매생이 분말을 첨가한 식빵 제조 및 그 특성에 관한 연구 (Studies on the Manufacture and Quality Characteristics of Bread made with Capsosiphon fulvecense Powder)

  • For the utilization of seaweed (Capsosiphon fulvecense, algae) powder as an ingredient of bread, the quality of bread made with different concentration of seaweed powder was evaluated with physical and sensory properties. The powdered algae was shown to have crude protein content at 25.38%. The major minerals were identified with calcium with 8.38 g/kg, potassium with 9.5 g/kg, and magnesium with 5.6 g/kg, which comprised to 19.08% of total mineral content. Amount of essential amino acids content was estimated to be 835 mg/100 g. Content of essential fatty acid was found to be 27,25% of total fatty acids. For the preparation of bread added with seaweed powder, the addition ratio of seaweed was set at 3, 5 and 7% versus wheat flour with same ratio of other ingredients. L value, lightness of bread, was proportionally reduced with increse of seaweed powder. However, b value, yellowness, was increased with the addition of the seaweed powder. Adhesiveness, cohesiveness, and springiness of the bread were reduced with the addition of the seaweed powder, however, hardness of the bread was vice versa. Texture, flavor, color, and overall acceptance of the bread added seaweed powder were shown up significant differences among all tested groups (P < 0.001), that is, more seaweed powder showed less favorable texture, flavor, color, and overall acceptance. Although the bread added with seaweed powder showed a less preference compared to control group, the bread with 3% of seaweed powder was favorable to other test groups, which might have a potential for the commercialization of functional breads using seaweeds.

해조의 식용분말화에 관한 연구 (A Study on the Nutritive Value and Utilization of Powdered Seaweeds)

  • I. Subject of the study A study on the nutritive value and utilization of powdered seaweeds. II. Purpose and Importance of the study A. In Korea the shortage of food will be inevitable by the rapidly growing population. It will be very important study to develop a new food from the seaweeds which were not used hitherto for human consumption. B. The several kinds of seaweeds have been used by man in Korea mainly as side-dishes. However, a properly powdered seaweed will enable itself to be a good supplement or mixture to certain cereal flours. C. By adding the powdered seaweed to any cereals which have long been staple foods in this country the two fold benefits; saving of cereals and change of dietary pattern, will be secured. III. Objects and scope of the study A. Objects of the study The objects will come under four items. 1. To develop a powdered seaweed as a new food from the seaweeds which have been not used for human consumption. 2. To evaluate the nutritional quality of the products the analysis for chemical composition and animal feeding experiment will be conducted. 3. Experimental cocking and accepability test will be conducted for the powdered products to evaluate the value as food stuff. 4. Sanitary test and also economical analysis will be conducted for the powdered products. B. Scope of the study 1. Production of seaweed powders Sargassum fulvellum growing in eastern coast and Sargassum patens C.A. in southern coast were used as the material for the powders. These algae, which have been not used for human consumption, were pulverized through the processes of washing, drying, pulverization, etc. 2. Nutritional experiments a. Chemical composition Proximate components (water, protein, fat, cellulose, sugar, ash, salt), minerals (calcium, phosphorus, iron, iodine), vitamins (A, $B_1,\;B_2$ niacin, C) and amino acids were analyzed for the seaweed powders. b. Animal feeding experiment Weaning 160 rats (80 male and 80 female rats) were used as experimental animals, dividing them into 16 groups, 10 rats each group. Each group was fed for 12 weeks on cereal diet (Wheat flour, rice powder, barley powder, potato powder, corn flour) with the supplementary levels of 5%, 10%, 15%, 20% and 30% of the seaweed powder. After the feeding the growth, feed efficiency ratio, protain efficiency ratio and ,organs weights were checked and urine analysis, feces analysis and serum analysis were also conducted. 3. Experimental cooking and acceptability test a. Several basic studies were conducted to find the characteristics of the seaweed powder. b. 17 kinds of Korean dishes and 9 kinds of foreign dishes were prepared with cereal flours (wheat, rice, barley, potato, corn) with the supplementary levels of 5%, 10%, 15%, 20% and 30% of the seaweed powder. c. Acceptability test for the dishes was conducted according to plank's Form. 4. Sanitary test The heavy metals (Cd, Pb, As, Hg) in the seaweed powders were determined. 5. Economical analysis The retail price of the seaweed powder was compared with those of other cereals in the market. And also economical analysis was made from the nutritional point of view, calculating the body weight gained in grams per unit price of each feeding diet. IV. Results of the study and the suggestion for application A. Chemical composition 1. There is no any big difference in proximate components between powders of Sargassum fulvellum in eastern coast and Sargassum patens C.A. in southern coast. Seasonal difference is also not significant. Higher levels of protein, cellulose, ash and salt were found in the powders compared with common cereal foods. 2. The levels of calcium (Ca) and iron (Fe) in the powders were significantly higher than common cereal foods and also rich in iodine (I). Existence of vitamin A and vitamin C in the Powders is different point from cereal foods. Vitamin $B_1\;and\;B_2$ are also relatively rich in the powders.'Vitamin A in ·Sargassum fulvellum is high and the levels of some minerals and vitamins are seemed4 to be some influenced by seasons. 3. In the amino acid composition methionine, isoleucine, Iysine and valine are limiting amino acids. The protein qualities of Sargassum fulvellum and Sargassum patens C.A. are seemed to be .almost same and generally ·good. Seasonal difference in amino acid composition was found. B. Animal feeding experiment 1. The best growth was found at.10% supplemental level of the seaweed Powder and lower growth rate was shown at 30% level. 2. It was shown that 15% supplemental level of the Seaweed powder seems to fulfil, to some extent the mineral requirement of the animals. 3. No any changes were found in organs development except that, in kidney, there found decreasing in weight by increasing the supplemental level of the seaweed powder. 4. There is no any significant changes in nitrogen retention, serum cholesterol, serum calcium and urinary calcium in each supplemental level of the seaweed powder. 5. In animal feeding experiment it was concluded that $5%{\sim}15%$ levels supplementation of the seaweed powder are possible. C. Experimental cooking and acceptability test 1. The seaweed powder showed to be utilized more excellently in foreign cookings than in Korean cookings. Higher supplemental level of seaweed was passible in foreign cookings. 2. Hae-Jo-Kang and Jeon-Byung were more excellent than Song-Pyun, wheat cake, Soo-Je-Bee and wheat noodle. Hae-Je-Kang was excellent in its quality even as high as 5% supplemental level. 3. The higher levels of supplementation were used the more sticky cooking products were obtained. Song-Pyun and wheat cake were palatable and lustrous in 2% supplementation level. 4. In drop cookie the higher levels of supplementation, the more crisp product was obtained, compared with other cookies. 5. Corn cake, thin rice gruel, rice gruel and potato Jeon-Byung were more excellent in their quality than potato Man-Doo and potato noodle. Corn cake, thin rice gruel and rice gruel were excellent even as high as 5% supplementation level. 6. In several cooking Porducts some seaweed-oder was perceived in case of 3% or more levels of supplementation. This may be much diminished by the use of proper condiments. D. Sanitary test It seems that there is no any heavy metals (Cd, Pb, As, Hg) problem in these seaweed Powders in case these Powders are used as supplements to any cereal flours E. Economical analysis The price of the seaweed powder is lower than those of other cereals and that may be more lowered when mass production of the seaweed powder is made in future. The supplement of the seaweed powder to any cereals is also economical with the criterion of animal growth rate. F. It is recommended that these seaweed powders should be developed and used as supplement to any cereal flours or used as other food material. By doing so, both saving of cereals and improvement of individual's nutrition will greatly be achieved. It is also recommended that the feeding experiment for men would be conducted in future.

김스낵 제조시 도라지 첨가량에 따른 반죽액의 품질 특성 (Quality Characteristics of Dough Liquid according to the Addition Ratio of Doraji in Seaweed Snack Manufacturing)

  • This study was examined the quality characteristics of dough liquid according to the additional ratio of Doraji in seaweed snack manufacturing. Firstly, the results of Doraji type (dry & powder) were as follows: Carbohydrates 77.57~79.29, crude protein 9.10-9.25, crude fat 0.96~1.33 and calories 355~366 kcal, pH 5.42~5.45, sugar $3.53{\sim}3.96^{\circ}brix$, color 33.82~44.25 (L), 2.27~3.52 (B) and total free amino acids 2,200~2,699 mg/100 g. Total polyphenol contents had dry extracts 1,931.18 mg% and powder extract 1,382.43 mg%, DPPH and ABTs radical scavenging activities tended to increase with higher treatment concentration. Next, the results showed that dough liquid for seaweed snack manufacture which was added Doraji were as follows: Color became deep poppy red with increased addition of Doraji. The texture of adhesiveness, cohesiveness, chewiness, and brittleness tended to decrease with addition of Doraji. The springness showed the opposite tendency. Accordingly, these results suggest that 20% of dry Doraji extract is a proper proportion so that it can be added to the rice dough liquid to produce form Doraji (dry and powder) containing seaweed snacks.

고지방식이 급여 흰쥐에서 대황 및 대황정제환의 혈청 지질 개선 효과 (Effect of Eisenia Bicyclis and Its Pill on Serum Lipid Status in Rats Fed High Fat Diet)

  • In order to investigate whether Eisenia bicyclis (EB) as a functional food material improves serum lipid status, supplementation of EB powder or EB extract to the high fat/cholesterol diet was tested in 6-week old male Sprague-Dawley rats for four weeks. In the first experiment, four kinds of seaweed powder -Eisenia bicyclis (EB), Undaria pinnatifida (Up), Laminaria japonica (LJ), and Ecklonia stolonifera (ES) were compared with alginic acid (ALG) as well as control. In the second experiment, EB water extract and EB ethanol extract and EB pill containing EB and LJ powder were compared with the EB powder. Amounts of dietary fiber contained in experimental diets were adjusted to provide 5% of diets. Serum total cholesterol was significantly lower only in rats fed LJ or EB powder, but HDL cholesterol was higher in rats fed UP, LJ, ES or EB powder. Ratios of HDL-/total cholesterol of all seaweed groups including ALG were significantly higher than that of the control group. Serum triglyceride was lower in LJ, EB nd ES powder groups than the control group. In comparison of EB extracts, triglyceride level was decreased in rats fed only EB water extract as compared to control rats, but HDL cholesterol was elevated with both water and ethanol extracts. Serum levels of total cholesterol, triglyceride were decreased and HDL cholesterol was increased by the EB pill. Serum levels of thiobarbituric acid-reactive substances were lower in rats fed ES powder, and EB powder, EB water extract or EB pill, as compared to the control rats. Supplementation of EB powder and EB pill reduced serum level of GOT and GPT, respectively, as compared to the control group. In conclusion, EB and EB pill improve serum lipid status and may be utilized as ingredient of functional foods for the purpose of improving serum lipid profile and inhibiting peroxidation of lipids.

소라에서 분리한 Vibrio균으로 제조한 다시마 Single Cell Detritus(SCD)의 품질특성 (Quality Characteristics of Sea Tangle Single Cell Detritus (SCD) Manufactured by Vibrio sp. Isolated from Batillus cornutus)

  • 해조류를 식품으로 이용하기에는 분말화가 필수적이나 분쇄 등의 분말화 과정에서의 온도상승은 이들 생리활성성분의 열화를 가져올 수 있으며, 수십$\sim$수백 ${\mu}m$의 분말입자는 입자 상호간의 응집으로 인하여 유동성이 좋지 않다. 해조류의 기계적 분쇄의 단점을 해결하기 위하여, 다시마(Laminaria japonica)의 분해능이 강한 Vibrio sp.를 소라(Batillus cornutus)에서 찾아 다시마 SCD(Single Cell Detritus)를 제조하였으며 SCD가 가지는 여러 가지 성분 및 생리활성을 분석하였다. 다시마 SCD의 조단백 함량과 총아미노산의 함량은 다시마분말보다 높았으나 ash의 함량은 낮았다. 다시마 SCD와 분말시료의 항암활성은 각각 31.20과 29.27%로 차이가 없었다(p<0.05). ACE저해효과는 분말시료가 39.31%로 SCD의 26.07%보다 약간 높았다. 항혈액응고 측정 결과 다시마분말은 55.3초로 다시마 SCD의 34.5초보다 높았다. 또한 다시마 SCD와 분말은 항산화효과와 뇌허혈에 의한 신경세포사 억제효과는 없는 것으로 나타났다. 비록 다시마 SCD의 생리활성은 분말보다 약간 떨어지나 조단백질, 아미노산 및 지질의 함량이 높기 때문에 빵, 국수 및 수산 연제품 등의 첨가제로서 응용할 수 있는 큰 장점이 있다고 판단된다.

논두렁 물의 미생물군으로부터 해조분해능을 갖는 균주의 분리 (Isolation of Seaweed Hydrolytic Strains from Microfloras in Rice field Ditch Water)

  • Various bacterial strains were isolated from rice field ditch water, and their seaweed degrading activities were investigated. They were incubated in a liquid medium of sea tangle (Laminaria iaponica) and sea mustard (Undaria pinnatifida) powder for 3 weeks. Ratios of reduced sugar to total sugar of the liquid medium were measured once a week. Ratios of reduced sugar to total sugar of 27A311, 27C221 27A111 and 27B121 strains were highest. Accordingly, these four strains were incubated in 3 different liquid media of sodium alginate, sea tangle powder, and sea mustard powder for 3 or 4 weeks. The ratios of reduced sugar to total sugar and cell growth were measured once a week. Cell growth was higher in 27A111 and 27C221. Ratios of reduced sugar to total sugar was higher for 27C221 in the liquid mediums with sodium alginate and sea mustard powder, and for 27A111 in the liquid medium with sea tangle powder.

미생물을 이용한 해조류의 가수분해 및 이용 III. 부식소나무의 미생물군으로부터 해조 분해능을 갖는 균주의 분리 (Studies on the Hydrolysis of Seaweed using Microorganisms and Its Application III. Isolation of Seaweed Hydrolytic Strain from Microfloras in Decayed Pine Tree)

  • 해조 가수분해능이 우수할 것으로 추정되는 부식한 소나무에서 채취한 미생물군 시료에 대하여 다시마분말 첨가 고체배지를 이용하여 4차에 걸쳐 순수배양을 실시하였다. 그 결과 16균주를 분리하였으며, 이들 균주를 다시마분말 첨가 액체배지에서 3주간 배양하며, 1주 간격으로 전당과 환원당의 함량을 측정한 결과 배양 전 기간에 08A211, 08C221 및 08B121균주가 모든 균주 중에 대체로 높은 분해율을 보였다. 이렇게 하여 선택된 3균주, 즉 08A211, 08B121 및 08C221균주에 대하여 sodium alginate, 다시마 및 미역분말이 첨가된 액체배지에서 균체성장과 분해율은 측정한 결과 08B121균주가 가장 높은 균체 성장과 다시마 및 미역 분해율을 나타내었다. 따라서 본 균주에 해조의 다당 또는 다른 성분을 가수분해시키는 효소가 존재할 것으로 추측된다.

해조류 분말 종류를 다르게 첨가한 배합사료가 어린 해삼(Apostichopus japonicus)의 성장 및 체조성에 미치는 영향 (Effects of Practical Diets Containing Different Seaweed Powders on the Growth and Body Composition of Juvenile Sea Cucumber Apostichopus japonicus)

  • This study was conducted to investigate the effects of practical diets containing different seaweed powders on the growth and body composition of juvenile sea cucumber Apostichopus japonicus. Six experimental diets were formulated to contain 40% of the following seaweed powders: Sargassum thunbergii (ST), Undaria pinnatifida (UP), Ascophyllum nodosum (AN), Hizikia fusiformis (HF), fermented Laminaria japonica (FLJ), and fermented Hizikia fusiformis (FHF). Sea cucumbers (30 per tank; initial mean weight $0.4{\pm}0.01g$) in three replicates of six groups were fed one of the six experimental diets for 15 weeks. Survival in all groups was 83-93%, with no significant differences among the experimental groups. The specific growth rates of the sea cucumbers fed the ST and UP diets were significantly higher than those of sea cucumbers fed the HF, FLJ, and FHF diets, but did not significantly differ from those of sea cucumbers fed the AN diet. The results of this study suggest that S. thunbergii, U. pinnatifida, and A. nodosum could be useful sources of seaweed powder for practical diets of juvenile sea cucumber.

화장품 소재연구를 위한 해조류의 발효 공정 확립 (Establishment of Seaweed Fermentation Process for Cosmetic Material Research)

  • 본 연구에서는 감태, 파래, 서실, 대황, 청각, 불등가사리, 세모가사리, 참도박, 미역, 다시마 등 해조류의 발효공정을 확립함으로써 해양 생물의 화장품 소재로의 사용 가능성에 대한 제안을 하고자 하였다. 해조류의 효과적인 발효를 위해 김치로부터 분리된 유산균인 락토바실러스 사케이(Lactobacillus sakei) 균주를 선정하였고, 첨가제로 전지 분유를 사용하였다. 해조류 분쇄물 2.0 % 와 전지분유 1.0 % 를 투입하고, 이후 $40^{\circ}C$ 까지 방랭하여 준비 한 후 락토바실러스 사케아이 유산균 1.0 % 를 접종 하였다. 발효물을 냉각하고 여과한 후 부틸렌글라이콜, 글리세린 등과 방부 역할을 할 수 있는 1, 2-헥산다이올 등을 첨가하여 혼합 후 제품을 완성하였다. 10 종의 해조류 중 감태, 청각, 미역, 다시마의 발효 효율이 좋음을 확인 할 수 있었다. 화장품에 적용 가능한 발효물의 함량을 결정 하였고, HET-CAM (The Hen's egg test-Chorioallantoic membrane) 법을 이용하여 원료의 안전성을 확인 하였다.

Physicochemical Properties of Restructured Black Goat Jerky with Various Types of Ultra-Ground Seaweed Powders

  • This study investigated the effects of ultra-ground seaweed powders (USP) on the physicochemical properties (proximate composition, mineral contents, pH, color, shear force, sensory evaluation, electronic nose, and electronic tongue) of restructured black goat jerky. Restructured black goat jerky was prepared using three different treatments, i.e., 3% (w/w) each of ultra-ground sea tangle (ST; Undaria pinnatifida), sea mustard (SM; Saccharina japonica), and sea string (SS; Gracilaria verrucosa) powders. Moisture and ash contents were significantly higher in the USP-treated group than in the control (p<0.05). Potassium, calcium, and zinc contents were significantly higher in the SM than in the other USP-treated groups (p<0.05). In contrast, pH values were significantly higher in the ST and SM than in the control and SS (p<0.05). CIE L*, CIE a*, CIE b*, and shear force were significantly lower in the USP-treated groups than in the control (p<0.05). Sensory evaluation revealed no significant difference in taste, texture, seaweed-like odor, and goaty flavor (p<0.05). Principal component analysis (PCA) and peak graph analysis of the electronic nose showed that the SS differed the most from the control compared with the other USP-treated groups, owing to the seaweed odor of ultra-ground SS powder. The PCA and ranking analysis of the electronic tongue showed that the umami taste of the SM was higher than that of the control and other USP-treated groups. Therefore, the potassium, calcium, zinc contents, and umami taste of reconstituted black goat jerky were significantly higher in the SM than in the control and other USP-treated groups.
