Applying a New Process for Local Food Menu Development in Gimpo

  • Recently, increasing interests in local foods have been highlighted along with active efforts and activities from autonomy organizations to develop local cultures and promote local economies by generating value added products and profits through the development of local foods. Subsequently, useful effects might result by making local foods attractive to tourists, such as by using indigenous Gimpo products to make menu items that incorporate the social, economic, and cultural aspects of the Gimpo area, and contributing to its food culture, the development and use of its indigenous products, and promoting local restaurant businesses, etc. The items of the survey used to select the local food menu items to be developed were limited to ideas offered by expert groups, and were implemented by a new menu development process. In order to derive the menu items to develop, the following method was applied: a brainstorming session with experts to generate and draft ideas, a questionnaire to chefs and cooks in special grade hotels is Seoul to select the menu items to develop from those drafted, and sensory evaluations by experts to evaluate the developed items. Frequency analysis and technical statistical analysis were performed using the SPSS 12.0 program package, where 13 kinds of local foods were ultimately developed using indigenous products of Gimpo. The developed local food menu items were rice & grape sujaebi, grape sikhae, fried rice embryo bud, grape yanggaeng, rice pancakes, rice spaghetti, grape seed oil dressing, grape sauce, rice pizza, grape pie, rice & grape ice cream, grape chocolate, and rice roll cakes.

Metabolizable Energy Values of Some Poultry Feeds Determined by Various Methods and Their Estimation Using Metabolizability of the Dry Matter

  • Metabolizable energy (M.E.) values of 12 U.S. feedstuffs and 10 Korean feed ingredients for poultry were determined both by the total collection method and by the chromic oxide indicator method. It was found that M.E. values of most poultry feedstuffs can be measured accurately by either method. Limitation of feed intake to almost maintenance level(approximately 60% of ad libitum) did not increase or decrease the M.E. value of the feeds. An attempt was made to establish a prediction equation to estimate the M.E. values based on the apparent metabolizability of dry matter (D.M.) in the feedstuffs. The results indicated that linear relationships do exist between D. M. metabolizability and M.E. values of carbohydrate-rich feedstuffs (grains and their by-products) or protein-rich feed ingredients (oil seed meals and animal protein feeds) or lipid-rich feeds (fats and oils) as follows: The prediction equation for carbohydrate-rich feedstuffs was Y = 0.0947x - 3.498 ($r^2\;=\;0.99$, Sy.x = 0.015); for protein-rich feed ingredients. it was Y = 0.1234x - 4.898 ($r^2\;=\;0.99$, Sy.x = 0.027); and for lipid-rich feedstuffs it was Y = 0.0844x + 0.774 ($r^2\;=\;0.99$, Sy.x = 0.032). where x = metabolizability of dry matter of feeds in %, and Y=metabolizable energy values in kcal./g. The errors attached to these estimations were relatively small. Thus these prediction equations may be very useful for estimation of the M.E. values from D.M. apparent metaboiizability of feeds, especially in areas of the world where calorimetry is not possible.

  • The role of soil microorganisms, specifically rhizobacteria, in the development of rhizoremediation techniques is important to speed up the process and to increase the rate of mobilization or absorption of heavy metals to the plant. In this study, Methylobacterium sp. SY-NiR1 was isolated from the rhizosphere soils of plants in oil and heavy metal-contaminated soil. Based on its pink pigmented colony, rod-shape cells, and belonging in $\alpha-Proteobacteria$, Methylobacterium sp. SY-NiR1 is considered a pink-pigmented facultative methylotroph. SY-NiR1 had the ability to produce indole acetic acid which is one of phytohormones. This bacterium showed resistance against multiple heavy metals such as Cd, Cr, Cu, Pb, Ni, Zn, and the order of its resistance based on $EC_{50}$ was Zn > Ni > Cu > Pb > Cd > Cr. Therefore, Methylobacterium sp. SY-NiR1 can stimulate seed germination and plant growth in soil contaminated with heavy metals.

Encapsulation of Whole Cell $\beta$-Galactosidase of Escherichia coli (전세포 Escherichia coli 의 캡슐고정화)

  • Escherichia coli was inoculated in calcium alginate capsules and cultivated to prepare encapsulated whole cell ${\beta}$-galactosidase. The dry cell weight in the capsule reached 100 g/L based on the inner space of the capsule. The activity of the encapsulated whole cell ${\beta}$-galactosidase increased with the dry cell weight increase during cultivation in the production medium. The activity of the encapsulated whole cell ${\beta}$-galactosidase was increased 25% by adding $2{\times}10^{-4}M Zn^{+2}$ ion in the production medium and 10% by coencapsulating with 2% (v/v) sunflower seed oil. The activity of encapsulated whole cell ${\beta}$-galactosidase produced in the concentric air lift reactor in which kLa was 82/hr was 86% higher than that in the shaking flask incubator where kLa was 2.55/hr.

Comparison of Characteristics Related with Soybean Sprouts between Glycine max and G. soja (콩의 재배종과 야생종의 콩나물관련 특성)

  • Soybean sprout trails were evaluated for soybeans for sprout (Glycine max) and wild soybeans (Glycine soja). Soybeans for sprout are characterized with small seed size of 10-14 grams per 100 seeds and are traditionally used only for producing sprouts. No difference was observed in hypocotyl length and sprout yield between two types of soybean. (However total length, hypocotyl hypocotyl, body weight, and the rate of good quality were greater in soybeans for sprout.) Number of lateral roots and root length were greater in wild soybeans. Contents of crude oil, oleic acid, and sucrose were higher in soybean for sprout, while that of protein and linoleic acid were higher in wild soybeans. There was no difference in sprout isoflavone content. Out of 17 amino acids analyzed, 10 amino acids such as aspartic acid, lysine, and arginine. etc. showed significantly Higher content in wild soybeans. Hypocotyl color of sprouts estimated by color meter based on the degree of L(brightness), a(red), and b(yellow) values were better in wild soybeans than soybean for sprout.

Effect of Dietary Conjugated Linoleic Acid on Lipid Characteristics of Egg Yolk

  • A total of 250 laying hens were fed a diet containing 0, 1, 2.5 or 5% conjugated linoleic acid (CLA), and 5% Safflower seed oil (SSO) for 5 weeks, and eggs were collected by week to analyse lipid characteristics of egg yolk. Egg yolk from CLA-fed groups showed significant increase in CLA content with increased CLA in the diet. Dietary CLA also increased the ratio of saturated fatty acids and decreased unsaturated fatty acids in the egg yolk. The proportion of myristic, palmitic, stearic and CLA were increased, while those of oleic, linoleic, linolenic and arachidonic acid were decreased. The cholesterol content in egg yolk was significantly decreased by dietary CLA for 5 weeks feeding. After 7 days of feeding, 5% CLA-fed group showed the lowest cholesterol content in egg yolk. CLAfed groups showed significantly lower 2-thiobarbituric acid-reactive substances (TBARS) values compared to control and SSO-fed group after 14 days of storage. No significant differences in TBARS values among CLA-fed groups were observed at the 28 days of storage. Results suggested that lipid oxidation of egg yolk during cold storage could be inhibited by dietary CLA due not only to changes in fatty acid composition but also to the high concentration of CLA in egg yolk.

The Effect of Variety and Growing Conditions on the Chemical Composition and Nutritive Value of Wheat for Broilers

  • The aim of this study was to examine the effect of variety and growing conditions of wheat on broiler performance and nutrient digestibility. One hundred and sixty-four wheat samples, collected from a wide range of different sources, locations, varieties and years, were analyzed for a range of chemical and physical parameters. Chemical and physical parameters measured included specific weight, thousand grain weight (TG), in vitro viscosity, gross energy, N, NDF, starch, total and soluble non-starch polysaccharides (NSP), lysine, threonine, amylose, hardness, rate of starch digestion and protein profiles. Ninety-four of the wheat samples were selected for inclusion in four bird trials. Birds were housed in individual wire metabolizm cages from 7 to 28 d and offered water and feed ad libitum. Dry matter intake (DMI), live weight gain (LWG) and gain:feed were determined weekly. A balance collection was carried out from 14 to 21 d for determination of apparent metabolizable energy (AME), ME:gain, DM retention, oil and NDF digestibility. At 28 d the birds were sacrificed, the contents of the jejunum removed for determination of in vivo viscosity and the contents of the ileum removed for determination of ileal DM, starch and protein digestibility. The wheat samples used in the study had wide-ranging chemical and physical parameters, leading to bird DMI, LWG, gain:feed, ME:GE, AME content and ileal starch and protein digestibility being significantly (p<0.05) affected by wheat sample. A high level of N fertilizer application to the English and NI wheat samples tended to benefit bird performance, with increases of up to 3.4, 7.2 and 3.8% in DMI, LWG and gain:feed, respectively. Fungicide application also appeared to have a positive effect on bird performance, with fungicide treated (+F) wheat increasing bird DMI, LWG and gain:feed by 6.6, 9.3 and 2.7%, over the non-fungicide treated (-F) wheats. An increase (p<0.1) of 9.3% in gain:feed was also observed at the low seed rate of 40 compared to 640 seeds/$m^2$. It was concluded that the type of wheat sample and environmental growing conditions significantly affects bird performance when fed wheat-based diets.

Changes of Antioxidant Enzyme Activity in Bagrid Catfish, Pseudobagrus fulvidraco Exposed to Diethylhexyl Phthalate (Diethylhexyl Phthalate에 노출된 동자개, Pseudobagrus fulvidraco의 항산화 효소활성의 변동)

  • The effects of diethylhexyl phthalate (DEHP) on various oxidative stress responses in liver, kidney and gill tissues of freshwater bagrid catfish Pseudobagrus fulvidraco were investigated under laboratory conditions. Bagrid catfish were intraperitoneally injected with sunflower seed oil containing nominal concentrations of 0, 300 or 900mg DEHP per kilogram of body weight for 3 days and the effects after last injection were assessed in liver, kidney and gill tissues of the exposed organisms. The oxidative stress responses of fish were evaluated by analyzing the level of glutathione (GSH), as well as the activities of antioxidant enzymes such as glutathione S-transferase (GST), glutathione peroxidase (GPx) and glutathione reductase (GR). After exposure to the DEHP, there were significant decrease in GR, GPx activity and GSH content in liver of fish exposed to 900 mg DEHP per kilogram of body weight compared to the control group. Compared with the control group, significant decreases in renal GPx and GR activity were observed in the DEHP treatment groups (900 mg $kg^{-1}$ bw). However, no significant difference was observed in any oxidative stress responses in gills between the DEHP-treated and the untreated group of fish. The findings of the present investigation show that DEHP induce oxidative stress and the liver was the most affected organ followed by the kidney and gills. Furthermore, the changes of GPx and GR activities may be important indicators of oxidative stress responses but additional study is required to confirm the oxidative stress of DEHP.

Studies on Competition Effect and Spatial Treatment for Soybean Genotypes (대두유전자형에 대한 간격처리와 경합효과에 관한 연구)

  • 1. Four soybean varieties in pure stand and mixtures were grown in 20 competition treatments of genotypes at within-row spacings of 5, 10, 20, 40, and 80 cm and were investigated in 10 characters for different genotypes. 2. Yield, weight of 100 seeds, height, number of branches, pods per plant, and seeds per pod were highly significant for within-row spacing treatment. 3. There was no spacing treatment effect for number of nodes and days to flower. Maturity did not respond equally in four varieties for spacing effect. 4. Fruiting period was influenced by spacing treatment. Height and number of branches were increased as within-row spacings were increased. Seed yield per area was increased oppositely. 5. Difference between fertilizing and non-fertilizing treatment was not significant in this experiment. At 80 cm spacing no competition effect occurred for yield. 6. In the competition effect, Kumkang Daerip was strong competitor ani Chungbuck Back and Shelby were weak competitors. 7. The within-row spacing of uniformity in roder to increase yield per area was proved as 20 cm in this study. 8. Oil percent was increased as spacings were increased and protein percent was as spacings were decreased.

Resistance of Sesame and Perilla Cultivars to Meloidogyne arenaria and M. incognita in Korea (국내 참깨와 들깨품종의 뿌리혹선충 저항성 검정)

  • To select resistant oil seed crops against two species of root-knot nematodes, Meloidogyne incognita and M. arenaria, 10 cultivars of sesame (Sesamum indicum L.) and 10 cultivars of perilla (Perilla frutescens var. japonica) were screened in greenhouse pot test. All sesame cultivars tested were resistant to M. incognita but susceptible to M. arenaria. While, perilla was resistant to both Meloidogyne species. Therefore, perilla cultivars could be used as rotation crop in greenhouse infested with both M. incognita and M. arenaria. But, sesame cultivars only can be used as a rotation crop in greenhouse infested with M. incognita but not for M. arenaria.
