In order to identify the sugars of saponin originated from Korean ginseng, experimentations were made on the four kinds of ginseng. The results are summarized as follows. 1. The starch content of Ginseng-tail, White-ginseng 3 and 6 years old-whole ginseng were 10.4, 31.5, 8.2, 25.6% and total sugar of its were 37.0, 61.5, 64.5, 62.5% and free sugar were 7.6, 10.5, 11.3, and 10.7% respectively. 2. Saponins were separated from Ginseng-tail, White-ginseng, 3 and 6 years old-whole ginseng by modified SHIBATA method. looms of crude saponin was used for the Thin layer Chromatography (TLC) and thirteen to twelve spots of saponin were isolated by double development $(Solvent:\;CHCL_3\;:\;MeOH\;:\;H_2O=65\;:\;35\;:\;10)$ and by two dimensional development. $(Solvent:\;nBuOH\;:\;HOAC\;:\;H_2O=4\;:\;1\;:\;5)$ The Pattern of spot was not significantly different according to Ginseng sample. 3. Glucose was identified from the acid-hydrolyzate of Ginsen-tail saponin by paper chromatography and isolated the unknown chromatogram seems to be pentose.
This study was investigated quality characteristics of alcohol fermentation broths and by-produce produced from 4 type of brown rice varieties. The result showed that Daeanbyeo(A), Baekjinju(B) and Sulkyeong(C) produced the high alcohol content(9.5, 9.7 and 9.8%) by non-steamed alcohol fermentation period whereas the Goami(D) gave poor content(3.5%). In addition, the effect of total free sugar content were examined for non-steamed alcohol fermentation period. Among these 4 type, 244.2 mg% showed the highest contents in the Goami(D). The steamed alcohol fermentation showed higher sugar content in overall with slight difference between the various brown rice. The total dietary fiber content variation according to the alcohol fermentation methods in non-steamed and steamed periods came up with the highest content in the Sulkyeong(C) fellowed by Baekjinju(B), Daeanbyeo(A), and Goami(D). The total free amino acid content by alcohol fermentation methods timed out to show the highest content in non-steamed Goami by-product followed by Goami powder steamed Goami by-product Although, the above result revealed the lowest alcohol fermentation efficiency in non-steamed Goami, but it had the highest by-product utilizing capacity. Therefore, Goami(D) was the lowest alcohol yield in alcohol fermentation treated with non-steam among groups, but Goami by-products of the Goami had the various nutritional constitutes including starch, dietary fibers and free amino acids, which can be suggested to be used as various functional food ingredient.
${\alpha}-amylase$ activities of bean water was not significantly influenced by bean water concentrations but they were remarkably influenced by different temperatures and substrates. ${\alpha}-amylase$ activities of bean water on cooked starch were significantly higher than those on raw starch. ${\beta}-amylase$ and glucoamylase activities in 14% bean water were significantly higher than those in 7% bean water. Yukwa paste is glutinous rice flour paste. Bean water was added to Yukwa paste by 0, 7, 14% and incubated 0, 3, 6, 9, 12 hours at $60^{\circ}C$. The pH of Yukwa paste increased with bean water concentration and decreased with the incubation time. The viscosity decreased with bean water concentration and incubation time. The ruducing sugar content of Yukwa paste increased with bean water concentration and incubation time. The changes of reducing sugar content in cooked Yukwa paste were much higher than those in the raw one. ${\alpha},\;{\beta}-amylase$glucoamylase activities of Yukwa paste also increased with bean water concentration, and their activities were much higher on the cooked glutinous rice flour than those on the raw one. The SEM observation on the freeze-dried flour of Yukwa paste showed breakdown of amylopectin structure by addition of bean water in the paste.
This study examined the nutrient components and physicochemical properties of three new potato cultivars: Gui Valley, Bora Valley, and Gogu Valley, which were acquired from PotatoValley Ltd., and compared them to the Superior cultivar that is widely distributed in food markets. Amino acid, fatty acid, and mineral compositions, as well as total starch, reducing sugar, dietary fiber, vitamin C, and phenolic acid contents were measured. The gelatinization and pasting properties of the potatoes were evaluated using differential scanning calorimetry (DSC) and a rapid visco analyzer (RVA). The three new potato cultivars showed differences for various characteristics compared to the existing Superior cultivar. The Gui valley cultivar has a high potential for processing into items such as French fries or chips, due to its high starch content and low reducing sugar content. Bora valley showed an incredibly high phenolic acid contents, and Gogu valley contained high levels of dietary fiber, minerals, vitamin C, and essential amino acids. Overall, these cultivars are expected to be highly valuable items for develpment and applications of functional food.
This study was carried out to investigate heterosis in photosynthetic characteristics and yield of F$_1$ hybrid rice using genetic cytoplasmic male sterile lines. Two F$_1$ hybrid rices, HR7028A/Yongmoonbyeo and IR54756A/Yongmoonbyeo, showed heterobeltiosis in dry weight and leaf area at the heading date and at the 20 day after heading. HR7028A/Yongmoonbyeo showed heterobeltiosis and IR54756A/Yongmoonbyeo showed heterosis in chlorophyll content and RuDPCase activity in flag leaf, T-sugar and starch content in stem, and $CO_2$ fixation at the 20 day after heading as well as at the heading date. HR7028A/Yongmoonbyeo showed heterobeltiosis in number of panicles and grains per panicle, and IR54756A/Yongmoonbyeo had heterobeltiosis in number of panicles per plant. As results, heterobeltiosis of HR7028A/Yongmoonbyeo in yield was 11% and that of IR54756A/Yongmoonbyeo was 4%.

The study was carried out to set up alcohol fermentation condition for uncooked brown rice. Response surface methodology (RSM) was applied to optimize and monitor of the alcohol fermentation condition with uncooked brown rice. The primary variables were conducted the reaction surface regression analysis for the particle size of brown rice (20 40 60 mesh) the enzyme content (0.1,0.3,0.5%) and the agitating rate (0,100,200 rpm). Their optimization was 35~42 mesh for the size of particle and 0.32~0.43% for enzyme content by SAS (Statistical Analysis System). The coefficient of determination ($R^2$) in ingredients was admitted at the significant level of 5~10% in all ingredients except for a reducing sugar. Predicted values at optimum alcohol fermentation condition agreed with experimental values. During the fermentation, pH was decreased from 6.25 to 4.34, and total acidity was increased from 0.15 to 0.2. The amino acidity was decreased from 1.88 to 0.92, reducing sugar and total sugar contents were decreased 213 mg% and 1,077 mg%, respectively. Alcohol content was increased to 10% after 48 hr fermentation.
The biochemical effects of ABA and $GA_3$ on rice seedling stages were investigated from two rice cultivars, Dongjinbyeo and Samgangbyeo. Some of the results obtained are as follows ; The shoot growth was significantly increased at all concentrations of $GA_3$ compared to the control but it was completely inhibited by ABA. The root length was not affected by all concentrations of $GA_3$ except for the highest concentration of $10^{-3}M$. ABA had an inhibitary effect on root growth and showed similar trend to the shoot growth. By increasing the concentration of $GA_3$, sugar content of rice seedlings was increased and starch content was decreased. On the contrary, the treatment of ABA revealed that sugar content was decreasing with higher level of starch content. Chlorophyll content was greatly reduced at the all concentrations of $GA_3$ in both cultivars tested. Generally, the responses of root activity decreased with treatment of $GA_3$ but no difference in the activity was observed in Samgangbyeo. Major fatty acids of rice seedlings were investigated as palmitic, oleic, and linoleic acid with little contents of linolenic acid and stearic acid. The contents of these fatty acids were decreased with ABA and increased with $GA_3$ treatment, respectively. A protein band of 24 kD in the electrophoresis was observed with ABA treated rice seedlings but not with $GA_3$.
This study was conducted to determine the morphological responses of barley seedlings to NaCl stress and to investigate histological changes of cells with transmission electron microscope(TEM) after NaCl stress. Plant height and root length of 10-day old barley seedlings with NaCl stress were reduced and inhibition level was found to be more severe in the plant height than in the root length. The leaf length, leaf width and leaf area were shorter as well with NaCl stress than without NaCl stress. However, there was no difference in the number of roots between NaCl treatments. The weight of dry matter decreased at higher NaCl concentrations, especially at 100mM NaCl. The water content of shoots tend to decrease at higher NaCl concentrations, but there was no difference in the water content of roots, The reduced sugar content was greatly increase than starch. Cellulose content was higher in NaCl stressed-plant than control, and tended to decreased at higher NaCl concentrations. Lignin content also decreased NaCl stressed-plant but there was no tendency at NaCl stress concentrations. Electric conductivity of cell sap with seedlings was high with NaCl stressed-plant. Amount of cell sap gradually increased with time in the roots than in the shoots, The grana of chloroplasts was changed by 150mM NaCl concentration. The christe of mitochondria in root meristematic sells ruined in structure and cell wall of leaf and root was also ruined by NaCl stress.

Makgeolli is a liquor that represents Korea and is made by mixing yeast and water with starch. Physicochemical Characteristics and Antioxidant activities of rice, nuruk, water and Fermentation time different to Makgeolli. Alcohol content was 6.76~14.56%, Reducing sugar content 1.17~1.68g/L and M5~M6 samples was higher 1.68g/L~2.43g/L. M1~M9 samples pH 3.56±0.02 and total acid 0.45~0.83%. Makgeolli total phenol content was average 966.38mg/L and ABTS 0.77mM. The Antioxidant activity measurements of FRAP and ABTS showed a similar correlation with the total phenol content. Makgeolli showed a high correlation cofficient of r GAE / PRequiv=0.8582 and r GAE / TEAC=0.9769. We intend to make rice, yeast, brewing water, fermentation period, etc. different conditions of makgeolli and analyze the status of fermentation progress and use it as basic data of quality indicators of the fermented rice wine process.

In this study, the nutrients of a total of 4 species of popcorn, Oryun Popcorn, Oryun Popcorn 2, G-Popcorn and Gichan Popcorn, cultivated in Gangwon-do, were analyzed and compared. The contents of these products, including their general ingredients, inorganic substances, fatty acids, reducing sugar and starch, were analyzed. The moisture, crude ash and crude fat content of the dried popcorn species were 11.54-12.54%, 0.97-1.45% and 2.48-2.62%, respectively. The crude protein content was 9.68-11.75%. As for inorganic substances, the potassium and phosphorus content were the highest. Potassium was 228.25-310.46 mg/100g and was the highest in Oryun Popcorn, and the content of phosphorus was 276.04-310.00 mg/100g. As for fatty acids, 11 types were detected. The content of linoleic acid accounted for 52.89-55.76% of the total fatty acid content showing the highest amount followed by oleic acid (24.31-26.65%) and palmitic acid (14.20-15.92%). As for amino acids, total 16 types of amino acids were detected by specie, with glutamic acid making up 17.70-18.52% of total amino acids, the highest, followed by leucine (12.30-12.54%) and proline (10.34-10.92%) in that order. The creducing sugar content by specie was 4.68-5.13% and starch content was 42.14-46.14%.
