Comparison of Isoflavone Content in 43 Soybean Varieties Adapted to Highland Cultivation Areas (고랭지 적응 콩 43개 품종의 해발고도별 이소플라본 함량 비교)

  • In this study, we analyzed the growth characteristics and isoflavone content of 43 soybean varieties highly adaptable to highland areas. The flowering period of each cultivation zone was from July 15 to August 12 at Daewallyeong, from July 18 to August 11 at Jinbu, and from July 23 to August 13 at Gangneung. The accumulated temperature from flowering to maturity was $1,297^{\circ}C$ for Daegwallyeong, $1,391^{\circ}C$ for Jinbu, and $1,685^{\circ}C$ for Gangneung. Forty-three varieties were classified into four utilities; soy sauce and tofu, bean sprouts, cooking with rice, and vegetable and early maturity. The content of isoflavone was highest at $2,579{\mu}g/g$ in varieties for soy sauce and tofu usage. Five varieties ("Paldalkong," "Sinpaldal2," "Ilmikong," "Sinpaldalkong," and "Daepung") cultivated in Daegwallyeong had over $4,000{\mu}g/g$ of isoflavone. The isoflavone content of the region Daegwallyeong was different at the significance level of 0.1 (p=0.061) compared to Gangneung. There was no significant difference between Gangneung and Jinbu. It is thought that the low temperature of the maturation stage during the growing period affected isoflavone accumulation. The varieties with more than $3,000{\mu}g/g$ of isoflavone content in Daegwallyeong, Jindu, and Gangneung were "L29," "Williams82," "Ilmikong," and "Daepung." These were genetically and environmentally stable in isoflavone content. It is expected that this study will be used as basic data for the functional breeding and selection of soybean varieties highly adaptable to a specific region, and to help expand soybean cultivation areas in highlands.

'Chamol', an Early Maturing, High Yield, and Large-seed Soybean Cultivar for Double Cropping (이모작 적응 조숙 대립 다수성 콩 품종 '참올')

  • A soybean cultivar "Chamol" for double cropping for use as soy-paste and tofu was developed using a pedigree method in 2011 as a cross between "Shinpaldal2" and "Keunol." A promising line, SS99502-2B-89-1-3-4-1-1, was selected and designated as "Milyang210". It was promising and showed good results from regional yield trials (RYTs) for 3 years from 2009 to 2011 and released with the name "Chamol." It has a determinate growth habit, white flowers, gray pubescence, yellow seed coat, yellow hilum, spherical seed shape, and large seeds (27.7 g per 100 seeds). The maturity date of "Chamol" was September 18 (100 day growing period) in RYT and it is suitable for double cropping with winter crops such as onion. "Chamol" was resistant to bacterial pustule and soybean mosaic virus and tolerant to lodging in fields. Furthermore, the average yield of "Chamol" was 2.51 ton/ha in the regional yield trials conducted for 3 years from 2009 to 2011.

Ranking Determination of Foods and Foodborne Pathogens for Impact of Climate Change on Microbiological Food Safety (미생물학적 식품안전을 위한 기후변화 영향 식품 및 식중독 세균 우선순위 결정)

  • This study was performed to determine the ranking foods and related foodborne pathogens for the impact of climate change, e.g., increasing temperature, on microbiological food safety. To do this, we developed an impact-ranking model comprising an Excel spreadsheet by using Risk Ranger. Because of a lack of data, input values in this model were determined on the basis of an expert's opinion. These values also were converted to normal distribution, and the developed model was simulated using @RISK. In conclusion, the 5 superior ranking foods and related foodborne pathogens for climate change impact were as follows: ready-to-eat foods (RTE) (Staphylococcus aureus, Salmonella spp., and Escherichia coli O157:H7); bread and rice cakes (S. aureus and Bacillus cereus); meat and egg products (Salmonella spp., E. coli O157:H7, and S. aureus); tofu (bean curds) and jellies (B. cereus, E. coli O157:H7, and S. aureus); and fish products (S. aureus, Vibrio spp., and E. coli O157:H7).

A Study on Importance-Performance of Wellbeing Fusion Menu using IPA (IPA를 활용한 웰빙 퓨전 메뉴의 중요도-성취도 연구)

  • This study aims to analyze importance and performance factors on the quality of wellbeing fusion menu of fusion restaurants to provide helpful information for building up a detailed marketing strategy and present considerations for sales increase and more efficient business results. Importance on menu quality scored a higher level than performance on the whole in fusion restaurants. Notably, in regard to attributes of menu quality, it was found that respondents put higher stress on 'taste of food', 'sanitary of food', 'cleanliness of vessels', 'quality of menu' and 'freshness of food' than anything else. Wellbeing fusion menu which has an high intake frequency rate includes 'green vegetable noodles with black bean sauce', 'sweet pumpkin salad', 'salmon salad', and 'shrimp vegetable gratin' in that order. On the other hand, the intake frequencies of 'ovened green perilla gratin', 'pomegranate dressing tofu', 'bacon roll with glutinous rice powder', and 'pomegranate dressing bacon' were rated very low. In terms of the IPA analysis on wellbeing fusion menu quality, it was important to continuously maintain 'taste of food', 'sanitary of food', 'cleanliness of vessels', 'freshness of food', 'quality of menu', 'diet menu(low fat, low calories)', 'vegetable menu', 'nutrition of food', 'variety of menu' etc. Such items as 'price', 'distinction with existing food', and 'environment-friendly organic agriculture food material' are in need of intensive care and operation.

Menu Development and Evaluation through Eating Behavior and Food Preference of Preschool Children in Day-Care Centers (보육시설 유아들의 식행동과 식품기호도 조사를 통한 식단개발 및 평가)

  • This study was conducted to develop and evaluate food menus after investigating eating behaviors and food preferences of preschool children. Parents of the preschool children In 2 Gumi City day-care centers completed questionnaires in July 2003, which were used to assess eating behaviors and food preferences of their preschool children. Analysis of the questionnaires led to the development of the menus. Menus (n=10) were developed for five different categories (two menus were developed for each category) including general menu, unbalanced menu, anemia menu, obese menu, and traditional menu. The preschool children(n=656) evaluated the menus as they were provided with each them throughout October 2003. The five score scale method was used to evaluate taste, smell, looks, texture and general preference of each menu. Results in eating behaviors showed that 70.7% of preschool children had unbalanced eating behaviors. No gender based differences in eating behaviors were found, but in regard to food preferences boys tended to prefer carbonated drinks more than girls. Results indicated that among all menus, fruit ranked highest $(3.97{\pm}0.65)$ for food preference, and vegetables ranked lowest for food preference $(2.46{\pm}0.68)$. Food preference in regard to cooking process indicated the highest preference was for fried foods $(3.80{\pm}0.68)$ and the lowest preference was for raw vegetables $(2.61{\pm}1.27)$ and namul $(2.85{\pm}1.13)$. Preference for taste ranked the highest $(4.30{\pm}0.91)$ but preference for looks recorded the lowest $(3.95{\pm}0.89)$. Of all the foods in the menus, steamed tofu rated the highest for individual food item preference, while tuna sesame leaf rice rated the lowest preference. Statistical analysis of interrelationships among food taste, smell, looks, texture and general preference were significant (p<0.0l). Results from this study suggest that various factors including food taste, smell, looks, and texture influence the food preferences of preschool children. Therefore, it is concluded that by developing a variety of appetizing menus for use at home and in day-care centers, containing varied food items and cooking methods, preschool children will be encouraged to increase their food preferences and to establish appropriate eating behaviors.

Comparison of Bulcheonwijerye Food Cultures in Shrines of Admiral Yi Sun-sin (충무공 이순신장군 사당의 불천위제례음식문화 비교 - 아산현충사고택·통영착량묘·남해충렬사 -)

  • The aim of this study was to comparatively analyze the differences in Jinseol (ritual table-setting) and Jesu (ritual food) from the cultural perspective of ancestral ritual formalities regarding Bulcheonwijerye of Admiral Yi Sun-Sin, which is being held in Asan-hyeonchungsa shrine, Tongyeong-changnyangmyo and Namhae-chungyeolsa. The results are summarized as follows. A total of 32 types of Jemul (ritual food) in 6 rows in Asan-hyeonchungsa shrine, a total of 30 types of jemul in 6 rows in Tongyeong-changnyangmyo, and a total of 12 types of jemul in 2 rows in Namhae-chungyeolsa were prepared for the ritual table. In the Asan-hyeonchungsa shrine and Tongyeong-changnyangmyo, cooked foods have been used for jesu, whereas raw, uncooked foods have been used for jesu in Namhae-chungyeolsa. In the Asan-hyeonchungsa shrine, Gaeng (Kook) for liquid soup of Tang (stew) and Tang (5-tang) for the solid ingredient of stew have been prepared for a ritual table. In Tongyeong-changnyangmyo, fish Kook for Gaeng and So-tang (tofu stew) for Tang have been prepared for the ritual table. In Asan-hyeonchungsa shrine, Yukjeok (beef slices broiled on a skewer), Gyejeok (chicken jeok) and Eojeok (fish jeok) have been stacked together as Dojeok on a ritual table whereas in Tongyeong-changnyangmyo, Yukjeok, Sojeok and Eojeok have been placed on the ritual table as Pyunjeok (one by one). In Namhae- chungyeolsa, raw pork meat has been placed on the ritual table. As Po (a dried meat or fish), dried fish and dried seafood have been used in Tongyeong-changnyangmyo, whereas raw beef meat has been used in Namhae-chungyeolsa. Although Namul (cooked vegetables) and Mulkimchi (watery plain kimchi) are placed on ritual table for Asan-hyeonchungsa shrine, only Namul and Saengchae (raw vegetables) is used in Tongyeong-changnyangmyo and Namhae-chungyeolsa, respectively. Bulcheonwijerye for the same person, Admiral Yi Sun-Sin, has different characteristics according to the shrines. Accordingly, there is a need to preserve and succeed bulcheonwijerye of Admiral Yi because it is a traditional culture in ancestral rituals.

Comparison of Soybean Varieties for Yield, Chemical and Sensory Properties of Soybean Curds (콩 품종에 따른 두부의 수율 및 화학적, 관능적 특성의 비교)

  • Fourteen varieties of soybeans grown in Korea were investigated for their chemical composition, yields and organoleptic properties of soybean curd. The soybean curd was prepared by soaking, grinding and heating of soybeans followed by filtration, coagulation with $CaSO_4$ and pressing. The proximate analysis showed that soybean curd had the moisture content of $75.0{\sim}82.0%\;and\;48.6{\sim}56.1%\;protein,\;14.8{\sim}40.4%\;lipids\;and\;6.4{\sim}26.8%$ carbohydrate by dry weight basis. The yield of volume total solids and protein from 100g of soybeans were $182.2{\sim}227.5cm^3,\;42.65{\sim}55.60%\;and\; 57.90{\sim}76.50%$, respectively. Among the 14 varieties, the highest volume yield was obtained from Suwon-141 which has the highest contents of moisture, carbohydrate and the lowest in lipids of soybean curd. The curd prepared with Baegun and Jangyeob contained relatively low values in moisture, protein and carbohydrate and yielded the lowest in volume yield. Therefor moisture, protein and carbohydrate contents in soybean curd affected greatly on volume yield. The organoleptic properties of odor and taste couldn't find any significant relationship with chemical composition of soybean curd eventhough there were some difference in their intensities among varieties.

Vitamin $B_{12}$ content analysis of favorite Korean restaurant foods, convenient foods and bakery products (한국인이 선호하는 음식점 한식 및 간편식품과 빵류의 비타민 $B_{12}$ 함량분석 연구)

  • There is a limitation to estimate vitamin $B_{12}$ intake due to the lack of data on vitamin $B_{12}$ content of Korean commercial foods. In this study, vitamin $B_{12}$ content was determined in favorite Korean restaurant foods, convenient or instant foods, fast foods and bakery products through a modified microbioassay using Lactobacillus delbrueckii ATCC 7830. Bulgogi and seafood & green pepper griddle had high vitamin $B_{12}$ content, 3.50 and $2.96{\mu}g$/100 g, respectively. Pork suyook, pork griddle and pollack griddle had 0.48, 0.31 and $0.32{\mu}g$/100 g of vitamin $B_{12}$, respectively. In stew, soft-tofu stew with seafood and doenjang stew with seafood had relatively high vitamin $B_{12}$ content, 1.93 and $1.44{\mu}g$/100 g, respectively. Bibimbap and 4 different types of rice porridge, beef & mushroom, chicken & ginseng, seafood or abalone, had 0.36, 0.08, 0.09, 1.64 and $0.13{\mu}g$/100 g of vitamin $B_{12}$, respectively. One serving of haejanggguk, yookejang, chuotang and galbitang had 5.97, 2.04, 2.63 and $1.91{\mu}g$ of vitamin $B_{12}$, respectively. One serving of samgetang and sulongtang had $2.89{\mu}g$ and $6.64{\mu}g$ of vitamin $B_{12}$. In noodles, one serving of cram noodle soup, bibim-nangmyeon, and mul-nangmyeon had 18.8, 1.21 and $0.38{\mu}g$ of vitamin $B_{12}$, respectively. One regular gimbap and one triangle gimbap contained 1.09-2.53 and $0.54-1.11{\mu}g$ of vitamin $B_{12}$, respectively. One cheese-burger, chicken-burger and bulgogi-burger had 0.76, 0.62 and $0.54{\mu}g$ of vitamin $B_{12}$, respectively. A plain bagel and a waffle contained 0.13 and $0.17{\mu}g$/100 g of vitamin $B_{12}$, respectively. Ready-made tomato sauce or cream sauce for spaghetti in a retort pouch contained only a trace of vitamin $B_{12}$. In conclusion, these results should contribute to improving the present food vitamin $B_{12}$ content database, most of which were cited from foreign data, thereby it could be helpful to estimate the vitamin $B_{12}$ intake of Koreans more accurately than before. It will also provide new information for dietary education related to vitamin $B_{12}$ and health.

Comparative Study of DNA Fragment According to Steps of Genetically Modified Soybean Processed Food (대두 가공식품의 공정단계별 유전자재조합체(GMO) 단편의 검출확인 및 비교 연구)

  • To discriminate between the genetically modified soybean processed foods which were Korean traditional foods as Beansprout, doenjang, Beancurd (Tofu) and the unmodified one. we had analyzed comparatively that the loss degree of inner DNA about denaturalization factors in process step as heat or pressure and decision of suitable PCR primer by size. As a result of having compared about ${\beta}$-actin was 160bp, 335 promotor was 130 bp and NOS terminator was 132 bp effective. As a result of having checked a loss degree of a gene, as for the bean curd, DNA was mostly preserved well, and the loss of DNA along the processing process was hardly observed by a processing process. Most DNA of beansprout have moved to trunk after germination stage, and the appropriate analysis part was judged as the trunk. And the doenjang showed a detection difference of DNA by an operation of an enzye among self-life periods. Besides, after 50days, insertion gene was destoryed entrely so that detection was not possible.

Relationship between thresholds and self-assessed preference for saltiness and sodium intake in young women (젊은 여성에서 짠맛 역치 및 자기 평가 짠맛 선호도와 나트륨 섭취 간의 상호 관련성)

  • Purpose: We recruited 118 women in their early 20's to examine the relationship between sodium intake and salty taste thresholds and preference. We also examined the association of salty taste preference with sodium-related dietary behaviors and major dishes contributing to sodium intake. Methods: Daily sodium intake was estimated using a 127-item dish-frequency questionnaire. Salty taste thresholds and preference were measured using rating scales using water solution of NaCl and a self-administered questionnaire based on a Likert scale, respectively. Results: Salty taste preference showed positive correlation with daily sodium intake and sodium intake-increasing behaviors, and inverse association with sodium intake-decreasing behaviors, including salt and soy sauce use at the table, the frequency of eating out and home delivery of foods, broth consumption of soup, stew or noodle soup, the use of ready-to-serve or processed foods, fresh vegetable intake, and the accommodating attitude toward bland food. Intake of sodium-contributing dishes, including ramen, spicy soft-tofu stew, radish kimchi, and dishes containing kimchi, also showed positive association with salty taste preference. Unexpectedly, detection and recognition thresholds of salty taste showed no association with salty taste preference, sodium intake, and sodium-related dietary behaviors. Conclusion: These findings suggest that salty taste preference could reflect sodium intake of individuals rather than thresholds of saltiness, and may be used as a simple and effective proxy for usual sodium intake.
