A research study of school children's preferences for insanitary food near school (초등학생들의 기호식품 선호도 등에 대한 조사연구)

  • Cheap, low quality food products that are unhealthy are prevailing among children. These low quality products are stirring up the urge to purchase among children and so it is pointed out as a problem. In order to arrive at a solution for the indication of negligence on the side of manufacturing, processing, circulation, and marketing management, a survey asking about interests and preferences on insanitary food products was held during May 2, 2005 to June 30. The subjects were 540 students and 510 parents form 5 elementary schools located at Gwangjin Gu, Seoul including Ja-yang elementary school, etc. This study aims at arranging measures against insanitary food products and contribution to maintenance of children's health.

Effect of Food Additives on Heat Sensitivity of Listeria monocytogenes H-12 and Decontamination of Kitchen Utensils (식품 첨가물이 Listeria monocytogenes H-12의 내열성에 미치는 영향 및 오염된 조리기구 제균)

  • Effect of food additives on the heat sensitivity of listeria monocytogenes H-12 inoculated into Pollack surimi was investigated and also confirmed the effectiveness of various decontamination method such as tap water washing, chlorination, ultraviolet irradiation and heat treatment haying been applied on cooking utensils. Food additives such as polyphosphate, chitosan, and potassium sorbate increased heat sensitivity of t monocytogenes H-12 and polyphosphate showed the strongest synergistic effect. The tested strain was not detected from stainless steel and plastic cutting board contaminated with $10^4{\~}10^5/cm^2$ of L monocytogenes H-12 after tap water washing for 10 seconds or 1 minute, but washing effect was not found in wooden cutting board. The chlorination of stainless steel and plastic cutting board for 10 seconds with $5{\~}50 ppm$ solution eliminated all cells of the contaminated strain, however any change of the viable cell count was not observed in the chlorination of wooden cutting board, W irradiation on stainless steel and plastic cutting board for 5 minutes with 15 W above 30 cm eliminated the contaminated strain, but the tested strain was still found after 60 seconds of irradiation on wooden cutting board. The treatment of hot water on all used cutting boards for 10 seconds at $70^{\circ}C$ resulted in complete loss of viability of the contaminated strain.

A New Analytical Method for Fluoroquinolones in Fisheries Products by High Performance Liquid Chromatography (HPLC를 이용한 어패류 중의 fluoroquinolone계 항균제의 분석법)

  • Fluoroquinolones are the most common group of antibacterial agents currently used in the Korean aquaculture industry, and use of these agents has been increasing steadily. High performance liquid chromatography (HPLC) with fluorescence detection was used for the simultaneous determination of five fluoroquinolones in fish and shellfish: ofloxacin (OFL), pefloxacin (PEF), norfloxacin (NOR), ciprofloxacin (CIP), and enrofloxacin (ENRO). Fish and shellfish muscle was homogenized, and protein, lipid, and low molecular weight pigments were then excluded from the homogenate. The final eluates were analyzed by HPLC equipped with a Shiseido UG-120 type C18 reverse-phase column ($4.6{\times}250 mm$, $5{\mu}m$) and a fluorescence detector (excitation at 280 nm, emission at 450 nm). The mobile phase was 0.1 M phosphoric acid and acetonitrile solution (91:9, v/v) and tetrahydrofuran (THF) was added to it at a rate of 5 mL per a liter of the mobile phase. Adequate chromatography separation was obtained using the above method. Average recoveries of fortified samples at levels from 0.05 to 0.5 mg/kg were $72.3{\pm}2.5-84.5{\pm}1.2%$ for OFL, $82.7{\pm}3.3- 109.3{\pm}7.5%$ for NOR, $85.3{\pm}6.6-116.0{\pm}7.9%$ for PEF, $76.0{\pm}4.3-109.3{\pm}12.4%$ for CIP, and $78.7{\pm}5.9-100.0{\pm}9.8%$ for ENRO. The limit of detection of OFL was $5{\mu}g/L$, the others were $1{\mu}g/L$. We concluded that the new analytical method was suitable for the determination of fluoroquinolones in fish and shellfish.

Studies on White Potato Processing for Mixed Cooking with Rice as Main Dish (PartII)-Polyphenol oxidase inactivation and safety of treated potato granules- (감자 주식화(主食化)에 관(關)한 연구(硏究) (제2보(第2報))-감자쌀의 변색방지(變色防止) 및 안정성(安定性)에 관(關)하여-)

  • In order to establish methods of potato processing for mixed cooking with rice as main diet, treatment for polyphenol oxidase inactivation in potato tissues, and safety in regard to sanitation were studied. The results were summarized as follows: 1. Cut potato granule which were blanched in boiling water are practical and best in color within $3{\sim}6\;minutes$ dipping. 2. Dipping treatment of potato granules in a saline solution is not pratical because of the resulting color and saline taste. 3. Dipping treatment of potato granules in a boiling saline solution is not practical because of residual salt. 4. Dipping treatment of potato granules in low concentration of hydrochloric acid solution is not effective in color changes but dipping treatment from 0.1N concentration for 4-10 minutes to 0.5N concentration for $1{\sim}10minutes$ shows good effects. 5. Dipping treatment in boiling hydrochloric acid solution of 0.04-0.068N concentration for 3-5 minutes dipping is practical for its resulting color. 6. Dipping treatments in 0.05% of $K_2S_20_5$ solution for $50{\sim}60\;minutes$ and in 0.06% for $40{\sim}60\;minutes$ and 0.065% for $10{\sim}60\;minutes$ shows a small palatability in color but its boiled potato granules shows good color 7. Treatments for any time in $0.01{\sim}0.03%$ of boiling $K_2K_20_5$ solution after predipping in its cold solution for longer time than 30minutes show effective in the color and palatability of the potato granules and their cooked ones. 8. From the view of food sanitation, dipping treatment of the potato granules in the solution of $K_2S_20_5$ is safe because of the few residual amount of $SO_2$. 9. All the methods of treatment that potato granules are dipped for any time at 0.01% of $K_2S_20_5$ solution are safe from the view of fond sanitation. At 0.03% of $K_2S_20_5$ solution, nothing but the methods of treatment that they are dipped within 30 minutes and boiled within 4 minutes are safe.

Change of Paralytic Shellfish Poison Components during Bacterial Detoxification (마비성패류독의 생물학적 제독 -2. 해수에서 분리한 Enterobacter sp. CW-6를 이용한 마비성패류독의 분해-)

  • Optimum temperature for paralytic shellfish poison (PSP) detoxofication of Enterobacter sp. CW-6 isolated from sea water and changes of contents and ingredients composition of PSP during bacterial detoxification process were investigated. Enterobacter sp. CW-6 detoxicated $61.5{\~}67.7{\%}\;and\;87.4{\~}96.8{\%}$ of initial PSP toxicity ($25.0{\~}28.5\;nmole/g$) after $5{\~}12$ days at 30 and $35^{\circ}C$, identified as optimal growth temperature, respectively. The detoxification rate of Enterobacter sp. CW-6 for crude PSP with initial concentration of 38.2 nmole/g after 8 and 12 days at $30^{\circ}C$ in the Marine broth was 88.4 and $92.7{\%}$, respectively. During bacterial detoxification process using crude toxin solution, temporary increasement of STX group was detected and identified that was derived from GTX2, 3 group. The detoxification rate of Enterobaoter sp. CW-6 on purified GTX1 and 4 with initial concentration 47 nmole/g and 37 nmole/g were more than $90{\%}$ after 12 days in the marine broth at $30^{\circ}C$. Enterobacter sp. CW-6 also showed a detoxification activity on purified GTX2 and 3, and the detoxification rate for the initial concentration 25.6 nmole/g after 12 days was $66.4{\%}$.

Inhibition Effect of Alcohol Production in Gochujang by Garlic and Chives Extract (마늘과 부추 추출물에 의한 고추장의 알코올 생성 억제 효과)

  • Saccharomyces cerevisiae and Zygosaccharomyces rouxii are known to produce alcohol in gochujang. To reduce alcohol production, garlic and chives were applied to gochujang solution to find their inhibitory effect on S. cerevisiae and Z. rouxii. The 70% ethanol extract of garlic and chives showed significant inhibition activity against S. cerevisiae and Z. rouxii, showing growth inhibition zone of 14.00±0.00~25.33±0.58 mm by disc diffusion method. In addition, the addition of 70% ethanol extract of garlic and chives in 10% gochujang solution spiked with S. cerevisiae and Z. rouxii reduced the numbers of total aerobic bacteria (below 7 Log CFU/g) and yeast (below 4 Log CFU/g), alcohol content (below 0.30%), respectively. In conclusion, the addition of garlic ethanol (70%) extract or chives ethanol (70%) extract to gochujang inhibited the growth of S. cerevisiae and Z. rouxii, resulting in reduced alcohol content in gochujang. For further study, it is necessary to conduct food application experiments by using real gochujang paste.

The Perception of Nutrition Teacher's Competency and Duty (영양교사의 자질 및 업무에 대한 인식도 분석)

  • The purposes of this study were to identify the significance of a nutrition teacher, to analyze the importance of competence as a nutrition teacher and to evaluate the importance and difficulty for duties of nutrition teachers. The questionnaire was distributed to 554 preliminary teachers and a total of 468 usable data were collected with 84.5% of response rate from August to October 2006. The statistical data analysis was completed by using SPSS Win (ver. 10.0) for descriptive analysis, t-test, ANOVA and ${\chi}^2-test$. The results were as follows: Preliminary nutrition teachers expected that conversion of a school dietitian into a nutrition teacher could lead to systematic and constant nutrition education and come into synergic effect by doing meal service with nutrition education. For a teacher's competence, all three paradigms were perceived as important. It was evaluated to be high for a knowledge factor in the empirical analytic paradigm, a personality factor in the practical interpretive paradigm and an attitude factor in the critical emancipatory paradigm. And 'a knowledge for nutrition and sanitation (4.59)' and 'an ability to raise a self-management capacity for right food habit and dietary life (4.59)' were showed as most important in a nutrition teacher. It appeared that both important and difficult duties of nutrition teachers were nutrition education, nutrition counseling and sanitation quality of nutrition education; the most necessary solution was to develop a reference and program for nutrition education (37.4%). In conclusion, the systematic supports of district offices of education and associated institutions as well as sustained efforts of preliminary nutrition teachers for themselves should lead to establish a successful system of nutrition teachers.

  • Salted anchovy, generally favored in Europe, is one of the traditional fermented fish products in southern European countries and raw anchovy are aged in 20∼30% NaCl solution for 6 months (Ishida et al., 1994).   • Olive flounder and Black rockfish comprises around 90% of the total fish culture in Korea. Most of the olive flounder is consumed as raw fish meat “saengseonhoe”, as like a sashimi in Japan. Also, texture is particularly a important factor which determine the quality of raw fish meat in Korea. Many works have attempted to improve of texture such as arai, electrical stimulation and compulsory exercise of fishes. (omitted)
