Bean sprouts are often cultivated in the circumstances prevailing in the improper using of germicide and growth enhancer. The influence of ingestion those bean sprouts are unknown. The components of the bean sprouts are needed to evaluate for food safety. The extracts of the control, 0.5 g/L germicide, 1 g/L germicide, 12.5 mL/L growth enhancer and 25 mL/L growth enhancer were used to compare the components in the experiment. Nuclear Magnetic Resonance spectroscopy (NMR) was used to analyze the extracts. Statistical analysis of metabolomics showed significant changes between the control and head and the stem of the bean sprouts. Significant changes in metabolites were identified with the bean sprouts cultivated with germicide and growth enhancer by applying qualitative and quantitative analysis. Similar changes in the area of the bean sprouts were observed after treated to germicide and growth enhancer. Although treating germicide and growth enhancer showed no particular harmful metabolites changes to human, it made significant changes in the morphological and the metabolites of the bean sprouts. These changes indicate that the germicide and growth enhancer has substantially potential to influence the growth of the bean sprouts.
This study was carried ou to compare sprouting and sprout growth after the stumps of four Quercus species(Q. mongolica, Q. variabilis, Q. acutissima and Q. dentata) were cut at 20cm from the soil surface in 1996 and 2000 at Mt. Taehwa, Kwangju-Gun, Kyounggi-Do, Korea. The results obtained were as follows: ⑴ Q. mongolica showed most vigorous sprouting, followed by Q. variabilis, Q. dentata, and Q. acutissima. ⑵ The sprouting ability was more vigorous when cut in winter to earl spring than that in summer. ⑶ The initial diameter growth of the sprouts for 2 year after cutting was the highest in Q. acutissima, followed by Q. dentata, Q. mongolica and Q.variabilis, but the growth for 5years after cutting was Q. variabilis > Q. mongolica > Q. dentata > Q. acutissima. ⑷ The height growth of sprouts for 2 years after cutting was the highest in Q. acutissima and followed by Q. mongolica, Q. dentata and Q. variabilis, but the growth for 5 years after cutting was Q. variabilis > Q. mongolica > Q. dentata > Q. acutissima. ⑸ Tending is needed for the stands of Q. variabilis and Q. acutissima to be regenerated successully by sprouting. ⑹ The sprouting ability of Quercus species decreased with incerasing stump diameter, while its diameter growth seemed to increase.
This study examined the irradiation effect of high energy x-rays on the growth of sprout plants seeds. particularly with regard to acidity, salinity and sugar content change. The experimental groups were one day old sprout plants seeds irradiated with 6MV x-rays at doses of 2, 5, 8, 10 Gy using a linear accelerator. The control group was not irradiated. After two weeks, sprout plants were grown and harvested for component analysis. The acidity of the x-ray irradiated radish and red radish groups were significantly higher than that of the control group and bok choi and buckwheat groups lower than that of the control group. The salinity and sugar content of the x-ray irradiated 5 groups were significantly lower than that of the control group and Soybean and Red radish groups higher than that of the control group. The cause of plants component change were estimated to have occurred by generate basic ions and radiation sensitivity by moisture content. Further genetic studies will be needed to confirm the correlation between high energy x-rays and the cause of plants component change.
Changes in the quality of buckwheat sprout treated with organic acid solutions such as ascorbic, citric and acetic acid were examined during storage in order to judge the feasibility of acid dipping as a pretreatment for extending shelf-life. Quality attributes of buckwheat sprout stored at $5^{\circ}C$ were measured in terms of microbial cell count, moisture content, soluble solids content, chromaticity, and sensory evaluation over different storage times. For microbial growth inhibition, combinations of 0.05% acetic acid and 0.5% citric acid or 1% ascorbic acid and 0.5% citric acid were more effective than other treatments. Slight changes were observed in moisture content among the treatments, whereas soluble solids content of each treatment was increased during storage. In chromaticity, the Hunter's a value of buckwheat sprout treated with acetic acid alone or acetic acid combinations showed the largest increase. Dipping treatment with ascorbic acid and citric acid produced only slight changes in color of the sprout. In the sensory evaluation of discoloration (head, stem and root), wilting and overall quality, ascorbic acid and citric acid treatments gave the highest scores. These results suggest that dipping treatment of buckwheat sprout with citric acid can confer more positive effects on storage stability than others.
Thirty-eight Pea (Pisum sativum L.) genotypes were screened to identify varieties to be suitable for sprout. Based on seed yield and sprout qualities such as whole length and sprout yield, five genotypes (PI269803, PI343278, PI343283, PI343300 and PI 343307) were primarily selected as candidates for pea sprouts. In order to determine optimal cultivation condition for pea sprouting, growth characteristics were investigated according to the change of germination temperature and days for sprouting. Whole length and hypocotyl length were observed to increase as a time dependent manner at each tested temperature (20, 23, and $25^{\circ}C$). However, whole length, hypocotyl length, and sprout yield were highly increased at $23^{\circ}C$ compared to 20 and $25^{\circ}C$. Especially, PI269803 and PI343300 showed higher sprout yield than the others. In addition, the effect of the change of germination temperature on antioxidant properties was estimated by measuring total phenolic content (TPC) and free radical scavenging activity (DPPH and ABST activity). TPC and DPPH/ABST activities of PI269803 and PI343300 were higher at $23^{\circ}C$ than at 20 and $25^{\circ}C$, while antioxidant properties of PI343278 and PI343283 were decreased in a temperature-dependent manner. The results show a high degree of correlation between TPC and antioxidant activities and suggest that the temperature change for pea sprouting could be responsible for antioxidant properties. Taken together, these results provide optimal cultivation conditions for pea sprouting and suggest that PI269803 and PI343300 with high sprout yield and antioxidant properties could be used for pea sprouts.
Red radish seeds were irradiated at doses up to 8 kGy using electron beam (e-beam) and gamma ray ($\gamma$-ray). The seed viability and functional properties (carotenoid, chlorophyll, ascorbic acid, and total phenol) of sprouts grown from these irradiated seeds were evaluated. High germination percentage ($\geq$97%) was observed in seeds irradiated at $\leq$5 kGy, but the yield ratio and sprout length significantly decreased with increased irradiation dose. Irradiation at $\geq$6 kGy resulted in curling of the sprout roots. Sprouting enhanced the functional properties of red radish seeds as indicated by the increased carotenoid, chlorophyll, ascorbic acid, and total phenol contents during germination. However, radiation treatment hampered the growth of seeds resulting in underdeveloped sprouts with decreased carotenoid, chlorophyll, ascorbic acid, and total phenol contents. In general, e-beam and $\gamma$-ray irradiation of red radish seeds showed similar effects on the seed viability and functional properties of sprouts. Postharvest storage reduced the functional quality of sprouts.
High temperature sterilization method (30min. at $40^{\circ}C$longrightarrow30 min. at $70^{\circ}C$longrightarrow30 min. cooling at $20^{\circ}C$) was evaluated better than that of chloride, ion water, $O_3$ water, and salt water for the controling of micro-organisms at the early stage of sprout culture. Due to the improved germination rate and effective control of micro-organisms at early stage, the method resulted in much lower in the number of micro-organisms, higher in sprout yield, and 2 days longer in quality keeping at market than sprouts prepared by conventional method. There are two methods related with water temperature; constant temperature method (18.5$\pm$$0.5^{\circ}C$) which keeps the same water temperature during the culture and 3-stage temperature method which changes the water temperature depending on the days after culture. Three-stage temperature method set the temperature at 21$\pm$$1^{\circ}C$) in the second and third days after the initial acceleration of germination (about 4 hours), at 18.5$\pm$0.5$^{\circ}C$ in the fourth and fifth days, and at 17.0$\pm$$0.5^{\circ}C$) in the sixth and seventh days. Three-stage temperature method could enhance the resistance power to diseases at the early growth stage, control the growth to standard goods (8-9cm in length and 2.15-2.30mm in width), and keep good body color at the middle or final stage. This method also increased the sprout yield by 6% compared with the conventional method, constant temperature method.
Lateral roots of soybean sprouts should deeply affect their quality and marketability. The study was done to compare the effects of ocher, chitosan, corn kennel, tea (Thea sinensis L.) and hard rubber tree (Eucommia ulmoides Oliver) leaf extracts on lateral root formation, growth and morphological characters of the sprouts. Seeds of three cultivars, Pungsannamulkong, Sowonkong and Junjery, were imbibed for 5 hours into their 10% solutions and cultured for 6 days. The cultured sprouts were classified into 4 categories to calculate their composition rates on the base of hypocotyl lengths;>7 cm (A), 4 to 7 cm (B), < 4 cm (C) and not germinated (D), and their morphological characters, fresh and dry weights were measured. Composition rate of A was the lowest in Junjery of the three cultivars, while that of C showed reverse result compared to A. This results was the most distinct in hard rubber tree leaf extracts (HRTLE) of the five treatments. In HRTLE treatment, lateral root formation rate were formed in almost of Sowonkong although reduced in order of Pungsannamulkong and Junjery. However, there was no significant difference between the other treatments. Lateral roots per sprout were the lowest in HRTLE treatment of the 5 treatments. In all treatments except the chitosan treatment, the roots were most formed in Sowonkong but least in Junjery. Sprout length adding hypocotyl and root was the shortest in Junjery compared to the other two cultivars. and was the longest in tea leaf extract treatment but the shortest in HRTLE treatment. The result in total fresh weight of sprouts was similar to that of the sprout length.
Germination tests on 3 species that have potential for use as sprout vegetables, such as Coreopsis tinctoria, Saussurea pulchella, and Matricaria recutica, were conducted for 20 days under different temperatures of $15{\sim}30^{\circ}C$, and conditions of light and dark. C. tinctoria showed germination of 83% under $15^{\circ}C$ and dark condition after 4 days, S. pulchella 51.7% under $25^{\circ}C$ and light condition after 20 days, and M. recutica 90.3% under $25^{\circ}C$ and dark condition after 4 days. To investigate optimum plantlet size before greening treatment, seeds germinated were allowed to grow under darkness. The optimum growth of C. tinctoria was obtained under $30^{\circ}C$ after 5 days, S. pulchella under $25^{\circ}C$ after 6 days, and M. recutica under $20^{\circ}C$ after 6 days. Greening treatment resulted in diminished longitudinal growth, but C. tinctoria and S. pulchella showed more vigorous latitudinal growth. Days required before marketing as sprout vegetables were different according to species - Three days of greening was good for C. tinctoria, 2 for S. pulchella, no greening for M. recutica. Generally, tightly sealed containers for minimum water loss were recommended for storage of sprout vegetables after harvest. However, storage methods for each species were different depending on various factors like temperature of storage, presence of ventilation holes of storage packages and forms of marketing. More detailed research for above 3 species is proposed.

This study was conducted to develop a predictive model for the growth of Escherichia coli strain RC-4-D isolated from red kohlrabi sprout seeds. We collected E. coli kinetic growth data during red kohlrabi seed sprouting under isothermal conditions (10, 15, 20, 25, and $30^{\circ}C$). Baranyi model was used as a primary order model for growth data. The maximum growth rate (${\mu}max$) and lag-phase duration (LPD) for each temperature (except for $10^{\circ}C$ LPD) were determined. Three kinds of secondary models (suboptimal Ratkowsky square-root, Huang model, and Arrhenius-type model) were compared to elucidate the influence of temperature on E. coli growth rate. The model performance measures for three secondary models showed that the suboptimal Huang square-root model was more suitable in the accuracy (1.223) and the suboptimal Ratkowsky square-root model was less in the bias (0.999), respectively. Among three secondary order model used in this study, the suboptimal Ratkowsky square-root model showed best fit for the secondary model for describing the effect of temperature. This model can be utilized to predict E. coli behavior in red kohlrabi sprout production and to conduct microbial risk assessments.
