Color Changes in Fresh-cut Fruit and Vegetables and Its Pretreatment Processing (신선편이 (fresh-cut) 식품의 변색 및 포장 전 처리방법)

  • The market sales of fresh-cut fruit and vegetables have grown rapidly in recent decades as a result of changes in consumer trend. Choosing the proper pretreatment of fruit and vegetables before minimally processing is very important because appearance is the most fundamental factors affecting the quality of fresh-cut products. This review describes the biochemical bases for color changes of fruit and vegetables including browning, discoloration, and color changes of carrots and alliums. Understanding pathway of pigments in minimally processed fruit and vegetable and preventing the way of color change should be emphasized for successive packaging system. This review also describes pretreatment of fresh-cut fruit and vegetables to improve the prolonging the shelf-life and maintenance of its qualities.

Feeding Habits of Lateolabrax Japonicus in the Eelgrass ( Zostera Marina ) Bed in Kwangyang Bay (광양만 장피밭에 서식하는 농어 ( Lateolabrax Japonicus ) 의 식성)

  • Feeding habits of Lateolabrax Japonicus collected from the eelgrass bed in Kwangyang Bay from January 1994 to December 1994 were studied. L. Japonicus was a carnivore which consumed mainly amphipods (gammarid amphipods and caprellid amphipods), crabs, caridean shrimps and copepods. Its diets included small quantities of fishes, mysids, polychaetes, tanaids and isopods. Three distinct ontogenetic feeding groups were noted : (1) 1~2 cm SL individuals preyed heavily on copepods. (2) 2~15 cm SL individuals preyed heavily on amphipods. (3) individuals over 15 cm SL preyed heavily on crabs, caridean shrimps and fishes. L. Japonicus showed seasonal changes in prey composition. These changes were not caused by seasonal changes in food availability, but by changes in the size composition of L. Japonicus occurred in the eelgrass bed.

Mixed Methods Research on the Intercultural Sensitivity of Summer Program Participants; Comparison of US Participants and Korean Language Partners

  • This study was conducted as part of a summer Korean language and culture program at a university in Korea, aimed at examining the changes in intercultural sensitivity among American students who participated in the program, as well as the Korean students who served as their language partners. The research utilized a mixed-method approach combining qualitative and quantitative analysis. To derive research findings, pre- and post-program Intercultural Sensitivity Scale surveys were administered to participating students and semi-structured interview data were collected from a randomly selected group of six students. The research findings indicated that among a total of twenty-seven students including both American and Korean students, significant changes in intercultural sensitivity were observed in the domain of Interaction Engagement. Furthermore, fourteen American students showed significant changes in their Interaction Confidence, while the Korean students who participated as language partners did not exhibit significant changes in the five subdomains of intercultural sensitivity.

  • The paper describes estimation errors of unsteady flowrate measurements due to parameter changes in a quasi-remote instantaneous flowrate measurement method (abbreviate as QIFM) and an instantaneous flowrate measurement method using two points pressure measurements (abbreviate as TPFM). By introducing error performance index, the influence of parameter changes on the accuracy, and dynamic response of the estimated unsteady flowrate are evaluated. Of four parameters, the variation of the length of the pipeline and speed of sound produce large errors in the estimated unsteady flowrate during transient periods. The effect of kinematic viscosity of the working fluid(oil) is relatively insensitive in unsteady flowrate estimation.

  • Iris recognition is a biometric technology which can identify a person using the iris pattern. It is important for the iris recognition system to extract the feature which is invariant to changes in iris patterns. Those changes can be occurred by the influence of lights, changes in the size of the pupil, and head tilting. This paper is appropriate for the embedded environment using local gradient histogram embedded system using iris feature extraction methods have implement. The proposed method enables high-speed feature extraction and feature comparison because it requires no additional processing to obtain the rotation invariance, and shows comparable performance to the well-known previous methods.

The effect of a physical activity on blood cholesterol in older adults (노인의 신체활동이 혈중지질에 미치는 영향)

  • Despite well-known benefits of physical activity for older adults, most older adults remain significantly underactive. The purpose of this study was to examine the effects of a physical activity on blood cholesterol in older adults with an inclusive, choice-based physical activity promotion program to increase lifetime physical activity levels of seniors. A six-month comparison-group trial was conducted with 14 older adults(experimental group = 8, control group = 6) in community senior center. Changes in self-reported physical activity and blood cholesterol were evaluated using paired t-test. The intervention group increased estimated caloric expenditure by 858 calories/week in physical activities of any intensity (p=.050), total cholesterol(p=0.049), high density lipoprotein cholesterol(p=0.045). Control group changes were also negligible. The program led to meaningful physical activity increase. Individually tailored programs to encourage lifestyle changes in seniors may be effective and applicable to health care and community settings.

  • The speedy advance of network technology with axis internet gives the business opportunities to the today's firms and also makes them apply the intranet and groupware to their management. And, the firms admit these technological changes and expand the investment on the network. But, the firm's plans to cope with the changes which is caused by the appliance of the network technology to their firms are not prepared yet. Especially, the firm's managers are particularly wondering on how to use the already invested network hardware. In this article, we investigated the advance process and direction of the network technology like internet, groupware, and intranet, the firm's efforts to build network system, and the changes of the business process procedures. To apply the new technologies such as intranet and groupware into the business, the firms have to change the function of computer center from the programming to the user training and the management of network and computing resources, and they need to standardize their business process.

  • Currently, the global atmosphere around the world is altering at a very rapid pace. Among those changes, some are beneficial, but most of the changes are lead to destruction to our planet. The area of environmental science is a significant resource for learning more about these changes. Due to the urbanization, the human population is increasing, natural resources becoming very limited. To solve the limited resources issues, recycling is absolutely an alternative source for the new demands and limitations. Recycling education is very important to raise awareness among students and their communities about the need for recycling and what materials are recyclable locally. In this paper, we reported the role of sustainability science and technology and the impact of recycling research education in the middle schools, both in developing countries and Asian countries and also we included the brief data of global recycling of waste.

Assessment of Quality Changes in Mackerel Scomber japonicus During Refrigerated Storage: Development of a Freshness Indicator (냉장 저장 중 고등어(Scomber japonicus)의 선도 지표 개발을 위한 품질 특성 평가)

  • No freshness indicator for fish has yet been established. Thus, we investigated changes over time in mackerel quality in an effort to development useful indicators. Fresh whole mackerel Scomber japonicus were stored at $4^{\circ}C$ immediately after capture and quality changes were evaluated every 3 days for a total of 15 days. Whole fish were divided into ventral parts (VPs) and dorsal parts (DPs); we measured the trimethylamine (TMA) and volatile basic nitrogen (VBN) levels, pH values, and color values in/of these parts. The TMA and VBN levels tended to increase during storage and the TMA changes in VPs were higher than those in DPs. In particular, the VP TMA content attained a maximum of 3.68 mg/100 g at 6 days, and the VBN content attained a maximum of 20.88 mg/100 g at 9 days, suggestive of initial fish spoilage. The pH ranged from 5.99-6.17 over the first 3 days and from 6.17-6.38 from days 6-15. Surface color changes on VPs and DPs were explored. Significant decreases in both VP lightness and yellowness were evident after 3 days. The data suggest that both TMA level and lightness of the color are valuable indicators of freshness in the initial stage of mackerel retail.
