A Study of Sodium Reduction Effect in Foods Using Fermented Soy Sauce (양조간장을 이용한 식품 내 나트륨 감소 효과 연구)

  • Salt (NaCl) is one of the most important main source of sodium in our diet. However, health concerns related to salt overconsumption have led to an increased demand for salt-reduced food. The objective of this study was to investigate the possibility of the use of fermented soy sauce to reduce the level of salt in foods. The contents of sodium in bean sprout soup and chicken rice porridge prepared with salt were $1.59{\pm}0.05$ and $1.89{\pm}0.03g/L$, respectively. Whereas, the sodium content range of the same samples prepared with soy sauce were $0.38{\pm}0.01-1.54{\pm}0.02$ and $0.37{\pm}0.00-1.44{\pm}0.01g/L$, respectively. Paired difference test between control and various soy sauce samples was used to provide the amount of soy sauce needed to replace salt without changing the overall taste and intensity. The results showed that sodium reduction (22.0-69.3%) could be achieved in tested foods with the fermented soy sauce.

Salt Stress Responses of an Alanine Aminotransferase Knock-out Mutant of Rice (Oryza sativa L.) (알라닌 아미노기전이효소가 상실된 벼(Oryza sativa L.) 돌연변이체의 고염 스트레스에 대한 반응)

  • An AlaAT knock-out mutant (alaat) of rice (Oryza sativa L.) was isolated from T-DNA tagging lines and the genotypes of its progeny were determined with AlaAT1-specific primers. The alaat phenotypes showed decreased growth and grain yield when compared with control plants. The activity of AlaAT1 in the mutant plants was practically undetectable. The responses of alaat plants to growth under salt stress were compared with those of control plants by measuring chlorophyll fluorescence and the activities and mRNA expression of antioxidant enzymes. All abiotic stresses tested (salt, drought, and chilling) caused a similar decrease in chlorophyll fluorescence in both alaat and wild type plants. The activity of peroxidase (POX), an antioxidant enzyme, decreased following salt treatment of alaat plants, while control plant showed an increased activity. The mRNA levels for cAPX (cytosolic ascorbate peroxidase), POX2, and AlaAT were determined by RT-PCR following salt stress. No AlaAT1 mRNA was detected in alaat plants. The POX2 mRNA showed a slightly increased level in the wild type but was not detected in alaat plants, in agreement with the activity assays. The levels of cAPX mRNA were greatly increased in both the wild type and alaat plants. The salt stress effects on rice plant growth are therefore proposed to reflect a loss of function of AlaAT, which alters the activity and synthesis of antioxidant enzymes (especially peroxidases), rather than a direct effect on photosynthesis.

Effect of Saline Concentrations on Biological Nitrification in Batch Reactor

  • This study was carried out on 4 batch reactors to determine the specific ammonium oxidizing rate (SAOR), specific nitrate forming rate (SNFR) and inhibitory degree of nitrifying activities with saline concentrations. Under salt free condition ammonia was consumed during the reaction period within 200 min. When the salt level increased to 10, 20 and 30 g $NaClL^{-1}$ in reactor, ammonia depletion took 250, 300 and above 350 min, respectively. During concentration above 10 g $NaClL^{-1}$, there was nitrite accumulation. Also, at 30 g $NaClL^{-1}$ ammonia did not depleted and $NO_2{^-}$-N accumulated until the final reaction. Nitrate formation rates decreased with increasing salt concentration. SAOR and SNFR showed a decreasing trend as salinity concentrations were increased. The SAOR was reduced from 0.2 to 0.08 mg $NH_4{^+}$-N $g^{-1}VSS\;day^{-1}$ as the salt concentration increased from 0 to 30 g $NaClL^{-1}$. Similarly, the SNFR decreased from 0.26 kg $NO_3{^-}$-N $kg^{-1}VSS\;day^{-1}$ at saline free to 0.1 kg $NO_3{^-}$-N $kg^{-1}VSS\;day^{-1}$ at saline 30 g L-1. A severe inhibition of nitrifiers activity was observed at increased salt concentrations. The inhibition ratio of specific ammonium oxidation rates were 17, 47 and 60% on the reactor of 10, 20 and 30 g $NaClL^{-1}$ added, respectively. The inhibition ratio of specific nitrate forming rates also were inhibited 30, 53 and 62% on the reactor of 10, 20 and 30 g $NaClL^{-1}$ added, respectively. As the salinity concentrations increased from 0 to 30 mg $NaClL^{-1}$, the average MLSS concentration increased from 1,245 to 1,735 $mgL^{-1}$. The SS concentration of supernatant in reactor which settled about 30 minutes was not severely difference between concentration of salt free reactor and one of those high salt contained reactors.

Effects of Blanching Conditions and Salt Concentrations on the Quality Properties of Aster scaber (Blanching 조건과 가염조건에 따른 참취의 품질 특성 변화)

  • This study investigated quality characteristics of Aster scaber (color; firmness; vitamin C, chlorophyll and phenolic contents; and sensory properties) under blanching conditions of $90^{\circ}C$/25 min, $95^{\circ}C$/16 min, and $100^{\circ}C$/6 min, and salt concentrations of 0%, 1% and 2%. The contents of vitamin C, chlorophyll and total phenolic compounds, and firmness decreased by 39.5-60.3%, 26.2-31.5%, 45.6-50.1% and 50.7-51.1%, respectively, after blanching. For these parameters, treatment with 1% salt was 7.1-30.2%, 9.2-12.2%, 35.9-52.0% and 2.7-6.8% relative to the control, and drip water could be prevented by 3.3-23.4%. Results for treatment with 2% salt were (respectively) 22.7-34.1%, 10.4-20.7%, 55.5-80.4% and 13.8-17.3%, and drip water could be prevented by 23.9-27.3%. These results showed that 2% salt treatment had a greater effect on preservation of quality characteristics than 1% treatment and the control. With respect to sensory evaluation, the 2% treatment had lower overall acceptability than the 1% treatment because of the saltier taste. However, the 1% treatment was more acceptable than the control. The optimal blanching condition was found to be $100^{\circ}C$/6 min and 1% salt.

Quality Characteristics of Kanjang(Soy Sauce) Fermentation with Bamboo Sap, Xylem Sap and Gorosoe (천연수액으로 제조한 간장의 품질특성)

  • Three varieties of soy sauce were prepared using saps of bamboo, xylem and gorosoe, with sea salt and bamboo salt, in May. Soy sauce was fermented in the traditional manner. Homemade soy sauce was analyzed after 3 months of aging. The pH and amino-type nitrogen content of soy sauce fermented with xylem sap and sea salt were very high, and malic acid was dominant among four types of organic acid. The content of calcium in soy sauce fermented with bamboo sap and sea salt was fourfold greater than that of the control. The contents of total amino acids in the soy sauces fermented with xylem sap and gorosoe, with the addition of sea salt instead of water, were 2-fold and 1.4-fold greater than that of ordinary soy sauce, respectively. In the DPPH assay, the antioxidant effect of soy sauce fermented with bamboo sap and sea salt was higher than that of other samples. Sensory evaluation showed that the overall acceptability of soy sauce fermented with gorosoe and sea salt was best, among the samples tested.

  • Energy consumption per unit weight of metal (kwh/kg of metal) is one of the most important economic indicators in the process of molten salt electrolysis. It is related to the heat loss of salt bath and the current efficiency of the process. The current efficiency is highly dependent on electrolysis temperature. On the other hand, the temperature of salt bath may increase significantly due to the difference (larger energy input than consumption) in heat balance at the beginning of electrolysis, which may cause different electrolysis temperature from an initially targeted value. This results in a bad effect on current efficiency. Therefore, it will be helpful to the reduction of energy consumption to compare the calculated and measured values of the temperature change of salt bath through the heat balance review at the early stage of electrolysis and to evaluate the energy loss to outside. In this study, based on the authors' experimental data, the heat balance was reviewed at the beginning of the electrolysis, and it was possible to evaluate the energy loss to the outside and the increase of the temperature of the salt bath quantitatively. Through such a method, heat loss reduction plan can be derived and current efficiency can be improved so that energy consumption can be reduced.

Effect of Processing Additives on Vulcanization and Properties of EPDM Rubber (EPDM 고무의 첨가제에 따른 가류 및 물성에 미치는 영향 연구)

  • Effects of three different types of dispersions and flow improving additives composed with fatty acid esters, fatty acid metal salts and amide compound on the vulcanization and the mechanical properties properties of rubber compounds of EPDM and carbon black as fillers. were investigated using Mooney viscometer, moving die rheometer, hardness tester, and universal test machine. The aging characteristics of vulcanized EPDM compounds were also investigated. The Mooney viscosity measured at $125^{\circ}C$ showed a tendency to decrease in the order of amide type> metal salt type > ester type additive. Scorch time showed little or no difference with the addition of ester or metal salt type additives, but the amide type additive shortened a scorch time more than one minute. Rheological measurement data obtained at $160^{\circ}C$ showed that the vulcanization time was faster for metal salt type and amide type additive systems. Delta torque values of EPDM compound increased with metal salt type and amide type additives, but slightly decreased with ester type additive. The tensile strength of the EPDM compound was greatly improved when an ester type additive was added, but the amide type or metal salt type additive had no significant effect. The elongation was significantly improved for metal salt type additive, while the rest were not significantly affected. The tear strength of the EPDM compounds increased with the addition of all kinds of additives, and it increased remarkably in the case of metal salt type additive. Hardness of the EPDM compounds was nearly same value regardless of additive types. The thermal aging of the EPDM blend at $100^{\circ}C$ for 24 h showed little change in the case of metal salt type or amide type additive, but the elongation tends to decrease by 10-20% for all EPDM compounds containing additives.

Effect of Air Contents, Deicing Salts, and Exposure Conditions on the Freeze-Thaw Durability of the Concrete (콘크리트의 동결융해 내구성에 공기량, 제설제, 노출조건이 미치는 영향에 관한 연구)

  • In this study, the relative effects of low-chloride deicier(LCD) and two other deicing agents on the scaling of concrete were conducted in a series of tests at laboratory accordance with the ASTM C 672. The solutions concentration of deicers tested included 1, 4, 10%. Tap water was used as control. The amount of scaling was evaluated gravimetrically. As test result of deicer solution types, when applied to 4% solutions, surface scaling of concrete after 56 freeze-thaw cycles was produced significantly as about 9 times on LCD solution, as about 18 times on $CaCl_2$ solution, and as about 33 times on NaCl solution comparing with tap water. As test result of deicer solution concentrations, relatively low concentrations (of the 4% by weight) of deicer were produced more surface scaling than higher concentrations (of the 10% by weight) or lower concentrations (of the 1% by weight) of deicer. It show that the damaging concentration is of the order of 3~4% for previous research result. It appears that the mechanism of surface scaling is primarily physical rather than chemical. Also, the effect of chloride deicier types, freeze-thaw cycling, and air contents on the performance of concrete was experimentally investigated. The results show that the concrete specimens subjected to freeze-thaw cycling scaled more severely in exposure to deicing salt than those in non-exposure to deicing salt, weight losses of the specimens tested in exposure to deicing salt were twice as much as those tested in non-exposure to deicing salt. Relative dynamic modulus of elasticity of concrete specimens decreased more quickly in exposure to deicing salt than in non-exposure to deicing salt. Also, relative dynamic modulus of elasticity of concrete specimens in exposure to sodium chloride deicing salt was decreased more quickly comparing with exposure to LCD salt. It is also shown that the chloride contents according to concrete specimen depths was more largely in exposure to LCD salt. When concrete specimen is exposed to chloride deicing salts and freeze-thaw cycling, performance degradation in the entrained air concrete(AE concrete) retarded more considerably comparing with non-entrained air concrete(Non-AE concrete).

Study on the Effect of Magnetized Water in the Precipitation Reaction of Salts and in the Hydration Hardening Speed of Gympsum Plaster (자화수가 염류의 침전반응 및 석고의 가수 경화속도에 미치는 영향에 관한 연구)

  • Although it has been known that the magnetized water shows different physicochemical properties, the exact nature of the magnetized water is not clearly elucidated yet. We have explored the effect of magnetized water in the precipitation of salts, i.e., $BaSO_4,\;BaCO_3,\;CaCO_3$, and in the hydration hardening of gypsum plaster. The amount of salt precipitation was measured by salt filter assay in water bath, $25^{\circ}C$ and also the hydration hardening speed of gypsum plaster was measured by the Gillmore needle method at room temperature. When the salt ions were interacted with each other in 0.1 M concentration, the precipitation reactions of $BaSO_4,\;BaCO_3$, and $CaCO_3$ increased more in the magnetized water, about 3.6%, 3.8%, and 4.4%, respectively, than in the control water. And the hydration hardening speed of gypsum plaster increased more in the magnetized water than in the control water. These data suggest that the magnetized water, which is supposed to be organized by forming numerous nano/micro clusters, induces the increase of salt precipitation and also accelerates the hydration hardening speed of gypsum plaster.

A Study on the Stability of DOPC Liposome (염의 농도에 따른 DOPC 리포좀의 안정성에 관한 연구)

  • In this study, DOPC liposomes were prepared with distilled water, phosphate buffer and phosphate buffered saline to evaluate the effects of salt on the stability of DOPC liposome. The changes in physical properties (likeparticle size and zeta potential) of liposome were measured after adding the salt. Liposomes were diluted 40 times and 80 times with hydration solvent to confirm the effect of dilution. Consequently, the stability of liposome was maintained up to 40 times dilution with hydration solvent. The liposome that prepared with distilled water was diluted with distilled water, phosphate buffer and phosphate buffered saline, and the liposome that prepared with phosphate buffer was diluted with phosphate buffer and phosphate buffered saline to evaluate the salt-induced changes in particle size and zeta potentia. As results, the particle size increased slightly and zeta potential became closer to 0 when the salt concentration was increased. In conclusion, particle size and zeta potential of liposome could be reasonable factors to evaluate the stability of liposome. In addition, we suggest that salt concentration of hydration solvent has a significant effect on the stability of liposome.
