소와 돼지 도축장 도체 및 환경에서 분리된 병원성대장균 분포 및 특성조사 (Prevalence and characterization of pathogenic Escherichia coli from carcasses and environmental samples of cattle and pig slaughterhouses)

  • We investigated the virulence genes, O-serotypes, antimicrobial resistance of pathogenic E. coli isolated from carcasses (n=455) and environmental (n=372) samples of 11 cattle and 12 pig slaughterhouses from December 2020 to December 2021. E. coli were isolated from nine carcasses (2.0%), three slaughter facilities (1.4%), two utensils (2.7%) and three abattoir workers (3.5%) from four cattle and four pig slaughterhouses. Among all isolates, 13 STEC (76.5%) were identified, followed by four EPEC (23.5%). As a result of the antibiotic susceptibility test, all isolates were resistant to at least one antimicrobial, of which 70.6% isolates showed multidrug resistance patterns. The serotypes were diverse in pigs compared to cattle, with serotypes O18, O66, O109 in cattle and O9, O76, O85, O100, O153, and O159 in pigs. In a single cattle slaughterhouse, eight STEC O66 were isolated from various types of sample (4 slaughter animal surfaces, 3 gloves, and 1 knife) with two antimicrobial resistance patterns (CHL-FIS-STR and CHL-FIS). Those two types of strain were suspected cross-contamination from utensils to slaughter animal surfaces. These results showed that pathogenic E. coli were detected in carcasses and various environmental samples in cattle and pig slaughterhouses. Nationwide monitoring and hygiene management are required to prevent cross-contamination of STEC isolate slaughterhouses.

돼지 Balantidium증에 대한 병리학적 연구 (Pathological study on balantidiosis of pigs)

  • Fecal examination for survey of natural prevalence of Balantidium coli was performed on 1080 healthy bred pigs in Korea, and the positive rate was 56.2%. In order to observe if Balantidium coli might be a secondary invader after certain initiation of the intestinal lesions, the piglet groups preinfected with the protozoa experimentally were treated with Salmonella cholerasuis, Trichuris. cold stress, HCI, and immunosuppressive drug respectively, but no relation was found between them. Also the protozoa were not detected from the intestinal lesions spontaneously formed of 107 pigs which were checked in the slaughter house. According to the above results, Balantidium coli is not directly associated with the formation of any lesions in the pig's large intestine.

  • Seasonal incident rates were examined from the 981 pigs slaushtered in southern Kang-won and distribution of lesions and histopathological examination were conducted from 231 Enzootic pneumonia affected lungs. The results obtained were summarized as follows: 1. 39.7∼50.2% of 981 slaughtered pigs showed pneumonia lesions without seasonal variation and the incidence rate of Enzootic pneumonia was 23.5% 2. The distribution of Lesions of Enzootic pneumonia lobes was observed. The right lobes were affected more frequently than the left, and the highest frequency of 79.7% being recorded in the right cardiac lobe followed by the left cardiac, right apical, intermediate, left apical, right diaphrogmatic and diaphrogmatic. 3. In histopatological observation lung lobes were forming Iymphonodulus from perivascular, peribronchiolar Iymphoid hyerplasia and it was remarkable to bronchostenosis.

자연 발생한 돼지의 신장 질병에 관한 병리학적 연구 (Pathological findings on spontaneously occurring renal lesions in pigs)

  • In order to investigate the renal pathology of spontaneously occurring renal lesions, basic macroscopic inspection was conducted to 3,850 pigs randomly collected from local slaughter houses, and a total of 355 pigs (9.2%) were detected with various gross pathological conditions. Renal morphologic patterns for gross lesions were classified histopathologically as 123(34.5%) congestion, 81(22.8%) acute interstitial nephritis, 52(14.7%) chronic interstitial nephritis, 49(13.8%) hemorrhage, 39(11.0%) renal cyst, 29(8.2%) chronic glomerulonephritis, 18(5.1%) acute glomeruonephritis, 14(3.9%) infarction, 11(3.1%) thrombosis, 5(1.4%) atrophy, 5(1.4%) pyelonephritis and 1(0.3%) lymphosarcoma.

  • Feces were collected from pigs of various ages on slaughter house and swinery in the southern area of the kangwon-do. Treponema hyodysenteriae were isolated from the feces by the method of Jenkinson. and the effects of temperature on the survival of these organism were investigated. The results abtained are summerized as follows ; 1. T. hyodysenteriae were isolated from 22 fecal samples of 1, 296 samples, and showed higher incidence at 4-8week age groups than other age groups. 2. The organisms were isolated from 17 samples of 329 diarrhea samples and 5 samples of 967 non-diarrhea samples. 3. T hyodysenteriae survived long at $0-10^{\circ}C$ but survived short at $37^{\circ}C$ or above.

도축전 절식과 냉장숙성이 재래돼지 Longissimus Dorsi, Biceps Femoris와 Triceps Brachii의 육질에 미치는 영향 (Effects of Pre-slaughter Fasting and Chiller Ageing on Objective Meat Quality in Longissimus Dorsi, Biceps Femoris, and Triceps Brachii Muscles of Korean Native Black Pigs)

  • 본 연구는 한국 재래돼지의 도축전 절식과 숙성이 longissimus dorsi(LD), biceps femoris(BF) and triceps brachii(TB)의 육질에 미치는 영향을 조사하였다. 18 시간동안 절식은 LD에서 유의적으로(P < 0.05) 높은 최종 pH을 보였고, BF도 유사한 경향을 나타냈다. 근육 온도는 절식유무에 영향을 받지않아, 이 결과는 각 처리구의 돼지들은 각기 다른 온도와 pH의 영향을 받았다는 것을 의미한다. 이러한 영향은 LD의 경우 절식을 하지 않은 돼지에서 유의적으로 높은(P < 0.05) hunter $L^*$ 값과 가열감량에서 나타났다. 하지만 전단력은 차이가 없었다. 또한 BF와 TB의 육질은 도축전 절식유무에 의해 영향을 받지 않았다. LD에서 전단력은 숙성 7일까지 감소하였고, BF와 TB는 14일까지 유의적으로(P < 0.05) 감소했다. 숙성기간중 LD와 BF, 그리고 LD와 TB의 상관관계를 보았을 때, LD의 전단력 6kg은 BF와 TB에서 각각 6과 3.5 kg을 보였다. 본 연구의 결과에 따르면, 도축전 급여는 시각적인 육색은 개선하나, 가열감량을 증가시켜 맛은 감소시킬 것으로 판단되었다. 한편 LD의 숙성은 7일이 적절한 것으로 나타났고, TB와 같이 근본적으로 연한 고기는 숙성은 가열감량을 증가시키므로 숙성하지 않는 것이 바람직하다고 판단되었다. BF와 TB에서는 14일 숙성은 연도는 증가하나 다즙성은 감소할 것으로 판단되었다.

비육돈의 도체성적 변화 추세와 환경적인 요인 분석 (Phenotypic Trend and Environmental Factors for Carcass Traits in Commercial Pigs)

  • 본 연구는 1999년부터 2005년까지 부산경남축산물공판장에서 도축된 비육돈 1,251,572두의 자료를 이용하여 돼지의 주요 도체형질인 도축체중, 등지방두께와 도체등급에 대한 년도별 도체등급 변화 추세와 환경적인 요인을 분석하였다. 도축체중의 경우 암퇘지, 수퇘지 및 거세돼지가 각각 $82.97{\pm}0.008$, $82.00{\pm}0.090$$82.79{\pm}0.008kg$으로 조사되었다. 등지방두께는 암퇘지, 수퇘지 및 거세돼지가 각각 $19.27{\pm}0.006$, $15.99{\pm}0.072$$22.49{\pm}0.006mm$로 수퇘지가 유의적으로 얇았다. 도축체중의 경우 1999년에 $80.38{\pm}0.033kg$을 가장 가볍게 나타났고, 2005년에 84.26${\pm}0.033kg$으로 가장 무겁게 나타났으며, 연도가 증가함에 따라 도축체중이 증가하는 경향을 보였다. 년도별 도체등급 변화 추세를 보면 A등급 출현율이 2000년부터 2003년까지는 계속 증가하다가 2003년 이후로 점차 감소하는 경향을 나타냈다.

Carcass trait, meat yield and quality characteristics of recently-synthesized Woori Heukdon and commercial LYD pigs under identical rearing condition

  • Objective: For decades, LYD ([Landrace×Yorkshire] ♀×Duroc ♂) pigs are the most commonly-used commercial breed for meat production in Korea. Recently, due to the increasing demand for premium pork, the National Institute of Animal Science (Korea) has synthesized a novel pig breed named Woori Heukdon (WHD). This study aimed at comparing the carcass traits, meat yield and quality characteristics between the LYD and WHD pigs under identical rearing condition. Methods: The WHD and LYD pigs (n = 15 each) were reared under identical conditions and fed the same commercial diet until reaching recommended market weight (100 to 120 kg). After slaughter, the carcasses were evaluated for traits and meat yield, and the meat quality was assessed on shoulder butt and belly cuts. Results: Although no significant differences (p>0.05) occurred in slaughter weight between two pig types, WHD had a lower meat yield (by about 6 kg corresponding to approximately 7%) compared to the LYD pigs (p<0.05). The WHD had a higher fat content (by 4.26% and 13.52% in the shoulder butt and belly, respectively) compared to those of LYD pigs (p<0.05). The WHD meat showed a lower cooking loss and higher a* (redness) value (p<0.05). The WHD belly had a significantly (p<0.05) higher oleic acid content and concentrations of nonanal, octanal and decanal associated with fatty odor while, the LYD meat had a higher number of pyrazines associated with roasty odor. Regarding sensory quality, higher flavor, juiciness, and acceptability higher scores were given for the WHD meat than for the LYD meat (p<0.05). Conclusion: Under identical rearing conditions the WHD exhibited a better meat quality and sensory properties. However, the use of this diet resulted in a high fat level that may be associated with high trimming loss for the WHD.

Influence of Maize Cob Inclusion Level in Pig Diets on Growth Performance and Carcass Traits of Mukota × Large White F1 Crossbred Male Pigs

  • A trial was conducted to evaluate the growth performance and carcass characteristics of LW ${\times}$ Mukota $F_1$ crosses when fed diets containing graded levels of maize cob meal. Sixteen LW ${\times}$ Mukota $F_1$ crossbred pigs of approximately 4.5 months of age, were randomly allocated to four diets that contained 0, 100, 200 and 300 g maize cobs/kg, which corresponded to 276.4, 360.3, 402.9 and 523.5 g NDF/kg, respectively. The pigs were fed ad libitum for 14 weeks. The diets were formulated to contain similar levels of energy (ca. 9MJ ME/kg) and protein (ca.160 g CP/kg). Average daily feed intake (ADFI), daily gain (ADG) and feed conversion ratio (FCR) were monitored for 14 weeks. At slaughter, the cold dressed weight (CDM) and backfat thickness (BFT) were determined. There was no significant linear relationship (p>0.05) between level of cob inclusion and ADFI. The ADG decreased as level of maize cobs increased (p<0.001). The pigs that were on 300 g cobs/kg had the highest FCR (p<0.05) as compared to pigs on the other three diets. No differences (p>0.05) were observed in the CDM between pigs that were fed diets that had 0 and 100 g maize cobs/kg. In addition, pigs on 100 and 200 g cobs/kg diets had the same CDM (p>0.05). The diet that contained 300 g cobs/kg gave the lowest (p< 0.001) CDM. Both BFT parameters showed a decrease (p<0.05) as level of maize cobs increased. An increase in CDM was associated with an increase in BFT (p<0.001), with the correlation coefficient between K7.5 and CDM being 0.84 (p<0.001). It can, therefore, be concluded that crossbred pigs perform well on diets containing up to 200 g/kg maize cobs.
