Seasonal Change of Macro Nutrients Concentration in Acorns of Six Oak Species in Korea (한국산 참나무류 6종 종자의 주요 영양염류 농도의 계절적 변화)

  • Native oak tree species dominate the deciduous forests of South Korea. Although the acorns of these oak trees represent the main food source for many wildlife species, information pertaining to their nutrient composition and associated seasonal changes is limited. Thus, the objective of this study was to describe the seasonal changes in the acorn nutrient composition of six oak species in terms of nitrogen (N), phosphorus (P), calcium (Ca), magnesium (Mg), and sodium (Na) concentrations, Quercus acutissima, Q. aliena, Q. mongolica, Q. variabilis, Q. dentata, and Q. serrata. The results indicated that N concentrations of Q. aliena acorns were constant, whereas those of Q. dentata changed over the seasons. Those of Q. acutissima acorns were higher in summer and autumn but Q. mongolica acorns were higher in spring and summer. Q. serrata acorns were highest in autumn but Q. variabilis acorns were found to be the lowest in N concentration. P concentrations of acorns of six species tended to decline in the summer but increased in the spring and autumn. Ca and Mg concentrations showed an obvious trend of decline over the seasons for all species except Q. mongolica. Na concentrations of Q. aliena, Q. dentata, and Q. serrata acorns were constant over the seasons whereas those of Q. dentata tended to increase. Q. variabilis acorns were highest in autumn but Q. acutissima acorns were lowest in Na concentration. Overall, these results showed that acorn nutrient composition varies by season, and that the nature of the variability is largely species dependent.

Quality and Physicochemical Characteristics of Mung-Bean Cultivars Cultivated in the North-Central Region with Different Seeding Periods (파종시기에 따른 중북부 지역 재배 녹두 품종의 품질 및 이화학 특성)

  • The proximate compositions, quality and physicochemical characteristics of mung-bean cultivars cultivated in the north-central region of South Korea with different seeding periods were evaluated. A significant difference was noted in the proximate compositions and chromaticity of mung-beans according to cultivars and different seeding periods. Crude ash and protein content decreased with the delay in seeding period and a slight increase in carbohydrate content was observed. Redness of the other five cultivars increased with the delay in seeding period except for the cultivar Jangan, while the yellowness decreased in cultivars Geumsung and Jangan. Water binding capacity of the $1^{st}$, $2^{nd}$ and $3^{rd}$ seeding on the cultivar Eoul was 115.15, 99.76 and 96.31%, respectively, and a decrease in the binding capacity was observed with the delay in seeding periods. Water solubility index and swelling power were significantly different among cultivars. Total polyphenol content of $1^{st}$ and $2^{nd}$ seeding on the cultivar Jangan was 8.59 and 8.57 mg GAE/g, respectively, and a decrease was observed with the delay in seeding periods except for the cultivar Sohyeon. Total flavonoid content of $1^{st}$ seeding on the cultivar Jangan was 5.25 mg CE/g, which decreased with the delay in seeding periods. DPPH radical scavenging activity of $1^{st}$ seeding on the cultivars Geumsung and Kyungseon was 2.44 and 2.32 mg TE/g, respectively, which decreased with the delay in seeding periods. The BTS radical scavenging activity of $1^{st}$ seeding on the cultivar Jangan was 6.98 mg TE/g. In the present study, the variations in phenol content and radical scavenging activity were observed to be dependent on the cultivars and seeding periods.

Mass Mortality of Arkshell, Anadara broughtonii SCHRENCK Seedlings with Marine Ecological Characteristics (해양 생태학적 특성에 따른 피조개 치패의 대량폐사)

  • Both long period of summer drought and unusual high water temperature in 1988 caused the harmfull effect to the aquacultural organisms in south coast of Korea. One of those was the mass mortality of arkshell seedlings in Jinhae Bay. The purpose of this study was to verify the effects of environmental factors on arkshell seedlings by investigating not only water quality and food organisms in culturing grounds, but also meteorological conditions. Water temperature in November was higher at $2.0^{\circ}C$ than mean water temperature and the concentration of total inorganic nitrogen and N/P ratio were $0.38{\mu}g-at/l,$ 0.98, respectively which indicated the exhaustion of nutrients, especially nitrogen in the study area. In analysis of phytoplankton population structure, species diversity index(H) , equitability-index(e), species richness $index(d_1)$ were low, but dominance $index({\delta}_2)$ was high at the value of 98.4 and dominant species was Nitzschia pungens. In conclusion, it seems that mass .mortality of arkshell seedlings in November was resulted from the metabolism disorder with poor food organism under the unstable marine environment.

FACTORS INVOLVED IN THE QUALITY RETENTION OF CULTURED UNDARIA PINNATIFIDA (양식미역의 품질요인과 그 가공)

  • Recently, culture of Undaria pinnatifida, one of the representative esculent sea weed, has been prevailing in tile east and south coasta of Korea and reached the mass culture stage. In this study, compositional quality factors for food were studied and the contributory effects of blanching and pigment fixatives in the quality retention of cultured Undaria pinnatifida are discussed. When the place and time of harvesting were the same, cultured pinnatifida showed scarce difference in the chemical composition comparing to tile naturally grown Undaria pinnatifida, but cultured Undaria pinnatifida shelved a considerable difference depending upon the cultured places. In the chemical composition of Undaria pinnatifida, the alginic acid comprising about $40\%$ of the whole solid materials seemed to be responsible for the compositional puality. The chlorophyll and carotenoid content of the clutured Unaria pinnatifida were considerably lower than that of the naturally grown Undaria pinnatifida and wass inferior in puality by color to the naturally grown one. Dried Undaria pinnatifida contained a considerable amount of amino-N, mannitol, and soluble minerals and it is considered that these components play a great role in the relish effects. It could also be evaluated as a good albuminous source for food science the dried pinnatifida contains about $18\%$ of crude protein. In the analysis of free amino acid composition of dried Undaria pinnatifida, the naturally growm samples showed so what higher levels in all amino acid content than the cultured samples. The contents of theronine, alanine, and glutamic acid were major in quantity wherease histidine cysteine, tyrosine, and phenylalanine were minor. The contents of such amino acids like serine and proline were particularly low or undetectable. The results of amino acid analysis of the acid hydrolysates of dried Undaria pinnatifida in quantity of individual amino acid showed te same pattern as that of free amino acid. It is noticed that Undaria pinnatifida seemed to contain good quality protein since the contents of essential amino acids were considerably higher and uniform. By blanching the fresh sample, the water soluble components brought about cousiderable loss, and, particularly, it was noteworthy that both mannitol and soluble minerals apparently decreased. In the pigment analysis of the dried sample, blanching was effective to retain chlorophyll and carotenoid. The addition of pigment fixatives in blanching solution such as Ca-gluconate, Ca-carbonate, and Ca-hydroxide did not exhibit much effect on the pigment retention except that Ca-carbonate shelved some effect only in the early stage of storage.

Extractive Nitrogenous Constituents and Their Monthly Variation of Fresh Laver Porphyra dentata (잇바디돌김의 함질소 엑스성분조성 및 월별변동)

  • In order to investigate the composition and monthly variation of extractive nitrogenous components in the laver Porphyra dentata cultured at the south coast of Korea, the fresh laver was analyzed separately for the amounts of free amino acids, combined amino acids, ATP and its related compounds, and quaternary ammonium basis in fresh laver were measured. The extractive nitrogen contents of fresh laver extracts were 760~870 mg/100g (dry basis). Twenty-seven to thirty-one kinds of free amino acids were detected in the laver extracts and their total amounts were 2,404~3,966 mg/100g (on dry basis). The laver extracts showed rich in free amino acids such as alanine, taurine, glutamic acid, glutamine and aspartic acid. Sixteen to twenty-three kinds of combined amino acids were detected in the extracts and their total amounts were 1,429~2,692 mg/100g (on dry basis). Proline, glutamic acid, glycine, phosphoserine, serine were the amin combined amino acids in the extracts. The amounts of ATP and related compounds were 73.3~94.4 mg/100 g (2.04~4.43 $\mu$mol/g, on dry basis). Homarine and trigonelline were detected in all specimens but $\beta$-alaninebetaine, ${\gamma}$-butyrobetaine were found in some. Small amounts of trimethylamine were detected in all samples. Free and combined amino acids were occupying almost 90% of extractive nitrogen. Most of free and combined amino acids showed a marked monthly variation with a maximum in January and March, and a minimum in February and April. The fresh laver P. dentata did not differ much from the fresh laver P. yezoensis in qualitative com-position of extractive components, but their contents were generally low level.

Physicochemical Properties of Hallabong Tangor(Citrus Kiyomi ${\times}$ ponkan) Cultivated with Heating (가온재배한 한라봉 감귤의 성분분석)

  • Physicochemical properties of Hallabong Tangor(Citrus Kiyomi ${\times}$ ponkan) cultivated in Heated greenhouse were investigated. Moisture contents of Hallabong and M16A (a variant species of Hallabong) were 87.42% and 88.12% total sugar were 8.01% and 7.81% and acid content were 1.09% and 0.99% respectively. Vitamin C content of Hallabong was 72.01 mg/100 g that was higher than Citrus unshiu. Potassium content of M16A was 938.33 mg/kg, while Hallabong was 1369.33 mg/kg. The contents of inorganic element in a decreasing order were K > Ca > P > Mg > Na in Hallabong, and K > P > Ca > Mg > Na in Ml6A. Sucrose in Hallabong and M16A were 3.60% and 4.36%, respectively, which is half of total free sugars. Fructose and glucose Hallabong and M16A were 2.22% and 1.90%, 1.94% and 1.65% respectively. Citric acid in Hallabong and M16A was 82.32% and 69.88%, respectively among total organic acids. The content of malic acid was higher in M16A, compared to Citrus unshiu. Hesperidin and narirutin were identified main flavonoids.

Effects of Calcium and Indole-3-butyric acid Treatments on Calcium Concentration and Stem-End Browning in 'Fuyu' Sweet Persimmons (칼슘제 및 IBA 처리가 '부유' 단감과실의 칼슘함량 및 과정부 갈변현상에 미치는 영향)

  • 'Fuyu' (Diospyros kaki L.) is an important sweet persimmon cultivar, and the fruits are often stored in a modified atmosphere after harvesting in South Korea. However, blossom-end browning and darkening of fruit often occur after harvest or during storage, which decreases fruit quality in the fresh fruit market. High fruit calcium concentration would reduce oxidation of phenolic compounds in the cytoplasm such oxidation is responsible for fruit browning. This study investigated the effects of soluble calcium fertilization and foliar application, and indole-3-butyric acid (IBA) fertilization on fruit quality and browning. Trees received one of the following five treatments: 1) control (no calcium or IBA); 2) calcium fertilization (Ca FG, 2 mL per tree); 3) calcium foliar application (Ca FA, 2 mL); 4) calcium and IBA fertilization (Ca+IBA) 5) IBA fertilization (IBA, 2 mL. Fruit calcium concentration was highest in trees treated by Ca FA, and lowest in control trees. Generally, fruit calcium concentration was high in the stem end but low in the blossom end, which usually first develops fruit-browning symptoms. There were no apparent differences in fruit qualities such as firmness, soluble solid content, and weight among treatments. Fruit browning occurred at frequencies of about 14%, 20%, and 50% on Ca FA, Ca FG, and control trees, respectively. Therefore, the improved fruit calcium level seen when trees received Ca or IBA application tended to prevent fruit browning, which increased fruit quality and storage properties.

Selection of Indicator Plants to Evaluate the Effects of Agri-environmental Conservation Program: On the Rice Paddy Fields in South Korea (농업환경보전프로그램의 효과 검증을 위한 지표식물 선정: 논 생태계를 대상으로)

  • BACKGROUND: The Ministry of Agriculture, Food and Rural Affairs is promoting agri-environment conservation program to induce farmers to participate in agricultural environment improvement and conservation activities. However, assessment tools based on scientific evidence are needed to determine the effectiveness of the program objectively and quantitatively. Therefore, this study was performed to develop plant indicators in order to efficiently evaluate the effects of the agri-environment conservation program promoted by the Ministry of Agriculture, Food and Rural Affairs. METHODS AND RESULTS: The survey was conducted in five regions (Hampyeong, Boryeong, Mungyeong, Hongseong, and Sangju) participating in the agri-eonvironment conservation program. In each region, twenty paddy fields were investigated (ten paddy fields included in the program and ten paddy fields not included in the program). A total of 231 taxa vascular plants were identified in the paddy fields that were included in the agri-environment conservation program, and a total of 177 taxa were identified in the paddy fields that were not included. The average species number occurred on each field was 55.8 taxa in the fields included in the program, and 35.0 taxa in the fields not included in the program. The difference in occurring plants between two groups was found to be more higher in perennial plants than in annual plants. We selected the six groups as indicator plants through five criteria such as perennial plants and broadly occurring species, etc. to verify the effectiveness of the agri-environment conservation program: Taraxacum spp., Ixeris spp., Viola spp., Platago spp., Calystegia spp., and rare and endagered species. There was a high positive correlation between the score calculated using these indicator plants and the total number of plants species. CONCLUSION: This study suggests that it is possible to evaluate the agro-ecological environment by using indicator plants. The selected indicator plants can be effectively used to verify the effectiveness of projects such as agri-environmental conservation programs in the future.

Quality and Physicochemical Characteristics of Small Black Soybean Cultivar Cultivated in the North-central Region (중북부지역에서 재배한 소립 검정콩의 품질 및 이화학 특성)

  • Proximate compositions, quality and physicochemical characteristics of small black soybean cultivar, cultivated in the north-central region of South Korea with different seeding periods, were evaluated. Proximate compositions, chromaticity, water binding capacity, water solubility index, swelling power, and antioxidant properties were significantly different among cultivars and different seeding periods. Moisture, crude ash, fat, protein, and carbohydrate contents of small black soybean cultivar were 5.53~6.69, 5.47~6.54, 15.38~19.14, 34.17~40.26, and 32.04~36.85 g/100 g, respectively. Lightness, redness and yellowness were 35.60~38.61, -0.02~0.07 and -0.56~-0.13, and water binding capacity, water solubility index and swelling power were 84.48~148.31, 46.65~54.89 and 29.87~35.12%, respectively. Total polyphenol contents of first, second, and third seedings on small black soybean cultivar were 10.40~15.48, 9.86~14.85 and 8.61~15.39 mg GAE/g; total flavonoid contents were 5.81~7.25, 5.81~7.34 and 5.52~7.64 mg CE/g, respectively. DPPH radical scavenging activity was 4.55~7.86, 3.99~8.79, and 3.74~9.43 mg TE/g, and ABTS radical scavenging activity was 9.32~12.90, 8.64~13.39, and 8.51~14.35 mg TE/g, respectively. Phenol compound of Tawonkong and Socheong cultivars decreased with delay of seeding periods. Radical scavenging activity of Socheong and Jununi cultivars decreased with delay of seeding periods, but Socheong 2 and Socheongja cultivars increased. In the study, phenol compound and radical scavenging activity of small black soybean cultivar were different, depending on cultivars and seeding periods.

Analysis of Spectral Reflectance Characteristics Using Hyperspectral Sensor at Diverse Phenological Stages of Soybeans

  • South Korea is pushing for the advancement of crop production technology to achieve food self-sufficiency and meet the demand for safe food. A medium-sized satellite for agriculture is being launched in 2023 with the aim of collecting and providing information on agriculture, not only in Korea but also in neighboring countries. The satellite is to be equipped with various sensors, though reference data for ground information are lacking. Hyperspectral remote sensing combined with 1st derivative is an efficient tool for the identification of agricultural crops. In our study, we develop a system for hyperspectral analysis of the ground-based reflectance spectrum, which is monitored seven times during the cultivation period of three soybean crops using a PSR-2500 hyperspectral sensor. In the reflection spectrum of soybean canopy, wavelength variations correspond with stages of soybean growths. The spectral reflection characteristics of soybeans can be divided according to growth into the vegetative (V)stage and the reproductive (R)stage. As a result of the first derivative analysis of the spectral reflection characteristics, it is possible to identify the characteristics of each wavelength band. Using our developed monitoring system, we observed that the near-infrared (NIR) variation was largest during the vegetative (V1-V3) stage, followed by a similar variation pattern in the order of red-edge and visible. In the reproductive stage (R1-R8), the effect of the shape and color of the soybean leaf was reflected, and the pattern is different from that in the vegetative (V) stage. At the R1 to R6 stages, the variation in NIR was the largest, and red-edge and green showed similar variation patterns, but red showed little change. In particular, the reflectance characteristics of the R1 stage provides information that could help us distinguish between the three varieties of soybean that were studied. In the R7-R8 stage, close to the harvest period, the red-edge and NIR variation patterns and the visible variation patterns changed. These results are interpreted as a result of the large effects of pigments such as chlorophyll for each of the three soybean varieties, as well as from the formation and color of the leaf and stem. The results obtained in this study provide useful information that helps us to determine the wavelength width and range of the optimal band for monitoring and acquiring vegetation information on crops using satellites and unmanned aerial vehicles (UAVs)
