  • The purpose of this study was to assess the prospective teachers' perception of food risk with the goal of providing the ways to improve their knowledge and perception of food risk. A self-administered questionnaire was developed and offered to 307 freshman and sophomore in an elementary teacher-cultivating university located in Seoul. The collected data were analyzed in terms of frequencies, cross tabulation analysis, t-test and ANONA with a deviation level of 5% using SPSS 15.0. The results of this research were as follows: 'Taste' was identified as an important factor for purchasing food (54.4%), and 'Manufacture date/expiration date' (67.0%) was checked first before food was purchased. The respondants viewed food additives (66.8%) followed by environmental contaminants (17.6%) as the most dangerous factors for food consumption. Even though they did not know the actual level of risk these factors posed to food, they still perceived them as dangerous. Most of them did not have any educational experiences on food risk, and if any, their sources of information were TV (46.6%) and the internet (19.5%). And, they did want to have information on food risk through TV, radio (41.1%) and the internet(16.4%). Based on the above results, the subjects who have great potential to influence children appeared not to have sound knowledge or a balanced perception of food risks. Therefore, systematic educational opportunities for prospective teachers should be provided to promote food risk communication.

  • As untact travel has become a new trend in leisure culture due to the spread of COVID-19, car camping market is rapidly increasing. The sales of car camping-related goods increased by up to 600 percent, and the sales of SUV in Korea also increased by about four times. Despite the growth of the car camping market, there is a lack of research on the actual condition of the car camping market or research on the user's perspective. Therefore, in this study, a survey of actual camping users was conducted to derive factors that they consider important in camping, and through this, a car camping map was produced. As a result, two types of maps were produced: a map about the car camping site and convenience facilities closest to the car camping site in Gangwon-do, and a hash tag themed map based on keywords for each car camping site. We gathered data on portal sites and social media to obtain information related to camping sites and proceeded with analysis using text mining. In addition, we extracted keywords using network analysis techniques and selected key themes that represent them. This allows the user to choose a car camping site by selecting keywords that suit their taste. We hope that this research will help car camping researchers as a prior study and provide a foundation for leading a clean camping culture through clean camping campaign. Also, we hope that car camping users will be able to do quality trip.

  • Recently, consumer distrust has deepened due to blog posts focusing only on public relations due to 'viral marketing'. In addition, marketing projects such as false writing or exaggerated use of the latter phase are one of the most popular programs in 2016 as they are cheaper and more effective than newspaper and TV ads, and the size of advertising costs is set to be a major means of advertising at '3 trillion 394.1 billion won. From this 'viral marketing,' it has become an Internet environment that needs tools to filter information. The fake review filtering application ADDAVICHI presented in this paper extracts, analyzes, and presents blog keywords, total number of searches, reliability and satisfaction when users search for content such as "event" and "taste restaurant." Reliability shows the number of ad posts on a blog, the total number of posts, and satisfaction shows a clean post with confidence divided into positive and negative posts. Finally, the keyword shows a list of the top three words in the review from a positive post. In this way, it helps users interpret information away from advertising.

  • Tuile containing retrograded rice and black sesame was developed by optimization of the mixing rate of retrograded rice and egg white using response surface methodology. Nine samples of design points were obtained according to central composite design, and the optimal mixing rate of retrograded rice flour and egg white as independent variables was calculated with the sensory score, color, and texture as response variables. Nine samples of the experimental group and no added retrograded rice flour Tuile were also compared in terms of sensory properties, color and texture. According to the results, the optimal mixing rate of black sesame Tuile was 8.6 g of retrograded rice and 33.5 g of egg white. Regression analysis of the response showed that retrograded rice flour and egg white had effect on the color and texture of black sesame Tuile, with egg white more influential rather than retrograded rice. In a comparison of quality between retrograded rice flour added Tuile and no retrograded rice flour Tuile, lightness ($p$<0.05), hardness ($p$<0.001) and fracturability ($p$<0.001) of retrograded rice flour added Tuile was better than those of the other sample, and sensory quality in terms of color ($p$<0.01), taste ($p$<0.001), texture ($p$<0.01) were more excellent as well.

  • The objective of this study was to investigate parents' behavior and attitudes regarding their kids' snacking and dietary life education. A survey was conducted with the parents (N=412) of elementary students from seven provinces, includeing Seoul, Busan, Daegu, Kwangju, Gyungnam, Chungnam, and Kangwon. Kids' snacks consisted mainly of purchased foods rather than homemade foods. Parents' main concerns regarding kids' snacks were nutrition (44.9%), taste (24.3%), and safety (23.5%). Over 50% of parents checked food labels, especially expiration date (96.4%), food ingredients (49.5%), and food additives (33.5%). The snack items frequently provided to kids were fruits (62.8%), milk (55.5%), bread (47.1%), and snack items (23.3%). Parents responded that the amount of their kids' snacking was adequate (47.8%), small (33.7%), or large (18.2%). The results show that more research is needed regarding the adequacy of kids' snacking, considering that 15.7% and 22.4% of the children ate more and less, respectively, than their daily energy requirement. 76.5% of the parents performed home education regarding their kids' dietary habits, especially on the topics of 'balanced diet' (83.9%), 'healthful food' (53.7%), and 'eating three meals a day' (40.2%). Parents obtained dietary information from TV (65.2%), internet (12.0%), and newspapers (7.0%). From this study, we found that parents perceived their kids' snacking behavior correctly, and considered home-education for their kids' dietary habits positively. However, the information resources were limited, which makes it necessary to develop parents' education programs.

  • This research aimed to develope squash sikhye containing retrograded rice flour using response surface methodology. For this, nonlinear regression equation was calculated with the setting of independent variables as retrograded rice flour containing resistant starch and squash, and dependent variables as viscosity, sugar content, pH, color, and sensory attributes. Under the experimental condition, the quality characteristics of squash sikhye were found as 6.20~6.25 for pH, $14.00{\sim}17.33^{\circ}Brix$ for sweetness, 2.64~4.45 cP for viscosity, 57.51~60.18 for lightness, 4.94~7.52 for redness, and 50.98~60.29 for yellowness. It also was revealed overall acceptability in sensory evaluation rated as 9.67~10.83 out of 15 point. These results showed statistically significant differences in quality attributes with the increase of retrograded rice flour and squash(p<0.05). Thus, optimal mixing quantity of squash and retrograded rice flour for squash sikhye was identified as 114 g and 65 g, respectively. Comparison of sensory qualities of four samples, namely squash sikhye with and without retrograded rice, and two commercial products, showed that squash sikhye including retrograded rice flour had the best quality in terms of color, taste, mouth feeling, flavor and overall acceptability (p<0.05). Thus the squash sikhye with retrograded rice flour can be the potential products as a health benefit beverage for the old adult and the young generation.

  • People's interests in coffee are increasing with the expansion of coffee market. In this trend, people's taste becomes more luxurious and coffee bean's quality is considered to be very important. Currently, bean defects are mainly detected by experienced specialists. In this paper, a detection system of bean defects using machine learning is presented. This system concentrates on detecting two main defect types : bean's shape and insect damage. Convolutional Neural Networks are used for machine learning. The neural networks are comprised of two neural networks. The first neural network detects defects in the bean's shape, and the second one detects the bean's insect damage. The development of this system could be a starting point for automated coffee bean defects detection. Later, further research is needed to detect other bean defect types.
