The Mineral Contents of Chicken Stock according to Salt Contents - Using a High-Pressure Extraction Cooking - (소금 첨가량에 따른 닭 육수의 무기질 함량 특성 - 고압 가열 추출 방식 이용 -)

  • The present study is purposed to suggest accurate guidelines for developing standardized chicken meat stock containing salt, and to develop a product for mass production of uniform quality achieved by applying High Pressure Extraction Cooking(HPEC) using a high.pressure extractor. Through this study, we examined water contents, ash contents, salinity, turbidity and mineral contents of chicken meat stock according to the addition of salt. The ash contents increased with the increase of the addition of salt, but the water contents decreased with the increase of the addition of salt. Salinity increased with the increase of the addition of salt. Turbidity decreased with the increase of the addition of salt, and difference in turbidity according to the addition of salt was regular. Among mineral contents, Na showed the highest content, which was believed to be because of the addition of salt, and it was followed by K and P. The results of this study show that the mineral contents in the stock were different according to the addition of salt, but they were neither proportional to the addition of salt nor showed a regular pattern.

  • Salt accumulation is one of themajor problems in soils under protected cultivation . Since protected cultivation does not have rainfall or excessive irrigation, salt accumulaiton inthe soils is inevitable. In this study, characteristics of salt accumulation in soil column were ivestigated, and a salt-extracting method was tested to see its effectiveness. The results showed that the concentration of salt in top soil layers increased and electrical conductivity as thesalt concentration decreased especially in the top soil layer .When extraction medium was applied.

  • It was studied on the reductive extraction between the eutectic salt and Bi metal phases. The solutes were zirconium and the rare earth elements, where zirconium was used as the surrogate for the transuranic(TRU) elements. All the experiments were performed in a glove box filled with argon gas. Two types of experimental conditions were used -high and low initial solute concentrations in salt. Li-Bi alloy was used as a reducing agent to reduce the high chemical activity of Li. The reductive extraction characteristics were examined using ICP, XRD and EPMA analysis. Zirconium was successfully separated from the rare earth elements by the reductive extraction method. The LiF-NaF-KF system was favorable among the fluoride salt systems, whereas the LiCl-KCl system was favorable among the chloride salt systems. When the solute concentrations were high, intermetallic compounds were found near the salt-metal interface.

  • Alkaline- or salt-assisted extractions have been widely used to extract edible insect proteins, however, there is a need for extraction techniques that balance cost-efficient production as well as preserving the protein properties. Mealworm proteins (Tenebrio molitor larvae) were extracted using three different extraction methods-alkali (AMP), salt (SMP), and water (WMP)-and then physicochemical and techno-functional properties were examined. AMP had high yield, protein, and amino acid contents, whereas WMP had high moisture, ash, and fat contents. SDS-PAGE showed a wide range of molecular weights in WMP whereas mostly low molecular weights were observed in AMP and SMP. AMP had poor protein solubilities compared to SMP and WMP across all pHs. AMP had enhanced water-holding capacity and emulsion stability, whereas WMP had improved oil-holding capacity and foaming properties. WMP formed a gel with and without the transglutaminase. The physicochemical and techno-functional properties demonstrated that water-soluble mealworm protein was superior to alkali-and salt-soluble mealworm proteins. Considering the cost efficiency and minimal impact on the environment as well, a cold press juicer could be utilized for mass production of mealworm protein compared to the conventional methods of protein extraction using alkali and salt.

Physiological and Sensory Characteristics of Brown Stock Depending on Salt Content (소금 첨가량에 따른 갈색 육수의 이화학적 및 관능적 특성)

  • This study applied high-pressure extraction cooking, which has been proven superior in processibility and stock extraction, for the preparation of stock, which is widely used as a basic material of dishes, and examined the physicochemical and sensory properties of the extracted stock by adding salt. We observed changes in the chromaticity of brown stock according to salt content, and pH decreased with increased the salt content, suggesting that stock was acidified. Regarding the mineral content, Na was the highest, followed by K and P. Regarding total free amino acid content, the content of essential amino acids, enhancing free amino acids, and other amino acids also showed the highest level in S2, which contented 0.3% salt. In the sensory test, saltiness grew stronger with an increase in salt content, and overall palatability was highest in S2. Regarding ranking, preference was highest for S2. Utilize to data that study finding of above is actual in development for mass production of brown stock product licensed cooks' traditional mesh dipper technology quality that make mass production direction that change and normalizes product that can keep excellent taste and improve conservative property develop. Culture formation and our country foodservice industry development that reduce damage of informed people ashes through development of brown stock product that is changed in large quantity, and improve quality of food more positively contributing to reappear diversification of menu, systematization and taste of specialty store as well as can contribute in rationalization of informed people ashes purchase, personnel expense (labor power) curtailment, waste decrease etc. but is developed still more being utilized.

Liquid-Liquid Extraction for Recovery of Paclitaxel from Plant Cell Cultures by Adding Inorganic Salts (식물세포배양으로부터 파클리탁셀 회수를 위한 무기염이 첨가된 액-액 추출)

  • We developed a liquid-liquid extraction method using an inorganic salt to dramatically improve the recovery efficiency of the anticancer agent paclitaxel from plant cell cultures. As a result of liquid-liquid extraction using a diverse types of inorganic salt (NaCl, KCl, $K_2HPO_4$, $NaH_2PO_4$, $NaH_2PO_4{\cdot}2H_2O$), NaCl gave the highest yield (~96%) and lowest partition coefficient (0.053) of paclitaxel. The optimal NaCl/solvent ratio, methylene chloride/MeOH ratio, and pure paclitaxel content for liquid-liquid extraction using NaCl were 1% (w/v), 26% (v/v), and 0.066% (w/v), respectively. Under the optimal conditions developed in the present method, most of the paclitaxel (~96%) was recovered from biomass by a single extraction step. In addition, this method facilitated 3-fold higher recovery efficiency of paclitaxel in a shorter extraction number than the conventional liquid-liquid extraction method.

  • Magnesium has been used as parts of vehicles, case materials of notebook PC and mobile phone, and its demand has been increasing recently. Its extraction technologies were classified according to the two major reduction methods: the fused salt electrolysis and the thermal reduction method. A research on the extraction of magnesium from magnesite which has been being carried out at KIGAM was briefly introduced here. Magnesium was prepared using a fused salt electrolysis method through preparation of anhydrous magnesium chloride with lab scale experiments.

  • The reductive extraction process is an important step to refine the TRU product from the electrorefining process for the preparation of transmutation reactor fuel. In this study, it was studied on the reductive extraction between the eutectic salt and Bi metal phases. The solutes were zirconium and the rare earth elements, where zirconium was used as a surrogate for the transuranic(TRU) elements. All the experiments were performed in a glove box filled with a argon gas. Li-Bi alloy was used as a reducing agent to reduce the high chemical activity of Li. The reductive extraction characteristics were examined using ICP, XRD and EPMA analysis. The reduction reaction was equilibrated within 3 hours after the Li addition. Three eutectic salt systems were compared and Zr was successfully separated from the rare earth elements in all the three salt systems.

  • Tetrathiocyanatocobaltate[II] forms complexes with tertiary amine salts or quarternary ammonium salts which were extractable from aqueous solution by organic solvent. In order to study composition of the complex, the colored crystalline complexes produced were evaluated with elemental analysis, infrared and mass spectra. And also a novel spectrophotometric method for the determination of tertiary amine salt or quarternary ammonium salt with tetrathiocyanatocobaltate[II] was established by organic solvent extraction within coefficient of variation of 1.06-1.35%.

  • Solvent extraction and stripping experiments were conducted to separate iron from a spent $FeCl_3$ etching solution containing nickel. In the extraction, PC88A, MIBK and Alamine336 were tested as an extractant in various diluents. Alamine336 salt in toluene led to the highest extraction percentage of iron. Stripping percentage of iron from the loaded organic by Alamine336 increased with decreasing HCl conentration of stripping solution and with increasing volume ratio of aqueous to organic. In the operation of bench scale mixer-settler, 7 extraction stage with 1.0M Alamine336 salt in toluene and 10 stripping stage with 0.01M HCl solution resulted in a stripped solution with 133g/L of iron and in a raffinate with most of nickel together with a small amount of iron when the flow rate ratio of organic to aqueous was 7.
