Deterioration of pod and seed quality by pod and stem blight and purple blotch is a serious problem in the production of vegetable soybean. Major inoculum sources for the causal pathogens, Phomopsis spp. and Cercospora kikuchii, are soybean straw and debris. Phomopsis spp. have been known to be either limited for hyphal growth or latent in immature soybean tissues. In this experiment, cultural practices using these ecological traits of the pathogens were applied as a control measure. In plastic mulching, seed infection was remark ably reduced by drip irrigation as compared to overhead sprinkling, but not reduced in no mulching cultivation. Control value of plastic mulching was 28.0% for pod and stem blight and 29.3% for purple blotch, which was lower than that of benomyl application. By the first week in June, 78% of overwintered soybean straw examined contained matured alpha spores in pycnidia, acting as primary inoculum. Secondary inoculum of phomopsix spp. was observed abundantly throughout from mid June to September on fallen cotyledons from current crops and subsequently was found on petiole debris. Consequently, both plastic mulching and drip irrigation were effective to some extent for controlling pod and stem blight and purple blotch without significant reduction in soybean yield, and the cultural practices in combination with field sanitation resulted in removing more the secondary inoculum.
The spectroscopic characteristics and chemical oxygen demand (COD) oxidation efficiencies were investigated for dissolved organic matters (DOM) from diverse sources, which may indirectly affect the concentrations and the quality of DOM found in watersheds. The DOM investigated for this study showed a wide range of the percent distributions of refractory organic matter (R-OM) from 8 to 100%. Relatively high R-OM distributions were observed for the DOM with the source of head water, sediments, paddy soils, field soils, and treated sewage whereas the DOM from livestock waste, reed, weeds, algae, and attached algae exhibited lower R-OM percent distributions. The percent distribution of R-OM had positive correlations with specific UV absorbance (SUVA) and humidification indices (HIX) of DOM. The investigated DOM was classified into four different source groups (i.e., biota, vegetables, soils, sediments) by comparing the synchronous fluorescence spectra. The DOM group from biota source was characterized by a prominent presence of protein-like fluorescence (PLF) whereas fulvic-like fluorescence (FLF) was additionally observed for vegetable-source DOM. FLF became significant for the DOM from both soils and sediments although no PLF was found for soil-derived DOM. A range of COD oxidation efficiency was observed for the various DOM, ranging from 36 to 94% and from 65 to 125% for $COD_{Mn}$ and $COD_{Cr}$, respectively. The results indicate that $COD_{Cr}$ reflects the higher OM concentration than $COD_{Mn}$. However, 95% confidence intervals of the COD oxidation efficiencies were similar for the two types of COD, suggesting that $COD_{Cr}$ may not be the superior OM index to $COD_{Mn}$ in terms of the variability of the oxidation efficiency. No significant correlations were obtained between COD oxidation efficiencies and the spectroscopic characteristics of DOM for this study.
Growth and anthocyanins of lettuce (Lactuca sativa L., 'Mid-season') grown under LED lamps with blue light in the range of 430-470 nm or with red light in the range of 630-670 nm were analyzed in this study. Cool-white fluorescent light was used a s the control. P hotosynthetic photon flux, p hotoperiod, air temperature, relative humidity, and $CO_2$ concentration in a closed plant production system were $201{\pm}2\;{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$, 16/8 hours (day/night), $22/18^{\circ}C$, 70%, and $400{\mu}mol{\cdot}mol^{-1}$, respectively. At 21 days after light quality treatment, growth characteristics and anthocyanins content of lettuce as affected by the peak wavelength of blue or red LED were significantly different. Among peak wavelengths treated in this stusy, R1 treatment (peak wavelength 634 nm) and R6 treatment (peak wavelength 659 nm) were effective for increasing leaf width, leaf area, shoot fresh weight, and photosynthetic rate of lettuce. B5 treatment (peak wavelength 450 nm) and B4 treatment (peak wavelength 446 nm) increased the anthocyanins concentration and chlorophyll content in lettuce leaves, respectively. Anthocyanins in lettuce leaves increased linearly with decreasing hue value of leaf color and with increasing SPAD value of lettuce leaves. From these results, it was concluded that the red LED with peak wavelengths of 634 nm and 659 nm and the blue LED with peak wavelengths of 450 nm can be used as potential light spectra for increasing the yield and anthocyanins accumulation of leafy vegetable.
Although bacterial outbreaks from ready-to-eat foods have increased, little information is available on microbial quality of sprouts in markets. Fifty sprouts and 30 salads were collected from wholesale markets. Total aerobic count (TAC), coliform, Escherichia coli, and some pathogens were detected. TAC for sprouts was 7.95 log CFU/g and 6.70 for salads, indicating that sprouts were more contaminated by 1 log CFU/g than that of salads. The numbers of coliform were 6.69 log CFU/g for sprouts and 5.42 for salads. E. coli was detected in 16 of 50 sprout samples at 2.38 log CFU/g and eight of 30 salads at 2.21 log CFU/g. Bacillus cereus was detected in 29 of 50 sprout samples and 16 of 30 salads, and the counts were mostly <3 log CFU/g. Salmonella, Staphylococcus aureus, Listeria monocytogenes, Campylobacter jejuni, and Clostridium perfringens were not detected. Therefore, although pathogens may not be a high risk for these foods, the high TAC and E. coli contamination require improved production and distribution methods, particularly for sprouts.
This study was performed to investigate the role of phytohormones in the bulbing of garlic in order to assess the yield and quality. The effect on endogenous plant hormones such as gibberellin (GA) content was also examined during growth stage i.e. clove differentiation to bulbing in garlic. More than 18 gibberellins in garlic were identified with extensive gas chromatograph-mass spectrometry-selected ion monitoring (GC-MS-SIM) quantitative analysis. The results showed that GAs were biosynthesized by both non C-13 hydroxylation pathway (NCH) and early C-13 hydroxylation pathway (ECH) in garlic plant. It was also revealed that NCH pathway leading to synthesis of bioactive $GA_4$ was the more prominent GA biosynthesis pathway than ECH pathway in which bioactive $GA_1$ was synthesized. Total GAs level was gradually increased from clove differentiation to bulbing and later decreased, which portrays the active role of GA in differentiation. The biosynthesis ratio of bioactive $GA_4$ and $GA_1$ concentration was similar to that of total GAs content, which was closely related with bulb development in garlic.
This study investigated the classification of olive oils that are mainly distributed in Korea via imports. The fatty acid contents, degree of color, pigments, anti-oxidants, and sterol contents are analyzed on the different types of olive oil as follows: 10 kinds of extra virgin olive oil, 5 kinds of pure olive oil, and 5 kinds of refined olive-pomace oil. As a result of fatty acid analysis, the majority of oleic acid ($C_{18:1}$) and palmitic acid ($C_{16:0}$), and minority of linoleic acid ($C_{18:2}$) and stearic acid ($C_{18:0}$) were detected without any significant differences between the grades of olive oils. The UV spectrum is related to the ${\Delta}K$, and it is a part of the analysis factor for the purity and degree of degradation of the oil. Extra virgin olive oil had ${\Delta}K$ of almost 0, pure olive oil had 0.07~0.12, and refined olive-pomace oil had 0.1~0.13. These differed from extra virgin oil, and the pure or pomace oil ${\Delta}K$ had a confirmed distinct difference. The color degrees of chlorophyll with a low $L^*$ value and $(-)a^*$ (green) and carotenoid with $(+)b^*$ (yellow) were confirmed to have correlation between extra virgin and other olive oils. To compare chlorophyll and carotenoid as natural pigment in olive oils, 417 nm and the ratio of the absorbance at 480 nm (417/480) was calculated at 1.62 of extra virgin, 1.85 of pure olive oil, and 3.32 of refined olive-pomace oil. Therefore, it will be possible to distinguish when the extra virgin or pure olive oil are mixed with olive-pomace oil. The total amount of tocopherol, an anti-oxidant, were 19.06 in extra virgin, 10.91 in pure olive oil, and 27.88 in refined olive-pomace oil. The high content of tocopherol in pomace oil caused recovery of solvent extraction from olive pulp. Thus, extra virgin oil and pure olive oil were distinguished by olive-pomace oil. Polyphenol compounds in extra virgin olive oil measured high only in ferulic acid with 0.543 mg/kg, caffeic acid with 0.393 mg/kg, and other vanillic acid, vanillin, and p-coumaric acid had similar amount of 0.3 mg/kg. All grade of olive oils had the highest ${\beta}$-sitosterol content. Af (Authenticity factor) value were estimated with campesterol and stigmasterol content ratio (%). Af value was 19.2 in extra virgin olive oil, 17.1 in pure olive oil, 16.9 in refined olive-pomace oil, which were distinctive from sunflower oil with 3.7, corn oil with 2.4, and soybean oil with 2.0. It can provide important indicator of olive oil adulteration with other cheap vegetable oils. The results of this study can be used as a database for the classification of olive oil grade and distinguishing between the different types of oils.

This study was carried out to investigate the physicochemical and functional properties of Yacon (Polymnia Sonchifolia) powder. The proximate composition of Yacon powder as a dry matter basis was 3.53% moisture content, 1.13% crude protein, 0.40% crude fat, 0.79% crude ash, 1.63% dietary fiber and 92.52% carbohydrate. The major free sugars were identified as fructose and glucose. Analysing total amino acids, 18 kinds of components were isolated from Yacon powder. The essential amino acid contained in Yacon powder accounted for 28.40% of total amino acid, while the non-essential amino acid accounted for 73.61%. Analysing total fatty acids, only 2 kinds - palmitic acid and lauric acid - were detected. Oxalic acid was the major organic acid. An experiment to make mixed juices carrying the freshness and other specific characteristics of vegetables and fruits which are useful for the prevention and treatment of various diseases was attempted on the emphases of pretreatment methods, combination of fruits and vegetables, and elimination of microorganisms. Blanch in boiling water prior to extraction for green vegetables, addition of ascorbic acid during extraction for tomatoes and apples, or addition of ascorbic acid after blanch in 3% acetic acid for carrots was effective to keep colors and suspended solids in liquid extract. On the basis of sensory evaluation the extracts from tomatoes, apples. carrots. mallows, watercreses+pine needles, Angelica keiskei Koiz, jujubes and lemons were selected and mixed at the ratio of 3 : 3 : 3 : 1/2 : 1/2 : 1/2 : 1/2 : 1/5. The mixed extracts were pasteurized for 15sec at $96^{\circ}C$ or filtered through a ultramembrane filter. While the centrifuge precipitation and retentates on the membrane filter were autoclaved and combined with ultrafiltrates. The mixed juices showed $pH\;4.07{\sim}4.10$ titratable acidity $66.35{\sim}84.08$, soluble solid $7{\sim}9^0Brix$, reducing sugar $5.42{\sim}6.97%$, glucose $1.96{\sim}2.30%$, fructose $3.46{\sim}4.14%$ and high content of K, Mg and Ca. Ultrafiltration showed better quality scores in color, juice. Peroxidase and microorganisms were inactivated by thermal treatment and ultrafiltration.
We examined the chemical properties of leek and dropwort and prepared the noodles with the dried powder of them, to develope functional processing floods which contain biological active compounds. The groups were divided by the drying methods as follows: hot air drying at 50$\^{C}$ (A), hot air drying after blanching for 30 sec (B), hot air drying after steaming for 2 min (C) and freeze drying (D). We had analyzed the content of vitamin C, total chlorophyll, and phenolic compounds and measured the hunter color values of dried powders individually. The contents of evaluated compounds were higher in A and D than in B and C groups and also the electron donating activity of A and D was stronger than B and C. The cooking properties of noodles prepared with leek and dropwort powder were examined. After cooking, the weight and volume of noodles prepared with powder were lower than those of control The turbidity of noodle soup were increased as the adding ratio was increased. The cutting strength of cooked leek noodles with A and B powder was similar to that of control, in case of dropwort, cooked noodles with D showed similar to that of control. The cutting strength of cooked noodles were decreased as the adding ratio were increased. The electron donating activity of noodles with vegetable powders showed high than that of control The sensory evaluation showed that significant difference between noodles with 2.5 ?/e addition groups and control was not recognized but was recognized between noodles with 5% addition groups and the control.
