매실 엑기스 첨가 드레싱을 이용한 채소 샐러드의 미생물적 품질평가 (Evaluation of Microbial Quality of the Vegetable Salad Used Dressing Added with Prunus mume Extracts)

  • This study aimed to determine microbiological quality on vegetable salad used dressing added with Prunus mume extracts. For this study, Dressing were blended with Prunus mume extracts to different concentrations of 0, 10, and 20%. Microbiological effects of vegetable salad used dressing added with Prunus mume extracts were assessed during production process by measuring process time, temperature, pH and Aw and determining total plate counts and coliforms. Effects of vegetable salad used dressing added with Prunus mume extracts on total plate counts and coliforms were observed during holding at 3, $25{\pm}1^{\circ}C$ for 12 hours. Dressing added with Prunus mume extracts improved the microbiological quality and showed antibacterial properties when they are added to vegetable salad.

  • The purposes of this study were to estimate the microbial and physicochemical quality of vegetable dishes without heat treatment such as sengchae, a traditional Korean vegetable dish, and to suggest a safer method of preparation. Platycodon sengchae and vegetable salad were monitored from the ingredient to final product before serving while storing at different temperature (4, 10$^{\circ}C$) and period (1, 2, 4, 7 days) at foodservice establishments. The results showed that the storage temperature pH, Aw, moisture content, and microbial loads are the important factors affecting the quality of vegetable dishes without heat treatment, and a thorough hygienic management from the purchase to the preparation of the dishes is needed to secure the quality of prepared foods in the foodservice establishments.

Quality Evaluation of Low-fat Pork Loaf Containing Silkworm Powder and Vegetable Worm (Paecilomyces japonica) During Cold Storage

  • This study was performed to determine physicochemical and sensory quality of low-fat pork loaf containing silkworm powder and vegetable worm (Paecilomyces japonica). Total 2% of fat replacer (soy protein isolate:maltodextrin:$\kappa$-carrageenan:water=1:0.5:0.5:10, w/v) was added. The loaf was separated into CTL (control), T1 (0.2% silkworm powder), T2 (0.2% vegetable worm), T3 (0.4% silkworm powder), T4 (0.4% vegetable worm), T5 (0.1% silkworm powder+0.1% vegetable worm), and T6 (0.2% silkworm powder+0.2% vegetable worm). Pork loaf of T3 showed the highest pH value and cooking loss of pork loaves containing silkworm and vegetable worm was higher than control at day 5. 2-Thiobarbituric acid reactive substances of T2 and T5 showed significantly lower values than control and those additives may reduce lipid oxidation of meat. Overall acceptability was not adversely influenced by silkworm powder and vegetable worm at day 0 and 5. These results indicated that those silkworm powder and vegetable worm could be utilized for pork product industry.

Effect of Replacing Pork Fat with Vegetable Oils on Quality Properties of Emulsion-type Pork Sausages

  • This study was conducted to evaluate the quality properties of emulsion-type pork sausages when pork fat is replaced with vegetable oil mixtures during processing. Pork sausages were processed under six treatment conditions: T1 (20% pork fat), T2 (10% pork fat + 2% grape seed oil + 4% olive oil + 4% canola oil), T3 (4% grape seed oil + 16% canola oil), T4 (4% grape seed oil + 4% olive oil + 12% canola oil), T5 (4% grape seed oil + 8% olive oil + 8% canola oil), and T6 (4% grape seed oil + 12% olive oil + 4% canola oil). Proximate analysis showed significant (p<0.05) differences in the moisture, protein, and fat content among the emulsion-type pork sausages. Furthermore, replacement with vegetable oil mixtures significantly decreased the ash content (p<0.05), increased water-holding capacity in emulsion-type pork sausages. Also, cholesterol content in T6 was significantly lower than T2 (p<0.05). In the texture profile analysis, hardness and chewiness of emulsion-type pork sausages were significantly (p<0.05) decreased by vegetable oil mixtures replacement. On the contrary, cohesiveness and springiness in the T4 group were similar to those of group T1. The unsaturated fatty acid content in emulsion-type pork sausages was increased by vegetable oil mixtures replacement. Replacement of pork fat with mixed vegetable oils had no negative effects on the quality properties of emulsion-type pork sausages, and due to its reduced saturated fatty acid composition, the product had the quality characteristics of the healthy meat products desired by consumers.

  • In past, transformer connection study was concentrated on efficiency improvement and life time broadening. But environmental side began to become important recently. In existing, quick transaction of mineral oil used to insulation oil of transformer is possibility to be difficult and causes environmental pollution in case of was outpoured and there is worry of fire occurrence. Accordingly, nonflammable performance becomes many interest in excellent vegetable oil because ignition point is high than mineral oil and environment friendly material. But, vegetable oil is cooling of transformer and insulation problem of insulating paper for cause of insulation oil special quality. Therefore, in this paper, special quality of vegetable oil that there are being a lot of mineral oil and the latest interest examined about problem and consideration item to be solved to analyzed comparison and applies vegetable oil to transformer for electric power.

무 싹채소 탄산 가스 처리에 따른 생육과 수확후 품질 특성 비교 (Comparison of Growth and Freshness Characteristics as Affected by CO2 Treatment during Cultivation on Radish Sprout Vegetable)

  • 어린 싹을 길러 이용하는 채소에 대한 관심이 커지고 있어, 무 싹채소의 생육 증진과 유통 중 나타나는 영향을 검토하고자 CO2처리 효과를 검토하였다. 본 실험에서는 재배 중 CO2 처리를 가스나 탄산수 형태로 하여, 생육뿐만 아니라 수확후 모의유통 중 포장 내의 생체중량 감소, 선도와 hue angle 등 수확후 변화 정도를 조사하였다. 재배 후 수확 시 생육에서 처리 여부에 따라서는 CO2 처리가 무처리보다 경장이 약간 길어지는 효과가 있었으며, 엽록소형광이나 SOD 값에서 무처리와 CO2 처리가 다소 다른 경향을 보였다. 그러나 CO2 처리 방법 간의 차이를 언급하기는 어려워 탄산가스 대신 탄산수 이용의 가능성을 보였다. 수확 후 포장 내의 CO2 처리로 인해 무 싹채소의 O2 소모가 크고 CO2 축적 정도가 다소 높아졌으며, 모의유통 중에 수확전 CO2 처리가 hue angle 값을 비롯하여 SPAD, 외관 등에서 낮은 수치를 보여주었다. 그러나 CO2 처리 방법 간에는 큰 차이를 보이지 않은 것으로 나타났다. 무 싹채소의 재배 중 CO2 처리에 의한 처리가 경경 등의 생육량을 증가시키나, 모의유통 시 수확후 선도 유지의 효과가 크지 않아, 재배 중 다른 방법을 통한 품질을 개선할 수 있도록 연구가 더 필요한 것으로 생각된다.

중국 채소산업의 경쟁력 분석 (Analysis of Chinese Vegetable Industry's International Competitiveness)

  • This study is to provide a comprehensive overview of the changing vegetable sector of Chinese agriculture and to analyse the competitiveness of Chinese vegetable production. China now produces more than 60% of the world's vegetable supply and that 150 million people are engaged in vegetable production, processing and marketing since the reform of vegetable industry structure started in the late 1980s. As a labour abundant industry, China also features more comparative advantages in the vegetable trade. Although China's vegetable exports still accounts for only 1% of total production, the 5 million tons of export in 2003 makes China one of the largest vegetable players in the international markets. When estimating competitiveness of China's vegetable industry, China's producers' prices for vegetables are founded to be only from 10%~40% of what they are in Korea, while most of China's vegetables have also strong competitiveness in quality. As China joined the WTO in 2001 and expects to increase market share in vegetable trade, the development strategy for Korea's vegetable industry are suggested as follows; 1) focusing on the technology for the growth of vegetable productivity, 2) developing the higher value added vegetable industry through processing, 3) expanding the exported area and leading vegetable varieties.

Lubricating performance of vegetable oils as environmentally friendly fluids

  • Although vegetable oils provide good lubricity, they still need optimization by certain additive technology for practical applications. ZDTP improve antiwear properties of vegetable oils. However the additive performance depends on quality of the base Oil. Antioxidants were applied to prevent the auto-oxidation of vegetable oils. Good synergistic effect of anti-wear and antioxidant additives was confirmed.

Effect of Egg Albumen, Vegetable Oil, Corn Bran, and Cooking Methods on Quality Characteristics of Chicken Nuggets Using Response Surface Methodology

  • Response surface methodology was used to study the effect of egg albumen (5-15 g), vegetable oil (5-15 g), and corn bran (5-15 g) on sensory and textural (firmness and toughness) quality of chicken nuggets cooked by the oven, steam, and microwave methods. The egg albumen and vegetable oil had a positive linear effect but corn bran had a negative linear effect at p<0.01 on sensory overall acceptability scores of nuggets. Firmness and toughness scores were increased significantly (p<0.01) with the increase in corn bran level in the formulation. The optimum level of egg albumen, vegetable oil, and corn bran were obtained and validated. Cooking methods also affected the sensory and textural quality of nuggets. Steam cooked nuggets had higher values of sensory scores than oven and microwave cooked nuggets. Oven cooked nuggets showed higher values of firmness and toughness than steam and microwave cooked nuggets. Results of this study suggest that emulsion based meat products can be enriched with dietary fiber source like corn bran without compromising the sensory and textural quality of the products.
