expressions to the untreated control levels. According to the result of cycline E measurement, AAPH might block the entry of the cells into S phase of the cell cycle. The reduced expression of cyclin E protein could be fully recovered by the addition of spermine. The antioxidative effects of spermine was also further proved by the apopotitic morphological analysis using ethidium bromide and acridine orange.
The antioxidant properties and protective effects of Inula britannica on ${H_2}{O_2}$-induced SH-SY5Y neuroblastoma cell damage were investigated. A series of solvent fractions, including hexane(Fr.H), petroleum ether, chloroform, ethyl acetate(Fr.EA), and water fraction(Fr.W), were prepared from the 70% methanol extracts of Inula britannica. Fr.W had the highest total contents of phenolics and flavonoids, followed by Fr.EA. The antioxidant properties of the fractions were also evaluated by analyzing their scavenging activities on 1,1-diphenyl-2-picrylhydrazyl(DPPH) radicals, 2,2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radicals, and nitric oxide. Fr.W showed the strongest activities in all assays. The concentrations of Fr.W that resulted in 50% reductions of the DPPH and ABTS radicals were 20.7 ${\mu}g$/mL and 39.4 ${\mu}g$/mL, respectively. Fr.W showed the weakest cytotoxic activities on the SH-SY5Y cells, whereas it effectively protected ${H_2}{O_2}$-induced cell death, increasing cell survival by 35.0-77.0% at a concentration range of 62.5-250 ${\mu}g$/mL. In this range, Fr.W also significantly decreased intracellular ROS levels by 34-39%. Overall, the antioxidant properties of Inula britannica can contribute to rescuring neuronal cells from oxidative stress-induced cell injury.

To examine the physiological effects of broccoli (Brassica oleracea var. italica) leaf, the bioavailable compounds in broccoli leaf extract, and its in vitro neuroprotective effects against $H_2O_2$-induced oxidative stress were examined in this study. The chloroform fraction of broccoli leaf extract had the highest total phenolic content of all the fraction than others, and the highest 2,2"-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS) radical-scavenging activity and malondialdehyde (MDA) inhibitory effect. Intracellular reactive oxygen species (ROS) accumulation resulting in $H_2O_2$-treated in PC12 cells was significantly lower when the chloroform fraction was present in the medium compared to that in PC12 cells treated with $H_2O_2$ alone. In a cell viability assay performed using 3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyltetrazolium bromide (MTT), the chloroform fraction showed protective effects against $H_2O_2$-induced neurotoxicity and inhibited lactate dehydrogenase (LDH) release into the medium. High-performance liquid chromatography (HPLC) analysis showed that ferulic acid was the predominant phenolic compound in chloroform fraction of broccoli leaf.
This study is to characterize the postulated anti-inflammatory effect of the hot water extracts from the Phellinus baumii. RAW264.7, macrophage cell line, was activated by lipopolysaccharide (LPS) and, further, treated with Phellinus baumii's aqueous extract. When the cultured macrophage cells were treated with LPS, they show typical signs of endoplasmic reticulum stress (ERS) and an increment in secretion of inflammatory cytokine compared to the non-treated control: The expression of glucose-regulated protein78 (Grp78), Grp94, and C/EBP homologous protein/GADD 153 (CHOP) increased along with augmented secretion of interlukin-6. Cellular nitric oxide content also significantly went up in comparison to the non-LPS treatment. When the LPS-treated RAW264.7 was treated with the aqueous Phellinus baumii extracts, however, the expression of ERS markers markedly reduced and the release of nitric oxide declined. Also, the expression of induced nitric oxide synthase (iNOS) notably diminished similarly as the NO content. In conclusion, this study strongly indicated that aqueous Phellinus baumii extract can be utilized directly as anti-inflammation agent and serves as a source of functional ingredient to lessen the inflammation.

This study numerically analyzes the characteristics of the velocity distribution for each location of a square-sectional $180^{\circ}$ bent duct using a Reynolds Stress Turbulent model. The flow parameters were varied, including the working fluids, inlet velocity, surface roughness, radius of curvature, and hydraulic diameter. The boundary conditions for computational fluid dynamics analysis were inlet temperatures of air and water of 288 K and 293 K, inlet air velocity of 3-15 m/s, inner surface roughness of 0-0.001 mm, radius of curvature of 2.5-4.5 D, and hydraulic diameter of 70-100 mm. The working fluid characteristics were highly affected by changes in the viscous force. The maximum velocity profiles in the bent duct were indicated when the $90^{\circ}$ section was in the region of X/D=0.8 and the $180^{\circ}$ section was in the region of Y/D=0.8. Lower surface roughness and higher radius of curvature resulted in a higher rate of velocity change. Also, an efficient measuring location downstream of the bent duct is suggested since the flow deviations were the most stable when the straight duct length was in the region of L/D=30. The minimum deviations at the same velocity conditions according to the hydraulic diameter were mostly indicated in the range of L/D=15-30 based on the standard deviation characteristics.
In vitro antioxidant activities and acetylcholinesterase (AChE) inhibitory effects of solvent fractions from aged raw garlic extracts were investigated. Total phenolics fractioned by hexane, chloroform, ethyl acetate and water from Aged raw garlic extracts were 3.70, 23.63, 31.27 and 2.35 mg/g, respectively. We found that ethyl acetate fractions had the highest in ABTS radical scavenging activities, ferric reducing antioxidant power and inhibitory effect on auto-oxidation of linoleic acid. Intracellular ROS accumulation resulting from $H_2O_2$ treatment of PC12 cells was significantly reduced when ethyl acetate fractions were present in the medium compared to PC12 cells treated with $H_2O_2$ only. In addition, we found that ethyl acetate fractions from aged raw garlic extracts resulted in a dose-dependent manner on AChE inhibition. Consequently, our results suggest that ethyl acetate fractions from aged raw garlic extracts may be useful as decreasing agents of oxidative stress and AChE inhibitors.
The NSCAT(NASA Scatterometer) carried by the japanese Advanced Earth Observing Satellite(ADEOS) was the first high resolution(25 km) device for the direct wind measurement over the ocean. Even it was ceased to operate in lune of 1977 because of the power failure, it gave the first opportunity to the marine meteorologists to study the direct measured ocean wind during its 9 months of operation, especially around Korea. This study is to show monthly mean ocean wind and wind stress curl fields around Korea from January, 1997 to June, 1997. Mean ocean winds in January are predominantly northwesterly and the strongest wind(12 m/s) is found near Vladivostok. The winds in the western East Sea are strongly inf1uenced by the mountain range in Korea and these topographically influenced winds make about five times larger wind stress curl fields than previous estimates based on the weather maps. The calculation of Sverdrup transport in the East Sea shows the possibility of the directional change of the East Korean Cold Current from southward to northward direction caused by the winter wind. The downwelling area near North Korea has maximum estimated speed of 45 m in january and this wind induced downwelling makes good condition for the formation of Intermediate East Sea Water together with vigorous mixing by the strong wind.

In the marine area, the salt concentration in the soil increases, and the inland heavy metal pollution increases the damage of plants. In the inland industrial development area, researches on the genetic resources of plants together with the heavy metal accumulation of Co, Ni, Zn, and so on are required. Both of these problems have caused scientists to work hard to find plants that are likely to cause stress in plant roots. In this study, seeds of Arabis stelleri var. japonica collected near the shore were used for germination. The growth and development and tolerance of both Arabis and Arabidopsis seeds were investigated under laboratory culture conditions. As a result, Arabis showed resistance about 3 times in 250 mM nickle and cobalt, and more than 4 times in 1 mM zinc when compared to Arabidopsis. The tolerance of Arabis to Na salts increased by 20% or more at 50 mM concentration and Arabis was resistant to heavy metals and salt concentration. The accumulation of Na ions in the body was measured as a preparation for studying the intracellular mechanism. As a result, it showed a further decrease in resistance to ground water roots. It is considered that the activity of the exporting gene is important rather than the mechanism of accumulation.
