The purpose of this study was to evaluate on nutrient intake status and diet quality of middle and old aged vegetarian women in Korea, The research group was composed of vegetarian women (n=91), all of them were Seven Day Adventists, who had been on vegetarian diets, over 20 yrs. Their anthropometric measurements, dietary intakes, and diet quality indices were compared to omnivores (n=122). The average age of vegetarians and omnivores were 61.8 yrs and 60.3 yrs, respectively. The mean daily energy intakes of vegetarians and omnivores were 1428.8 kcal and 1424.5 kcal, respectively and there was no significant difference. The vegetarians consumed significantly lower intakes of protein (p < 0.05), zinc (p < 0.001) and vitamin $B_{2}$ (p < 0.05) compared to omnivores. In the diet quality, zinc and vitamin $B_{2}$ nutrient adequacy ratio (NAR) of vegetarians were significantly lower than those of omnivores. Mean adequacy ratio (MAR) of vegetarians and omnivores were 0.80 and 0.77, respectively and there was no significant difference. The KDDS (Korean's Dietary Diversity Score) of vegetarians and omnivores were 3.7 and 4.0, respectively, and there was significant difference (p < 0.01). The KDQI (Korean's Diet Quality Index) of vegetarians (1.5) was significantly lower than that (2.1) of omnivores (p < 0.001). In conclusion, vegetarian women have low intake status of protein, zinc and vitamin $B_{2}$, and partly low diet quality. Therefore it was needed that well planed diets to replace the nutrients supplied from excluded food groups in middle and old aged vegetarian women. This study compared the effect of Korean vegetarian and omnivorous diets on plasma carnitine concentrations and urinary carnitine excretion. Twenty lactoovovegetarian and twenty omnivorous female college students consented to participate in this study. Daily nutritional intake and plasma and urinary nonesterified carnitine (NEC), acid-soluble acylcarnitine (ASAC), acid-insoluble acylcarnitine (AIAC), and total carnitine (TCNE) were determined. Daily protein, fat, retinol, vitamin B$_2$and vitamin B$\_$12/ intakes were significantly lower for vegetarians, however, fiber, carbohydrate, $\beta$-carotene, folic acid and vitamin C consumptions were much higher for vegetarians than omnivores. There were no differences in plasma NEC, ASAC, AIAC and TCNE concentrations between the two groups. Urinary carnitine excretion was lower in vegetarians, but only the differences in ASAC and TCNE excretions were statistically significant. These results suggest that the lower excretion of ASAC in vegetarians may be a reflection of their lipid metabolic state and that Korean vegetarian diets may accommodate lower carnitine intakes through efficient urinary conservation of carnitine.
The purpose of the study was to assess students’preferences on vegetarian menus served at middle and high schools. Four school food service programs that served primarily vegetarian menus were located in Seoul, Kyunggi, Kangwon, and Choongnam provinces. A total of 100 menu items frequently served at the schools were identified. Students participating in the school meals programs were asked to assess their preferences of the menus using a 5-point Likert-type scale(1 : very dislike - 5 : very like). Excluding responses with significant missing data, usable responses were 659. Statistical analyses were performed with descriptive statistics, t-tests, and one-way analysis of variance. Menu items of the highest preference scores included kimchi stew, stir-fried kimchi, nangmyon(cold noodles), fried rice and kimchi, miso stew, soft tofu stew, and hard-boiled quail eggs in soy sauce. By menu category, one-dish foods(3.97) were the most preferred and muchim and namul were the least preferred. Female students showed higher preferences on kimchi, steamed items(jjim), stir-fried items, namul, and muchim than male students; middle school students’preference scores were higher than those of the high school students in most menu categories. The menu preference is known as one of the most important factors determining students’food consumption and satisfaction with school food service. Dietitians working at school food service programs that serve primarily vegetarian menus should provide students with nutrition education on proper food selection and focus their efforts on developing new recipes using various vegetables and preparation methods to improve students’food consumption and menu preference.
There is some evidence that phytostrogen plays an important role in bone metabolism in postmenopausal women. In this study, we investigated the phytoestrogen intake levels and the relation between dietary phytoestrogens intake and bone mineral density of vegetarian (n = 77) and omnivore postmenopausal women (n = 122 . Vegetarian women, all of them were seven day adventists, who had been on vegetarian diet (almost lacto-ovo vegetarians;a few vegans) oyer 20 yrs. The average age of vegetarians and omnivores were 62.3 yrs and 60.2 yrs, respectively and, there was no significant difference. However, body weight (p < 0.001), body mass index (p < 0.001) of vegetarians were significantly lower than those of omnivores. The mean daily energy intake of vegetarians and omnivores were 1386.1 kcal (76.3% of RDA) and 1424.5 kcal (76.9% of RDA), respectively. The mean calcium intake of vegetarians (456.7 mg, 66.3 % of RDA) was not significantly different from that of omnivores (453.5 mg, 65.2 % of RDA). The mean daily isoflavones (daidzein +genistein) intake of vegetarians and omnivore were 33.9 mg and 23.9 mg, respectively. The vegetarians consumed significantly greater quantities of isoflavones (p < 0.05) and lignans precursor (p < 0.05). In the vegetarians, intake of isoflavones was significantly positively correlated with BMD of femoral neck, after adjusted for age and BMI. Also lignan precursor intake of vegetarians was significantly positively correlated with BMD of spine, after adjusted for age and BMI. In conclusion, in omnivore post menopausal women, intake of phytoestrogen such as isoflavones and lignans was little low, and it is not clear that positive association with bone mineral density. But in vegetarian postmenopausal women, phytoestrogen intakes be important factors related to bone mineral density.

This study was conducted to verify the relation between relation between vegetarian diet and the serum lipid levels, blood sugar and blood pressure from October 1996 to February 1997. The vegetarians subjects were 245 Buddhist nuns (age:23~79 yrs) and control subjects consisted of 235 healthy female adults (age: 23~70 yrs) selected from the teachers, the nurses and the housekeepers living in Chinju Gyeongsang Nam-do. The contents included anthropometric measurement, questionnaires about eating behavior score and preference for taste and biochemical characteristics of the blood. The results were summarized as follows. The average duration of vegetarian diet of the vegetarians was 13.1 years. Vegetarians prefer to a pepper, a sweet and a acidic in the right order but that non-vegetarians prefer to a sweet, a acidic and pepper in the right order. Both groups of less than a decade and more than two decade of vegetarian diet prefer to a pepper, sweet, a acidic, a bitter, a salty and a lily, and a 10~20 yr group with vegetarian diet was fond of a pepper, a bitter, a acidic, a sweet, and a oily, in the right order. This seems to be ascribable to a difference in the health knowledge and interest. Vegetarians and non-vegetarians who said that they were fond of salty were 38.8% and 52.8%, medium was 33.9% and 33.6%, and not salty was 27.3% and 13.6%. Eating behavior score of vegetarians and non-vegetarians were 25.1 and 23.1 respectively. Eating behavior scores of vegetarians were significantly higher than those of non-vegetarians (p<0.05). Eating behavior scores of the group with more than a decade of vegetarian diet were significantly higher than those of the group with less than a decade of vegetarian diet. Levels of serum total-cholesterol, LDL-cholesterol, and AI of the salty group were significantly higher (p<0.05) than those of not salty group. Levels of serum triglyceride, HDL-cholesterol, blood sugar had no significant relation with preference of salty. Blood pressure was not related with preference of salty, but that of those who prefer a salty tended to be high. This study also reveals that the preference of a salty was significant influence on serum total-cholesterol, LDL-cholesterol, and AI, but the vegetarians did not prefer salty and have a good eating behavior. Consequently, vegetarian diet can be considerably effective in reducing the level of the risk factors of cardiovascular disease.
The purpose of this study is to describe the nutritional status of lacto-ovo vegetarian college male students related food habits, nutrient intake, food analysis, blood content and blood pressure. This survey was conducted at Korean Union College June 13 through 20 in 1982 (7days), and the questionnaires were designed to find out the food habits for 113 men students. The results obtained are summarized as follows: 1) They often use whole cereals, vegetables, pulses, nuts and fung; they don't use seasonings or animal foods. 2) It seemed that vegetarian's personalities were stable and they had good endurance. 3) All nutrients were taken sufficiently, and the ratios of carbohydrates, lipids and proteins were 70, 16, 14 respectively. 4) No one had anemia prevalences of Hb, Hct, or serum Iron compared with the anemic criteria of W.H.O. The mean value of serum cholesterol was 126 mg%. 5) The mean value of blood pressure was 72/110 mmHg.
The longitudinal changes on contents of calcium, phosphorous and magnesium of breast milk of 23 Korean lacto-ovo-vegetarians(primiparae=11, multiparae=12) at 0.5, 1, 2 and 3 months postpartum have been studied. The mean ash content of breast milk per 100ml was 0.21g in total lactating women(n=23), and it decreased significantly during lactation(p<0.05). The mean calcium, phosphorous and magnesium contents of breast milk per 100ml were 26.83mg, 14.01mg and 2.72mg, respectively. Body calcium and phosphorous contents decreased significantly during lactation(p<0.05), but magnesium content tended to increase during lactation. There were no significant differences in ash, calcium, phosphorous and magnesium contents between primiparae and multiparae. The ratio of calcium to phosphorus was about 1.95:1 in breast milk and 0.62 : 1 in maternal dietary intake. In calcium and phosphorous, no correlation was found between maternal dietary intake and the concentration in breast milk. This study suggests that the contents of calcium, phosphorous and magnesium in lacto-ovo-vegetarian breast milk are not different from the concentrations of those in non-vegetarian.
In order to elucidate the effects of a lacto-ovo vegetarian diet on serum lipid levels, 91 male collegians residing in the Seoul area were recruited. The vegetarians did not smoke tobacco nor drink alcohol. Their anthropometric measurements, dietary intakes, and blood lipid concentrations were compared to age-matched omnivorous controls. The subjects were divided into four groups. The four groups were: 1) NSNDV (n=25): Non Smoking Non Drinking Vegetarians, 2) NSNDO (n=10): Non Smoking Non Drinking Omnivores, 3) SDO (n=37): Smoking, Drinking Omnivores, 4) SDM (n=11): Smoking Drinking Meat-eaters. Total serum cholesterol, HDL-cholesterol and hematocrit were analyzed. The results were as follows: Weight (p<0.05) and BMI (p<0.01) were significantly higher in SDM than NSNDV. Dietary protein (p<0.01), iron (p<0.05) and dietary lipids (p<0.01) from animals in NSNDV were significantly lower than the results in the SDM. Interestingly enough, we noted no significant differences between the four groups in terms of average total dietary protein, dietary lipids and dietary iron, total serum cholesterol, or HDL-cholesterol. Dietary fiber intake was significantly higher in NSNDV than in SDM (p<0.05). Weight, BMI, and total cholesterol were significantly positively correlated with animal protein (p<0.05) and animal lipid (p<0.01) intake. These results showed that vegetarian collegians who haven't smoked tobacco nor drunk alcohol evidenced lower body weight, BMI, and dietary animal lipid intake, but higher dietary fiber intake, than the other three groups. Additionally, intake of animal protein (p<0.001) and intake of animal lipids (p<0.001) were significantly positively correlated with body weight, BMI, and total serum cholesterol in male collegians.
