길거리 음식에 대한 중${\cdot}$${\cdot}$대학생의 섭취 및 위생상태 인식과 미생물 분석 (A Study on Students' Intake of Street Foods and Their Perception toward Hygiene Status of Street Foods and Microbiological Analysis)

  • We investigated the intake trends of street foods for middle school, high school and colleges students through the survey study. In addition, the factors affecting the students' consumption of street foods and their perception toward hygiene status of street vendor were studied. The levels of total aerobic bacteria, coliform groups and enterobacteriaceae in Kimbab, eomuk, and eomuk-kukmul were counted using 3M petrifilms. More than ninety seven % of the respondents had experienced street foods. All the respondents ate street foods 1 to 5 times a month. Forty percent of the respondent stated that 'good taste' and 'time-saving convenience' were their reason for eating the street foods. Their favorite foods were ddokbokgi and various fried foods. All the students responded that frying oil, drinking water, and soy sauce as well as the street vendors' attire and their cooking tools in street vendor were unsanitary. Forty percent of the respondents ranked frying oil as the most unsanitary substance. Eighty percent of the respondents responded that an enforcement of hygiene should be imposed on the street foods vendor. There were significant differences (p<0.001) among the student's age in the opinion related to the reasons of eating street foods, hygiene enforcement, existence of street foods and interest of hygiene status of street foods. High correlation (p<0.05) between the frequency of street foods and snack intakes was shown, regardless of student's age. The result shows that those who eat snacks more than once a day tend to eat street foods more frequently. Aerobic plate counts in Kimbab in 5 different vendors exceeded 10$^5$/g and contamination levels of enterobacteriaceae or coliform in Kimbab exceeded more than 10$^3$/g, which did not satisfy the microbiological standards. In conclusion, although the respondents thought that the sanitation of street foods was poor, most of them want the street food vendor to be maintained with better hygiene condition. This indicated that the regulation for safe street foods should be enforced and educational information about the preparation and serving for safe street foods should be provided to street food vendor.

초등학생의 식품안전과 관련된 지식, 행동, 교육방법의 요구도에 관한 연구 (Elementary School Students' Knowledge, Behavior and Request for Education Method Associated with Food Safety)

  • We investigated elementary school students' knowledge, behavior, experience and preference of education method related to food safety in order to provide basic information for food safety educational program. A survey study was conducted with 569, fourth and sixth grade students, from two schools in Seoul and Ulsan. Students were asked thirty-two questions regarding food safety knowledge, behavior and experiences as well as their attitude to food safety class and preference for teaching method. The data was analyzed for the frequency analysis, t-test, chi-square test, one-way ANOVA and Pearson correlation using the SPSS/Windows. Results indicated that 91.9 percent of the respondents did not know what unsanitary food is. 67 percent of the respondents did not know the proper method of hand washing. Although the students' level of knowledge and behavior associated with food safety was low, there was meaningful correlation(r =.184, p<.01) between knowledge and behavior. Surprisingly, students in higher grade did not demonstrate an exceeding food safety knowledge and behavior. More than 50 percent of the subjects did not have food safety education either at home or school. 60 percent of the respondents interested in food safety and the majority recognized that a food safety education is needed. Students want to learn about unsanitary food(34.1%), foodborne illness(29.7%), food selection and storage method(21.3%), and personal hygiene(11.2%) through game, role play, and practice in real situation. These results suggest that development of food safety education program is needed through the elementary school year and the education program must include fun activities in which students can participate.

한식 세계화를 위한 내국인과 국내 체류 외국인의 한국음식 선호도와 한식에 대한 인식 (Study on Preferences and Perception of Koreans and Non-Koreans Residing in Korea Regarding Globalization of Korean Foods)

  • The purpose of this study was to assess comsumer preferences and perception of Korean foods in Koreans and non-Koreans residing in Korea. Exactly 79 customers (28 Koreans, 51 non-Koreans) were surveyed with questionnaires in English and Korean. Data were analyzed using the SPSS statistical package (21.0) and ${\chi}^2$-test. Subjects were of various nationalities, including China (37.3%), Philippines (19.6%), Japan (17.7%), USA (11.8%), Uzbekistan (3.9%), Nepal (2.0%) and Nigeria (2.0%). The representative food was Kimchi and favorite Korean foods were Kimchi, Bulgogi, Bibimbap, Galbijjim etc. Koreans reported that the main advantages of Korean food were its 'home-made style', but non-Koreans reported 'health functionality'. In terms of disadvantages, non-Koreans consumers ranked 'unsanitary eating style without individual plates' as the biggest problem while Koreans ranked 'table setting at a time'. Factors 'complicated cooking method', 'spicy taste' and 'salty taste' were also reported disadvantages. Survey participants were asked what was the most important for the globalization of Korean food. Most non-Korean participants listed 'health functionality' and 'traditionalism' (p<0.05).

시판 전통발효식품에 대한 대전지역 소비자들의 반응 및 구입현황 (Consumers' Response and Purchasing of Traditional Fermented Foods Marketed in Taejon)

  • A survey was conducted to investigate housewives' perception and consumption of Korean fermented foods marketed in Taejon. Most subjects know how to prepare Kimchi(seasoned and fermented vegetables), 65-67% can make Kochujang(fermented red pepper soybean paste), Toenjang(Korean style soysauce) and Jang-atchies(pickled basic side dishes), 56% can make Kuk-ganjang(Korean style coysauce), 45% can make Chonggukjang (fermented soybean) and 34% can make Jot-kals(salt-fermented fish products). With decreasing age(p<0.0001), not many other subjects could make other fermented foods besides Kimchi. The percentages of subjects buying fermented foods were 71.5% for Chin-ganjang(Japanese style soysauce), 51.7% Jot-kals, 27.1%Kochujang, 25.7% Chonggukjang, 20.1% Jang-atchies, 10.4% Toenjang, 5.9% Kuk-ganjang, and 3.8% Kimchi. the uounger in age, the higher the tendency to buy marketed Kimchies(p<0.05) and Kochujang(p<0.01). The resons for purchasing fermented foods were convenience (52.9%), lack of preparation knowledge(17.5%), lack of time for preparation(12.5%), and lack of space for food storage(8.2%). Subjects indicated that their reasons for mot buying were as follows : use of additives or unreliability with regard to manufacturing dates(45%), bad taste(21%), unsanitary treatment(16%) and to keep their indigenous taste(14%). They cosidered expiration dates, taste, crpteria and safety as the important standard in selecting marketed foods. Younger subjects insisted on the improvement of sanitary condition and partial change of taste to increase the consumption of fermented foods. However, older subjects thought it best to keep the taste original for more utilization of fermented foods.

경북지역 고등학생의 식품 안전성에 대한 태도 및 교육요구도 분석 (Analysis on Attitude and Education Need for Food Safety of High School Students in Gyeongbuk Province)

  • This study examined the attitude and education need for food safety of high school students. Data were collected from 297 high school students in Gyeongbuk province through a self-administered questionnaire on December, 2008. Frequency, t tests, one-way analysis of variance, Duncan's multiple range tests, and chi-square tests were conducted using SPSS V. 14.0. Many respondents answered that the foods produced and distributed in Korea were not safe enough. Over a third of the respondents replied that the produced and distributed foods were not safe because of unsanitary food processing. They pointed out food additives threatened food safety the most, which was followed by heavy metal contamination, and endocrine disruptors. Most respondents mentioned difficulties in acquiring information concerning food safety, and obtained information from the media, such as TV and radio. The respondents required a high level of education regarding food safety, and preferred movie clips and broadcasting media the most. Finally, they pointed out food-related government organizations to be the most efficient educational institution for food safety.

자동판매기에서 판매되는 음식의 이용실태 및 소비자 인식도에 관한 연구 (I) (A study on the actual status in use and customer's perception of the food and beverage from vending machines)

  • Vending machines play an important role of giving convenience and simplicity in modem life style. So they became an indispensible element in life of modern people. This study was peformed to investigate customer's actual status in use as well as the degree of satisfaction and requirement of food and beverage vending machines. The results of this study can be summarized as follows. 1. About the advantage of using the vending machines, respondents answered 'convenience' for 50.2% and 'closeness' for 33.6% of all the answers. About the dissatisfaction for vending machine, three factors of 'inappropriate taste, temperature. quantity' and 'unsanitary pakage material and food' were the main causes. 2. About the credit of food quality,48.6% of respondents answered' some what doubtful'.58.1% of respondents pointed out that they couldn't confide in freshness and shelf-life' 3. 48.2% of respondents agreed that vending machines would be needed more in the future. Respondents wanted lots of food to be served from vending machines. The foods which respondents wanted to be served from vending machines were noodle(30.8%), rice(19%), pastry(18.2%), bread(17.45) gruel(7.3%) and snack(7.3%).

외식산업에서의 프랜차이즈 시스템 가맹점에 대한 소비자 의식 조사 (A Survey on the Consciousness of Consumers for Franchise System Restaurants in Food Service Industry)

  • In this paper, we surveyed the actual utilization condition of chain stores of franchise systems and the customers' consciousness on chain shops and non-chain restaurants. The survey was conducted on 459 people either living or working in Pusan area and aged more than 4th grade in elementary school without sex distinction. The data analyses were made by way of frequency, percentage, Spearman rank correlation and Chi-square using dBastat 1.0 package of PC. The results of the survey are as follows. The survey indicates that respondents have the most experience of visiting chicken, hamburger, and pizza chain shops. Although the survey on the degree of preference between chain shops and non-chain restaurants indicates that men prefer non-chain restaurants and women prefer chain shops, the results are not so significant to conclude that there is a preference regardless of sex (N. S.): By ages, students and young group prefer chain shops and the aged group prefer non-chain restaurants (p< 0.05). The survey indicates that chain shops are proffered because of sanitary, quality, taste of foods and are not proffered because of simple menu and expensiveness. The survey indicates that non-chain restaurants are preferred because of distinctive taste of each restaurant and comfotableness, and are not proffered because of unsanitary and unkindness.

A Study on Microbial Contamination of Foods Exposed to Multiple Environments

  • In this study, general bacterial counts and coliform counts, which are hygienic indicator microorganisms, were tested for candy, chocolate, and jelly which are easily available and enjoyed around. After dropping each sample on the desk, indoors, and outdoors, it is immediately collected, or washed and collected to confirm the myth of the 3-second rule. Immediately after removing the wrapping paper, each sample was dropped on the desk, indoors, and outdoors, and after 3 seconds from the moment of contact with the surface, and then collected in a sample bag using sterilized sanitary gloves. After the same operation, each sample was rinsed for 5 seconds using sterilized sanitary gloves and sterilized distilled water, and then collected in a sample bag. The number of bacteria detected in non-washing candies was 41 CFU/g at outdoor and the number of bacteria detected in non-washing chocolate was 76 CFU/g at outdoor. The number of bacteria detected in non-washing jellies was 79 CFU/g at outdoor. Coliform group was not detected in all samples. This showed good results at the level of m = 10,000 or less, which is an allowable value suggested in the Food Code. Also, effect of washing on contaminated food was confirmed. This result is remarkably low compared with the microorganism specimens shown in Food Code, and it is confirmed that contamination occurs but not high value. Therefore, the myth of the 3-second rule is true compared to the figures based on Food Code. However, it showed the characteristics of bacteria that could survive and cross-contaminate on dry food surfaces and emphasized the importance of hygiene through food contact to unsanitary surfaces to minimize the risk of food poisoning.

대구지역 초등학교 4, 5학년 대상 어린이 식생활 안전관리 교육 프로그램 개발 및 효과 평가 (Development of Children Food Safety Education Program for 4th and 5th Grade Elementary School Students in Daegu and Evaluation of Its Effects)

  • 대구광역시 소재 4개의 교육청별 관할 46개 초등학교 4 5학년 학생 8,370명을 대상으로 어린이 식생활 안전관리 교육을 실시한 결과를 요약하면 다음과 같다. 4학년 3,932명, 5학년 4,438명으로 교육청별로는 A 교육청 3,268명, B 교육청 2,890명, C 교육청 1,672명, D 교육청 540명을 대상으로 실시하였으며, 교육 장소는 방송실에서 교육한 학교가 31개교였고 교육 받은 학생 수는 6,925명(82.7%)으로 가장 많았으며, 교육 장소 간에 교육 받은 학생 수는 유의한 차이가 있었으며(p<0.001), 교육시간도 1교시 전에 교육 받은 학생수가 2,586명(30.9%)으로 가장 많았으며, 교육 시간에 따른 교육 받은 학생 수는 유의한 차이가 있었다(p<0.001). 어린이들의 간식 섭취이유는 고열량 저영양 식품(p<0.01), 부정 불량식품(p<0.001), 어린이 정서저해식품(p<0.001) 모두 '맛있어서'가 가장 높았으며, 항목 간 유의한 차이가 있었다. 교육내용 인지도에 대한 교육 전후 비교는 어린이 식생활 안전관리 특별법과 관련된 6개의 항목으로 어린이 식생활 안전관리 특별법, 어린이 식품안전보호구역(Green Food Zone), 어린이 기호식품 품질인증표시, 고열량 저영양 식품, 부정 불량식품, 어린이 정서저해식품 등을 '알고 있느냐'의 질문으로 6개 항목 모두 교육 전에 비하여 교육 후 유의한 수준으로 인지도가 증가하였다(p<0.001). 고열량 저영양 식품, 부정 불량식품, 정서저해식품의 섭취이유에 대한 항목 중 '맛있어서'는 고열량 저영양 식품이 81.6%로 가장 높게 대답하였으며, '호기심에서'는 어린이 정서저해식품이 28.0%로 가장 높게 응답하였고, '가격이 저렴해서'는 부정 불량식품이 27.1%로 가장 많이 답하였다. '어린이 식생활 안전관리 교육의 필요성'은 교육 전 '있다' 92.4%, 교육 후 93.6%로 유의하게 증가하였으며(p<0.05), 교육 전후 손씻기에 대한 비교는 '씻는다'가 교육 전 60.7%에서 교육 후 62.9%로 다소 증가하였으나 유의성은 없었다. 현재 초등학교에 영양교사가 근무하고 있기는 하나, 학교 사정에 따라 영양교육이 체계적으로 이루어지고 있지 않으며, 영양교육을 실시하는 일부 학교에서는 정규 시간이 아닌 재량활동시간, 수업 전시간 등을 활용하여 교육이 이루어지고 있는 실정이어서 이번 어린이 식생활 안전관리 교육이 비록 1회이지만 가능한 많은 어린이들에게 교육의 기회를 제공하고자 대구지역의 일부 학교가 아닌 4개 교육청 관할 학교 4, 5학년 남녀 학생을 고른 분포로 교육을 실시하였다. 이번 연구결과로 볼 때 1회 교육으로 인지도는 향상되었으나, 실천율 변화는 미흡하였으므로 향후 관련 연구에서는 반복적인 교육프로그램을 개발하여 어린이들이 바람직한 식생활을 실천할 수 있도록 해야 할 것으로 사료된다.

미래 집단급식 식중독 발생 양상 예측 (Outbreak Pattern Forecasting of Food-borne Disease in Group Food Services in Korea)

  • 본 연구는 집단급식 안전성 확보 및 식중독 방지를 위해 단체급식 안전성에 관하여 전문가를 대상으로 국내 집단급식 식중독 원인을 조사하고, 미래 집단급식 식중독 발생을 예측하였다. 델파이 설문 결과 국내 집단급식 식중독 원인은 '식재료 위생관리 미흡', '손세척', '구역구분', '유통업체 보관' 등이 가장 크게 영향을 주는 것으로 나타났다. 미래 집단급식 식중독 발생 예측 조사 결과 Vibrio parahaemolyticus, Escherichia coli(EPEC), non-typhoid Salmonella serotypes, Staphylococcus aureus, Escherichia coli(ETEC), Norovirus, hepatitis A virus가 지속적으로 식중독을 발생시킬 것으로 예측하였으며, 집단급식에서 식중독 유발 가능성이 높은 식재료로는 영유아(1-6세), 초등학생(7-12세), 중 고등학생(13-19세)의 식재료 섭취량과 식중독 유발 가능성을 고려해 볼 때 '과일류', '우유', '생선류', '돼지고기', '계란', '쇠고기'였으며, 식단 메뉴로는 '비빔밥', '콩나물무침', '시금치나물', '오이생채', '잡채', '돼지불고기'가 위해도가 높을 것으로 예측되었다. 집단급식소에서 사용빈도가 높을 것으로 예측된 가공식품은 '냉동, 냉장보관식품' 이었으며, 살균방법은 '가열처리', '화학적 살균소독제'로 나타났다. 저장법은 '냉장($10^{\circ}C$ 이하)', '냉동($-20^{\circ}C$ 이하)'법이, 배식형태는 '집단급식소에서 직접 배식' 형태가 집단급식소에서 향후 사용빈도가 높을 것으로 예측되었다. 본 설문조사 결과는 집단급식 전 과정의 체계적인 위생관리시스템의 도입과 식중독예방 식단 구성을 위한 기초자료로 활용될 것으로 사료된다.
