A Literature Review Examining the Ingredients and Cooking Methods of the Side Dishes in "Gyuhapchongseo" ("규합총서(閨閤叢書)"에 수록된 부식류의 조리법에 관한 고찰)

  • "Gyuhapchongseo" was published in 1809, and introduced the cooking method of the noble class in the late Joseon dynasty. The characteristics of the side dishes in "Gyuhapchongseo" are as follows. Firstly, red pepper was used as whole red pepper, shredded red pepper, powdered red pepper, or Korean hot pepper paste. Secondly, salt-fermented fish was used in some forms of Kimchi, including Sukbakgi, Dong A Sukbakgi, and Gyochimhae. Thirdly, to retain the juiciness of meat during roasting, meat was spread cold water on the surface, dipped into the washing water of rice or wrapped with wet paper. Fourth, to improve the visual effect of a dish, cooked foods were displayed with various color schemes, panfried foods with two tones (egg white and yellow) of color on each side and the use of radish pigmented with deep red color. On examination of the characteristics of food in "Gyuhapchongseo", I would suggest applicable practices for the present cuisine. The use of gravy produced from the boiling down of fish flesh could raise the nutritive value of Kimchi. In "Gyuhapchongseo", Yak po (semi-dried minced beef) is noted as being good for elderly people with bad teeth. A steamed dish with dog meat in Dong A in "Gyuhapchongseo" is made by hollowing out Dong A and putting a dog in it to cook the dog meat to well done in a fire made with the hulls of rice. This technique could be used to present cuisine for steamed and roasted dishes using food ingredients such as pumpkin, sweet pumpkin, and overripe cucumber.

  • Organic acids of Kochuzang (red pepper paste) prepared from glutinous rice, polished barley, wheat flour and sweet potato were analyzed by a gas chromatography. Lactic, pyruvic, succinic, fumaric, malic, pyroglutamic and citric acid were identified. And trace amount of oxalic acid was found in the Kochuzang prepared from sweet potato. The dominant organic acid of all samples was pyroglutamic acid, followed by pyruvic and citric acid. The organic acids were lower in Kochuzang from wheat flour than in other samples. The contents of succinic and fumaric acid were highest in Kochuzang prepared from sweet potato and were lowest in polished barley Kochuzang.

Comparison Plant Growth and Fruit Setting among Sweet Pepper Cultivars of Red Line (적색 계통 파프리카 품종 간 생육 및 착과 특성 비교)

  • To suggest the basic data for exporting enlargement of sweet pepper (Capsicim annuum L.), this study compared plant growth and fruit setting characteristics among 8 cultivars of red line. At 23 weeks after planting, plant height was long in 'Debla', 'Cupra', 'Thialf', 'Viper' and 'Spider', and was shot in 'Scirocco', 'Ferrari', 'Special'. 'Debla' had a few nodes number and long internode length. For 23 weeks after planting, weekly increment of plant hight and number of developed node were many in 'Debla' and 'Cupra', were few in 'Special' and 'Ferrari'. Average fruits of over 200 g was harvested in 'Viper', 'Spider' and 'Debla', average fruits of range of 180~200 g was harvested in 'Special' and 'Thialf', and average fruits of range of 160~180 g was harvested in 'Scirocco' and 'Cupra'. Cultivars harvested heavy fruits except in 'Debla' was high in percentage of irregular fruit size. Number of fruit setting on plant was many in 'Cupra' and 'Ferarri', ripening first was many in 'Ferarri', 'Scirocco' and 'Viper'.

Development of Simple Monitoring Techniques of Fungus Gnats, Bradysia agrestis (Diptera: Sciaridae) Larva and Adult in Sweet Pepper Greenhouse (착색단고추 시설하우스에서 작은뿌리파리(Bradysia agrestis)의 간이예찰 기술 개발)

  • A simple and easy method was developed to monitor fungus gnats, Bradysia agrestis on sweet pepper in greenhouses. The larvae of B. agrestis were more attracted to potato discs than other sweetpotato, carrot, garlic, radish, and onion discs. The average numbers of B. agrestis found in each disc were 9.7 (potato), 6.0 (sweetpotato), 4.3 (carrot), 0.7 (garlic), 3.8 (radish), and 1.0 (onion). The number of larvae also increased by the size of disc surface and resulted in 2.1 larvae in 10${\times}$10${\times}$10 mm, 3.4 larvae in 20${\times}$20${\times}$10mm, and 3.9 larvae in 30${\times}$30${\times}$10 mm. The adults were more attracted to a yellow sticky trap (50.0 numbers) than a blue (18.0 numbers) or a white (3.7 numbers) traps. The optimal height for installing sticky trap in the greenhouse was determined as less than 50 cm from the rockwool bed based on the adults caught in the traps; 50.0 in less than 50 cm, 4.3 in 50-100 cm, and 2.0 in more than 100 cm height.

Change of Internal Temperature and Humidity According to Kind of Covering Materials in Sweet Pepper's Greenhouse (착색단고추 재배 온실의 피복재 종류에 따른 내부 온.습도 변화)

  • This research was conducted to investigate difference of internal temperature, humidity, and plant growth according to covering materials in sweet pepper's greenhouse. For growing period, daily mean internal temperature was not different between glass (GH) and plastic film house (PH), but the changed volume was more PH than GH. Internal humidity deficit was more PH than GH as that was 4.3 $g{\cdot}m^{-2}$ and 5.6 $g{\cdot}m^{-2}$, respectively. In change of internal temperature effected by different intensity of external light, that of PH was fasted twice that of GH, and that's tendency was effected by difference of internal temperature for several hours after sunrise. Leaf growth and photosynthetic product were more GH than PH, productivity of GH was better 80 percents than PH. As results, To improve productivity in PH compared with productivity in GH need to be the detailed managements of internal environmental factors in early period after sunrise.

Effects of Greenhouse Covering Material on Environment Factors and Fruit Yield in Protected Cultivation of Sweet Pepper (파프리카 재배 온실의 피복재 종류에 따른 환경요인과 수량성)

  • To analysis effect of environment factors on productivity of sweet pepper according to greenhouse covering material (glass, plastic film), this was investigated. In glasshouse, outside light was positively correlated with yield as that $100MJ{\cdot}m^{-2}$ of outside light increased $300{\sim}500g{\cdot}m^{-2}$, also cumulative temperature was same tendency. On possibility of model development for yield estimate cumulative temperature was high than outside light. According to covering material, leaf photosynthesis, productivity per out-side light and term in glasshouse was more high 13%, 46%, and 47% compared with plastic film house, respectively. Result of analysis of effect of light, temperature, and $CO_2$ on yield, relative yield coefficient, yield increment coefficient, and yield reduction coefficient in glasshouse were more high 25%, 73%, and 34% compared with plastic film house, respectively. Hence, sweet pepper's growing in glasshouse compare with plastic film house had more productivity, but that had more sensitivity to charge of environment factors.

Dry Matter Production, Distribution and Yield of Sweet Pepper Grown under Glasshouse and Plastic Greenhouse in Korea (유리온실과 플리스틱온실 재배환경하에서의 파프리카의 생장, 건물분배율 및 수량)

  • This research was conducted to compare drymatter production and yield pattern between commercial glasshouse (G) and plastic greenhouse (PG) in Korea. In both greenhouses sawing and plating of sweet pepper was 28 August and 27 September, 2007. Destructive measurement and yield of sweet pepper, cv. 'Derby', was obtained from January to May, 2008. Averaged light transmissivity over 20 times observed 65% in G and 51 % in PG. The averaged daily radiation sum of greenhouses during whole growing period was $9.03MJ/m^2/day$ for G and $7.37MJ/m^2/day$ for PG Leaf area index (LAI) in G crop was 36% higher than the crop in PG at the end of experiment (247days after planting: DAP), whereas there was no significantly difference for 212 DAP in both greenhouses. Total dry matter production was $1759.9g{\cdot}m^{-2}$ for G and $1308.5g{\cdot}m^{-2}$ for PG Fruit production observed $14.1kg{\cdot}m^{-2}$ in G and $7.8kg{\cdot}m^{-2}$ in PG. There was slightly difference measurement of dry matter distribution of generative or vegetative parts to total dry matter between G and PG.

Biological Control Based IPM of Insect Pests on Sweet Pepper in Greenhouse in the Summer (여름작형 시설재배 파프리카의 주요 해충에 대한 생물적방제 기반 종합관리)

  • Biological-control-based-integrated-pest-management of major pests occurring on sweet pepper in greenhouse during summer season was tried. As many as 2.1 Orius laevigatus per $m^2$ were released in two times on June 6 and 19, and the population of thrips was kept under control and accordingly the damage was negligible throughout the season. To control aphids, a total of 0.8 Aphidius colemani per $m^2$ were released in four times, 0.2 of them at a time, flonicamid on May 14 and July 18 and pymetrozine on June 14 and September 4 were sprayed on the spots of high aphid occurrence to reduce the release of the wasp, and the density of aphids was kept under control. Whitefly was controlled successfully by releasing a total of 343.4 Amblyseius swirski per $m^2$ in nine times, 38.1 of them at a time, from May 9 until November 12 and dinotefuran was sprayed on November 12 when the density of whitefly increased up to 200 per trap. Tetranichus kanzawai was controlled by both Phytoseiulus persimilis which was released a total of 44.4 per $m^2$ in five times 8.9 of them at a time from May 23 to September 10, and the A. swirski which was released for the control of whitefly.

Effect of Cultivation Time on the Incidence of Brown Fruit Stem of Glasshouse Sweet Pepper (Capsicum annuum L.) (재배시기가 착색단고추의 과병무름증 발생에 미치는 영향)

  • The objectives of this study were to determine the effect of cultivation time on the incidence of brown fruit stem (BFS) in glasshouse sweet pepper (cv. Special) and to investigate environmental causes of this disorder. The plants transplanted on 31 August (T1) showed more incidence of BFS than those on 24 November (T2) (6.1% vs.2.9%; P<0.01). The BFS symptom began to appear after completion of fruit enlargement, more often around fruit coloring period. Comparing the environmental factors between T1 and T2, with their data collected for 3 weeks around fruit coloring period, the factor that was most likely responsible for BFS incidence was found to be the night-time humidity deficit (HD) ($1.9g{\cdot}m^{-3}\;vs\;2.9g{\cdot}m^{-3}HD$). These results were reconfirmed as T1 was compared to the plants (T3) that were transplanted at a similar time of the following year to T1, but designed to reduce BSF by increasing air HD via heating at night. That is,T3 had much higher night-time HD than T1 ($5.9g{\cdot}m^{-3}\;vs\;1.9g{\cdot}m^{-3}HD$), and showed no incidence of BFS. These results indicated that, to prevent BFS incidence in the winter-harvesting sweet pepper plants, air humidity at night should be controlled low, especially for the fruit coloring period after fruit enlargement period is completed.

Effect of Medium Materials on Growth and Yield of Sweet Pepper(Capsicum annuum L.) in Long Term Bag-Culture (배지종류가 단고추 자루식 장기 양액재배시 생육 및 수량에 미치는 영향)

  • This study was conducted to select useful medium material as a replacement for the rockwool in long term bag-culture of sweet pepper. The sole use of perlite and carbonized rice hull(CRH) as well as their mixture with various combinations were compared to the rockwool. The results are summarized as the followings : 1. Plant height and number of leaves did not significantly differ among media. However, in the mixture of CRH(1) : Perlite(1), stem diameter was thicker; plant weight and root weight were heavier, and T/R ratio was lower. 2. Although fruit length and number of fruits did not significantly differ among media, the mixture of CRH(1) : Perlite(1) provided longer fruit length, more fruits, heavier fruit weight, and greater yield. 3. Monthly yield was continuously increased from the first harvest in November to the harvest in May next year. The amount of increase in the fruit yield of the mixture of CRH(1) : Perlite(1) from the first harvest to the final harvest was significantly greater than the amount of increase of other media. 4. The amount of total nitrogen and phosphate was higher in mixture of CRH (1) : Perlite(1), while the amount of other elements did not significantly differ among mixtures.
