Comparison of sweetness preference and motivational factors between Korean and Japanese children

  • Purpose: This study was performed to examine motivational factors affecting sweetness preference in Korean and Japanese children. We identified meaningful variables that could be targeted to nutrition education interventions designed to overcome innate barriers and reduce sweetness preference and sweet food intake in Korean and Japanese children. Methods: Questionnaire surveys and sweetness preference test were conducted to examine variables affecting behavioral intention (BI) regarding sweetness preference. Questionnaire variables were based on the theory of planned behavior. Participants were recruited from one urban school from each country. In total, 166 children (mean age: 8.4 years) and their guardians (n = 166) participated in the study. A trained research assistant provided all children with personal guidance regarding completion of the sweetness preference test and survey questionnaire at school. The data were analyzed using Pearson's correlation coefficients, t tests, repeated measure ANOVA, and stepwise multiple regression analysis (significance level: p < 0.05). Results: Perceived behavioral control (PBC) and parenting practice were significantly associated with BI in both groups. Motivation to comply affected BI only in Japanese children, whereas affective attitude was associated with BI only in Korean children. In predicting sweetness preference, BI was associated only in Japanese children, whereas sweets consumption frequency had a significant effect in Korean children. Conclusion: The study shows similarities and differences in motivational factors, which could be considered when developing nutrition education programs in Korea and Japan. PBC and parenting practice were common factors in predicting BI. In predicting sweetness preference, BI had a significant effect on Japanese children, whereas sweets consumption frequency was the greatest contributor in Korean children.

동북아시아인의 단맛에 대한 인지도 및 기호도 비교 연구 (A Cross-Cultural Study of the Awareness and the Preference on Sweet Taste among the Northeast Asians)

  • The of this study was to the abilities of Northeast Asians to discriminate sweetness on foods and their preference sweetness. Panels of Korean, Japanese and Chinese three sample -sucrose solutions, bulgogi, julienned radish salad- in which the sucrose levels had been manipulated to produce five samples of each. The sucrose solutions were prepared 1%, 3%, 5%, 7%, 9% sucrose to the water. Bulgogi and julienned radish salad 3%, 9%, 15%, 21%, 27% sucrose to the recipe. As, the three ethnic groups significant differences in test of sweetness in sucrose solutions(79%). Korean(a=1.164) to be the most sweetness, compared to Japanese(a=1.063) and Chinese(a=0.999). All ethnic groups preferred $3{\sim}7%$ solution, and Korean than Japanese and Chinese. Ethnic groups significant differences in sweetness of the julienned radish salad 21% sucrose. Korean(a=1.054) appeared to be the most able to detect the sweetness, compared to their Japanese(a=0.785) and Chinese(a=0.642). Both Korean and Japanese the strongest preference for the 15% julienned radish salad, the Chinese preferred the 21%. The abilities of ethnic groups to detect the sweetness in bulgogi significant differences high concentration(more than 27%), and the result of regression analysis on the awareness of sweet taste order Korean(a=0.918), Japanese(a=0.832), Chinese(a=0.690). All groups preferred the $9{\sim}21%$ bulgogi the most, Japanese showed higher preference 15% bulgogi than did Korean and Chinese.

파운드케익의 단맛조절과 보존기간 및 조직감 향상을 위한 Na$\pm$2-(4-methoxyphenoxy)propanoate의 응용 (Application of Sweetness Inhibitor, Na$\pm$2-(4-Methoxyphenoxy)propanoic Acid, to Modify Sweetness and to Improve Shelf Life and Texture in Pound Cake)

  • 본 연구에서는 표준 당 용액과 파운드 케익에서 단맛 억제제인 Na-PMP의 단맛 조절 기능을 증명하였다. 설탕은 여러 식품에서 수분 보유력, 조직감 그리고 맛과 관련된 식품의 특성과 같은 성질을 제공하는 중요한 성분 중의 하나이다. 그러나 식품에서 이러한 장점을 얻기 위하여 첨가하는 설탕의 양은 적절한 단맛의 범위를 벗어나는 과도한 양이므로 식품의 향미를 저해하는 결과를 초래하게 된다. 이러한 문제점을 해결하기 위하여 단맛 억제물질인 Na$\pm$2-(4-methoxyphenoxy)propanoate(Na-PMP)을 식품에 적용하였다. 먼저 2.5, 5.0, 7.5, 10.0%의 설탕 용액과 이 농도의 설탕 용액과 같은 단맛 강도를 갖도록 과당 용액을 제조하였다. 이 용액 각각에 250과 500 ppm의 두 가지 수준으로 Na-PMP를 혼합하여 저해 정도를 측정하였다. 이 두 가지 단맛 억제제의 농도에서 모두 단맛 강도가 유의적으로 저해되었다. 이 표준 용액에 대한 결과를 바탕으로 단맛 억제제를 파운드 케익에 적용하였다. 우선 과량의 설탕(10, 20, 30%)이 첨가된 파운드 케익에 대한 부피, 경도, 수분함량, 저장성에 대한 검사를 실시하였다. 물리적 측정 결과 설탕이 30% 더 첨가된 케익이 조직감과 저장성면에서 품질이 가장 좋았기 때문에 이 케익에 단맛 억제제를 45 ppm(1.5% of 10,000 ppm Na-PMP), 52.5 ppm(1.7% of 10,000 ppm Na-PMP,) 60 ppm(2.0% of 10,000 ppm Na-PMP)의 세가지 수준으로 첨가하여 관능검사를 실시하였다. 45 ppm의 Na-PMP를 첨가한 것이 파운드 케익의 기본 배합비와 단맛에 있어서 유의적 차이를 보이지 않았다. Na-PMP의 첨가는 설탕의 장점을 유지하면서 파운드 케익의 과량의 단맛을 효과적으로 억제하였다.

고추, 젓갈 및 소금농도가 김치의 맛에 미치는 영향 (Effects of Red Pepper, Salt-Fermented Anchovy Extracts and Salt Concentration on the Tastes of Kimchi)

  • 김치에 고춧가루, 소금, 젓갈 등의 첨가량을 달리하여 김치의 관능적 특성 변화를 살펴보았다. 김치의 염도가 2%가지는 신맛과 매운맛이 강하였지만 그 이상의 염농도에서는 신맛, 매운맛, 단맛, 감칠맛 등을 억제하였고 고춧가루를 첨가하여 매운맛이 상승함에 따라 3%까지는 신맛은 비례하여 증가하였지만 그밖의 짠맛, 단맛, 감칠맛은 억 제시 켰으며 젓갈 첨가는 감칠맛의 상승과 함께 짠맛과 단맛을 상승시켰으나 매운맛과 신맛은 억제하였다. 이상과 같은 조미료 및 향신료의 맛과 김치 맛을 일원일차 상관분석을 통해 알아본 결과 소금의 짠맛은 매운맛, 신맛, 단맛, 감칠맛과 각각 -0.9857, 0.9878, -0.9847, -0.9076을, 또 고추의 매운맛은 신맛, 단맛, 짠맛, 감칠맛과 각각 0.8353, -0.9316, -0.9020, -0.9901로 모두 유의적인 음의 상관관계를 나타내어 김치의 매운맛과 짠맛의 상승은 김치의 전반적인 맛을 억제시켰다. 한편 감칠맛은 매운맛과만 유의적인 음의 상관관계를 보였고 단맛과 짠맛과는 유의적인 양의 상관관계를 보여 매운맛과 짠맛과는 다른 경향을 보였다.

  • This study was performed to aid the development of a reduced-calorie ssanghwa beverage, by using substitutes for high fructose com syrup(HFCS). The relative sweetness levels of HFCS, aspartame, acesulfame-K, and glucosyl stevia solutions were examined in comparison to a 10% sucrose solution in a binary solution model. And the sensory properties of ssanghwa beverages containing aspartame, acesulfame-K, and glucosyl stevia were evaluated at the equi-sweetness to HFCS. In the binary solution model, the relative sweetness of HFCS to sucrose was 0.8, while the values for aspartame, acesulfame-K, and glucosyl stevia were 140, 170, and 100, respectively. Sweet taste and sweet after taste were not significantly different between the HFCS, aspartame, acesulfame-K, and glucosyl stevia solutions. On the other hand, bitter taste, first taste, and overall eating quality were significantly different between the HFCS and aspartame solutions and between the acesulfame-K and glucosyl stevia solutions. Finally, the ssanghwa beverages sweetened with HFCS, acesulfame-K, and aspartame only had slight differences in sensory properties. However, the sensory properties of the beverages sweetened with HFCS and glucosyl stevia, respectively, were significantly different.

Evaluation of Firmness and Sweetness Index of Tomatoes using Hyperspectral Imaging

  • The objective of this study was to evaluate firmness, and sweetness index (SI) of tomatoes (Lycopersicum esculentum) by using hyperspectral imaging (HSI) in the range of 1000-1400 nm. The mean spectra of the 95 matured tomato samples were extracted from the hyperspectral images, and the reference firmness and sweetness index of the same sample were measured and calibrated with their corresponding spectral data by partial least squares (PLS) regression with different preprocessing method. The results showed that the regression model developed by PLS regression based on Savitzky-Golay (S-G) second-derivative preprocessed spectra resulted in better performance for firmness, and SI of tomatoes compared to models developed by other preprocessing methods, with correlation coefficients (rpred) of 0.82, and 0.74 with standard error of prediction (SEP) of 0.86 N, and 0.63 respectively. Then, the feature wavelengths were identified using model-based variable selection method, i.e., variable important in projection (VIP), resulting from the PLS regression analyses and finally chemical images were derived by applying the respective regression coefficient on the spectral image in a pixel-wise manner. The resulting chemical images provided detailed information on firmness, and sweetness index (SI) of tomatoes. Therefore, these research demonstrated that HIS technique has a potential for rapid and non-destructive evaluation of the firmness and sweetness index of tomatoes.

당 알코올을 이용한 뽕설기의 관능적 특성 (Effects of various sugar alcohols on the sensory properties of Mulberry rice cake)

  • The effects of the substitution of sugar alcohol for sugar on the sensory properties of mulberry rice cake, 'Bbongseolgy', were evaluated in two phases. First, the relative sweetness of xylitol, erythritol and palatinose to the sucrose in the food systems were examined with paired comparison tests. Second, the sensory properties of the mulberry rice cake containing xylitol, erythritol and palatinose substitution for sugar at a sweetness level equal to sucrose were studied. Sensory analysis for the mulberry rice cake characteristics was conducted and consumer acceptability tests were performed. The physical properties of mulberry rice cake were also examined. The relative sweetness of xylitol, erythritol and palatinose, compared to sucrose, in the solid model food system were 1.00, 0.63 and 0.42, respectively. This result showed that the relative sweetness of xylitol, erythritol and palatinose to sugar was slightly lower than those in the liquid model food system, in which flavor did not influence the sweetness. Mulberry rice cake with erythritol or palatinose had very similar characteristics, with lower fracturability and tenderness, and higher moistness, compactness and chewiness compared to that with sucrose or xylitol. Mulberry rice cake with xylitol was significantly the most fracturable, grainy, and driest, and the least adhesive, among the samples. The consumer test showed no difference in overall acceptability among the samples and consumers perceived differences only in moistness, coarseness and compactness among the samples. Mulberry rice cake with erythritol was the most favored in many characteristics. These results indicate that erythritol substitution for sugar inmulberry rice cake is suitable as a low-calorie rice cake with beneficial functions to improve in the health and texture of the rice cake.

Exploring parenting variables associated with sweetness preferences and sweets intake of children

  • BACKGROUND/OBJECTIVES: Excessive sugar intake is one of the causes associated with obesity and several chronic diseases prevalent in the modern society. This study was undertaken to investigate the effect of parenting variables based on the theory of planned behavior, on the sweetness preferences and sweets intake of children. SUBJECTS/METHODS: Parents and their children (n = 103, aged 5-7 years) were enrolled to participate in a survey for this study, after providing the required informed consent. Parents were asked to fill out a self-administered questionnaire at their residence. The sweetness preference test for children was conducted at a kindergarten (or daycare center) by applying the one-on-one interview method. RESULTS: The children were divided into two clusters categorized by the K-mean cluster analysis: Cluster 1 had higher sweetness preference (0.42 M sugar, 35%; 0.61 M sugar, 65%); Cluster 2 exhibited lower sweetness preference (0.14 M sugar, 9.5%; 0.20 M sugar, 9.5%; 0.29 M sugar, 81%). Cluster 1 had a higher frequency of sweets intake (P < 0.01), and lower sweets restriction (P < 0.05) and nutrition quotient score (P < 0.05). Sweets intake was negatively correlated with the nutritional quotient (r = -0.204, P < 0.05). The behavioral intention of parents was higher in cluster 2 (P < 0.05), while affective attitude, feeding practice, and reward were higher in cluster 1 (P < 0.001, P < 0.05, and P < 0.01, respectively). Furthermore, behavioral intention of parents showed a negative correlation with affective attitude (r = -0.282, P < 0.01) and feeding practice (r = -0.380, P < 0.01), and a positive correlation with subjective norm (r = 0.203, P < 0.05) and parenting attitude (r = 0.433, P < 0.01). CONCLUSIONS: This study indicates that the sweetness preferences and sweets intake of children is related to the parent's affective attitude, feeding practice and reward. We suggest that to reduce the sugar consumption of children, guidelines for access to sweets and pertinent parenting practices are required.

역치를 활용한 설탕 대체 감미료의 적용 및 감미도에 대한 식염의 효과 (Alternative Sweetener of Sucrose by using Threshold Value and Effects of Salt Addition on the Sweetness)

  • Model system을 이용하여 설탕 수용액의 감미 역치를 구한 결과 0.4%였고, 저당물엿 및 환원물엿 등 감미원 혼합액의 감미 역치는 0.75-0.80%로 측정되었다. 각각의 감미 역치를 설탕에 대한 상대적 감미도로 환산 보정한 결과 0.64-0.67%였고, 이 역치를 설탕에 대한 감미로 환산하여 감미도를 산출하였다. 감미원 혼합액의 설탕에 대한 상대적 감미도 0-20 사이의 관계식은 $y=0.0038x^2-1.3171x+13.497,\;R^2=0.9736$(단, x=감미원의 상대적 감미도, y=역치, R=상관계수)로 계산되었다. 감미원별 역치를 이용하여 감미도를 계산한 결과 저당물엿과 환원물엿을 넣은 통팥앙금의 감미도는 설탕으로 제조된 것의 $55^{\circ}Brix$보다 낮은 32.78-34.32의 값을 나타내었다. 설탕과 식염의 감미에 대한 상승효과를 조사한 결과 0.4%와 1%설탕 수용액에 대해서는 감미의 상승효과가 나타나지 않았고, 2% 이상의 설탕 수용액에서는 식염을 0.05% 첨가했을 때 감미의 상승효과가 가장 높은 것으로 나타났다. 통팥앙금에 식염을 0.2% 첨가했을 때 유의성은 없었으나 다른 시료에 비해 감미가 상승하는 것으로 나타났다.
