김치 발효숙성중의 Vitamin U 및 아미노산 함량의 변화 (Changes in Vitamin U and Amino Acid Levels of Korean Chinese Cabbages during Kimchi Fermentation)

  • 본 연구에서는 배추김치를 종자별, 부위별, 저장조건별 유리당, vitamin C, amino acids의 함량을 분석하고 변화 경향을 조사하여 보았으며 vitamin C의 전구물질인 methionine과의 상관관계에 대한 연구를 수행하였다. 유리당의 경우 core> middle> outward 부위 순으로 높은 함량을 나타냈으며, midrib 부위의 함량이 높은 것으로 조사되었다. Vitamin U의 경우55일 배추 outward leaf 부위에서 함량이 가장 높았으며 저장기간이 증가 할수록 함량이 증가하는 경향을 나타내었다. 유리 amino acids의 함량은 vitamin U와 같이 outward leaf 부위가 전반적으로 높았으며 특히 threonine, alanine, proline이 가장 풍부한 아미노산으로 조사되었다. Vitamin U의 전구물질인 methionine의 함량은 부위별, 저장조건별 큰 차이를 보여주었으나, vitamin U 함량에 미치는 영향에 대한 뚜렷한 상관관계는 보이지 않았다.

배추 저장동안 비타민 U, 아미노산, 유리당 함량 변화 (Changes in Vitamin U, Amino acid and Sugar Levels in Chinese Cabbages during Storage)

  • 본 연구에서는 배추를 품종별, 부위별, 저장기간 동안의 vitamin U, amino acid 및 유리당 함량을 분석하고 변화경향을 조사하여 보았다. Vitamin U의 함량은 배추의 품종과 부위에 따라 차이를 나타내는 것으로 조사되었다. 동풍 배추(Winter Pride)의 겉잎(outward leaf)에서 12.70 mg/100 g, 55일 배추(55 Days)의 속잎(core leaf)에서 18.60 mg/100 g으로 vitamin U의 함량이 가장 높은 것으로 나타나 품종별 함량차이가 있음을 확인할 수 있었으며, 부위별 함량을 측정하여 본 결과 두 품종 모두 배추의 leaf부위가 midrib 부위에 비하여 1.7-9.0배 이상 높은 것으로 조사되었다. $4^{\circ}C$ 저장 동안의 vitamin U 함량은 두 품종 모두 다소 증가하는 것으로 나타났다. 저장 동안의 vitamin U의 전구체인 methionine 함량을 조사하여 본 결과 아주 낮거나 존재하지 않는 것으로 조사되었는데 이는 배추가 성숙하는 동안 methionine이 vitamin U 전구물질로 사용된 것으로 추정되어진다. 그러나, $4^{\circ}C$ 저장 동안의 vitamin U과 methionine의 함량에 대한 뚜렷한 상관관계는 보이지 않았으며 유리 amino acid와 유리당 함량과의 관계에 대한 더 많은 연구가 수행되어야 할 것으로 사료되어진다.

Vitamin U in Medicinal Food Plants

  • Vitamin U levels in 26 kinds of food plants are well known to healthy vegetables in Asian or Western countries were determined. Spinach showed the highest level of 452.04 mg/kg and in order Pack-choi (343.18 mg/kg) > Kale (234.18 mg/kg) > Somssukbujaengi (197.66 mg/kg) > leaf mustard (196.21 mg/kg) > aralia bud (192.50 mg/kg)> broccoli (189.03 mg/kg) >Asparagus (187.35 mg/kg). Among Korean wild medicinal plants, Sumssukbujaengi showed the highest value followed by Sanmanul (a kind of wild garlic) level of 143.46 mg/kg. For Chinese cabbages and cabbages, vitamin U showed different levels according to the parts of plant such as core, middle, outward leaves. In both samples, middle parts of leaves including midribs contained the highest level of vitamin U. The level of vitamin U was dependent on the part of the plant sample and cultivars. Leaf parts of turnip and white radish showed higher value of 84.82 mg/kg and 124.62 mg/kg than those of roots which were in order of middle (112.39 mg/kg), top (84.84 mg/kg) and bottom (84.61 mg/kg) portions in the white radish. In the analysis of amino acids, we didn't find either distinctive relationship between methionine and vitamin U synthesis or significant connection various free amino acids and vitamin U level in food plants.

Change in Levels of Vitamin U and Amino Acids in Korean Chinese Cabbages Under Various Drying Methods

  • S-methylmethionine, vitamin U levels were affected by cultivars, parts fo Korean Chinese cabbages, and drying methods. Among drying conditions, freeze drying method appeared the best condition to maintain bitamin U content compared to oven and air drying methods. In the case of KOrean Chinese cabbages, outward leaves have high levels of chlorphyll and fiber. From this study, the outward parts contained high levels of vitamin U in two cultivars. Leaf parts were 1.1-21.2 times higher in vitamin U levels than midribs in both cultivars. This difference was shown most distinctively in freeze dried outward parts of Winter Pride cultivar. Like vitmnin U, fee amino acids also showed much higher levels in leaves. Levels of amino acids showed irregulatoy changing patterns at different parts and cultivar of Korean Chinese cabbages with various drying methods, Alanine and threonie appeared relatively aboundant amino acids in most parts of samples. Since no distinctive trends were observed in this rsult, it seems no relationship exists between amon oacids and bitamin U levels. Levels of methionine in differnent parts and cultivars of Korean Chinese cabbages dried with various methods did no show clear relationship with tlevel of vitamin U. Moreover, emthionine was not detected in freeze dired outward leaf parts which were the hithest parts of vitamin U levels in Winter Pride and 55 days cultivar. There were simila levels of methionine between overn and freeze drying. Samples prepared by air drying showed significatly lower levels than those by oven and freeze dryting. Methionine as aprecursor of vitamin U, may play a role in an increase of vitamin U during drying of KOrean Chinese cabbages.

HPLC에 의한 동물성 수산식품 중의 Vitamin $D_3$와 그 관련물질 정량에 관한 연구 (Quantification of Vitamin $D_3$ and Its Derivatives in Marine Animal Foods by HPLC)

  • Contents of vitamin $D_3$ and 25-OH-vitamin $D_3$ in marine animal products(20 species) were determined by HPLC. The isomers of vitamin D, $D_2$ and $D_3$, were not clearly separated on a reversed phase, ${\mu}$ Bonda Pak, with 20% methanol-acetonitrile, and on a normal phase, Zorbax SIL. with 0.4% isopropanol-hexane, but 25-OH-vitamin $D_2$ and-$D_3$ were separated on either ${\mu}$ Bonda Pak with 10% methanol-acetonitrile, or on Zorbax SIL with 2.2% isopropanol-hexane, respectively. Although levels of vitamin $D_3$ and 25-OH-vitamin $D_3$ varied remarkably according to species, their average value(fish : $l,l87{sim}36,007$ I.U/sample 100g, mussel : $58{\sim}1,706$ I.U/sample 100g, pickle: $1,208{\sim}79,358$ I.U/sample 100g) was greatly higher than that of meat($80{\sim}100$ I.U/sample 100g) and dairy products($400{\sim}800$ I.U/sample 100g). Fatty tissues of fish and pickled fish intestines contained high level of vitamin $D_3$ and 25-OH-vitamin $D_3$, while the clam and mussel known to have various kinds of sterol including ${\Delta}^7$-sterol showed very low levels of vitamin $D_3$ and its derivative.

삶의 질 향상을 위한 비타민 D와 비만과의 관련성에 관한 연구 (The Relationship between Vitamin D and Obesity to Improve Quality of Life)

  • 본 연구의 목적은 비타민 D와 소변 microalbumin / creatinine (uACR)과 한국 성인의 비만 연관성을 평가하는 것이다. 연구 대상자는 2012년 국민 건강 영양 조사에 참여한 20세 이상의 한국 성인 (4,948명)이었다. 공변량을 보정한 공분산 검사는 비타민 D 결핍과 관련하여 uACR 수준에 대해 실시되었다[비타민 D 결핍, 25 (OH) D < 10 ng / dL; 비타민 D 부족, 25(OH) D ≥ 10, < 20 ng / dL; 충분한 비타민 D, 25(OH) D ≥ 20 ng / dL]. 주요 연구 결과는 다음과 같다: 첫째, 비만하지 않은 집단(BMI < 25 kg / m2)에서 uACR 수준은 관련 변수를 조정한 후에 비타민 D 상태의 증가와 함께 감소했다(p < 0.001). 둘째, 비만 인구 (BMI ≥25 kg/m2)에서 uACR 수준과 비타민 D 상태 사이의 연관성은 유의하지 않았다(p = 0.659). 결론적으로, 소변 microalbumin / creatinine 치는 비만이 없는 한국 성인에서 비타민 D 상태와 반비례 관계를 가지나 비만이 있는 한국 성인에서는 그렇지 않았다.

비타민 D 섭취가 여성노인의 생리적 지표, 근육량 및 체기능에 미치는 영향 (Effect of Vitamin D Supplementation on the Physiological Indices, Muscle Mass, and Physical Functions of Aged Women)

  • Purpose: The purpose of this study was to investigate the effect of supplemental vitamin D on the physiological indices, muscle mass, and physical functions of aged women. Methods: A non-equivalent pretest-posttest design was used. The participants were 65 elderly women with low serum vitamin D levels. This study was conducted for 12 weeks. The experimental group (n=34) received vitamin D and regular exercise whereas the control group (n=31) received only regular exercise. The data were analyzed by the IBM PASW Statistics (SPSS) 19.0 program. Results: Serum vitamin D (U=0.00, p<.001), parathyroid hormone (U=99.50, p<.001) and calcium (U=250.50, p<.001) levels were significantly increased in the experimental group after the intervention. The experimental group showed significantly increased scores of muscle mass, strength, physical balance, and gait compared to those of the control group. Conclusion: Vitamin D supplementation improved physiological indices, muscle mass, and physical functions. In addition, this program may help to prevent disorders of the musculoskeletal system in aged women.

HPLC를 이용한 마유의 Vitamin A 함량 분석 (A Study on Vitamin A Content of Mare Milk using HPLC)

  • 마유는 다른 동물의 젖과는 달리 매우 독특한 구성성분을 이루고 있다. 이 연구의 목적은 HPLC를 이용하여 마유의 비타민 A 함량을 결정하고, 우유의 비타민 A 함량과 비교분석하기 위한 것이다. HPLC를 이용하여 마유와 우유의 비타민A 함량을 분석한 결과 RT는 약 4.4 분이었다. 그리고 시료 100g당 우유와 마유의 비타민 A 함량은 각각 112 I.U, 42 I.U로서 우유가 마유보다 약 2.7배 가량 높았으며, 지방 1g당 비타민 A 함량은 우유가 30.41 I.U, 마유가 27.99 I.U로 마유가 우유보다 약간 적은 것을 알 수 있었다. 결과적으로 우유의 비타민 A 함량은 마유의 비타민 A 함량보다 높았다.

비타민 A 과량 투여가 흰쥐의 체내 지방 대사상 및 장기의 비타민 A 함량에 미치는 영향 (Effects of Excess Vitamin A Feeding on Lipid Profiles and Vitamin A Contents of Rats)

  • This study was performed to examine the effect of excess vitamin A feeding on lipid profile and vitamin A content of rats. 12 male Sprague-Dawley rats. weighing 114.1$\pm$0.9g, were divided into control and excess vitamin A group, and fed experimental diet for 6 weeks. In the excess vitamin A group, the level of vitamin A was 400, 000 1.U./kg diet(100 times of standard level). It was observed that vitamin A excess group had higher levels of plasma total lipid, total cholesterol, and trighlyceride and lower HDL ratio, indicating a high risk to coronary heart disease. In the liver, total CHOL and TG content were also high, and fatty liver was produced by excess Vitamin A. Vitamin A contents of organs were higher when excess vitamin A was given. These results suggested that excess vitamin A could be a dietary factor increasing the lipid contents of plasma and liver. Therefore, it could be said that vitamin A megadose can be one of the risk factors to coronary heart disease.

Effects of Kojic acid, Arbutin and Vitamin C on cell viability and melanin synthesis in B16BL6 cells

  • Melanin biosynthesis is a human defense mechanism to protect skin from UV irradiation and also determines colors of hair and skin. However, as a interest on skin-whitening increases, researches to prevent pigmentation and hypersynthesis of melanin in skin are being actively in progress. Active components used as a whitening agent in cosmeceuticals are kojic acid, arbutin, vitamin C and hydroquinone. However, until now, because comparison researches among them in the aspect of both melanin formation and cellular toxicity have not been performed, we can't exactly estimate merits and defects of them as a whitening agent. To this end, we performed experiments to compare their effects on cell viability and melanin formation. As a first step, in vitro tyrosinase inhibition assay was done. While kojic acid and hydroquinone showed strong inhibition activities(their IC$\_$50/s are all < 100uM), arbutin and vitamin C showed weak activities. IC$\_$50/s of arbutin and vitamin C are 100uM and 400∼500uM, respectively. In B16BL6 melanoma cells, like in vitro tyrosinase inhibition assay, arbutin and kojic acid showed more strong inhibition effect on melanin synthesis than vitamin C. And unlike arbutin, vitamin C and kojic acid induced cell death at high concentration. Although arbutin showed no cytotoxicity, it has side effect to induce morphological change at high concentration.. In this paper, we suggest both kojic acid and arbutin have stronger ability to inhibit melanogenesis than vitamin C. And they also have side effect, that is, kojic acid induces cell death like vitamin C and arbutin changes cell morphology respectively.
