Antioxidant Activity and Quality Characteristics of Cookies Prepared with Acorn(Quercus species) Powder (도토리 분말을 첨가한 쿠키의 항산화활성 및 품질특성)

  • This study was conducted to investigate the effects of acorn (fruits of Quercus species) powder on the antioxidant activity and quality characteristics of cookies. Cookies were prepared with different amounts (0, 0.5, 1, 3 and 5% to the flour quantity) of acorn powder. The antioxidant activity was estimated by DPPH free radical scavenging activity and the total phenolic acid content in acorn powder and cookies. For analyzing quality characteristics, bulk density, pH of the dough, spread factor, loss rate, leavening rate, color, texture profile analysis, and sensory evaluations were measured. The moisture contents, a values, total phenolic acid content and DPPH free radical scavenging activity of cookies significantly increased with increasing acorn powder (p<0.001), while the pH of the dough, L values and b values of the cookies significantly decreased with increasing acorn powder (p<0.001). The consumer acceptability score for the 3% acorn cookie groups ranked significantly (p<0.05) higher than the other groups in overall preference, appearance, flavor, taste and color. From these results, we suggest that acorn is a good ingredient for increasing the consumer acceptability and the functionality of cookies.

Quality Characteristics of Commercial Kimchi Paste (시판 김치 양념의 품질특성)

  • Purpose: This study was conducted to obtain basic data for the quality characteristics of commercial kimchi pastes. Methods: The physicochemical, microbial, and sensory quality characteristics of kimchi paste purchased from 12 companies (KP 1-12) were investigated. Results: Commercial kimchi pastes contained a moisture content of 61.60-82.99%. The pH and titratable acidity of samples were 4.88-5.92 and 0.56-1.58%, respectively, and salinity was on average, 3%. The reducing sugar content was approximately 67.35 mg/mL, and those of KP 8 was higher by approximately 100 mg/mL. American Spice Trade Association (ASTA) value of kimchi pastes varied based on the samples. The commercial kimchi pastes contained capsaicin and dihydrocapsaicin at 1.51-7.84 and, 0.54-2.26 mg/100 g, respectively; sodium and potassium contents were 383.32-1,563.45 mg/100 g and 264.49-571.95 mg/100 g, respectively; and the Na/K ratio was 1.21-5.48. The number of aerobic bacteria and lactic acid bacteria detected from 5.00 to 8.00 log CFU/g. The number of yeast and mold detected from 0.50 to 2.66 log CFU/g. Coliform was detected at approximately 3-4 log CFU/g, whereas Escherichia coli was detected only in KP 3 and KP 7. Overall acceptability of kimchi paste showed a higher score in KP 1. The commercial kimchi pastes showed higher salinity and Na/K ratio and E. coli was detectedin some kimchi paste samples. Conclusion: Therefore, further studies are required to lower the Na/K ratio, for recipe developments, and the standardization of quality and hygiene safety of kimchi paste.

Comparison of Characteristics of Koji Manufactured with Bacillus subtilis B-4 and Aspergillus oryzae F-5 (Bacillus subtilis B-4와 Aspergillus oryzae F-5로 제조한 코오지의 특성 비교)

  • In order to industrialize traditional Meju-tasting Koji, the characteristics of Koji manufactured with bacteria and fungi found in traditional Meju were investigated. Bacillus subtilis B-4 and Aspergillus oryzae F-5 showing high enzyme activities including those of amylase and protease were used. L-value of Koji manufactured with B. subtilis B-4 had darker color and higher enzyme production than A. oryzae F-5 made one. B. subtilis B-4 made Koji showed higher enzyme production and sensony evaluation score than A. oryzae F-5 Koji. A. oryzae F-5 Koji showed superior color to B. subtilis B-4 Koji. Activity in color, capacity of enzyme production, viable cell count, and sensory evaluation of water activity controlled Koji was superior to the uncontrolled one.

Fermentation of Carrot Juice by Bifidobacterium (Bifidobacterium에 의한 당근발효)

  • In the present study, characterization of fermented carrot juice by Bifidobacterium was performed. When inoculated at the level of $10^6\;CFU/mL$ with various Bifidobacterium strains, cell growth of B. longum, B. adolescentis and B. infantis reached more than $10^8\;CFU/mL$. On the other hand, B. bifidum strains reached less than $10^8\;CFU/mL$. Compared with carrot, grape juice did not allow the growth of Bifidobacterium, while peach juice and orange juice were as good as carrot for the growth of Bifidobacterium. On mixed culture with Lactobacillus, growth of Bifidobacterium decreased and cell death rate increased considerably. On panel test, Bifidobacterium cultured-carrot juice showed high score on sensory test than non-fermented carrot. Therefore, fermentation may lead to the quality improvement of carrot juice by combining health-promoting effect of Bifidobacterium and high nutrition value of carrot.

Effects of Amylose Content on Quality of Rice Bread (아밀로오스 함량이 쌀식빵의 특성에 미치는 영향)

  • Seven varieties (Suweonjo, Suweon232, BG276-5, IR44, IR41999-139, Suweon230 and Yongjubyeo) of rice were used to study for making rice bread by amylose content. Suweonjo had the highest amylose content (27.07%) and Yongjubyeo had the lowest one (17.17%). Suweonjo showed the highest volume after baking, while Yongjubyeo the lowest volume one. Volume and hardness of the rice bread decreased as amylose content decreased. The amylose content was not associated with hardness and color values of rice bread after baking. Sensory evaluation for internal parts of rice bread showed that score of air cell, color of crumb, aroma, taste, chewability and texture decreased as amylose content increased, while volume of rice bread increased. The low-amylose rice cultivar revealeded better suitability for rice bread.

Shelf Life Extension of Non-Dairy Cream with the Addition of Natural Antioxidants (천연 항산화제 첨가에 따른 식물성 크림의 유통기간 연장)

  • We conducted a study to select a suitable natural antioxidant from tocopherol, rosemary extract, and green tea extract to be added to commercially-available palm oil to extend the shelf life of non-dairy cream. The green tea extract (400 ppm added) was the most effective of the 3 antioxidants added to the palm oil, increasing OSI time by a factor of 2.3. By examining the correlation coefficients among parameters for storage period, the sensory score indicated that the non-dairy cream was suitable. The shelf life of the TE (green tea extract, 400 ppm) and TEA (TE plus 0.002% ascorbic acid) oils was extended to 24% and 51% more than that of the control at $25^{\circ}C$, respectively. At $20^{\circ}C$, the shelf life of the TE oil was 2.5 months and that of the TEA oil was 5.5 months, increases of 28% and 62.5%, respectively, over the control.

Preparation and Characteristics of Steak Sauces Containing Sweet and Soft Persimmons (단감과 연시를 함유한 스테이크 소스의 제조 및 품질 특성)

  • Steak sauces containing Korean persimmon were prepared and characteristics were evaluated. SOP (steak sauce containing soft persimmon), SOPP (steak sauce containing soft persimmon powder), and SWP (steak sauce containing sweet persimmon extract) with 5, 10, and 15% persimmon weight per sauce weight were prepared by a common formula. Antioxidant activity was determined by DPPH and ABTS radical scavenging activity, and sweetness of the sauces increased with increasing persimmon content. DPPH radical scavenging activities for SWP with persimmon content of 5 and 15% were $75.28{\pm}0.03%$ and $81.04{\pm}0.01%$, respectively. ABTS radical scavenging activities of SWP with persimmon content of 5 and 15% were $55.64{\pm}0.06$ and $59.18{\pm}0.07%$, respectively. With addition of persimmon, yellowness (b) and redness (a) increased. In overall acceptance of sensory evaluation, 5% SWP showed a relatively high score.

Quality Characteristics of Injulmi Prepared with Dry Glutinous Rice Flour According to the Punching Time (치는 시간을 달리한 건식 쌀가루 인절미의 품질특성)

  • Purpose: The objective of this study was to investigate the quality characteristics of injulmi made with dry glutinous rice flour according to the punching time (1, 4, 7, 10 min) and the frozen storage period (0, 1, 7, 30 days) as compared with the control made by the traditional method. Methods: Moisture content, texture profile, and sensory evaluation were measured in triplicate and color was measured five times. Results: The moisture content was highest in the sample prepared with 7 min of punching time and the control. As the punching time for injulmi increased, moisture content tended to increase. The L-value increased with increased punching time and the L-value was highest in the samples with 5 min and 7 min of punching time whereas the L-value showed no constant trend with frozen storage. The texture profile analysis indicated that adhesiveness, and gumminess decreased significantly with increased punching time, and punching for 7 min resulted in the highest hardness. The results of an acceptance test, showed that the injulmi prepared with dry glutinous rice flour had higher scores for color, flavor, and taste, texture than the control made with the traditional method. The whiteness of injulmi prepared with dry glutinous rice flour increased with longer punching times and, the sample with 10 min punching time and 7 days of frozen storage had the highest score in the acceptance test. Conclusion: These results can be used as primary data for research on the texture of injulmi made with dry glutinous rice flour.

Effect of Partial Replacement of Rice Flour with Black or Brown Rice Flour on Textural Properties and Retrogradation of Julpyun (흑미 및 현미의 부분적인 대체가 절편의 물성과 노화에 미치는 영향)

  • This study was attempted to investigate the effect of partial replacement of rice flour with black or brown rice flour on texture properties and retrogradation of Julpyun(Korean rice cake). In sensory evaluation, the Julpyuns replaced black or brown rice flour 20% had high score in color, flavor and overall acceptability not including mouthfeel. As the result of the measurement with texture analyzer, hardness, gumminess and chewiness of Julpyuns tended to decrease in proportion to the amount of black and brown rice flour in the formula. These resets implied that the degree of retrogradation of black and brown rice Julpyuns might be low. Julpyuns replaced with black rice were a little lower than those of brown rice in the hardness. In the retrogradation speed by Avrami,s equation, the rate constants of Julpyun replaced black and brown rice flour was lower than that of milled rice, restating in delay in firming.

Fine Granulation Characteristics of Freeze-Dried Royal Jelly (동결건조 로얄제리의 세립가공 특성)

  • A fine granule was prepared using freeze-dried royal jelly. For its preparation, which depended on operational parameters like its glucose-to-total sugar content ratio ($X_1$,0-100%), ethanol concentration ($X_2$,75-95%) and sprayed ethanol solution content ($X_3$,8-12%) using freeze-dried royal jelly, the response surface methodology was used to monitor the optimum conditions for the yield, the fragmentation rate with shaking, and the organoleptic properties. The maximum yield was 89.99% with a glucose-to-total sugar content ratio of 59.30%, an ethanol concentration of 88.64%, and a sprayed ethanol solution content of 11.83%. The minimum fragmentation rate by shaking was 0.82% at the glucose-to-total-sugar content ratio of 22.35%, the ethanol concentration of 77.21%, and the sprayed ethanol solution content of 10.59%. The sensory score for the overall palatability of the organoleptic properties was 7.45 at the glucose-to-total-sugar content ratio of 31.81%, the ethanol concentration of 93.96%, and the sprayed ethanol solution content of 10.51%.
