For the purpose of production of GABA-rich tomato paste, this study was carried out to investigate GABA producing lactic acid bacteria from Korean traditional fermented food, Kimchi and optimize the culture conditions. As a result of fermentation, Lactobacillus brevis B3-20 among lactic acid bacteria isolated at the pre-experiments was the best producer of GABA at the tomato paste medium with 50%(wet-base) levels of dionized water. At the result of fermentation on the tomato paste medium with 0.5%(w/w) yeast extract, as a source of nitrogen, 3%(w/w) MSG(monosodium glutamate) and dionized water(the ratio of tomato paste and water was 2:8), Lb. brevis B3-20 produced the maximum GABA concentration, 143.38 mM. GABA-rich tomato paste showed the activity of free radical scavenging. Because GABA-rich tomato paste have functional ingredients such as ascorbic acid, lycopene, carotenoid, as well as GABA by lactic acid bacteria fermentation, GABA-rich tomato paste can be considered high functional materials.

This study was conducted to determine the effectiveness of silver thiosulfate(STS) in reducing $O_3$ injury to tomato plants(Lycopersicon esculentm Mill. 'Pink Glory'). Two days prior to $O_3$ fumigation, plants were given a foliar spray of STS solution at concentrations of 0, 0.2, 0.4, 0.6 mM contained with 0.05% Tween-20. STS concentrations below 0.6 mM were significantly effective in providing protection aginst $O_3$ exposure(16 h at 0.3 ppm). STS reduced leaf injury rate, defoliation of cotyledons, ethylene production and degree of epinasty induced by $O_3$ injury. STS slightly increased ethylene production in non-$O_3$-fumigated plants, but changes of chlorophyll content and transpiration rate on a whole plant basis were not observed. In $O_3$-fumigated plants, STS treatment reduced chlorophyll destruction but did not affect transpiration rate. STS treatment seemed not to affect peroxidase(POD) and superoxide dismutase (SOD) activity in non-fumigated plants but reduced increasing activity of POD by $O_3$ fumigation. However, such an effect as above was not found in SOD activity. Even though enzymatic protection effects were not confirmed, the fact that reduction of acute injury rate was attained for 16 h fumigation indicates that the phytoprotective effects of STS are not necessarily related to blocking the action of strees-induced-ethylene as an anti-ethylene agent.
Leaves of two-week old seedlings of tomato (Lycopersicon esculentum) were treated with various concentrations (0∼100 M) of $CdCl_2$ for up to 9 days and subsequent growth of seedlings, symptoms of oxidative stress and isozyme activities of antioxidant enzymes including superoxide dismutase (SOD), catalase (CAT), ascorbate peroxidase (APX) and peroxidase (POX) were investigated. Compared with the non-treated control, Cd exposure decreased biomass but increased Cd accumulation, hydrogen peroxide production and lipid peroxidation as malondialdehyde (MDA) formation in leaves and roots. Further studies on the developmental changes of isozyme activities showed that Fe-SOD, Cu/Zn-SOD and one of three APX isozymes decreased and CAT and one of four POX isozymes increased in leaves, whereas Fe-SOD, one of three POX isozymes and two of four APX isozymes decreased and CAT increased in roots, showing different expression of isozymes in leaves and roots with Cd exposure level and time. Based on our results, we suggest that the reduction of seedling growth by Cd exposure is the oxidative stress resulting from the over production of $H_2O_2$ and the insufficient activities of antioxidant enzymes particularly involved in the scavenging of $H_2O_2$. Further, the decreased activities of SOD and APX isozymes of chloroplast origin, the increased activities of CAT and POX and high $H_2O_2$ contents with Cd exposure might indicate that Cd-induced oxidative stress starts outside chloroplast.
Silage making has become a significant method of forage conservation worldwide. To determine how tomato pomace (TP) may be used effectively as animal feed, it was ensilaged for 90 days and microbiology counts, fermentation characteristics and chemical composition of tomato pomace silage (TPS) were evaluated at the 30th, 60th, and 90th days, respectively. In addition, 103 lactic acid bacteria were isolated from TPS. Based on the phenotypic and chemotaxonomic characteristics, 16S rDNA sequence and carbohydrate fermentation tests, the isolates were identified as 17 species namely: Lactobacillus coryniformis subsp. torquens (0.97%), Lactobacillus pontis (0.97%), Lactobacillus hilgardii (0.97%), Lactobacillus pantheris (0.97%), Lactobacillus amylovorus (1.9%), Lactobacillus panis (1.9%), Lactobacillus vaginalis (1.9%), Lactobacillus rapi (1.9%), Lactobacillus buchneri (2.9%), Lactobacillus parafarraginis (2.9%), Lactobacillus helveticus (3.9%), Lactobacillus camelliae (3.9%), Lactobacillus fermentum (5.8%), Lactobacillus manihotivorans (6.8%), Lactobacillus plantarum (10.7%), Lactobacillus harbinensis (16.5%) and Lactobacillus paracasei subsp. paracasei (35.0%). This study has shown that TP can be well preserved for 90 days by ensilaging and that TPS is not only rich in essential nutrients, but that physiological and biochemical properties of the isolates could provide a platform for future design of lactic acid bacteria (LAB) inoculants aimed at improving the fermentation quality of silage.

Salinity and extreme temperature stresses affect growth and productivity of crops negatively. Beneficial bacteria, including plant growth-promoting rhizobacteria (PGPR) induce growth promotion and tolerance of plants under abiotic stress conditions. In the present study, 20 strains were selected from 1944 isolated bacteria based on three plant growth-promoting (PGP) traits-aminocyclopropane-1-carboxylate deaminase activity, phosphate solubilization, indole-3-acetic acid production, and growth ability under salinity and extreme temperature stress conditions. Seven among the 20 strains were selected based on growth-promoting effects on plants under saline or temperature stresses in tomato plants. It was expected that the seven strains could induce tolerance of tomato plants under salinity or extreme temperature stresses, which implies that these seven strains can act as potential inducers of multiple stresses tolerance in tomato plants.
The role of inorganic nitrogen assimilation in the production of amino acids, organic acids and soluble sugars is one of the most important biochemical processes in plants, and, in order to achieve normally, nitrate uptake and assimilation is essential. For this reason, the characterization of nitrate assimilation and metabolite composition from leaves, roots and xylem sap of tomato (Solanum lycopersicum) was investigated under different nitrate levels in media. Tomato plants were grown hydroponically in liquid culture under five different nitrate regimes: deficient (0.25 and 0.75 mM $NO_3{^-}$), normal (2.5 mM $NO_3{^-}$) and excessive (5.0 and 10.0 mM $NO_3{^-}$). All samples, leaves, roots and xylem sap, were collected after 7 and 14 days after treatment. The levels of amino acids, soluble sugars and organic acids were significantly decreased by N-deficiency whereas, interestingly, they remained higher in xylem sap as compared with N-normal and -surplus. The N-excessive condition did not exert any significant changes in metabolites composition, and thus their levels were similar with N-normal. The gene expression and enzyme activity of nitrate reductase (NR), nitrite reductase (NIR) and glutamine synthetase (GS) were greatly influenced by nitrate. The data presented here suggest that metabolites, as a signal messenger, existed in xylem sap seem to play a crucial role to acquire nitrate, and, in addition, an increase in ${\alpha}$-ketoglutarate pathway-derived amino acids under N-deficiency may help to better understand plant C/N metabolism.
Effects of exogenously foliar applied glycine betaine (GB) on the growth and contents of osmolyte in tomato seedling was investigated. Plants treated with exogenous glycine betaine induced better biomass production and plant height during chilling stress than the untreated plants. The total soluble sugar contents in GB foliar-applied plants lower than that of untreated plants 28 days after foliar application. Total water soluble protein contents in GB foliar-applied plants did not change 28 days after chilling stress. In untreated plant, it decreased rapidly in the beginning of chilling stress. Proline contents in untreated plants rapidly increased by the beginning of chilling stress, and then slightly decreased during the next 3 weeks. However proline contents in GB foliar-applied plants did not change during the 28 days chilling stress period. The results suggest that foliar application of GB is a effect methods to increase the chilling tolerance of tomato seedlings in protected cultivation system at low temperature season.

This study was carried out to determine the effects of tomato powder (TP) on cooked pork patties during storage at $10{\pm}1^{\circ}C$ in the dark. The total phenolic and flavonoid contents of TP extract were 26.22 mg gallic acid/100 g and 3.52 mg quercetin/100 g, respectively. The extract of TP showed a potential antioxidant activity in the DPPH radical-scavenging assay ($EC_{50}=16.76{\mu}g/mL$). Pork patties were manufactured with 0.25% (T1), 0.5% (T2), 0.75% (T3) and 1.0% (T4) TP in a basic formula (C). The pH and volatile basic nitrogen (VBN) values of T2, T3 and T4 patties were lower (p<0.05) than the C patties during storage. Increased concentration of TP in meat patties decreased (p<0.05) the 2-thiobarbituric acid reactive substances (TBARS) and total plate count (TPC) values at d 7 of storage. Tomato treated-patties had lower (p<0.05) values for lightness ($L^*$), but higher (p<0.05) values for redness ($a^*$) and yellowness ($b^*$) at d 3 and 7 of storage compared with the C. In the case of sensory evaluation, the scores of colour, flavour and overall acceptability of T3 and T4 patties were higher (p<0.05) than those of the C patty after 3 or 7 days of storage.
This study aimed to enhance the quality and sensory acceptability of dak-galbi sauce made from general tomatoes, plum tomatoes and canned tomatoes and find the most preferred quality characteristics and tomato type for the production of dak-galbi sauce. Dak-galbi sauce was blended with different concentrations of tomatoes (0%, 10%, 20%, 30%, 40%). As the amount of a tomato addition increased, the moisture contents, L-values, a-values and B-values significantly(p<0.001) increased while salinity, sugar contents and viscosity decreased. The attribute difference test showed that significant differences in such properties as color intensity, pungent flavor, pungent taste, mouthfeel were observed with more tomatoes added. Based on the results of this study, the optimal tomato content for maximizing the overall quality of dak-galbi sauce was 10~20% of general tomatoes or 20% of plum and canned tomatoes. More various kinds of dak-galbi sauce are expected to be developed through this study.
The purpose of this research was to develop ideal substrates for the production of good quality tomatoes in bag culture system and also to improve media with low or no environmental pollution by blending and mixing artificial substrate including peatmoss, perlite, vermiculite, granular rockwool, polyphenol resin foam, bark, and smoked rice hull. The highly efficient media proved by experiments were vermiculite, smoked rice hull, polyphenol resin foam, granular rockwool, and perlite, which showed good results in the early growth as well as the marketable yield of tomato in the bag culture. Tomato plants grown in the media mixed with peatmoss, vermiculite and granular rockwool at the ratio of 3 : 1 : 1(by volume) showed the highest marketable yield, and the next at the ratio of 2 : 1 : 1. The perlite-granular rockwool mixtures at the ratio of 2 : 3 and 1 : 4, and the peatmoss vermiculite mixtures at the ratio of 2 : 3 and 3 : 2, seemed to be promising media for bag culture.
