사회인지론에 근거한 성인의 당류 섭취에 영향을 미치는 요인 (Factors affecting sugar intake in adults based on the social cognitive theory)

  • 본 연구는 사회인지론을 기반으로 성인의 당류 섭취와 관련된 요인을 파악하여 성인의 당류 섭취 저감화를 위한 기초자료를 마련하고자 하였다. 대구시민 만 19-49세 성인 1,022명 (남자 502명, 여자 520명)을 대상으로 2019년 10월에 온라인 업체를 통하여 설문조사를 실시하였다. 당류 급원식품 1일 총 섭취빈도는 4회였으며, 음료류 (1.87회)가 가장 높았고, 품목별로는 단 커피음료 (0.81회)가 가장 높았다. 당류 급원식품 섭취빈도가 높을수록 남녀 모두 당류 섭취 줄이는 것에 대한 부정적 결과기대가 높았고, 가정환경과 사회환경 점수가 높게 나타났으며, 여성의 경우 자기효능감과 당류 섭취를 줄이는 행동수행력의 실천이 낮았다. 회귀분석 결과, 당류 급원식품 섭취빈도 증가에 영향을 미치는 사회인지론 요인으로는 남녀 모두 환경적 요인인 가정환경으로 나타났으며, 당류 섭취를 감소시키는 요인으로 남성의 경우 인지적 요인인 당류 섭취 줄이는 것에 대한 긍정적 결과기대, 여성의 경우 행동적 요인인 행동수행력으로 나타났다. 따라서 성인 대상 당류 섭취 줄이기를 위해서는 당류 섭취 저감화에 대한 긍정적 결과기대를 높이고, 평소 달게 먹는 식생활을 개선할 수 있는 식생활 교육 및 가정환경 변화를 포함한 영양중재도 함께 이루어져야 효과적일 것으로 생각된다.

사과장아찌 제조를 위한 전처리공정 중 절임원에 따른 사과의 이화학적 특성변화 (Changes in Physicochemical Characteristics of Apple Pre-Treated with Sugar and Salt for Manufacturing Apple Jangachi)

  • The purpose of this study was to investigate changes in physicochemical properties of apples pre-treated differently with salt and sugar for apple Jangachi. When salt was used, moisture content was decreased by 28.41% to 57.67% at 24 hours and maintained an average 56.92% after 24 hours. However, when sugar was used, moisture content decreased steadily to 41.14% (60h). The pH of the apple pre-treated with salt decreased from pH 4.42 to pH 3.63 at 12 hours. However, in the case of apples pre-treated with sugar, pH decreased from pH 4.52 to pH 4.19 after 48 hours, but was not statistically significant. Conversely, total acidity of apple pre-treated with salt increased from 11.46% to 0.35% during 72 hours. But total acidity of apple pre-treated with sugar decreased to 0.11% at 24 hours and maintained. Sugar content of apple pre-treated with salt increased to 33.1% at 12 hours and maintained. Conversely, in case of sugar pre-treatment, sugar content of apple pre-treated with sugar increased steadily to 45.12% at 72 hours. Salinity of apple pre-treated with salt increased sharply to 15.74% during 24 hours. Lightness ($L^*$) of apple pre-treated sugar was not different from the control group. But apple pre-treated salt decreased slightly. Yellowness ($b^*$) was higher than the control group regardless of pre-treatment group. Sensory evaluation revealed that sugar pre-treatment apples were highly evaluated for flavor, taste, chewiness and overall acceptance.

천연꿀과 사양꿀의 성분 분석 (Chemical Composition of Korean Natural Honeys and Sugar Fed Honeys)

  • In this study, we investigated and compared some chemical properties of Korean natural honeys and sugar-fed honeys for their quality characteristics. The natural honey samples were monofloral from chestnut and acacia flowers, and the sugar-fed honey samples were collected from honeybees feeding on sugar cane and sugar beet. The chemical properties of the honey samples, such as moisture, total protein, total lipids, ash, carbohydrate, minerals, vitamins, and free amino acids were determined. The moisture content was $18.5{\pm}0.9%$ in natural acacia honey, $17.2{\pm}0.9%$ in natural chestnut honey, $19.6{\pm}0.9%$ in sugar cane-fed honey, and $24.8{\pm}%$ in sugar beet-fed honey. The total protein and ash contents were the highest in natural chestnut honey. Maltose and sucrose were not detected in natural honeys but were detected at 2~7% in sugar-fed honeys. The vitamin, mineral, and free amino acids contents of natural honeys were higher than sugar-fed honeys. The natural chestnut honey is the highest in honeys. These results confirmed that the quality of natural honey was better than that of sugar-fed honey. Also, the vitamin, mineral, and free amino acids contents are potential characteristics for distinguishing between natural and sugar-fed honeys.

Saccharomyces uvarum의 Catabolic Repression 시기에 유도되는 Ribosomal Ribonuclease에 대한 연구 (Induction of Ribosomal Ribonuclease during Catabolic Repression in Saccharomyces uvarum)

  • 효모 세포(S. uvarum)를 재료로 하여 배양 시기 및 sugar starvation시기에 특이하게 출현 또는 유도되는 RNase의 localization과 특성을 조사하고자 하였다. 정상 배양 시기 및 sugar starvation시킨 효모 세포를 세포 분획구에 따라 RNase 활성도를 측정하는 한편 ribosome 양의 변화를 조사하였다. 특히 ribosomal 분획구에서 추출한 RNase들을 poly(C)와 반응시킨 후 생성물을 TLC에 적응하여 효소의 특성 및 유도 여부를 조사하였다. 그 결과를 요약하면 다음과 같다. 세포 분획구 중 $45,000{\times}g$ pellet 분획구 및 Postribomosal 분획구에서는 배양 시기나 sugar starvation에 관계없이 RNase의 활성도는 유의하게 증감하지 않았으나, ribosomal 분회구에서는 정체기와 sugar starvation시 활성도가 각각 2배, 10배 이상 급격히 증가하였다. ribosome의 양적 동태를 살펴보면 early log phase의 세포에 비하여, 정체기 세포와 sugar starvation시킨 세포에서는 $1/3{\sim}1/6$까지 급격히 감소하였다. TLC의 결과 rRNase의 종류는 early log phase에서는 oligonuclease와 3'-ribonuclease, 5'-ribonuclease,stationarf phase에서는 oligonuclease, 3'-ribonuclease, sugar starvation 시켰을 때는 3'-ribonuclease, 5'-ribonuclease의 활성이 나타났다. 그리고 완전 배지를 사용한 효모 세포에서는 공통적으로 oligonuclease의 활성이 나타난 반면, sugar starvation시킨 효모 세포에서는 oligonuclease의 활성은 나타나지 않았다.

강황분말을 첨가한 Sugar-snap cookies의 품질 특성 (Quality Characteristics of Sugar-snap Cookies by additions of Curcuma Longa L. Powder)

  • 본 연구는 강황분말의 첨가량(0, 3, 6, 9, 12, 15%)을 달리 한 sugar-snap cookies의 품질 특성과 관능특성을 평가한 것으로 강황분말을 첨가한 sugar-snap cookies 반죽의 pH는 6.58~7.32 범위였으며 sugar-snap cookies의 수분함량은 9.09~10.77% 사이의 범위였다. 퍼점성은 유의적으로 낮아지는 경향을 보였으며, 강황분말 첨가량이 증가할수록 쿠키의 명도는 감소하고 a값과 b 값은 유의적으로 증가하는 경향이 나타났다(p<0.05). 경도(hardness)는 강황분말 첨가량이 증가할수록 증가하였으며 관능검사는 맛, 색, 향, 조직감, 전체적인 기호도의 항목에서 강황분말 첨가향이 6%일 때 전반적으로 가장 높게 평가되어, 6%의 강황분말을 첨가한 sugar-snap cookies 제조가 적합하다고 사료된다.

Association of added sugar intake with all-cause and cardiovascular disease mortality: a systematic review of cohort studies

  • BACKGROUND/OBJECTIVES: The long-term health impacts of dietary sugar have begun to be reported. The committee on the 2020 Dietary Reference Intakes for Koreans for sugar intended to update the scientific evidence on the association of added sugar intake with health outcomes, including mortality. This study evaluated the evidence on the association of dietary sugar with the all-cause and cardiovascular disease mortality from cohort studies. SUBJECTS/METHODS: The PubMed and ScienceDirect databases were searched until July 2021. The search terms were based on multiple combinations of keywords, such as added sugar, beverage, and mortality, included in the title or abstract. Two authors independently assessed the eligibility criteria of study selection and extracted the information from each selected article for this systematic review. RESULTS: The literature search identified 276 articles. Seventeen cohort studies met the inclusion criteria and were included in this systematic review. This study extracted information on the cohort and participants, dietary assessment methods, exposure and its comparison groups, health outcomes, and risk measures. Five articles reported added sugar intake, and 15 articles reported the food sources of the added sugar in the association with mortality. Increased mortality was observed in higher added sugar intake and a lower intake of less than 5% of energy, while higher discrepancies between gender, age groups, and countries were noted. In addition, nutritious sugary foods and beverages did not increase mortality. CONCLUSIONS: A 'U' or 'J' shaped relationship between the added sugar intake and mortality was estimated. The observed discrepancy indicated the need for more evidence to establish the dose-response relationship for Koreans.

Candidate Genes Related to Sugar Content in Sweetpotato using GWAS

  • Sweetpotato is rich in starch, which is converted to sugar during storage due to enzymatic hydrolysis. The sugar content of sweetpotato is a component related to taste and storability. In this study, the sugar content (fructose, glucose, maltose, sucrose and total sugar content) of 94 genotypes was evaluated and the GWAS (Genome-Wide Association Study) was conducted to search for candidate genes for sugar content. The fructose and glucose content were 0.2 ~ 8.8 and 0.2 ~ 9.4 g/100g, respectively. The maltose, sucrose and total sugar content were 0.2 ~ 9.1,3.2 - 30.0 and 7.9 ~ 40.2 g/100g, respectively. The fructose and glucose showed a positive correlation (0.98). The 94 genotypes were genotyped with genotyping-by-sequencing (GBS) and aligned against the reference genome sequences of sweetpotato. The GBS libraries from 94 genotypes were sequenced on an Illumina HiSeqXten system, and 1,339,892 SNPs (Single Nucleotide Polymorphism) were generated. Filtering for < 60% missing rate and > 0.05 minor allele frequency resulted in a total of 44,255 SNPs used in GWAS. The GAPIT (Genome Association and Prediction Integrated Tool) was used to conduct based on the mean of sugar content with a Bonferroni-corrected chromosome-wide significance threshold with a -logio(P) of 5.95. The significant SNPs were obtained with fructose (seven), glucose (six), maltose (four) and sucrose (nine). There were several genes related to sugar content around the significant SNPs such as sugar transport protein 8-like, probable galactose-1 -phosphate uridyltransferase-like and beta-amylase. These results will contribute to understanding of sugar content and conversion in sweetpotato.

Total sugar intake and its contributed foods by age groups in Koreans using the 8th (2019-2021) Korea National Health and Nutrition Examination Survey: a cross-sectional study

  • Objectives: This study was conducted to investigate the status of total sugar intake and contributing foods in Korea according to age groups. Methods: This study used 24-hour dietary recall data from the 8th Korea National Health and Nutrition Examination Survey (2019-2021) to investigate the nutritional and total sugar intake status among Koreans. A total of 18,338 research participants (≥3 years old) were included in this study. To analyze the types of foods contributing to total sugar intake, these foods were categorized into 15 types. Moreover, we examined the total sugar intake and ranked the most consumed foods by age groups (3-11 years, 12-18 years, 19-34 years, 35-49 years, 50-64 years, over 65 years). A survey procedure was employed for statistical analysis. Results: The energy intake ratio from total sugars was approximately 12%-15%, which was within the recommended range. However, the proportion of individuals consuming total sugar exceeding 20% of their total caloric intake is nearly 20%, raising concerns about excessive sugar consumption. Furthermore, the percentage of participants whose intake of sugar from processed foods exceeded 10% of their total calories was highest in the 12-18 age group at 37.1%, followed by the 3-11 age group at 35.2%, and the 19-34 age group at 34.0%. Carbonated drinks, cola, and cider were the primary foods consumed by children and adolescents (3-18 years old) and young adults (19-34 years old). For middle-aged and older adults, mixed coffee with sugar and cream was a prominent contributor to sugar intake. Conclusions: This study investigated sugar consumption patterns among Koreans, finding the principal foods contributing to this intake. Identifying these contributors is pivotal, given their potential impact on public health.

국민건강영양조사 자료를 이용한 청년 및 중·장년층 당뇨병 환자의 신체활동량이 혈당조절에 미치는 영향 분석 (Effect of Physical Activity on Blood Sugar Control in Young and Middle-aged Diabetic Patients Using the 8th Korea National Health and Nutrition Examination Survey Data)

  • Purpose : The number of young patients with diabetes is on the rise, and they face challenges in managing their blood sugar levels. This study aimed to investigate the effect of physical activity on blood sugar control in young and middle-aged patients with diabetes aged 19-64 years using data from the 8th Korea National Health and Nutrition Examination Survey (2019-2021). Methods : Blood sugar control in patients with diabetes was determined based on FBG 110 mg/㎗, and physical activity was measured using physical activity categories that considered the sum of walking, moderate intensity, and high intensity. Statistical analysis was conducted using SAS 9.4, and the Rao-Scott chi-square test was conducted to determine differences in blood sugar control based on the sociodemographic characteristics and physical activity of patients with diabetes. Complex-sample multiple logistic regression analysis was conducted to assess the effect of physical activity on blood sugar control. Results : There were statistically significant differences in blood sugar control between young and middle-aged patients with diabetes, depending on sex, age, marital status, obesity, and amount of physical activity. As a result of the complex sample simple logistic regression analysis without adjusting for variables, the non-physical activity group was found to have a higher risk of blood sugar dysregulation than the health-promoting physical activity group (OR: 2.80). Complex-sample multiple logistic regression analysis with control variables showed that the non-physical activity group had a higher risk of blood sugar dysregulation than the health-promoting physical activity group (OR: 3.70). Conclusion : Multifaceted efforts are needed to develop health intervention programs that can increase physical activity, diabetes awareness, and treatment rates, including controlling blood sugar levels and preventing complications in young and middle-aged patients with diabetes.

청과물의 수분과 당도와의 관계 구명 및 응용 (Study and Application of the Relationship between Water Content and Sugar Content in Fruit and Vegetables)

  • This study was carried to find out relationships between water content and sugar content in fruit and vegetables and present the possibility of estimating sugar content by measuring water content. Water content and sugar content of melons, peaches, and apples were measured. Both F-test and linear regression analysis on the experimental data were done. The regression models were developed and validated. The results were summarized as follow : 1. According to the F-test, the coefficients of determinant were greater than 0.8, and significance probability was less than 0.0001 in each materials. 2. According to the regression analysis of melons, peaches, and apples, the standard errors of calibration(SEC) were 0.67 brix%, 0.82 brix%, and 0.72 brix%, respectively. 3. The standard errors of prediction(SEP) were 0.76 brix%, 1.03 brix%, and 0.77 brix%, respectively. 4. The relationship between sugar content and water content in apple was successfully applied to measure the sugar content from hydrogen NMR spectrum of apple samples.
