Physicochemical Properties of Kefir Manufactured by a Two-Step Fermentation

  • The objective of this study was to assess the physicochemical and sensory changes of a kefir manufactured by a two-step fermentation (MTY, $1^{st}$ step: $37^{\circ}C$ for 9 h; $2^{nd}$ step: $24^{\circ}C$ for 15 h) and compare it with kefirs produced by two conventional methods (GTY, fermentation at $37^{\circ}C$ for 24 h; KEY, $22^{\circ}C$ for 24 h). Rapid changes in pH and titratable acidity (TA) were observed in samples from all three manufacturing methods during fermentation process and storage period. Lactic acid bacteria (LAB) counts of MTY increased gradually up to 12 h of fermentation, reaching 9.28 Log CFU/mL, with maximum value observed in this experiment of 9.48 Log CFU/mL. The LAB counts of all samples decreased significantly during storage. The highest viscosity was observed for MTY (1750-1771 cPs), compared with the lowest viscosity observed for KEY (1250-1277 cPs). The viscosity of all samples increased slightly during storage (1250-1805 cPs, p<0.05), as well as carbon dioxide content (0.01-1.36%, p<0.05), except for GTY. The most significant increase in alcohol concentration during storage period was seen in MTY from 0.01% to 1.36% (p<0.05). MTY scored significantly higher in most items of the sensory analysis, indicating that the product manufactured by the two-step fermentation method is more acceptable compared with conventionally produced kefirs.

  • The conventional mouthguard fabrication process consists of elastomeric impression taking and followed gypsum model making is now into intraoral scanning and direct mouthguard 3D printing with an additive manufacturing process. Also, dental professionals can get various diagnostic data collection such as facial scans, cone-beam CT, jaw motion tracking, and intraoral scan data to superimpose them for making virtual patient datasets. To print mouthguards, dental CAD software allows dental professionals to design mouthguards with ease. This article shows how to make 3D printed mouthguard step by step.

  • The international standard STEP for representation and exchange of product model data, and CORBA as a standard for distributed object computing environment are expected to play very important role in the future manufacturing environment. Platform independent network programming language Java is also becoming a standard environment for developing Internet/Intranet applications. Furthermore, the ObjectWeb environment supported by the combination of CORBA and Java technology provides very efficient and convenient way of developing network applications and user interfaces. In this research, we developed a framework for the real time sharing of STEP data and 3D conference in the ObjectWeb environment and tested our proposal by implementing prototype software which we call STEPShare.

Optimization of a Multi-Step Procedure for Isolation of Chicken Bone Collagen

  • Chicken bone is not adequately utilized despite its high nutritional value and protein content. Although not a common raw material, chicken bone can be used in many different ways besides manufacturing of collagen products. In this study, a multi-step procedure was optimized to isolate chicken bone collagen for higher yield and quality for manufacture of collagen products. The chemical composition of chicken bone was 2.9% nitrogen corresponding to about 15.6% protein, 9.5% fat, 14.7% mineral and 57.5% moisture. The lowest amount of protein loss was aimed along with the separation of the highest amount of visible impurities, non-collagen proteins, minerals and fats. Treatments under optimum conditions removed 57.1% of fats and 87.5% of minerals with respect to their initial concentrations. Meanwhile, 18.6% of protein and 14.9% of hydroxyproline were lost, suggesting that a selective separation of non-collagen components and isolation of collagen were achieved. A significant part of impurities were selectively removed and over 80% of the original collagen was preserved during the treatments.

  • The TOC/DBR and Six Sigma are the most attention-getting concepts for managing manufacturing companies in Korea. Using the ideas and methods of the TOC/DBR, companies can achieve a large reduction of work-in-process and finished-good inventories, significant improvement in scheduling performance, and substantial earnings increase. The Six Sigma approach derives the overall process of selecting the right projects based on their potential to improve performance metrics and selecting/training the right people to get the business results. These two concepts have different backgrounds and different viewpoints for production systems. So, if the two concepts collaborate each other, the synergy effects to innovate production systems can be expected. This paper proposes a new approach to implement the TOC/DBR concepts in production systems. This approach uses some concepts of Six Sigma which stresses educations, project approaches (step by step procedure using a Roadmap), and improvement philosophy.

  • In this wort ER(electro-rheological) clutch and MR(magneto-rheological) clutch are devised and their performance characteristics such as response time and controllability are compared. As a first step, field-dependent yield stresses of ER and MR fluids are distilled in shear mode. For reasonable comparison between two clutches, a nondimensional design model is established by choosing same design parameters of gap size and number. Following the manufacturing of two clutches, field-dependent torque level, response time to step input, mechanical Power generation to electric power consumption are experimentally measured and compared. In addition, in order to investigate torque controllability of the clutches a sliding mode controller is formulated and experimentally realized. Control bandwidths of two clutches are identified and tracking control responses for desired torque trajectories are presented.

  • The fault analysis of the CNC machine tool which is controlled sequentially by PLC is generally based on ladder diagram. When machine tool has faults, it takes a lot of operator's experiences and times to identify logical relationship because ladder diagram is a step structured language. Therefore the technologies of finding out fault reasons automatically is necessary. In this paper, the SFG(Switching Function Generator) system is developed to analysis fault reasons correctly. The SF(Switching Function) and SSF(Step Switching Function) generated from SFG based on ladder diagram are experimented to identify the performance of SFG.

  • The work presented here deals with controller design using error model constructed with proportional control ramp response. The design aims at the improvement of transient response, steady-state error reduction with stability preservation, generation of the consistent contour error through the proportional gain regulation of a mismatched system. The first step is to generate tracking-error curve with proportional control only and decide the added error signal shape on the error curve. The next is to construct a table for the steady-state loop gain with step input. The table is used for selecting the proportional gain. The effectiveness of the proposed controller is confirmed through the simulation and experiment.

  • For the factory automation and unmanned machine operation, it is very important to manufacture highly reliable and efficient chip breakers for optimal chip control. In this research, using the CALMA CAD/CAM SYSTEM, the manufacturing process of 3-dimensional chip breakers is established. Using the results of the cutting test of the selected chip breakers with double-step grooves, the chip breaking mechanism is schematically analysed. An expression for the chip breaking relation is derived which considers chip material behavior following LUDWIK's stress-strain curve, chip breaking criterion and the shape of chip breakers. This contains the thickness of chip, the radius of chip curl, and the mechanical properties of chip materials. It is found that the expression agrees very closely with the experimental results.

  • A new design method for prestressed concrete girder is proposed in this study, which steps for manufacturing are; (1) the bottom part of concrete girder is placed and pretensioned by the first post-tensioning performed on the tendons located in the bottom part of concrete girder, and (2) the next step which consists of concrete placing and post-tensioning operation is followed by the previous step if required. This indicates that sufficient compressive stress can be effectively introduced at the bottom face in stepwise manner, when compared to conventional PSC girder. Two specimens are prepared and tested to investigate the short-term behavior of the PSC girders manufactured by the proposed method. Section Analysis results exhibit good agreements with the test results in terms of strain distribution across the girder section. In addition, flexural strength obtained from the tests is found to be similar to the expected based on Code(Korea). These demonstrate that the method proposed in this study is applicable to the design of PSC girders.
