For the development of functional food and cosmetics using the hot water extract of Undaria pinnatifida, the concentrations of vitamin, amino acid and element and activities of antioxidant and nitrite scavenging were investigated. The results are shown as follows: Vitamin C and E concentrations were 0.301 and 0.11 mg/100 g, respectively. Mineral concentrations were an order of Ca > Mg > K > Fe. The concentrations of total amino acids were an order of Glu > Ala > Val > Leu > Gly > Pro. Total phenol concentration and DPPH radical scavenging activity were increased with the increase of the concentration of extract. Especially, when the extract concentrationwas increased from 1.0 to 10.0 mg/mL, the total phenol concentration was increased from 0.043 to 0.125 OD 725 nm. DPPH radical scavenging activity at 50 mg/mL was 70.1%. The antioxidant activity of extract was stable in range of 80 to $140^{\circ}C$ and pH 3-9. The nitrite scavenging activity was increased with the decreaseof pH and the increase of it's extract concentration. Especially, it was 83.4% at 50 mg/mL (pH 1.2). These results showed that the hot water extract of U. pinnatifida can be applied to functional food and cosmetics.
The chemical composition of Undaria pinnatifida Laver (U.P. Laver) were determind. 1. Proximate compositions of U.P. Laver were 22.1% crude protein, 1.3% crude fat, 10.2% crude ash, 66.4% N.F.E, 3 0% crude fiber and 22.8% alginic acid. 2. U.P. Laver protein was chiefly composed of glutamic acid (3.24%) and aspartic acid (2.22%) and considerable quantities of leucine (1.98%), alanine (1.56%), valine (1.32%), lysine (1.22%) and phenylalanine (1.15%). 3. The major fatty acid contents of the lipid extracted from U.P. Laver were linolenic acid (45.2%), palmitic acid (26.14%) and linoleic acid (11.27%) and the minor fatty acid were myristic acid (8.41%), oleic acid (8.11%), and stearic acid (0.87%), respectively.

This study investigated changes in physicochemical characteristics by drying and fermentation in order to utilize Actinidia arguta. Moisture content of A. arguta was 85.81%. Major sugar and organic acids were sucrose, succinic acid, and citric acid. A. arguta contained 19 kinds of amino acids, including 8 kinds of essential amino acids such as valine, methionine, isoleucine, leucine, threonine, phenylalanine, tryptophan, and lysine. For total organic acids, sample fermented for 17 h at $50^{\circ}C$ under a relative humidity of 80% showed 29,026.53 mg/100 g total organic acids. For total free sugars, cold-dried sample showed the highest level at 6,560.86 mg/100 g, which decreased to 2,386.73 mg/100 g after blanching. For the ratio of essential amino acids, freeze-dried sample showed a content of 11.66%, which increased 4-fold up to 40.71~55.50% with fermentation. Both GABA and vitamin U were highest after 17 h of fermentation (110.29 mg and 6.78 mg/100 g fresh weight, respectively). A. arguta contains a variety of free amino acids that increase in amount after fermentation and thus is expected to be developed as a functional food and substitute tea.
In order to obtain amino acids and nucleic acid derivatives from adenine auxotrophic mutants of Bacillus subtilis and Escherichia coli, vitamin, nucleic acid analogue, streptomycin as well as ultraviolet light were adopted for the production of adenine auxotrophic mutants and the results showed efficient production of desired mutants. 1. Ultraviolet ray $(2530\;{\AA}\;2080\;erg/mm^2)$ irradiation to Bacillus subtilis and E. coli at a distance of 30 cm for 80-90 sec. and for 15-20 sec. respetively induced four and eight strains of auxotrophic mutants. 2. Treatment of aminopterine$(200\;{\mu}g/ml)$ inhibited the growth of Bacillus sultilis significantly but a subsequent irradiation of ultraviolet light at the above mentioned conditions induced six times as much mutants as compared to the irradiation alone. In case of E. coli a similar tendency was observed with treatment of streptomycin$(200\;{\mu}g/ml)$ with doubled induction rate of adenine auxotrophic mutants as compared to the irradiation alone.

This study aimed to isolate wild yeasts from waters and soils on the riversides of Geumgang upstream in Geumsan, seashores of Cheongpodae in Taean and Suncheonman in Suncheon, Korea, and to investigate their unrecorded microbiological characteristics. Forty-nine species of wild yeasts, including Aureobasidium pullans YH 4-3, were isolated from 40 samples of Cheonnaegang in Geumgang upstream. Fifty-six species and 36 species of wild yeasts were also isolated from 80 samples of Cheongpodae Beach and Suncheonman Mashland, respectively. Species from Candida genus were isolated from all three locations. Among them, Candida michaelii NNIBRFG28278, Sporobolomyces japonicus NNIBRFG28271, Dioszegia buhagiarii NNIBRFG28279, Ustilago spermophora NNIBRFG28273, Nakazawaea pomicola NNIBRFG31590, Candida natalensis NNIBRFG31591, Candida pseudorhagii NNIBRFG31592, Candida santamariae NNIBRFG31593, Cutaneotrichosporon terricola NNIBRFG31594, and Meira nashicola NNIBRFG31595 represent newly recorded yeast strains in Korea. Almost all of these unrecorded yeasts were oval shaped, and Sporobolomyces japonicus NNIBRFG28271 and Candida natalensis NNIBRFG31591 have ascospores. All the strains grew well in yeast extract-peptone-dextrose (YPD) and yeast extract-malt extract (YM) media, and Ustilago spermophora NNIBRFG28273 grew well in vitamin-free medium. Sporobolomyces japonicus NNIBRFG28271 grew well in 15% NaCl-containing YPD medium, and Ustilago spermophora NNIBRFG28273 and Dioszegia buhagiarii NNIBRFG28279 assimilated starch, and Ustilago spermophora NNIBRFG28273 produced ethanol.
The objective of this study were to investigate the effects of Se and Vit. E administration on blood chemical values and Vit. E concentrations of serum in calves born from Hanwoo dams injected Se and Vit. E at late pregnancying periods. The effects of Se and Vit. E administration of blood chemical values in calves born from Hanwoo dams injected Se and Vit. E at the last month of pregnancying periods were examined. In albumin concentration of blood, the Vit. E 2000IU group were slightly higher than other groups and the cholesterol concentrations were also higher in Vit. E 15001u group than other groups. But, another components examined of blood chemical values were not significantly different in all experimental groups. The blood chemical values in calves born from Hanwoo dams administrated Se and Vit. E at two months before parturition were examined. However, there were not significantly different in all experimental groups in concentrations of albumin, cholesterol, BUN, creatinine, glucose, inorganic phosphorous, calcium, total protein and triglycerides. The concentrations of serum Vit. E in calves born from Hanwoo dams administrated Se and Vit. E at 30 and 15 days before parturition were examined. The concentrations of Vit. E in serum were higher in treatment groups than in control group(P>0.05). The concentrations of serum Vit. E in calves born from Hanwoo dams administrated Se and Vit. E at 60 days before parturition were examined, the concentrations of Vit. E in serum were slightly higher in groups administrated than in control group(P>0.05), but there were not significantly difference in all experimental groups.
This study was conducted to measure the difference in the total antioxidant status(TAS) of overweight and normal weight adults, and to investigate the correlation between TAS and the nutrient intake. Anthropometric parameter, TAS, biochemical parameters and dietary intake were measured in the normal weight group(n=17, BMI 20-25, obesity index 90-110%, body fat 16-20%) and overweight group(n=13, BMI > 25, obesity index > 120%, body fat > 25%) among Korean young males. The TAS of the overweight group was significantly higher than that of the normal weight group(p < 0.01). Among biochemical parameters, the average uric acid concentration of the overweight group was significantly higher(p < 0.05) compared to that of the normal weight group indicating, the uric acid concentration reflects TAS. Usual dietary intake showed that the intakes of Ca and vitamin B$_2$, are below RDA. The average intake of vitamin C in the overweight group was significantly lower than that in the normal group(p < 0.05). There was no difference in the intake of carotene and vitamin E between groups. The diet quality of both groups was satisfactory. The result of the correlation analysis on TAS, the uric acid concentration, and the measured indexs are as follows : In the overweight group, TAS was negatively correlated with alchol drinking, and uric acid concentration was positively correlated with BMI, obesity index, and TAS. In conclusion, TAS was significantly higher in the overweight group than that of the normal group, although no association was found with nutrient intakes. Serum uric acid showed a positive relationship with TAS indicating, it is a possible determinant of the antioxidant capacity.
This study was carried out to investigate nutritional composition and physicochemical properties of waxy(WGR) and nonwaxy(NWGR) germinated brown rice. Amylose contents of WGR(moisture content 15.45 %) and NWGR (moisture content 15.02%) were 4.9% and 17.9%. Reducing sugar of those were 4.91% and 2.28%. The free sugar contents of WGR were glucose 0.42%, sucrose 0.15%, maltose 0.27% and that of NWGR were glucose 0.59%, sucrose 0.50%, maltose 0.24%, respectively. Color value of WGR and NWGR were L=60.30, a=2.12, b=23.52 and L=59.51, a=3.15, b=23.04, respectively. Degree of gelatinization of WGR and NWGR were 7.67%, 5.21% and hardness of WGR and NWGR were 7.53 kg$\_$f//$\textrm{cm}^2$, 8.93 kg$\_$f//$\textrm{cm}^2$. Vitamin E contents of those were 271.8 $\mu\textrm{g}$/kg, 310.6 $\mu\textrm{g}$/kg and total dietary fiber contents of those were 4.21%, 3.17%. Total amino acids of brown rice, nonwaxy germinated brown rice and cooked germinated brown rice were 126.8 mg/l00 g, 90.8 mg/l00 g and 106.5 mg/l00 g, respectively. Among amylogram characteristics of WGR and NWGR, initial gelatinization temperature, peak viscosity, breakdown, setback were 42$^{\circ}C$, 498 B.U., 94 B.U., -48 B.D. and 70$^{\circ}C$, 212 B.D., 0 B.D., 123 B.D., respectively. Sensory properties of germinated brown rices were affected by color and flavor. Palatability score of WGR that intensity score of color and flavor were lower than that of NWGR showed high.
Objective: This study aimed to determine the threshold of $anti-M{\ddot{u}}llerian$ hormone (AMH) as predictor of follicular growth failure in polycystic ovary syndrome (PCOS) patients treated with clomiphene citrate (CC). Methods: Fifty female subjects with PCOS were recruited and divided into two groups based on successful and unsuccessful follicular growth. Related variables such as age, infertility duration, cigarette smoking, use of Moslem hijab, sunlight exposure, fiber intake, body mass index, waist circumference, AMH level, 25-hydroxy vitamin D level, and growth of dominant follicles were obtained, assessed, and statistically analyzed. Results: The AMH levels of patients with successful follicular growth were significantly lower (p= 0.001) than those with unsuccessful follicular growth ($6.10{\pm}3.52$ vs. $10.43{\pm}4.78ng/mL$). A higher volume of fiber intake was also observed in the successful follicular growth group compared to unsuccessful follicular growth group (p= 0.001). Our study found the probability of successful follicle growth was a function of AMH level and the amount of fiber intake, expressed as Y =-2.35+($-0.312{\times}AMH\;level$)+($0.464{\times}fiber\;intake$) (area under the curve, 0.88; 95% confidence interval, 0.79-0.98; p< 0.001). Conclusion: The optimal threshold of AMH level in predicting the failure of follicle growth in patients with PCOS treated with CC was 8.58 ng/mL.
