육계에 대한 복합 유기산제의 첨가급여 효과에 관한 연구 (A Study on the Efficacy of Dietary Supplementation of Organic Acid Mixture in Broiler Chicks)

  • 본 연구에서는 사료 내 복합 유기산제의 첨가급여가 육계 생산성, 맹장 미생물 균총, 혈액 특성 및 면역 활성에 미치는 영향을 조사하고 이를 통해 유기산의 성장촉진용 항생제 대체 가능성을 구명하고자 수행하였다. 1일령 육계 수평아리(Ross$\times$Ross 308) 480수를 공시하여 4처리, 4반복, 반복당 30수씩 배치하여 5주간 사양시험을 실시하였다. 시험구는 항생제 무첨가구, 항생제 첨가구(virginiamycin 10 ppm+salinomycin 60 ppm)를 대조구로 하였으며, 시험사료에 유기산을 0.3% 및 0.5% 첨가하여 유기산 처리구를 두었다. 5주 종료체중, 증체량에 있어서 유기산 0.5% 처리구가 무항생제 처리구에 비해 유의하게 증가하였으며(P<0.05), 유기산 첨가 급여시 무항생제 처리구에 비해 사료 요구율이 유의하게 개선되었다(P<0.05). 도체율 및 조직의 상대적 중량에서는 처리구간 차이가 관찰되지 않았다. 소장 중량 및 길이는 항생제 첨가구가 다른 처리구에 비해 유의하게 감소하였으나(P<0.05), 유기산 처리구와 항생제 무첨가구간에는 차이가 없었다. 맹장 내 미생물 균총에 있어서 대조구인 항생제 첨가구와 유기산 처리구에서 맹장내 Coliform bacteria 및 Salmonella가 유의하게 감소하였으며 유산균에는 영향을 미치지 않았다. 혈액 내 총콜레스테롤, 중성지방, BUN, AST 및 ALT에 있어서는 통계적 유의성이 인정되지 않았다. Total protein 및 globulin 수치에 있어서는 항생제 첨가구 및 유기산 처리구가 항생제 무첨가구에 비해 유의하게 감소하였으며(P<0.05), albumin 수치에서는 차이가 없었다. 이로인해 항생제 첨가구 및 유기산 처리구의 혈청 내 albumin : globulin 비율이 항생제 무첨가구에 비해 유의하게 증가하는 결과를 보였다(P<0.05). WBC, heterophil, lymphocyte 및 스트레스 지표인 heterophil:lymphocyte 비율에 있어서 처리구간 차이가 관찰되지 않았으며, 비장 조직내 IL-2 및 IL-6 mRNA의 발현양상에 있어서도 유기산 첨가급여에 따른 변화는 관찰되지 않았다. 결론적으로 복합 유기산제의 육계 사료 내 첨가급여는 육계 생산성을 향상시키고, 유해균의 성장 및 증식을 억제하여 장내 미생물 균총의 안정화에 긍정적인 영향을 미치는 한편, 조직 발달 및 혈액 성상에 부정적인 영향을 미치지 않았다.

염화칼슘을 이용한 시금치의 연화방지 연구 (Study on the Prevention of Spinach Softening Using Calcium Chloride)

  • The purpose of this study was to prevent excessive softening of seasoned spinach by heating and freezing through the pre-heating treatment in calcium chloride solution. The pre-heating temperature was set at 60℃, which supports the highest activity of pectinesterase around 60℃. Pre-heating spinach in calcium solution does not affect the chromaticity characteristics of spinach leaves and significantly improves its texture compared to conventional blanching only and pre-heating in water. The improvement of the firmness is related to the formation of strongly cross-linkages between carboxyl groups and Ca2+ by the action of the pectinesterase in spinach. For reheated spinach, the firmness of calcium chloride treated stems were 37.80~44.44 kg, and the control was 28.73 kg. The firmness of calcium chloride treated leaves was 19.73~40.79 kg, and the control was 9.63 kg. Additionally, the total aerobic bacteria in the fresh samples were 3.25~3.99 log CFU/g and 1.97~2.72 log CFU/g in the reheated samples. And the total coliform was not detected in the reheated samples. Considering the color, texture, microbial characteristics and taste quality, the optimum pre-treatment conditions to prevent excessive softening of spinach were 3% calcium chloride solution and 15minutes of treatment.

대청호 유역의 수질평가를 위한 종합수질지수의 적용 (Application of Korean Water Quality Index for the Assessment of River Water Quality in the Basin of Daecheong Lake)

  • The Korean Water Quality Index (K-WQI) was applied to the rivers located in the watershed of Daecheong Lake to assess the status of river water quality, and propose potential target constituents for better water quality management in the watershed. The estimated K-WQI value for each river was varied from 70 to 90, and Youngdongcheon showed the worst score while Mujunamdeachen showed the best score. The total nitrogen (TN) and total coliform bacteria were identified as the most significant constituents that degrade the K-WQI values in the rivers. The correlation coefficients (r) were determined between K-WQI and the delivered specific load ($kg/km^2/yr$) of BOD, TN, and TP to justify potential target constituents that have a great influence on the improvement of K-WQI values. The results showed that TN (r=-0.86) and TP (r=-0.85) have a strong negative relationships with K-WQI, but BOD have almost no effect. This implies that BOD, the surrogate parameter for organic pollutants, is no more a feasible water quality variable for the water quality management in the study site.

자동판매기에서 판매되는 율무차와 우동의 저장기간에 따른 품질평가(II) (The Quality Control of Adlay Tea and Wheat Noodles Served from the Vending Machines Based on the Periods of Storage)

  • The purpose of this study was to serve a standard of the good quality control and shelf-life of food and beverage served from the vending machines. So it was performed to examine the temperature (internal & external environmental, food itself), pH, Aw, POV and microbiological quality of Adlay tea and Wheat noodles served from the vending machines based on storage time in the machines. They were assessed to find the critical control point(CCP) during each of the production, delivery, purchasing phases from the vending machines. The result of this study can be summarized as follows: 1. The temperature of foods inside the vending machines was ranged from 4$0^{\circ}C$ to 45$^{\circ}C$. It was in the range of dangerous zone. The average temperature of food showed 71$^{\circ}C$ for Adlay tea and 74$^{\circ}C$ for Wheat noodles. As a result of measuring pH and Aw, they had potential danger. 2. Even though POV was low, it increased as the time passed. 3. As a result of microbial analysis, it showed that the amount of total plate count and coliforms were increased ten times after 1 day respectively. Wheat noodles' coliform and total plate counts exceeded standard value in 1 day. As a result of food poisoning bacteria, it was negative in sample against Vibrio parahaemolyticus, Salmonella, Staphylococcus aureus.

국내산 시판 어리굴(Crassostrea gigas)젓의 미생물학적 평가 (Microbiological Evaluation of Commercial Eorigul-jeot, Salt-fermented Oyster Crassostrea gigas with Seasoning, Produced in Korea)

  • We investigated the quality of 10 commercial eorigul-jeot, salt-fermented oysters with seasoning, by measuring their chemical composition and bacterial concentrations. The Eorigul-jeot had 5.07-6.06 pH (mean, 5.63), of 1.92-4.74% salinity (mean, 3.36%), 7.01-14.70 mg/100 g volatile basic nitrogen (mean, 11.91 mg/100 g), 139.22-267.11 mg/100 g amino acid nitrogen (mean, 212.69 mg/100 g), and 1.02-1.65 g/100 g total acidity (mean, 1.24 g/100 g). The total viable and lactic acid bacterial counts were 5.7×104-8.7×105 and 2.7×103-2.0×105 CFU/g, respectively, and fecal coliform was detected in only one Eorigul-jeot sample. Bacillus cereus and Clostridium perfringens were detected in two samples, and all Eorigul-jeot samples were negative for Staphylococcus aureus and Vibrio parahaemolyticus. These results strongly suggest the need to monitor food-poisoning bacteria in commercial Eorigul-jeot to ensure consumer health.

보육시설과 지역아동센터 칼과 도마의 미생물학적 안전성 평가 (Evaluation of Microbiological Safety of Knives and Cutting Boards in Child Care Centers)

  • The purpose of this study was to evaluate microbiological contamination of knives and cutting boards in child-care centers. Materials used in this study were swabbed of cutting boards and knives (blade, handle of knife, and joint of handle and blade) in 129 child-care centers. Mean values of total aerobic bacteria of swabs of knives and cutting boards were 1.7±0.7 log cfu/100 ㎠ and 1.7±0.9 log cfu/100 ㎠, respectively. Contamination levels of coliform bacteria from knives and cutting boards were 1.5±0.6 log cfu/100 ㎠ and 1.7±0.8 log cfu/100 ㎠, respectively. Comparing microbiological contamination levels of knives and cutting boards according to type and size of child-care centers, there was no significant difference. Bacillus cereus was detected in knife handles and cutting boards. Diarrhea-type toxin gene (entFM) was detected in B. cereus isolates. Antibiotic resistance tests showed that B. cereus was resistant to β-lactam antibiotics. To reduce microbiological contamination levels of knives and cutting boards in child-care centers and prevent food poisoning from bacteria contamination, continuous education by children's food-service management center is needed for sterilization and disinfection of knives and cutting boards.

방사선(放射線)에 의(依)한 양파분말의 살균(殺菌) 및 저장(貯藏) (Sterilization and Storage of Onion Powder by Irradiation)

  • 혼합조미료(混合調味料)의 부원과(副原科)로 사용(使用)하고 있는 양파 분말(粉末)에 감마선(線)을 조사(照射)하고 3 개월간(個月間) 저장(貯藏)하면서 미생물적(微生物的) 검사(檢査)와 이화학적(理化學的) 특성(特性) 및 그 품질(稟質) 변화(變化)를 실험(實驗)하였다. 일반세균(一般細菌)은 7 kGy, 대장균군(大腸菌群)은 5 kGy의 감마선(線) 조사(照射)로 완전살균(完全殺菌)되었고 $30{\pm}/^{\circ}C$에서 3 개월간(個月間) 저장후(貯藏後)에도 미생물(微生物)이 전(全)혀 생육(生育)하지 않았다. 또한 일반세균(一般細菌)이 $D_{10}$값은 1.64kGy로 나타났다. 살균선량(殺菌線量)에서 일반성분(一般成分)은 비조사구(非照射區)와 별차이(別差異)가 없었으며 pyruric acid함량(含量)은 선량(線量)의 증가와 저장기간(貯藏期間)의 경과에 따라 다소 낮은 차이(差異)를 보였다. 분말자체(粉末自體)의 색도변화(色度變化)에 있어서 육안적(肉眼的) 차이(差異)는 없었으나 기계적(機械的) 측정(測定)에서는 근소한 차이(差異)를 나타냈다. 분말식품(粉末食品)의 현행(現行) 살균법(殺菌法)인 ethylere oxide에 의한 훈증법(燻蒸法)은 일본(日本)을 비롯하여 선진(先進) 각국(各國)에서 사용금지(使用禁止)되고 있으므로 대체방법(代替方法)으로서 방사선(放射線) 살균법(殺菌法)이 적당하고 생각된다.

배합사료를 혼합한 옥수수-계분 silage의 품질과 사료가치 (Quality and Feed Value of Ensiled Whole Crop Corn with Cage Layer Excreta and Concentrate)

  • This study was carried out to enhance the nutritional value of whole crop corn silage and the utilization of animal waste as a ruminant feedstuffs. Whole crop corn were ensiled with cage layer excreta and concentrate. Treatments included whole crop corn silage (control), 10% cage layer excreta and concentrate-corn silage (CES lo), 20% cage layer excreta and 10% concentrate-corn silage (CES 20) and 30% cage layer excreta and 10% concentrate-corn silage (CES 30). The characteristics of silage fermentation was evaluated. Digestibility and palatability of the silage were observed through the feeding trial with four male Corridale sheep. The results obtained are summarized as follows: 1. Cage layer excreta-corn silage showed higher contents of crude protein and crude ash than control silage, while crude fibre content was significantlv lower than that of control silage (P(.01). 2. Total nitrogen and ammonia nitrogen content of the cage layer excreta-corn silage was significantly (P< .01) higher than that of control, but CES 10 silage was good in quality. 3. Lactic acid content of CES 10 silage was the highest, but that of CES 20 and CES 30 silage was lower than that of control. CES 20 and CES 30 silage was lower lactic acid content and higher pH than control. Therefore Flieg's score was wrose than that of control silage. 4. The numbers of total bacteria and lactic fermentation bacteria were estimated lo7-10' and 10"1OH, respectively, and there were no significant differences among treatments. Coliform numbers were not detected with CES 10 silage while were detected lo3 per gram in CES 30 silage. 5. Digestibility of crude protein, crude fibre and ADF was improved significantly in the animals fed the cage layer excreta-corn silage compared with animals fed the control silage. DCP and TDN were the highest in the CES 10 silage. 6. The intake of daily nitrogen and dry matter per metabolic body weight was the highest in animals fed the CES 10 silage.lage.

방사선(放射線) 조사(照射)가 후추가루의 살균(殺菌)에 미치는 영향(影響) (Effect of Irradiation on the Sterilization of Black Pepper Powder)

  • 유통되고 있는 후추가루의 미생물(微生物) 오염(汚染)정도와 방사선(放射線) 살균효과(殺菌效果) 및 몇가지 성분(成分)에 미치는 영향을 검토하고져 직접 구입 마쇄한 시료(I)과 분말 제품화(製品化)된 시료(II)를 대상으로 $3{\sim}9kGy$의 감마선을 조사하고 실험을 수행하였다. 시료(I)과 (II)의 일반세균(一船細菌)은 g당(當) $1.00{\sim}10^7$$1.67{\sim}10^7$마리로 나타났으며 대장균군(大腸菌群)은 양성(陽性)인 시료도 확인되었다. 감마선의 살균효과(殺菌效果)에서 일반세균(一船細菌)은 9kGy, 대장균군(大腸菌群)은 3kGy의 조사(照射)로서 대부분 사멸(死滅)되었으며, $D_{10}$값은 시료(試料)(I)과 (II)에서 1.49 및 1.39kGy 로 나타났다. 일반성분(一船成分)은 감마선 조사(照射)로서 환원당(還元糖)이 다소 증가되었을 뿐 기타 성분(成分)은 거의 변화가 없었고, 휘발성 정유성분(精油成分)의 수율(收率)에서는 조사선량(照射綿量)의 증가(增加)로 $4{\sim}14%$의 감소현상(減少現象)을 보였다.

맨손과 장갑 낀 손의 미생물 오염도 비교 (A Comparison of Microbial Load on Bare and Gloved Hands among Food Handlers)

  • Objectives: There has been a great amount of controversy in the food industry over the effectiveness of using gloves. The objectives of this study were to examine the microbial contamination of food handlers' hands and determine if using gloves could ensure safe handling of foods. Methods: Samples were collected through the glove-juice method from the bare and gloved hands of food handlers at work and were analyzed for the presence of aerobic plate counts, total coliform, fecal coliform, Escherichiacoli, Staphylococcus aureus, and Salmonella spp. Microbiological testing was conducted according to the Food Code of Korea. Results: Microbial contamination was consistently higher with bare hands than with gloved hands, although the microbial loads on both hands increased over time. Under certain conditions, there were significant differences between the bacterial loads on bare and on gloved hands (p<0.05). E. coli, S. aureus, and Salmonella spp. were still alive on both bare and gloved hands at the time the food handlers finished their work. Conclusions: Wearing gloves was associated with a marked reduction of bacterial contamination of the hands. However, the practice of continuously wearing gloves during food handling increases the potential for cross-contamination of bacteria. The findings of this study emphasize the need for a rational use of gloves, and strict adherence to hand hygiene compliance among food handlers.
