  • This study was carried to develop the new material of functional food which antioxidant of natural substances of sprouts. We compared antioxdiative activity and antioxidant substances exist in sprouts. Antioxidaive activities of sprouts were measured by total polyphenolic acid contents, electron donating activity(EDA), SOD-liked activity and hydroxyl radical scavenging ability. Total polyphenolic acid content was very higher in Rape sprouts extract(Rap) than other sprout extracts. Also Rape extract was showed the most excellent antioxdiative activity in SOD liked activity at 86.94%. The EDA was ordered Rape sprouts extract(Rap)>Tatsoi sprouts extract(Tat)>Broccoli sprouts extract(Bro)>Alfalfa sprout extract(Alf). Hydroxy radical scavenging ability was the most effective in Rape sprouts extract(Rap). Therefore we could be certain that Rape sprouts extract(Rap) was the most effective in antioxidative activity from sprouts.

  • Edible sprouts are highly nutritious, containing numerous health-promoting phytochemicals and nutrients. However, the process of sprouting is subject to potential contamination by microorganisms attached to the seed coat. The objective of this study was to determine the effects of air anions generated by spray ionization on growth and sterilization of edible sprouts. Treatment with air anions has positive effects on plant growth and sterilization in 4 kinds of sprouts. Hypocotyl length in red cabbage and kale increased approximately 1.26-fold and radicle length of lettuce, red cabbage, and kale increased 1.4 to 1.6-fold compared to the control. The fresh weight of sprouts in the spray-ionization treatment was significantly (16.0-38.5%) higher than that of the controls. Radicle activity in sprouts exposed to anions was higher than that of the control in all species. Bacterial counts on lettuce, red cabbage, and tatsoi decreased significantly (by 41%, 66%, and 19%, respectively), and bacterial colonies also declined in drainage water. Our findings suggest that spray-ionization treatment is useful for improving sprout growth and for sterilizing sprouts.

  • Brassica spp. vegetables have been known to have biological activities such as anti-cancer and anti-inflammatory activities. In this study, we investigated the in vitro physicochemical characteristics and antioxidant activities of commonly used Brassica spp. sprout vegetables such as kohlabi (Brassica oleracea var. gongyloides), red radish (Raphanussativus L. var. sativus), broccoli (B. oleracea var. italica), cabbage (B. rapavar. glabra Regel), rape (B. napus), radish (R. sativus), and tatsoi (B. campestris var. narinosa) sprouts. Our results showed that the vegetables with the highest total phenolics contents were the radish sprout ($24.40{\pm}1.24mg\;TAE/g$) and kohlabi sprout extracts ($23.97{\pm}0.46mg\;TAE/g$). Furthermore, the vegetable with the highest total flavonoid content was the radish sprout extract ($15.30{\pm}1.35mg\;CE/g$). However, the kohlabi sprout extract showed the highest DPPH radical scavenging value ($IC_{50}=1.95mg/mL$) and ORAC value (79.03 mM TE/g). In addition, the six kinds of Brassica spp. sprout vegetable extracts, except tatsoi, significantly inhibited the reactive oxygen species (ROS) production and showed that intracellular oxidative stress is closely related tothe accumulation of differentiated adipocytes and fat during the adipogenesis of 3T3-L1 preadipocytes. These results suggest that Brassica spp. sprout vegetables, especially kohlabi and radish sprout extracts, can be used to develop natural antioxidants.
