This study was carried to investigate the effect of illite addition on the growth, bioactive components and volatile compounds of leaf on Saururus chinensis Baill cultivation in greenhouse. Illite addition on Saururus chinensis Baill cultivation resulted no significant effects on the aerial part. However, the root part was highest in 5% illite addition group. Crude oil and ash amount increased as illite additives was increased. Ca of inorganics and free sugars contents were highest in 5% and 20% illite addition, respectively. Hyperoside and isoquercetin of available component on leaf were highest in 5% illite addition group, 4.02mg/g and 4.31mg/g, respectively. The volatile compounds in Saururus chinensis Baill leaf cultured with illite addition amounts were isolated by solid-phase microextraction fiber (polydimethysiloxane $65{\mu}m$) and identifed by gas chromatogtaphy mass spectrometry. As the results, the 22 volatile compounds were identified from in Saururus chinensis Baill leaf and major volatile compounds were the ${\alpha}$-cadinol (18.50%), myristicin (16.46%), methyl-9-methyl-tetradecanoate (10.22%), and ${\gamma}$-muurolene (9.75%). Especially, the content of ${\alpha}$-cadinol was highest in 5% illite addition group and ${\gamma}$-muurolene on overall illite addition group was lower than no addition group.
This study examined the effect of drying temperature on the qualitative properties of Chrysanthemum boreale M. flowers. The flower samples were dried in a hot air dryer at $40^{\circ}C$, $50^{\circ}C$, and $60^{\circ}C$, respectively, to attain a $23{\pm}1%$ moisture content. The time required to reach the target moisture content was 8.5-69 hr, and there was a very high negative correlation between log (spending time) and temperature. The Hunter color L- and b-values of the flowers were decreased with increasing drying temperature, whereas the a-value was increased. The volatile compounds contained in the dried flowers were determined by a solid-phase microextraction method. Twelve primary volatile compounds were detected and then quantified based on the GC chromatograms of the samples. The total contents of volatile compounds were increased with increasing drying temperature, and germacrene D and camphor were the main compounds in all samples.

Elephant garlic (Allium ampeloprasum var. ampeloprasum), which belongs to the Alliaceae family along with onion and garlic, has a flavor and shape similar to those of normal garlic but is not true garlic. Additionally, its properties are largely unknown, and its processing and product development have not been reported. In this study, we focused on using elephant garlic to produce a new type of vinegar, for which the market is rapidly growing because of its health benefits. First, we evaluated the effects of elephant garlic addition on acetic acid fermentation of rice wine by Acetobacter pasteurianus. In contrast to normal garlic, for which 2% (w/v) addition completely halted fermentation, addition of elephant garlic enabled slow but successful fermentation of ethanol to acetic acid. Metabolite analysis suggested that sulfur-containing volatile compounds were less abundant in elephant garlic than in normal garlic; these volatile compounds may be responsible for inhibiting acetic acid fermentation. After acetic acid fermentation, vinegar with elephant garlic did not have any sulfur-containing volatile compounds, which could positively contribute to the vinegar flavor. Moreover, the amino acid profile of the vinegar suggested that nutritional and sensory properties were more enhanced following addition of elephant garlic. Thus, elephant garlic may have applications in the development of a new vinegar product with improved flavor and quality and potential health benefits.
Objective: The aim of the study was to evaluate the effects of different nitrate levels (150, 300, 450, and 600 ppm $KNO_3$) on the volatile compounds and some other properties of pastırma. Methods: Pastırma samples were produced under the controlled condition and analyses of volatile compounds, and thiobarbituric acid reactive substances (TBARS) as an indicator of lipid oxidation, non-protein nitrogenous matter content as an indicator of proteolysis, color and residual nitrite were carried out on the final product. The profile of volatile compounds of pastırma samples was analyzed by gas chromatography/mass spectrometry using a solid phase microextraction. Results: Nitrate level had a significant effect on pH value (p<0.05) and a very significant effect on TBARS value (p<0.01). No significant differences were determined in terms of $a_w$ value, non-protein nitrogenous substance content, color and residual nitrite between pastırma groups produced by using different nitrate levels. Nitrate level had a significant (p<0.05) or a very significant (p<0.01) effect on some volatile compounds. It was determined that the amounts and counts of volatile compounds were lower in the 450 and especially 600 ppm nitrate levels than 150 and 300 ppm nitrate levels (p<0.05). While the use of 600 ppm nitrate did not cause an increase in residual nitrite levels, the use of 150 ppm nitrate did not negatively affect the color of pastırma. However, the levels of volatile compounds decreased with an increasing level of nitrate. Conclusion: The use of 600 ppm nitrate is not a risk in terms of residual nitrite in pastırma produced under controlled condition, however, this level is not suitable due to decrease in the amount of volatile compounds.

In this study, the performance characteristics of solid phase microextraction (SPME) were investigated for three major odorous groups that consist of 10 individual compounds ([1] volatile organic compounds (VOC): benzene, toluene, p-xylene and styrene, [2] reduced sulfur compounds (RSC): hydrogen sulfide, methyl mercaptan, dimethylsulfide (DMS), dimethyldisulfide (DMDS), and carbon disulfide, and [3] amine: trimethylamine (TMA)). For the purpose of a comparative analysis, two types of SPME fiber ([1] polidimethylsiloxane/divinilbenzene (P/D) and [2] $Carboxen^{TM}$/polidimethylsiloxane (C/P)) were test ε d against each other for a series of standards prepared at different concentration levels (100, 200, and 500 ppb). To compare the analytical performance of each fiber, all standards were analyzed for the acquisition of calibration data sets for each compound. The results of P/D fiber generally showed that its calibration slope increased as a function of molecular weight across different VOCs; however, those of C/P fiber showed a fairly reversed trend. Besides, we confirmed that the application of SPME is limited to many sulfur compounds; only two compounds (DMS and DMDS) are sensitive enough to draw calibration results out of SPME. The calibration data for RSC show generally enhanced slop values for C/P relative to P/D fiber. However, in the case of TMA, we were not able to find a notable difference in their performance.
The Annals of the Joseon Dynasty is one of the World Heritage which should be conserved well. However, some of wax treated volume of the Annals of the Joseon Dynasty have damaged seriously. Currently a variety of efforts to conserve and restore the injured volumes are continued and many studies about the aging mechanism of the wax treated volume have being progressed. The analysis of VOCs (Volatile Organic Compounds) emitted from paper cultural heritage is one of the methods to understand the degradation pathway of paper cultural heritage. The analysis of VOCs emitted from paper cultural heritage has been mainly conducted by SPME (Solid Phase Microextraction) method. SPME is potable and simple method but it is difficult to collect all VOCs emitted from a book such as the Annals of Joseon Dynasty. The dynamic chamber system has generally used to do analysis of VOCs emitted from the building materials, furniture and electric appliances. The chamber system is possible to do quantitative and qualitative analysis by a continuous $N_2$ gas flow and the proper chamber which is able to gather all VOCs emitted from the Annals of the Joseon Dynasty. In this study, the most material among detected VOCs was Naphthalene. Naphthalene has used to prevent organic cultural heritage from being damaged by various microbes for a long time. Apart from Naphthalene, main VOCs were Acetic acid, 2-Chloroethanol, 2-Bromoethanol, Furfural, 1-Methylnaphthalene, Azulene, and 2,4-Dioctylphenol. Of these VOCs, Furfural especially was known for a marker which represents a different emission rate according to the aging level.
The purpose of this study is to compare the sampling methods for monitoring indoles (phenol, p-cresol, indole and skatole) in airs of swine facility. As the collecting methods of indoles in air, Tenax-TA adsorption tube and solid phase microextraction (SPME) were examined. For the preparation of calibration curves of indoles concentrated in Tenax-TA, the standard indoles solutions were spiked in each of Tenax-TA tubes and thermally desorbed (ATD) into a gas chromatograph combined with mass detector (GC/MS). And for the preparation of calibration curves by SPME, indoles in the standard gaseous solution prepared by evaporating the aqueous solution that contained indoles into a polyester sampling bag were extracted with SPME fiber and subsequently analyzed by the GC/MS. Two sampling methods were evaluated for extracting indoles present in swine building environments. Results indicated that the SPME method using Polydimethylsiloxane/ Divinylbenzene (PDMS/DVB) fiber was more effective than Tenax-TA method in extracting indoles. The gas chromatographic analysis showed that the linearities of calibration curves and detection limits were useful for detection of indoles in swine airs. The field tests also showed that considerably different levels of indoles were present in various parts of the swine building.
Volatile compounds in fermented ascidians Halocynthia roretzi were analyzed to identify key flavor compounds using SPME/GC/MSD (solid phase microextraction/gas chromatography/mass selective detector) after 60 days of fermentation at 5℃. The control was chopped ascidians subject to anti-browning and 4% salt treatment. product A was made from product C by adding an alcohol extract of red peppers and onion peel, 0.1% of glucose, and 0.55% of mixed amino acids (MAA; 0.05% Glu, 0.1% Pro, 0.3% Ala, and 0.1% Gly). After blanching and anti-browning treatment of chopped ascidians, Product B1 was made by adding 3% anchovy sauce and 6% sorbitol. Product B2 was made by adding 0.1% glucose and 0.55% MAA to Product B1. In total, 78 compounds were identified, including 31 alcohols, 15 aldehydes, and 10 ketones. The alcohols included 12 compounds from the C8-C10 series with floral and fruit odors, including octanol, 3-methyloctanol, 2,6-dimethyl-1-heptanol, (E)-5-octen-1-ol, 6-methyloctanol, (E)-3-octen-1-ol, (E)-3-decen-1-ol, (Z)-1,5-octadien-3-ol, and nonanol. These were detected in high amounts in ascidians and all fermented products. Aldehydes (octanal, (E)-2-octenal, 2,4-heptadienal, and nonanal) and ketones (1-oten-3-one and 2-heptanone) with fatty and mushroom odors were detected as major compounds, whereas nine ethyl esters were detected only in product A.

In this paper, we demonstrate the ability of Arabidopsis thaliana to detect different mixtures of volatile organic compounds (VOCs) emitted by the common indoor fungus, Aspergillus versicolor, and demonstrate the potential usage of the plant as a bioindicator to monitor fungal VOCs in indoor air. We evaluated the volatile production of Aspergillus versicolor strains SRRC 108 (NRRL 3449) and SRRC 2559 (ATCC 32662) grown on nutrient rich fungal medium, and grown under conditions to mimic the substrate encountered in the built environment where fungi would typically grow indoors (moist wallboard and ceiling tiles). Using headspace solid phase microextraction/gas chromatography-mass spectrometry, we analyzed VOC profiles of the two strains. The most abundant compound produced by both strains on all three media was 1-octen-3-ol. Strain SRRC 2559 made several terpenes not detected from strain SRRC 108. Using a split-plate bioassay, we grew Arabidopsis thaliana in a shared atmosphere with VOCs from the two strains of Aspergillus versicolor grown on yeast extract sucrose medium. The VOCs emitted by SRRC 2559 had an adverse impact on seed germination and plant growth. Chemical standards of individual VOCs from the Aspergillus versicolor mixture (2-methyl-1-butanol, 3-methyl-1-butanol, 1-octen-3-ol, limonene, and ${\beta}-farnesene$), and ${\beta}-caryophyllene$ were tested one by one in seed germination and vegetative plant growth assays. The most inhibitory compound to both seed germination and plant growth was 1-octen-3-ol. Our data suggest that Arabidopsis is a useful model for monitoring indoor air quality as it is sensitive to naturally emitted fungal volatile mixtures as well as to chemical standards of individual compounds, and it exhibits relatively quick concentration- and duration-dependent responses.

Mentha arvensis is used traditional medicine to treat various disorders. In the present study, M. arvensis were extracted by the solid-phase microextraction (SPME) method and analyzed by gas chromatograph-mass spectrometry (GC-MS). We investigated the protective effects and mechanisms of a M. arvensis extract on scopolamine-induced cognitive and memory impairment. Mice were orally pretreated with a M. arvensis extract or normal saline, and then behavior tests were conducted 30 min after scopolamine injection. The antioxidant capacities were analyzed by free radical scavenging (DPPH and ABTS). Acetylcholinesterase (AChE) activity were also measured using Ellman's method ex vivo test. In behavior tests, percent of spontaneous alteration, escape latency and swimming time in target quadrant were improved by the administration of the M. arvensis extract, which suggests that the M. arvensis extract improves memory function in the scopolamine-treated mice model. In addition, M. arvensis extract showed inhibition of the free radical and AChE activity. The results of the present study suggest that the M. arvensis extract ameliorates scopolamine-induced cognitive and memory deficits through the inhibition of free radicals and AChE activity. Therefore, M. arvensis may be a promising neuroprotective agent for management of learning and memory improvements in human dementia patients.
